The Antioxidant and Nitrite Scavenging Ability of Waste Resource (carb shell, sesame meal, Korean tangrin peal) Extracts (폐자원(게껍질, 참깨박, 감귤껍질) 추출물의 항산화성 및 아질산염소거작용)

  • The natural sources extracted from crab shell Korean tagnrine peel, sesame meals were utilized to investigate the effects of extracts on free radical reaction, lipid oxidation and nitrite scavenging ability. The recovery percentage of extracts from waste resources (crab shell, sesame meal, dry korean tangrine peel) were chitosan 11.6%, crude sesamol 2.2% and ascorbic acid 2.8%, respectively. The antioxidants were tended to have a lower TBARS value than those of control. The nitrite scavenging and electron donating ability of crude sesamol were tended to be the most effective extract among all extracts. However, In case of chitosan, the superoxide dismutase (SOD)-like activity was the most highest, compared to other extracts.

  • 서양화가 김해곤씨 3년여에 걸친 연구개발 성공 항균성 탁월, 폐자원 활용으로 환경보존 효과 커 감귤 껍질을 이용해 만든 종이가 나와 화제가 되고 있다. 서양화가이자 제주점아트문화연구소장인 김해곤(43)씨가 그 주인공. 이번에 개발된 종이는 항균성 및 흡수성, 통기성, 강도 등이 우수할 뿐만 아니라 연간 5만여 톤에 이르던 감귤껍질 폐기량을 줄일 수 있어 환경보존 측면에서도 크게 기여할 것으로 기대를 모으고 있다.

Effects of Feeding Citrus Peels on Nutritional Composition of Chicken Meat (닭고기의 성분조성에 미치는 감귤껍질 급여의 영향)

  • In this study, the effects of feeding citrus peel on the nutritional composition of chicken meat were investigated. The samples consisted of chicken meats provided with only feed for laying hens without citrus peel (CP-0), and chicken meats fed with 1.0%, 1.5% and 2.0% citrus peel during the starter (initial period feed; 1${\sim}$9th day), the grower (middle period feed; 10${\sim}$24th day), and the finisher (latter period feed; 25${\sim}$36th day), respectively. There was no significant difference between CP-0 and CP-1 regardless of feeding citrus peel in terms of chicken's moisture, protein, fat, ash or caloric content. The cholesterol content was significantly lower in the CP-1 chicken meats than in the CP-0 chicken meats (p<0.05). The K P and Ca contents were significantly higher in the CP-1 chicken meats than in the CP-0 chicken meats (p<0.05), but there were no significant differences between CP-0 and CP-1, regardless of feeding citrus peet in terms of chicken meat's Na and Mg. There were no significant differences between CP-o and CP-1 regardless of feeding citrus peet in terms of chicken meat's vitamin A, xanthophyll, ${\beta}$-carotene, hesperidin or naringin, but vitamins $B_1$ and $B_2$ were significantly higher in the CP-1 chicken meats than in the CP-0 chicken meats (p<0.05). There were no significant differences between CP-0 and CP-1 regardless of feeding citrus peet in terms of chicken meat's amino acid composition - most of free amino acids and fatty acid composition - but L-glutamic acid was significantly higher in the CP-0 chicken meats than in the CP-1 chicken meats, and the DL-${\beta}$-amino isobutyric acid was significantly higher in the CP-1 chicken meats than in the CP-0 chicken meats (p<0.05).

Physicochemical Quality Characteristics of Pork Patty with Tangerine (Citrus unshiu) Peel (감귤껍질을 첨가한 돈육 patty의 이화학적 품질특성)

  • This study was conducted to investigate the physicochemical quality characteristics of pork patty added with four different amount (T0:0%, T1:0.3%, T2:0.7%, T3:1.0%) of tangerine (Citrus unshiu) peel. There was no significant difference in chemical composition, cooking yield, water holding capacity, moisture retention, fat retention, hardness, springiness, cohesiveness, gumminess, chewiness, VBN content, L-value. In taste, texture, juiciness and palatability, the addition of 0.3%~1.0% tangerine peel in pork patty showed no significant difference on sensory properties compared to the pork patty without tangerine peel. Total polyphenol content was highest in T3, and DPPH radical scavenging activity was highest in T2 and T3 (p<0.001). The TBARS contents decreased as tangerine peel become added (p<0.001). The pH was highest in T0, and was lowest in T3 (p<0.001). The external a-value of T2 and T3 were significantly higher than that of T0 (p<0.01). The external and internal b-value of T2 and T3 were higher than those of T0 (p<0.01). Flavor of T2 and T3 were higher than those of T0 and T1 (p<0.01). In conclusion, the results of this study indicate that an addition of tangerine peel could be utilized as an ingredient in pork patty in promotion of function of tangerine by-products.

제주산 온주밀감의 특성과 관능평가

  • 제주지역에서 생산되는 대표적인 품종인 궁천조생과 흥진조생에 대한 품질에 관여하는 물리.화학적인 특성을 분석하였고 과일의 크기, 색깔, 생산지역에 따른 감귤의 맛등에 대한 관능검사를 실시하였다. 수확적기에 수확한 조생온주으 가용성고형물은 10.7, 11.0 였으며 산함량은 1.04%, 비타민 C함량은 41.19-44.94mg/100g였다. 당은 절반이 자당하이였고, 포도당과 과당이 각각 1/4씩 함유하고 있었다. 과일 크기에 따라 과중, 껍질두께, 가용성고용물, pH, 산함량, 산비는 각각 직선적인 상관관계를 가지고 있었으며, 경도와 과육율과의 유의성은 없었다. 관능검사 결과 중간정도의 크기의 감귤을 선호하며. 껍질의 색깔은 진한 홍등색일수록 선호하고 있음을 알 수 있었다. 또한 같은 품종이라고 할지라도 재배적지에서 생산된 감귤일수록 선호도가 높아 직선적인 유의성을 보였으며, 과즙의 경우 당산비가 높을수록 성호하여 고품질 감귤생산을 위한 노력이 필요한 것으로 여겨졌다.로 여겨졌다.

Suggestion for Establishment of Temporary MRLs and Safe use Guideline of the Organophosphorus Insecticides in Jinpi (한약재 진피에 대한 유기인계 살충제의 잠정 MRL 설정 및 안전사용기준 제안)

  • Jinpi(Aurantii nobilis Pericarpium) is one of the most important material of oriental herbal medicine which is made from the peel of mandarin by washing with hot water and drying. Pesticides have necessarily used for mandarin cultivation according to their preharvest intervals (PHIs) but their maximum residue limits (MRLs) and PHIs for Jinpi are not established yet. This study is to know residue amount of organophosphorus insecticides in Jinpi and to establish the MRLs and PHIs for fenitrothion and phenthoate in Jinpi. Fenitrothion was sprayed once, twice and three times with 7 days interval before harvest. Its residue amount ranged from 0.14 to 1.17 mg/kg in mandarin, 0.59 to 4.02 mg/kg in its peel and 1.66 to 22.38 mg/kg in Jinpi. In case of phenthoate, it was sprayed with 10 days interval for 10 days before harvest. Its residue amounts in mandarin, its peel, and Jinpi ranged from 0.16 to 0.65, 0.69 to 2.41 and 1.69 to 11.3 mg/kg, repectively. Proposed MRLs of fenitrothion and phenthoate for Jinpi are suggested to 22.39 and 11.30 mg/kg, respectively. So we recommend PHIs of the pesticides that fenitrothion can be sprayed 3 times 7 days before harvest and in case of phenthoate, sprayed 3 times 10 days before harvest.

Optimum Processing Conditions for Pesticides Removal in Mandarine Orange Peel by Ultraviolet Rays and Photocatalytic Materials (자외선과 광 촉매제를 이용한 감귤껍질 농약제거공정의 최적화)

  • UV-C and -B types of lamps, and $H_2O_2$ as a photocatalytic material were applied to optimize processing conditions for pesticides removal in Mandarine orange peel. Factors to affect the removal of pestrcides were arranged as a function of irradiation temperature, irradiation time, and $H_2O_2$ spray concentration. The optimum processing conditions for the chloropyrifos and the EPN removals in Mandarine orange peel were irradiation time of 60 min, irradiation temperature of $45^{\circ}C$ and $H_2O_2$ spray concentration of 1000 ppm. However, the optimum processing conditions for methidathion removal were 60 min of irradiation time, $40^{\circ}C$ of irradiation temperature and 1000 ppm of $H_2O_2$ spray concentration. The residual percentages of chloropyrifos, EPN and methidathion were 46, 49 and 28% after above irradiation processing, respectively.

Study on the Antimicrobial Effects of Citrus Peel by Different Extract Methods (추출방법에 따른 감귤과피 추출물의 항균효과)

  • The antimicrobial activity of the extract of citrus peel prepared by the method of hot water, ethanol and sugar was examined. The results showed that the extract of citrus peel prepared by hot water or ethanol did not have antimicrobial activity, but the extract by 10$\%$(w/v) sugar revealed the high antimicrobial activity. Extracted in 10%(w/v) sugar solution for 9 days, showed the highest antimicrobial activity against 8 strains of bacteria. The minimum inhibition concentration was found to be 0.5$\%$(v/v) against S. aureus, 1.5$\%$(v/v) against B. subtilis, M. luteus and E. coli, and 2.0$\%$(v/v) against S. mutans. The antimicrobial activity of the citrus peel extract was stable regardless of the treatment at 40 $\~$ 100 $^{\circ}C$C for 20 min and unstable response to the change of pH. The results suggested the development of citrus peel as heat-stable antimicrobial agents.

Optimization of d-limonene Extraction from Tangerine Peel in Various Solvents by Using Soxhlet Extractor (다양한 용매에서 Soxhlet 추출기를 이용한 감귤 껍질에서 d-limonene 추출의 최적조건 연구)

  • D-limonene included in citrus fruits is obtainable to extract essential oil as well as separate the oil ingredient. Soxhlet extraction, a type of SDE (Simultaneous steam Distillation and solvent Extraction), was used to extract limonene from tangerine peel. HPLC analysis was performed to quantify extracted d-limonene by using reversed-phase HPLC column. Results of HPLC analysis showed that the optimal extraction time was 2 hours in any solvent, and the extracted amounts of d-limonene in tangerine peel (per g tangerine peel) were 7.77 mg, 0.49 mg, and 0.28 mg in ethyl alcohol, n-hexane, and ether. Because yield was the highest in using ethyl alcohol as a solvent, polarity is stronger factor to effect on yield of extraction than boiling point.
