Effect of Die Temperature and Dimension on Extract Characteristics of Extruded White Ginseng (사출구 온도와 구조에 따른 압출성형 백삼의 추출 특성)

  • The objective of this study was to determine the effect of die temperature and dimension on extraction pattern, extract yield, and crude saponin content of extruded white ginseng. The extrusion variables were die temperature $(110\;and\;120^{\circ}C)$ and die dimension (3 holes with 1.0 mm, 2 holes with 2.0 mm, and 1 hole with 3.0 mm diameter). The browness and redness were indicator of active components in ginseng extract. Both were used to evaluate the effect of die temperature and die dimension on release pattern and release rate constant. Browness and redness of extract achieved its lowest value at die temperature $110^{\circ}C$ and 2 holes with 2.0 mm diameter, indicating the lowest extraction rate constant. Extract yield highly increased by extrusion treatment. Extract yield and crude saponin content were the highest at die temperature $120^{\circ}C$ and 1 hole with 3.0 mm diameter. In conclusion, extrusion process has contributed significantly in improvement of release rate of its active components.

The Effects of Different Crude Protein Levels in Same Methionine and Lysine Diet on the Performance of Laying Hens (동일한 Methionine과 Lysine수준의 사료에서 단백질수준이 산란계의 생산성에 미치는 영향)

  • The purpose of this study was to investigate the effects of dietary protein levels on laying hen performance. The level of methionine and lysine were 0.32% and 0.64%, respectively and the levels of protein were 12%, 13%, 14% or 15%. Total 384 laying pullets of 22weeks age were reared from January 28, 1989 to March 23, 1990 for 60 weeks. The results obtained were summarized as follows : 1 Egg productions was highest at 15% of protein in phase I, 14% in phase II, and 13% in phase III, and there was significantly different egg Production among treatments during phase I and phase II (P<0.05). 2. Egg weight was heaviest in 14% of protein treatment in three phases and they showed significantly different egg weight among different levels of protein in phase I (P<0.01), phase II and III (P<0.05) , but there was not significantly different between 14% and 15% of protein. 3. Daily egg mass tends to increase followed by increasing of protein level and showed signifiant differences among treatments in phase I and phase II (P<0.01). 4. The 14% of protein treatment showed the highest daily feed intake and it showed significant difference in phase I and phase II (P<0.01) , but there was no significant difference between 14% and 15% of protein. 5. Feed efficiency was improved significantly followed by increasing of protein level in phase I (P<0.01) and phase II (P<0.05), but there was no significant difference among treatments in phase III. 6. Viability tends to increase as increasing of protein level, but there was no significant difference among treatments. 7. Utilizabilities of dry matter, crude protein and ether extract of experimental diets were not different among treatments, but the utilizability of carbohydrate tends to increase as increasing of protein level (P<0.05). 8. Eviscerated yield and abdominal fat accumulation was not difference among treatments. 9. Egg shell quality and chemical composition of egg content were not different among treatments. 10. The feed cost per kg egg mass showed the cheapest in 13% of protein treatment in all phase, but there were no significant differences among treatments.

Effect of Dietary Vitamin A and E on Hepatic Lipid Metabolism in Adriamycin-Treated Rats (Adriamycin을 투여한 흰쥐의 간 지질대사에 미치는 비타민 A와 E의 급여 효과)

  • This study was conducted to evaluate the effect of dietary supplementation of vitamins A and E on hepatic lipid metabolism in adriamycin (ADR)-treated rats. Male Sprague-Dawley rats were assigned to 5 groups according to the dietary supplementation of vitamin A or E. Except control rats, a dose of 2mg ADR/kg of B.W. was injected to these animals intraperitoneally in the same day every week. Lipid peroxide values of liver were elevated by ADR treatment. But dietary supplementation of vitamin A or E significantly reduced these values. Catalase activity in rat liver was increased by ADR treatment, but glutathione peroxidase (GSH-Px) activity was decreased. This effect was somewhat modified by feeding dietary vitamin A or E. Superoxide dismutase (SOD) activity in rat liver was not changed by ADR treatment, but the combined use of ADR, vitamins A and E significantly induced this activity. Fatty acid composition of liver mitochondria was not affected by ADR treatment. The contents of hepatic triglyceride and cholesterol were elevated by ADR treatment. Dietary vitamin A reduced the increased hepatic triglyceride and cholesterol contents in ADR-treated rat.

Quality stability of anchovy-based powder for instant soup packed in tea bag (탈산소제에 의한 Tea bag 포장한 멸치 복합 분말의 저장 안정성)

  • The anchovy-based powder for instant soup packed in twenty tea bag were repacked with (Product B) or without oxygen absorber (Product A) in laminated film bag $(PVDC/OPP,\;thickness:\;100.5\;{\mu}m,\;size:22{\times}18cm)$, and then stored at ambient temperature $(25{\pm}3^{\circ}C)$. Moisture, crude protein and crude lipid contents in anchovy-based powder for instant soup were 12.1%, 54.7% and 2.9%, respectively. Moisture content showed little changes during storage in both product (A) and (B). pH and saturated fatty acid such as 20 : 5 and 22 : 6 decreased, while volatile basic nitrogen content, carbonyl value, thiobarbituric acid value, monoenoic fatty acid such as 16 : 0, brown pigment formation and Hunter values increased during storage of product (A). But, these values showed a little change during storage of product (B). It is concluded that anchovy-based powder for instant soup can be handily and safely used during storage of 150 days.

Effects of Supplemental Herb Medicines in the Diets on Growth, Feed Utilization and Body Composition of Juvenile and Grower Rockfish Sebastes schlegeli (배합사료에 생약재 첨가가 조피볼락 치어 및 육성어의 성장, 사료 이용성 및 체조성에 미치는 효과)

  • This study were conducted to investigate the effects of several additives in experimental diets on the growth, feed utilization and body composition of juvenile and grower rockfish. Three replicates of juveniles (3.6 g/fish) and two replicates growers (166 g/fish) were fed the experimental diets containing herb medicines mixture, Artemisia asiatica and Epimedium koreanum for 8 weeks. Dietary supplementation with herb medicines mixture had no beneficial effects on growth and feed utilization of juvenile fish. Weight gain, daily feed intake, condition factor and hepatosomatic index of grower fish fed the diet were not affected by dietary additive (P>0.05). Peed efficiency and protein efficiency ratio of grower fish fed the diet containing herb medicines mixture were significantly higher than those of fish fed the control diet (P<0.05), but not significantly different from fish fed the diet containing A. asiatica and E. koreanum (P>0.05). Proximate analysis of whole body, muscle, viscera and liver in the juvenile and grower were not affected by dietary additives (P>0.05). The results of this study suggest that feed efficiency and protein efficiency ratio of grower rockfish may improved by herb medicines mixture supplementation in the diet.

Studies on Wax Esters in Marine Animals(1) -Lipid Composition of Mullet Roe Oil- (수산동물(水産動物)의 Wax Ester에 관(關)한 연구(연구) (1) -숭어난유(卵油)의 지질조성(脂質組成)에 관(關)하여-)

  • The total amount of lipid content in the mullet roe is 20.5%, and iodine value and unsaponifiable matters content are 118 and 38.7%, respectively. The lipid composition of the muscle, roe and liver of the mullet, Mugil cephalus, shows differences. Triglyceride, wax esters, and free fatty acids are mainly contained in the lipids of the muscle, roe and liver, respectively. The mullet roe lipids are mainly composed of 59.1% of wax esters with a trace of sterol esters, 26.9% of polar lipids with pigments, 9.0% of triglyceride plus a trace of free fatty alcohols and fatty acids, and 3.0% of sterol contaminated with a trace of fatty alcohols. The major fatty acids of wax esters are C16 : 0, 47.5%, C18 : 1, 23.0%, C16 : 3, 6.5%, C20 : 5, 4.0%, those of triglyceride are C16 : 1, 25.1%, C18: 1, 16.7%, C16 : 0, 16.3%, C22 : 1, 7.9%, C18 : 0, 5.5%, C22 : 6, 4.4%, and those of polar lipids are C16 : 0, 35.0%, C18 : 1, 24.7%, C16 : 1, 6.1%, C20 : 5, 5.3%, C22 : 6, 4.2%. The major alcohols of wax esters are 51.0% of cetyl alcohol, 18.2% of palmitoleyl alcohol, and 10.7% of oleyl alcohol, and considerable amounts of odd-numbered alcohols such as C15 : 0, C15 : 1, C17 : 0, C17 : 1 and C19 : 1 are also found.

Studies on the Processing Aptitude of the Korean Soybean Cultivars for Soybean Curd (한국산 콩품종의 두부 가공적성에 관한 연구)

  • As a work on the investigation of the processing aptitude of the Korean soybean cultivars, the soybean curd was made from 19 Korean soybean cultivars on a laboratory scale. The yield, proximate composition and rheological and organoleptic property of the resultant soygean curd were analyzed. The yields of soybean curd were ranged from 262.33% to 311.63%, being positively correlated with the soluble protein contents of the recommended soybean cultivars (r=0.9621). The recovery rate of protein in Baekun and Yeunha to the soybean curd was 72.94%, 70.62%, respectively. More than 80% of lipid in soybeans of Yeunha, Dankyung, Danyeob was transferred to the soybean curd. Lightness of the soybean curd made from Baekun, Kwanggyo, Saeal, Hill was higher than that of the others. The mechanical hardness of the soybean curd was strongly correlated with the final moisture content of the soybean curd (r =-0.8312), but not with the protein content of the soybean (r=0.1848). In the organoleptic test for color, texture, flavor and overall preference of the resultant soybean curd, the quality of Dankyung, Namcheon, S-138, Baekun was evaluated highly.

Quality Characteristics of Jelly Added with Pressed Kiwi(Actinidia chinensis var. 'Halla Gold') Juice (참다래 과즙을 첨가한 젤리의 품질 특성)

  • Five types of kiwi jelly were prepared with different rates of pressed kiwi juice and carrageenan, and their quality characteristics such as chemical composition, saccharinity, color, texture, and sensory attributes were measured. There were no significant changes in moisture, crude lipid, carbohydrate, but significant differences were shown in crude ash, crude protein, pH, and acidity. The pH decreased and acidity increased as the amount of added kiwi juice increased. The saccharinity of kiwi jelly increased with increased amount of added kiwi juice. Additionally, the total phenolic content, DPPH radical scavenging activity and content increased with increased amount of added kiwi juice. The hardness, gumminess, and chewiness increased with increased levels of carrageenan. As the amount of added carrageenan increased, the L values of kiwi jelly decreased. Based on the sensory evaluation test, kiwi jelly, JKJ(Jeju Kiwi Jelly)-3 was the best in the flavor, sweetness, texture, and overall acceptability. The chemical composition of JKJ-3 was as follows : moisture $75.1{\pm}0.5%$, carbohydrate $24.2{\pm}0.5%$, crude protein $0.29{\pm}0.05%$, and crude ash $0.44{\pm}0.02%$. The kiwi jelly, JKJ-3 of overall acceptability values in the sensory test for flavor, sweetness, hardness, texture and overall favorite were 3.65, 3.35, 3.35, 3.50 and 3.60, respectively, with the addition of 20% pressed kiwi juice and 2.3% carrageenan.

Study on Nutritive Values of Whole Crop Barley Varieties Grown in a Paddy Field (논토양에서 재배한 청보리 품종의 사료가치 비교 연구)

  • This study was carried out to investigate the growth characteristics, yield, chemical compositions and nutritive yield of whole crop barley varieties harvested in a paddy field. The experimental design was arranged in a randomized block design with three replications. The treatments consisted of five whole crop barley varieties (Yuyeon, Youngyang, Wooho, Dami, Soman). The planting date was on 21 October 2009 and the samples were harvested on 21 May 2010. Dry matter yield was higher in Youngyang and Dami than other varieties (p<0.05). Crude protein, crude fat, crude ash, ADF and TDN were not significantly different. Crude fiber was the highest at Dami (31.4%), and Youngyang (31.4%) exhibited the lowest crude fiber compared to other varieties (p<0.05). NDF was higher in the order of Wooho > Dami > Soman > Yuyeon > Youngyang (p<0.05). Total mineral content was higher in the order of Youngyang > Wooho > Dami > Soman > Yuyeon (p<0.05). The contents of both essential and non-essential amino acids were not different among whole crop barley varieties. Yields of crude protein was the highest in Wooho (p<0.05), and yields of mineral, amino acid, free sugar and TDN were the highest in Youngyang. Based on the results from this study, it can be suggested that Youngyang and Wooho showed to have higher productivity and high nutritive values compared to other varieties.

Effects of Dietary of By Products for Seaweed (Eucheuma spinosum) Ethanol Production process on growth performance, Carcass Characteristics and Immune Activity of Broiler Chicken (해조류 에탄올 공정 부산물 급여가 육계의 생산성, 도체 특성 및 면역 활성에 미치는 영향)

  • The present study was performed to assess the worth of using the by products for seaweed (Eucheuma spinosum) ethanol production process (SEPPB) as broiler feeds. For this purpose, 225 broiler chicks (white mini broilers) were used as experimental animals. The control (Control group) was fed with the broiler feeds. 5% mixture (5% SEPPB group) was fed with a 5% SEPPB mixture feeds, and the 10% mixture (10% SEPPB group) was fed with a 10% SEPPB group mixture feeds. The experiment was repeated for five times and 15 birds were assigned in each experiment and the experimental period was five weeks. There was no difference in the rate of weight gain until the second week of the 5% SEPPB group and 10% SEPPB group. However, the weight gain rate was increased to 6.2% for the 5% SEPPB group and 11.4% for the 10% SEPPB group as compared to the Control group at the third weeks of the experimental period. There was no statistical significant difference in terms of feed FCR and feed intake. Analyses of the quality of chicken breasts showed that pH was 2.5% higher in the 5% SEPPB group and 2.3% higher in the 10% SEPPB group. Shearing force was 31.3% lower in the 5% SEPPB group and 14.7% lower in the 10% SEPPB group, while heating loss was 14.4% lower for 5% SEPPB group and 10% SEPPB group when compared to the Control group. No significant differences were observed in terms of moisture, protein, and crude ash components in chicken breast analyses. However, crude fat was 36.8% higher in the 5% SEPPB group when compared to the Control group (P<0.05). Analyses of fatty acid in chicken breast meat showed that stearic acid was significantly higher in the 10% SEPPB group (P<0.05) and linolenic acid was significantly higher in 5% SEPPB group and 10% SEPPB group in comparison to the Control group (P<0.05). Interleukin-2 (IL-2) in blood serum was 44% higher in the 5% SEPPB group and 36% higher in the 10% SEPPB group (P<0.05). Interleukin-6 (IL-6) was similar in both the Control and the 5% SEPPB group, but it was 62% higher in the 10% SEPPB group in comparison to the Control group (P<0.05). Analyses of serum chemical values revealed that albumin was the highest in the 5% SEPPB group, followed by the Control group and then 10% SEPPB group.
