Effects of Conventional and Organic Cultivation on Growth and Quality of Carrot (관행 및 유기농 재배가 당근의 생육과 품질에 미치는 영향)

  • 당근은 우리나라에서 재배되고 있는 채소 중에서 대표적인 비타민 A의 급원으로서 매우 중요한 근채류이다. 최근 친환경농산물에 대한 관심과 요구가 급증하면서 소비자들은 고품질 당근을 선호하고 있으나 유기농 당근생산에 대한 연구가 미비한 실정이다. 본 연구는 관행 및 유기농 재배가 당근의 생육과 품질에 미치는 영향을 구명하고자 실시하였다. 본 실험에 사용된 공시품종은 '조춘5촌당근'(세미니스, A), '선홍봄5촌당근'(농우종묘, B), '홍심5촌당근'(대농종묘, C), '춘홍5촌당근'(사카타, D), '하파5촌당근'(신젠타종묘, E), '홍심5촌당근'(경신종묘, F)으로 전체 6개 품종이며, 경기도 평택시 유천동 대농종묘(주) 육종연구소 N2, N3 하우스에 9월 8일 파종하였고 재배방법은 유기농 및 관행재배표준법에 준하여 실시하였다. 관행과 유기농 재배 후 12월 3일에 수확하여 엽중, 근중, 근장, 근경, 코어, 추근성, 근피색과 가용성 당함량을 조사하였다. 근피색은 Colorimeter(Minolta, CR-400)를 이용하여 Hunter값인 L(밝기), a(녹색-적색), 그리고 b(파란색-노란색)로 표시하였다. 가용성 당함량 조사는 HPLC를 이용하여 분석하였다. 엽중은 유기농 재배 F품종에서 26.0g으로 가장 무거웠고 전체적으로 유기농 재배구에 비해 관행 재배구에서 엽중이 무거웠다. 근장은 모든 품종에서 관행구에 비해 유기농 재배구에서 현저히 길게 나타나 재배 방법 간의 유의차를 보였으며 유기농 재배의 경우 근장이 17.9cm ~ 19.0cm 범위로 품종간 유의성은 없었다. 근중은 전체적으로 관행 재배구가 우수하거나 유기농 재배구와 비슷한 경향을 보였고, 특히 관행 재배구 B품종이 58.1g, A품종이 57.1g으로 가장 무겁게 나타나 재배방법 및 품종간 비교에서 우위를 나타냈다. 당근 뿌리의 명도를 나타내는 Hunter L값은 모든 품종에서 관행 재배구가 높게 나타났으며 특히 관행재배구의 최하위 L값(45.80)이 유기농 재배구의 최상위 L값(44.81)이 보다 높게 나타나 관행 재배를했을 경우 뿌리 광택이 더욱 우수함을 알 수 있었다. Hunter b값은 노란색을 나타내는데 B품종에서 유기농 재배구 19.68, 관행 재배구 19.55로 모든 품종 중에서 가장 높은 수치를 보였다. Fructose 함량은 D품종이 관행 재배구와 유기농 재배구에서 각각 $8.5mg{\cdot}g^{-1}FW,\;8.3mg{\cdot}g^{-1}FW$을 함유하여 가장 많게 나타났고, glucose 함량은 관행 재배구에서 D품종이 $41.5mg{\cdot}g^{-1}FW$을 함유하여 가장 많았고 유기농 재배구에서도 역시 D품종이 $35.7mg{\cdot}g^{-1}FW$을 함유하여 가장 많게 나타났다. Sucrose 함량은 모든 품종의 관행 재배구에서 현저하게 높게 나타났다. 가용성 당함량은 F품종만이 유기농 재배구에서 높게 나타났지만, 다른 5개 품종의 관행 재배구와 비교했을 때는 가장 적은 수치를 나타내 적절한 비배관리를 통한 관행 재배 방법이 가용성 당함량을 증가시킨 것으로 생각된다. 결론적으로 생육 및 품질은 관행재배에서 유기농 재배에 비해 우수하였고 근장은 유기농재배에서 길게 나타났고 가용성당람량 역시 관행재배에서 대체적으로 높게 나타났지만 품종에 따라 유기농재배에서도 높게 조사된 것도 있어 앞으로 유기농 재배에 적합한 당근 품종선발이 필요하다.

Effect of Glue Plant(Codium Fragile) on Physicochemical Characteristics of Dongchimi During Fermentation (청각채가 동치미의 발효 중 이화학적 특성에 미치는 영향)

  • The effect of glue plant(Codium fragile) on the Dongchimi fermentation was investigated by measuring physicochemical properties during fermentation at $10^{\circ}C$. Dongchimi was prepared with various levels(0, 0.5, 1.0 and 1.5%) of glue plant(Codium fragile). The pH of Dongchimi decreased slowly in all samples during fermentation. Total acidity of Dongchimi increased gradually during fermentation and total acidity of Dongchimi with glue plant(Codium fragile) was higher than that of control. Redox potentials decreased until 30 days of fermentation but increased thereafter. Reducing sugar content increased in the initial stage of the fermentation periods, and then decreased gradually. The reducing sugar content of Dongchimi with glue plant(Codium fragile) was higher than that of control. The content of total vitamin C was much higher in dongchimi with glue plant(Codium fragile). In color measurement, lightness value decreased gradually. However, redness and yellowness values increased gradually during fermentation but decreased thereafter. The content of hot water soluble pectin(HWSP) decreased as the fermentation proceeded, but the content of hydrochloric acid soluble pectin(HClSP) and sodium hexametaphosphate soluble pectin(NaSP) increased.

Physicochemical properties of kombucha with fruit peels during fermentation (과일 껍질을 첨가한 콤부차의 발효 중 이화학적 특성)

  • The study investigated the pH, acidity, soluble solids, total sugar, polyphenol, flavonoid, anthocyanin content, 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging, and color of kombucha with a variety of added fruit peels during the fermentation process. Pear, grape, plum, orange, apple, and golden kiwi peels were added during fermentation. The pH showed a decrease, while an increase in acidity was observed. An increase in soluble solids, which was higher in most experimental groups than the control group, was also observed. A decrease in total sugar was observed over time. However, an increase was observed in reducing sugar. On Day 0, higher total sugar and reducing sugar were detected in the peel addition group compared with the control group. The antioxidant capacity of polyphenol, flavonoid, anthocyanins, and DPPH radicals scavenging increased with fermentation and was higher in all addition groups, except for pear, compared with the control group. Except for grapes and plums containing high levels of anthocyanins, an increase in the L-value was observed over time, and an increase in the a-value of grapes and plums was also observed (p<0.05). The possible utilization of inedible fruit peel in kombucha was shown. Applying inedible fruit peels to kombucha is proposed to increase antioxidant content and modulate color and pH.

Physiochemical properties of Seok-jang (석장(간장소금)의 이화학적 특성)

  • Seok-jang is one of traditional seasonings prepared by solidification of the mixture of say sauce and salt for long period of aging time. In this study, the physiochemical properties of Seok-jang were investigated for the substitution of solar salt. Seok-jang exhibited highest mineral (P, Na, Fe, Mn, and Al) contents than those of solar salt and soy sauce, while showed lower soluble solids content than that of soy sauce. Seok-jang also exerted the highest pH value 7.70 compared to solar salt and soy sauce. Whereas magnesium and calcium contents of solar salts were 2.90 and 0.26 ppm, which were significantly higher than those of Seok-jang. In color values, $L^*$ value was highest in solar salt and lowest in say sauce, While the highest $a^*$ and $b^*$value were 6.19 and 18.2 observed in Seok-jang followed by a solar salt and soy sauce. On the other hand, less amount of insoluble solid and sand powder content were 0.03 and 0.07% found in Seok-jang, respectively. In conclusion, Seok-jang was suitable for the potentional substitution of natural salt ingredient.

Germinability and Physiological Properties of Maize Seeds Affected by Matriconditioning (Matriconditioning에 의한 옥수수 종자 활력증진과 생리적 특성변화)

  • To observe the effects of seed matriconditioning on the emergence, plumule growth, and seed physiological properties of normal and aged seeds of three corn(Zea mays L.) genotypes (dent, sugary, and shrunken-2), normal and artificially aged seeds were matriconditioned at 50, 75, 100, and 125% moisture contents of vermiculite at $25^{\circ}C$ for 24 hours and the germinability was examined at $25^{\circ}C$ and in cold test (7 days at 1$0^{\circ}C$followed by $25^{\circ}C$). Emergence rate, emergence speed, and plumule growth were smaller in the order of dent>sugary>shrunken-2. Matriconditioning did not affect the emergence rate of normal dent and sugary seeds, while it enhanced emergence speed and plumule growth. In contrast, the emergence rate, emergence speed, and plumule growth of normal shrunken-2 and aged seeds of all genotypes were enhanced as the moisture content of vermiculite increased up to 125% both at $25^{\circ}C$ and in cold test. Matriconditioning promoted $\alpha$-amylase activity and DNA and soluble protein contents, while it reduced the leakage of total sugars and electrolytes from the seeds when soaked in water.

Physicochemical and sensory properties of Yakhobak (Cucurbita maxima subsp. maxima) paste under different high pressure heating conditions (가열조건에 따른 약호박(Cucurbita maxima subsp. maxima) 페이스트의 이화학적 관능적 품질특성)

  • For the production of Yakhobak (Cucurbita maxima subsp. maxima) paste under various heating conditions, we steamed Yakhobak for roughly 20 min, followed by heating under high pressure treatment for 0 min (HHP0), 20 min (HHP20), 40 min (HHP40), and 60 min (HHP60). The physicochemical and sensory characteristics were subsequently investigated. Generally, no significant difference was observed in organic acid content and sensory characteristics score between Yakhobak paste treated with and without high-pressure heating. However, there was a significant difference in color value, soluble solids, and free sugar content. The L value for color of the group HHP0, untreated control Yakhobak paste (no high-pressure heating), decreased as time increased from 20 min to 60 min, with L values of 44.33, 44.25, and 42.86, respectively. The b value for the color of Yakhobak paste also decreased, showing a significant difference. Soluble solids and free sugar (fructose, glucose, sucrose) contents of the high-pressure heat-treated groups HHP20, HHP40, and HHP60 decreased compared with untreated group HHP0. Organic acid composition of Yakhobak paste included citric acid, malic acid, and fumaric acid, and the major organic acid was malic acid. Sensory score of HHP40 was the highest among all experimental groups in terms of overall preference, but there was no significant difference.

된장절임기간에 따른 새송이버섯의 품질 변화 특성

  • 절임식품은 우리 고유의 먹거리이지만 체계적인 연구가 부족하여 품질표준화가 이루어지지 않고 있어 우리의 전통식품을 세계적인 식품으로 개발하기 위해서는 전통식품을 과학화하고 현대화할 수 있는 연구가 필요하다. 새로운 된장절임 가공법을 개발하고자 blanching, salting, drying 등의 전 처리를 행한 후 된장 절임기간에 따른 새송이 버섯의 수분함량, 염도, 색상, 조직특성, 관능특성 등의 변화를 조사하였다. 된장절임기간에 따른 새송이 버섯의 수분함량 변화는 숙성시간이 경과함에 따라 감소하였으며 염도는 시간이 지남에 따라 증가하는 경향을 보였으나 무처구를 제외하고는 숙성 30일 이후부터는 변화가 거의 없었다. 숙성기간에 따른 색상의 변화를 보면 블랜칭이 매우 효과적으로 변색을 방지하였다. 숙성 30일부터는 모든 처리구에서 강도가 저하하는 경향을 보였으며 관능평가 결과 숙성 40일째에 맛과 조직감 그리고 기호도 등 모든 항목에서 B(B)와 E(BSD) 처리구가 높은 점수를 받아 관능적 품질 특성이 가장 우수하였다. 이상의 결과로 볼 때 전처리공정에 있어서는 7$0^{\circ}C$에서 10분간 블랜칭처리한 B(B)처리구가 가장 우수하였으나 된장 절임후 숙성기간이 경과함에 따라서는 7$0^{\circ}C$에서 10분간 블랜칭처리후 5% 염용액에서 72시간 절임한 후 4$0^{\circ}C$에서 30분간 탈염하고, 다시 5$0^{\circ}C$의 온도에서 3시간 건조시킨 E(BSD)처리구도 우수한 품질을 유지할 수 있어 새송이 버섯을 이용한 장류절임가공법으로 활용이 가능함을 확인하였다.d, citric acid 그리고 shikimic acid가 검출되었고 수확시기에 3품종에서 모두 malic acid 함량이 가장 높았고 malic acid와 citric acid의 함량이 풍수와 신고에서는 약 0.3%, 추황은 0.4% 이상으로 나타났다. 또한 3품종 모두에서 총산과 같은 추세로 성숙기의 유기산의 함량이 생장초기의 함량보다 많이 감소되었음을 알 수 있었다. 배의 가용성 고형물은 전체적으로 과실의 성장이 진행됨에 따라 증가하는 추세를 나타내었다. 풍수와 신고 과피의 총당과 환원당은 거의 같은 추세로 증가하였고 성숙이 가까워지면서 환원당이 감소하였다. 배 과육의 총당과 환원당 또한 거의 같은 추세로 증가를 하다가 수확 전 20일 혹은 30일부터 총당의 함량은 계속 증가하지만 환원당의 함량은 큰 변화가 없는 것으로 나타났다. 배 과실의 전반 성장과정에 있어서 전분함량은 감소하였고 총탄수화물의 함량은 과육에서는 증가하나 과피에서는 반대로 감소하는 경향을 보였다. 풍수의 전분함량은 최고 2.19%에서 0.23%로 감소하였고 신고에서는 0.43%로 추황에서는 0.48%로 감소하였다. 배 유리당은 fructose, glucose, sorbitol, sucrose 둥 4종류의 당이 검출되었고 3품종 모두에서 생장과정 중 비환원당인 sucrose 함량은 계속 증가하였고 fructose, glucose, sorbitol의 함량(추황의 sorbitol을 제외)은 생장이 촉진됨에 따라 증가하다가 다시 점차적으로 감소하였다. 이러한 결과는 총당과 환원당의 측정결과와 일치한 것으로 나타났다. 결론적으로 배의 성장에 따라 산 함량은 감소하였고 당 함량은 증가하였다.luco-pyranosi

  • Rice (Oryza sativa) cultivars show an impairment of growth and development in response to abiotic stresses such as drought, salinity, heat and cold at the early seedling stage. The tolerance to heat stress in plants has been genetically modulated by the overexpression of heat shock transcription factor genes or proteins. In addition to a high temperature-tolerance that has also been altered by elevating levels of osmolytes, increasing levels of cell detoxification enzymes and through altering membrane fluidity. To examine the heat tolerance in transgenic rice plants, three OsOPT10 overexpressing lines were characterized through a physiological analysis, which examined factors such as the electrolyte leakage (EL), soluble sugar and proline contents. We further functionally characterized the OsOPT10 gene and found that heat induced the expression of OsOPT10 and P5CS gene related proline biosynthesis. It has been suggested that the expression of OsOPT10 led to elevated heat tolerance in transgenic lines.

Monitoring of Respiration and Soluble Carbohydrate Changes in Mushrooms Following ${\gamma}$-Irradiation (전리에너지가 버섯의 호흡과 당에 미치는 영향)

  • Respiration and soluble carbohydrates of stored mushrooms (Agaricus bisporus) were determined to be associated with physiological and biochemical changes induced by ionizing radiation treatment which was applied for extending the shelf-life. Immediately after gamma irradiation at 1 to 3 kGy, the respiratory rate of mushrooms increased linearly with increasing doses of irradiation, and then it normarized after 2 days of storage at $9{\pm}1^{\circ}C$ and $80{\pm}7%$ RH. In the nonirradiated mushrooms, the respiratory peak was observed at around 5 to 6 days after storage, while irradiation treatment not only reduced respiratory activities of stored mushrooms, but prolonged the peak development. Moisture content and dry matter of mushrooms packaged in a paper box and polyethylene film were relatively constant during the storage for 20 days and the reducing sugar contents decreased significantly after 5 days of storage(p<0.01). Free sugars of mushroom pilei, which consisted of mannitol, trehalose and glucose, also markedly decreased at the earlier part of the storage period and thereafter, 2 kGy irradiation resulted in the reduction of their changes.

Comparison of the Chemical Properties of Soil and the Main Components of the Southern Ecotype Garlic Cultivar Cultivated in the Volcanic or Nonvolcanic Ash Soil of Jeju Island (제주의 화산회토양 및 비화산회토양에서 재배한 난지형 마늘의 주요성분과 토양의 화학적 특성 비교)

  • In this study, we analyzed and compared the constituents of Southern ecotype garlic cultivars, Namdo and Daeseo garlic, cultivated in volcanic and non-volcanic ash soil in Jeju Island and compared the soil properties in these regions. The volcanic ash soil in which Namdo garlic grew had higher electrical conductivity and more available sulfur, whereas the volcanic ash soil in which Daeseo garlic was cultivated had a higher amount of organic matter and total nitrogen. Also, non-volcanic ash soil in which Namdo garlic was cultivated had higher levels of available phosphorous. Namdo garlic cultivated in volcanic ash soil had high levels of total soluble solids and a high allicin content and Daeseo garlic exhibited a higher reducing sugar content. Furthermore, amongst the macroelements found in garlic grown on Jeju Island, potassium was highest, followed by sulfur, magnesium, calcium, and sodium. Iron was the most abundant micronutrient, followed by zinc, manganese, and copper. These results will be of interest to farmers aiming to cultivate high-quality garlic.
