  • This study was carried out to prepare powdered smoked-dried mackerel which can be used as a soup base, and to examine storage stability and the taste compounds of Products. Raw mackerel are filleted, toiled for 10 minutes and pressed to remove lipids, and then soaked in extract solution of skipjack meat. This soaked mackerel are smoked 3 times to $10-12\%$ moisture content at $80^{\circ}C$ for 8 hours. And the smoked-dried mackerel were pulverized to 50 mesh. Finally, the powdered smoked-dried mackerel were packed in a laminated film $bag(PET/Al\;foil/CPP:\;5{\mu}m/15{\mu}m/70{\mu}m,\;15\times17cm)$ with air(product C), nitrogen(product N) and oxygen absorber(product O), and then stored at room temperature for 100 days. The moisture and crude lipid content of powdered smoked-dried mackerel was $11.3-12.3\%,\;12\%$, respectively, and water activity is 0.52-0.56. And these values showed little changes during storage. The pH, VBN and amino nitrogen content increased slowly during storage. Hydrophilic and lipophilic brown pigment formation showed a tendency of increase in product(C) and showed little change in product(N) and (O). The TBA value, peroxide value and carbonyl value of product(N) and (O) were lower than those of product (C). The major fatty acids of products were 16:0, 18:1, 22:6, 18:0 and 20:5, and polyenoic acids decreased, while saturated and monoenoic acids increased during processing and storage of products. The IMP content in products were 420.2-454.2 mg/100 g and decreased slightly with storage period. And major non-volatile organic acids in products were lactic acid, succinic acid and $\alpha-ketoglutaric$ acid. In free amino acids and related compounds, major ones are histidine, alanine, hydroxyproline, lysine, glutamic acid and anserine, which occupied $80.8\%$ of total free amino acids. The taste compounds of powdered smoked-dried mackerel were free amino acids and related compounds (1,279.4 mg/100 g), non-volatile organic acids(948.1 mg/100 g), nucleotides and their related compounds (672.8 mg/100 g), total creatinine(430.4 ntg/100 g), tetaine(86.6 mg/100 g) and small amount of TMAO. The extraction condition of powdered smoked-dried mackerel in preparing soup stock is appropriate at $100^{\circ}C$ for 1 minute. Judging from the results of taste and sensory evaluation, it is concluded that the powdered smoked-dried mackerel can be used as natural flavoring substance in preparing soups and broth.

  • To determine the incidence rate of child battering and related factors, a questionnaire survey was Conducted on 1,255 children in 4th and 5th grades of two elementary schools (one in the upper economic class area with 519 students and the other in the lower economic class area with 504 students) in Taegu and two schools in rural areas of Kyungpook province (120 and 112 students, respectively) from 1st May to 10th May 1990. Total number of children who were battered during one-month period (1-30 April 1990) prior to the survey was 918 (73.1%). Among the battered children 87 (6.9%) were severely battered (twice or more in a month by kicking or more severe method) and 831 children (66.2%) were moderately battered (all other battering than severe battering). The percentage of battered children and degree of battering were not significantly different between two schools in Taegu and between urban and rural areas. Common reasons for battering were disobediance (61.9%), making troubles (34.9%), and poor school performance (33.3%). However, 16.1% of severely battered children responded that the perpetrators battered them to wreak their anger and 5.7% of them did not know the reason why they were battered. A majority of the battered children (65%) regretted their fault after being battered but 20.7% of the severely battered children wanted to run away and 9.2% of them had an urge to commit suicide. While most of the physical injuries due to battering were minor as bruise (52.7%) but some of them were severe, e.g., bone fracture (2.5%), skin laceration (1.5%), and loss of consciousness. (0.2%). The common psycho-behavioral complaints of the severely battered children were unwillingness to study (31%), unwillingness to live (17.2%), and reluctance to go home (13.8%). The incidence rate of severe battering was significantly higher (p=0.018) among the children living in a quarter attached to a store (14.0%) than the children living in an apartment (6.6%) and individual house (6.2%). The incidence rate of severe battering was higher among children living in a rental house (8.4%) than children living in their own house 6.3%) (p=0.005). The children of father only working (5.1%) and mother only working (4.5%) had a lower incidence rate of severe battering than the children of both parents working (9.1%) and both parents unemployed (20.7%) (p=0.006). More children were battered when there was a sick family member (80.8%) compared with the children without a sick family member (71.4%) (p=0.001). The incidence rates of severe and moderate battering increased as the frequency of quarreling between mother and father increased (P=0.000). The percentage of unbattered children was higher among children whose father's occupation was professional (39.4%) than that of the total study subjects (26.9%) (p<0.001).

  • To identify the physiological phenomena on the sudden wilting of japonica/indica crossed varieties, Pot experiment was carried out under the heavy N application with various levels of potassium in Japan. The results obtained are as follows. 1. Sudden wilting was occurred in both varieties used, Yushin and Milyang 23. The former showed a higher degree than the latter. 2. Sudden wilting was occurred into two types, one at early ripening stage and the other at late ripening stage. The former type was found in the field with low potassium supply and the latter was seemed to be related to varietal wilting tolerence. 3. By the investigation of concerning the effective tillering rate and the change of dry weight of each organ at the heading stage, it was inferred that the growth status from young panicle formation stage to heading stage were related to sudden wilting tolerence. 4. Manganese content at heading stage, ratio of Fe/Mn and Fe. Fe/Mn in stern at late ripening stage and $K_2$ O/N ratio of stem at harvesting stage were recognized as the specific factors in connection with sudden wilting. Mn content in the sudden wilting rice plant was already in creased remarkably at heading stage. In relation to root age and absoption characteristics of Mn, the senility of root before heading stage was inferred as the cause of increase the value of Fe/Mn or Fe. Fe/Mn. 5. The $K_2$ O/N ratio of culm at harvesting stage was lower in upper node than lower node in relation to sudden wilting. And it was well accordance with the fact that the symptoms of sudden wilting proceeded from upper leaf to lower leaf. These phenomenon was different from the usual one that the effect of potassium deficiency was more remarkable in lower node than upper node. 6. All varieties which have a condition of potassium deficiency have a high degree of nitrogen content of leaves at heading stage and the $K_2$ O/N ratio of each organ was low, Especialy, $K_2$ O/N ratio is much lower in sheath and culm than leaves.

  • This study fulfilled to investigate the feed efficiency, tissue selenium distribution, carcass characteristic and economic value in finishing Hanwoo steers fed organic selenium mix (OSM) which included seleno-yeast, rumen culture and other microbial supplements. Forty five finishing Hanwoo steers were tested for 4 months dividing to three feeding groups: OSM add as 0.5 ppm Se of DM feeds (0.5 ppm OSM), OSM enriched add as 1.0 ppm Se of DM feeds (1.0 ppm OSM) and basal diet without OSM (control). The total weight gains, the average daily gains and the feed intakes were not differ in treatments (p > 0.05). No differences (p > 0.05) were noted for hot carcass weight, loin eye area, backfat thickness, meat yield index, meat color, fat color, tenderness and maturity. However, the 1.0 ppm OSM showed better performances for feed requirement, TDN per gain, meat yield grade and meat quality grade compared to other groups. Tissue selenium distribution was increased by organic selenium feeding: higher Se concentration in liver and rump of 0.5 ppm OSM (p < 0.05), and kidney, liver, sirloin and rump of 1.0 ppm OSM (p < 0.05) than the tissues of control group. Generally, tissue selenium was the highest value in 1.0 ppm OSM and showed higher concentrate in order; kidney, liver, sirloin and rump. The income over feed cost was 1.06-fold higher in 1.0 ppm OSM than control group. In conclusion, organic selenium mix supplementation and its amounts were not influenced to feed intake, body gain and carcass characteristic but significantly increased tissue selenium. Therefore, these results suggest that finishing Hanwoo steer fed an enriched organic selenium mix with proper probiotics is able to produce “high-Se” beef as high bioavailable form as well as create a beneficial opportunity on Hanwoo farm.

  • The consumption of leaf vegetables has been steadily increasing in Korea. Leaf vegetables are used for "Ssam (vegetable wrap-up), eaf vegetables has been steadily increasing in Korea. Leaf vegetables are used for asoned condiments inside several layers of young vegetable leaves. This study investigated the effect of air temperature on the growth and phytochemical contents of beet (Beta vulgaris L.) and Ssamchoo (Brassica lee L. ssp. namai) grown in a closed-type plant factory system where fluorescent lamps were used as an artificial light source. Seeds of beet and Ssamchoo were sown in a peat-lite germination mix. The roots of 20-day-old seedlings were washed, and the seedlings were planted on a styrofoam board and grown in hydroponic beds for 25 days under fluorescent light. Plants were exposed to one of three different air temperature regimes (20, 25 and $30^{\circ}C$ during the day combined with $18^{\circ}C$ during the night), which were monitored with a sensor at 30 cm above the plant canopy. Increased plant height and leaf area were observed in beet at $25^{\circ}C$ and $30^{\circ}C$ compared to $20^{\circ}C$. For Ssamchoo, the greatest plant height, leaf area, fresh weight and dry weight were obtained at $20^{\circ}C$. Ascorbic acid content of beet and Ssamchoo leaves were highest at $30^{\circ}C$. In beet, total polyphenol and flavonoid contents were higher at $20^{\circ}C$ (42.4, $197.0mg{\cdot}g^{-1}DW$) and $25^{\circ}C$ (46.9, $217.0mg{\cdot}g^{-1}DW$) than $30^{\circ}C$ (22.4, $88.0mg{\cdot}g^{-1}DW$). In Ssamchoo, total polyphenol and flavonoid contents were also higher at $20^{\circ}C$ (79.2, $268.2mg{\cdot}g^{-1}DW$) and $25^{\circ}C$ (66.3, $258.3mg{\cdot}g^{-1}DW$), respectively, than $30^{\circ}C$ (53.7, $134.7mg{\cdot}g^{-1}DW$). Hence, the optimum temperature appears to be $20^{\circ}C$ for growing both beet and Ssamchoo in a closed-type plant factory system with fluorescent light.

  • A field experiment was carried out to compare the growth characteristics, forage yield and nutritive value of four $sorghum{\times}sudangrass$ hybrids (Sorghum bicolor (L.) Moench) grown under application of animal manure in 1995. The application amount of animal manure were 40MT in cattle manure, 30MT/ha in swine and poultry manure. The four NLCF's recommended hybrids used in this study were Pioneer 988, TE-Haygrazer and NC+ 855 (heading type), and Jumbo(headless type). The plant height was ranged between average 219 and 234cm, regardless of animal manure type and cultivar. NC+ 855 was classified as early maturing cultivar(first heading date was 1st July), and then TE-Haygrazer(4th July), and 988 was latest maturing type(12th July) among the cultivars used. Jumbo was going on vegetative stage in this experiment. The dry matter(DM) yield of four $sorghum{\times}sudangrass$ hybrids were ranged between 11.27 and 13.92MT in cattle manure, 11.46 and 12.77MT in swine manure, and 9.70 and 13.52MT/ha in poultry manure. No significant differences in forage yield were found among the cultivars used, but the DM yield of NC+ 855(13.40 MT/ha) was slightly higher than those of 988(11.31MT), Jumbo(11.26MT) and TE-Haygrazer(11.77MT). The nutritive value of $sorghum{\times}sudangrass$ hybrids was very similar among the cultivars. The crude protein yields were 1,526kg in 988, 1,429kg in Jumbo, 1,502kg in TE-Haygrazer, and 1,659kg in NC+ 855. However, there were no significant differences in protein yield. In conclusion, there were no differences of forage yield and nutritive value among four recommended $sorghum{\times}sudangrass$ hybrids, although maturity was different among heading-type hybrids.

  • The purpose of this study was to prepare low methoxyl pectins (LMPs) by pectinesterase (PE) using waste tangerine peels and to compare the chemical, physical and gelling properties of the prepared pectins with the commercial LMP. The LMPs were prepared by treating albedo with 0.25M $Na_2CO_3$ to activate the PE. PE was then inactivated by heating. The sample was centrifuged and the supernatant was collected. LMP was obtained as precipitate by adding alcohol to the collected supernatant. The amounts of extractible pectins in albedo were 12.71~12.98% on a dry weight basis. Methoxyl contents of LMPs prepared by treating albedo with PE at pH 7.5 for 10min, at pH 8.5 for 10min, 20min and 30min were 5.12%, 4.27%, 3.08%, 1.85% respectively, demonstrating that the methoxyl contents of the preparations decreased as the degree of treatment albedo with PE increased. The acetyl contents of the preparations ranged from 0.09% to 0.12%, the values of which do not interfere with gel formation. The anhydrouronic acid contents of the prepared pectins were in the range of 94.2%~94.8%. The values of viscosity and molecular weights of the prepared LMPs tent to decrease as the degree of PE action on albedo increased. The textural value of the prepared LMP gels determined by Consistometer, Ridgelimeter and Instron denonstrated that the excess treatment of albedo with PE significantly impaired the gelling properties of the preparations.

  • The purpose of this study is to aid the teaching strategy for the teacher by investigating the preconception of the earthquake for 4th grade students in elementary school before learn the curriculum. For this, 31 grade students who lived in Seongnam in Gyeonggi province were interviewed with the questionnaire. The following is the findings. On the definition of an earthquake, 64.9% of the students had scientific conception. On the question of 'what happens on the ground when there is an earthquake', 59.2% of the students responded shaking or cracking of the earth, ground, things or building. On the question of 'what a person should do when there is an earthquake', most of the students responded by more than two answers. In contrast, on the causes of an earthquake, there were the largest percentage (35.3%) students who answered they didn't know. Except for one student, there were no students had talked about scientific conception. On the question of 'what happens below when there is an earthquake', 26.3% of the students responded they didn't know. On the place where an earthquake occurs rather frequently, 22.2% of the students mentioned an island. On the reason, 39.9% of the students responded they didn't know and there were no students with scientific answers. This study showed 4th grade students had scientific conception on the definition of an earthquake, and they had many experience interaction with external environment on 'what happens on the ground when there is an earthquake', 'the place where an earthquake occur rather frequently'. However the students had relatively small experience on the causes of an earthquake, on 'what happens below the ground when there is an earthquake', and earthquake-prone areas. Based on this study, additional research must be conducted on science in which the students' preconceptions is investigated to connect back to curriculum development. In addition, consideration must be given on how to integrate the thinking processes of students during the curriculum development process.
