Maillard reaction products (MRPs) were produced from aqueous solution of various sugars with hydrolyzed wheat gluten (HWG) with different temperatures, pressures, pH values and solvents. The physicochemical properties of MRPs were investigated and DPPH and hydroxyl radical scavenging activity and sensory properties were also assessed. MRPs from ribose and HWG evidenced the highest preference for meaty flavor and antioxidant activity and also evidenced higher antioxidant activity with larger pH reductions and higher browning index increases than were observed in other MRPs. The antioxidant activities were increased with increased reaction temperature and pressure. The most preferred meaty flavor was obtained from MRPs with ribose at 140$^{\circ}C$ in an oil bath with the pH adjusted to 9 in water as a solvent, and heated for 30 mins.

A microorganism hydrolyzing carboxymethylcellulose (CMC) was isolated from seawater, identified as Psychrobacter aquimaris by analysis of 16S rDNA sequences, and named P. aquimari LBH-10. This strain produced an acidic carboxymethylcellulase (CMCase), which hydrolyzed carboxymethylcellulose (CMC), cellobiose, curdlan, filter paper, p-nitrophenyl-$\beta$-D-glucopyranoside (pNPG), pullulan, and xylan, but there was no detectable activity on avicel and cellulose. The optimal temperature for CMCase produced by P. aquimari LBH-10 was $50^{\circ}C$ and more than 90% of its original activity was maintained at broad temperatures ranging from 20 to $50^{\circ}C$ after 24 hr. The optimal pH of the CMCase was 3.5, and more than 70% of its original activity was maintained under acidic conditions between pH 2.5 and 7.0 at $50^{\circ}C$ after 24 hr. The optimal pH of CMCase produced by P. aquimaris LBH-10 seems to be lower than those produced by any other bacterial and fungal strain. $CoCl_2$, EDTA, and $PbCl_2$ at a concentration of 0.1 M enhanced CMCase-produced P. aquimaris LBH-10, whereas $HgCl_2$, KCl, $MnCl_2$, $NiCl_2$, and $SrCl_2$ inhibited it.

A numerical study on lifted flame structure in impinging jet geometry with syngas composition ratio was investigated. The numerical calculations including chemical kinetic analysis were conducted using SPIN application of the CHEMKIN Package with Davis-Mechanism. The flame temperature and velocity profiles were calculated at the steady state for one-dimensional stagnation flow geometry. Syngas mixture compositions were adjusted such as $H_2:CO=10:90(10P)$, 20 : 80 (20P), 30 : 70 (30P), 40 : 60 (40P), 50 : 50 (50P). As composition ratios are changed from 10P to 50P, the axial velocity and flame temperature increase because the contents of hydrogen that have faster burning velocity increase. This phenomenon is due to increase in good reactive radicals such as H, OH radical. As a result of active reactivity, the burning velocity is more faster and this is confirmed by numerical methods. Consequently, combustion reaction zone was moved to burner nozzle.
To prepare oligouronic acids from high-molecular-weight alginates, sea tangle (Laminaria japonica) alginates were hydrolyzed at various pHs for 1 hr at 80$^{\circ}C$. The effects of hydrolysis pH (HpH) on the average molecular weight (AMW) and MW distribution ratios (DRs) in the hydrolyzed alginates were investigated. As HpH decreased, the DRs of the alginates with MW>500 kDa and MW=300-500 kDa decreased exponentially, while it increased exponentially for MW<50 kDa. For MW=100-300 kDa, DR increased exponentially as HpH fell from 5.0 to 3.5, and then decreased exponentially. Similarly, for MW=50-100 kDa, DR increased exponentially as HpH increased to 1.0 from 5.0, and then decreased exponentially. As HpH decreased, the MW cutoff size and AMW of alginates fraction with the highest DR were decreased. For HpH 4.5 and 5.0, the MW cutoff size with the highest DRs was MW=300-500 kDa; the DRs were 28.9 and 32.6%, respectively; and the AMW of both was about 400 kDa, for HpH 3.5 and 4.0, the cutoff size was MW=100-300 kDa; the DRs were about 28%: and the AMWs were both about 200 kDa. For HpH 3.0, the cutoff size was MW=50-100; the DR was 29.0%; and the AMW was 73 kDa. For HpH values below 2.0, the MW cutoff size with the highest DRs was MW<50 kDa, and all of the AMWs were below 28 kDa.
Some of thermophilic fungi which has growth-promoting effect on Pleurotus ostreatus were isolated from compost during high temperature fermentation process. The temperature optima of 7 isolated thermophilic fungi were $50^{\circ}C$ on PDA media. Isolated strains S-1 and S-2 have the best mycelial growing rate, so these isolates were expected as excellent thermophilic fungi for high temperature composting and mycelial growing of oyster mushroom. In liquid culture, the optimal pH of thermophilic fungi observed variously, pH 7.0-10.0 but most of thermophilic fungi grow well in pH 8.0-pH 9.0 and the final pH of media after cultured was done pH 5.5-6.0. In liquid culture of thermophilic fungi on the optimal condition, S-2 have the best mycelial growing rate. The growing rate of thermophilic fungi S-1, S-2, S-5, and S-10 on lignocellulosic substrates was good but Humicola grisea var. thermoidea, well know thermophilic fungi which has growth-promoting effect on Agaricus bisporus, was poor and which was well grown on PDA at $50^{\circ}C$, pH 7.0. Isolated strain S-1 was identified as Trichophyton sp. and other 6 strains were identified as Sepedonium sp. by morphological characteristics.
In this study, recycled aggregates crushed from waste concrete were sorted into three groups, 10-13 mm, 13-20 mm, and 20-25 mm. They were treated in different ways and then their crushability was evaluated for each treatment. Coffee waste was used for reducing their pH level. The pH of recycled aggregate was almost 11, regardless of aggregate sizes. The pH of coffee waste was nearly 5 and 10, 30, or 50 g of coffee waste was mixed with 1000 ml of distilled water and recycled aggregates. The lowest pH was about 6.2 when 50 g of coffee waste was mixed. Aggregates were treated with microwave or soaked for 1 day in vinegar (pH = 2) for neutralization reaction. Microwave treated and neutralized aggregates showed 3.3% and 6.2% higher crushing values compared to non-treated one, respectively. Neutralized treatment was more effective for crushing. In crushing tests, a sample height of 120 mm was tried, which gave 6.3% higher crushing value. A four stepped loading with each 100 kN gave 7.1% higher crushing value, compared to standard 100 mm height and 400 kN continuous loading.
The rate constants for the hydrolysis of the derivatives of N-(p-nitrophenyl)-benzohydrazonyl azide (p-$CH_3,\;p-CH_3O,\;p-NO_2$, p-Cl, p-Br) have been determined by UV spectrophotometry in 50% dioxane-water at $25^{\cicr}C$ and a rate equation which can be applied over wide pH range was obtained. Below pH 5, the rate of hydrolysis of hydrazonyl azides is accelerated by electron-donating group ($\rho$ = -0.47), whereas at the pH values greater than 7, the $\rho$-value is 0.68. The effect of salt, solvent, substituent and azide ion on the rate of hydrolysis are rationalized in terms of $S_N1$ and $S_N2$ mechanism; below pH 5, the hydrolysis proceed through $S_N1$, however, above pH 7, the hydrolysis is started by the attack of hydroxide ion and in the range of pH 5∼7, these two reactions occur competitively.
Cellulases were isolated from both healthyl(PC) and virus0infected penicillum chrysogenum(PCV) in the wheat bean culture, and some properties of the enzymes were studied. 1) At $37^{\circ}C$, pH 6, 4 and 6day's culture the maximal enzyme yield was obtained in both PC and PCV. 2) The optimum temperature for the PC cellulase was at $50^{\circ}C$, and that for the PCV enzyme was the same. 3) The optimum pH for the PC enzyme was at 5.0, whereas the PCV enzyme was at 6.0, indicating that they are isozymes. 4) When Na-CMC was used as a substrate, PC enzyme was twice as high as the activity of PCV enzyme.
In this research, the has been speculation about effects of pH, alkalinity, and chloride, each of which are major factors in water for the corrosion of copper pipes frequently used as the distribution system throughout the world. It is believed that these factors release a corrosion by-product. The results show the following that the first, for each water sample of pH 7, 8 and 9, various concentrations of alkalinity at 10, 50, 100, 150 mg/L was tested. It was found that conditions of higher pH led to decreased concentrations of copper by-product. For each pH, higher alkalinity produced higher concentrations of copper by-product. the second, higher chloride concentrations led to decreased concentrations of copper by-product. Apparently this was due to the Nantokite(CuCl) formation on the inner walls of the copper pipes with the passage of time. The third, when 25, 50mg/L of chloride were added, the average decreasing rate of copper release concentration was 45.7, 66.7%, respectively.
This study was performed to investigate the protease activity from fruit body of Sarcodon aspratus and its features. The specific protease activity was increased with the increasing purification steps, 2.62 times by desalting, 17 times by CMC column chromatography, 113.8 times by DEAE-Sephadex A-50 column chromatography, and 728.3 times by Sephadex G-75 column chromatography. Proteases were identified as two different enzymes having different isoelectric points at pH 4.35 (its recovery rate 8%) and pH 4.7 (its recovery rate 3.5%). Those proteases were purified by 3,025 folds and 3,257 folds in terms of specific activity. Two proteases having different isoelectric points had similar enzymatic properties. This protease was estimated to be 43,000 daltons of molecular weights by SDS-PAGE. This protease with optimum pH 4 was almost stable in the pH range of 4~7. Optimal temperature of protease activity was 40 to 50℃, and the protease activity was completely inhibited at 70℃ for 30 min.
