부산, 경남지역 청각장애 고등학생의 영양지식, 식행동 및 영양소 섭취 상태 (A Study on the Nutrition Knowledge, Dietary Behaviors and Nutrient Intakes of the Deaf-mute High School Students)

  • This study was conducted to provide basic information on the nutritional status and dietary behaviors of the deaf teenagers. The subjects of this study were 87 deaf-mute high school students in Pusan and Kyung-nam area and, in comparison,90 general high school students in Ham-an area. The survey was investigated by using a self-administered questionnaire. The results were as follows: Deaf-mute group was consisted of 63.2% male and 36.8% female, and mean of height and weight of male were 171.2 cm and 61.9kg, female were 158.0cm and 51.7kg. Obesity index and body mass index (BMI) were normal range in both deaf-mute and normal groups. The average nutrition knowledge score of the deaf-mute group was 6.8 $\pm$ 1.5 out of possible 10 points, that was significantly lower than 7.3 $\pm$ 0.8 of the normal group (p<0.01). The mean of self-control and conscious control scores in the eating behaviors of the deaf-mute group were 2.6 $\pm$ 1.2 and 2.4 $\pm$ 1.3 out of possible 5 points from each item, which was significantly higher than 2.1 $\pm$ 1.3 and 1.8 $\pm$ 1.4 of the normal group (p< 0,01). Nutrients consumed below 90% of Korean RDA were energy (79.9%), Ca (71.5%) for deaf-mute male students and Ca (88.5%) for deaf-mute female students. Energy (71.4%), protein (87.8%), Ca (74.8%), vitamin B$_1$ (83.4%) intake of normal male students and energy (72.8%), Ca (71.2%), Fe (78.7%) intake of normal female students were below 90% of Korean RDA. Energy, protein, fat, vitamin B$_1$, niacin intake of deaf-mute male students were significantly higher than normal male students and all nutrients intake of deaf-mute female students were significantly higher than normal female students. By the correlation of nutrients intakes with nutrition knowledge, there was positive correlation with the intakes of Ca, Fe, vitamin A, vitamin B$_2$, and vitamin C in the deaf-mute group, while there was negative correlation with the nutrients intakes (except for protein and fat) in the normal group. The amount of meal, breakfast, regularity of meal time, frequency of snacks showed a positive relation to nutrient intakes in deaf-mute group and amount of meal, breakfast, regularity of meal time, frequency of overeating showed a positive relation to nutrient intakes in normal group. The nutrition knowledge had no correlation with food habits or eating behaviors in both groups.(Korean J Nutrition 35(9) : 982~995, 2002)

  • To prepare soybean curds, the concentration of $CaCl_2,\;MgCl_2,\;CaSO_4$ and glucono-%{\delta}$-lactone fresh solution as coagulants were determined by transmittance of whey using spectrophotometer. The concentrations of four coagulants at which the transmittance had the highest value were chosen. Moisture content, yield and protein recovery of soybean curds prepared with four coagulants were investigated. The textural properties were examined by Instron Universal Testing Machine, and sensory evaluation was carried out. The microstructure of soybean curds was examined by SEM. Soybean curds obtained with $CaCl_2\;and\;MgCl_2$ were hard and coarse, and had roasted nutty taste, whereas those with $CaSO_4$ and GDL revealed very smooth, soft and uniform. Soybean curd prepared with GDL had the lowest acceptability because of sour taste. The texture and acceptability of soybean curds were influenced by the type of coagulant.

  • Soy curd was prepared using imported soybean(U.S.grade A) and changes in quality were evaluated using different types and mixtures of coagulants(CaCl$_2$, CaSO$_4$, MgCl$_2$, MgSO$_4$, and glucono-$\delta$-lactone). Quality of soy curd was determined by rheological properties, yield, and color. Based upon the characteristics of each coagulant, mixtures of two coagulants were prepared in various ratios. The mixture of CaSO$_4$or MgCl$_2$with glucono-$\delta$-lactone(GDL), and that of CaSO$_4$or MgCl$_2$with MgSO$_4$resulted in soy curd of good quality in terms of rheological properties and yield.

고지방식이와 스트렙토조토신으로 유도한 당뇨마우스에서 Chlorogenic Acid의 혈당강하 및 항산화 효과 (Chlorogenic Acid Enhances Glucose Metabolism and Antioxidant System in High-fat Diet and Streptozotocin-induced Diabetic Mice)

  • 본 연구는 고지방식이와 STZ으로 유도한 제2형 당뇨마우스에게 CA를 급여하였을 때 체내 당대사와 항산화방어계에 미치는 영향을 규명하고자 하였다. 4주령 ICR 마우스를 고지방식이(전체 열량의 37% 지방)를 4주간 급여하여 인슐린저항성을 유발한 후 STZ(100 mg/kg body weight)을 일회복강주사 하였다. 7일 후 공복 시 혈당이 14 mmol/L(250 mg/dL)인 마우스만을 사용하여 난괴법으로 당뇨대조군, 0.02% CA군, 0.05% CA군으로 나누어 6주간 사육하였다. 실험 6주 동안 당뇨대조군에 비하여 두 CA 급여 수준은 혈당을 효과적으로 낮추었으며 내당능과 인슐린내성을 개선하였다. 또한 혈장 중의 렙틴 함량은 CA 급여 시 당뇨대조군에 비하여 높았으나 인슐린과 C-peptide 함량 및 체중에는 영향을 미치지 않았다. CA 급여는 당뇨대조군에 비하여 간조직의 GK활성을 높였고 G6Pase 활성은 낮춘 반면, PEPCK 활성에는 영향을 미치지 않았다. 간조직 중의 SOD와 CAT 활성은 CA급여군에서 당뇨대조군에 비하여 유의적으로 높았으나, GSH-Px 활성과 적혈구의 항산화 효소 활성은 실험군간 유의적인 변화가 없었다. 두 수준의 CA 급여는 간조직과 적혈구 중의 지질과산화물 함량을 당뇨대조군에 비하여 유의적으로 낮추었다. 이와 같이 CA는 간조직에서 당 이용을 높이는 반면, 당 신생을 억제함으로써 혈당저하에 효과적이었으며 항산화방어계를 활성화하여 지질과산화물 생성을 개선하는데 효과적인 것으로 나타났다.

우리나라 폐경전 여성에서 칼슘, 단백질, 인의 섭취상태가 골밀도에 미치는 영향 (Effects of Dietary Calcium, Protein, and Phosphorus Intakes on Bone Mineral Density in Korean Premenopausal Women)

  • Effects of dietary calcium(Ca), protein, and phosphorus(P) intake on bone mineral density (BMD) were investigated in 129 Korean premenopausal women(age 31-54 years) without diagnosed disease. BMD was measured at the spine(vertebrae L2-4) and femur(neck, Ward's triangle and trochanter). By stepwise multiple regression analysis it was shown that protein, Ca, and P intakes affected most significantly on BMD at the vertebrae L2-4, protein and P intakes affected most significantly on BMD at the femoral neck and Ward's triangle, and body mass index(BMI) affected most significantly on BMD at the trochanteric region. When ate-matched BMD % at the vertebrae L2-4 and all femoral sites was grouped by three levels(<90%, 90-99%, >=100%), only at the vertebrae L2-4>=100% and 90-99% groups had higher Ca intakes than <90% groups. When Ca, protein and P intakes of the recommended level for Korean(RDA) were grouped by three levels (Ca or P ; <=650mg/d, 650-750mg/d, >=750mg/d, Protein ; <=55g/d, 55-60g/d, >=65g/d), only at the vertebrae L2-4>55g/d of protein intake had higher age-matched BMD % than <=55g/d intake, >=750mg/d of Ca and P intakes, age-matched BMD % than <=650mg/d. In RDA range of Ca, protein, and P intakes, age-matched BMD % of the vertebrae L2-4 and all femoral sites was greater than 90%. Correlation between Ca intake and vertebral BMD was examined closer. There was more significant linear correlation between vertebral BMD and Ca intake below 800mg/d(r=0.346, p<0.0001)than above(r=0.376, p<0.019), implying a threshold effect and vertebral BMD was better expressed as a function of the logarithm of calcium intake(r=0.3881, p<0.0001). These results suggest that Ca, protein, and P intakes greater than RDA help to maintain proper BMD in middle-aged prementopausal women. Especially dietary Ca have important role in increasing the vertebral BMD and 800mg/d of Ca intake is optimum amount.

  • This study examined the effects of excess intake of calcium (Ca) and iron (Fe) supplement on bone loss, nephrocalcinosis and renal function in osteoporotic model rats. Seven-week-old female rats were first fed a Ca-deficient diet for four weeks after ovariectomy operation, and then one of nine experimental diets for additional eight weeks, containing three levels of Ca, normal (0.5%) or high (1.5%) or excess (2.5%) and three levels of Fe, normal (35ppm) or high (210ppm) or excess (350ppm). The osteoporotic model rats showed a remarkable increase in body weight, serum alkaline phosphatase (ALP) and decrease in breaking force, Ca, P, Mg contents of femur. Serum Ca concentration was not significantly affected by dietary Ca and Fe levles. Liver Ca content increased in rats fed a high-and excess-Ca diet. Kidney Ca content and microscopic Ca deposition remarkably increased in osteoporotic model rats compared to control group, and showed a tendency to decrease in rats fed a excess-Ca diet. Breaking force of femur increased with increasing dietary Ca levels, but Ca, P contents of femur and serum ALP were not significantly affected by dietary Ca and Fe levels. Serum total protein decreased in rats fed a excess-Ca diet, BUN increased in rats fed a excess-Ca diet, while serum uric acid and creatinine were not significantly affected by dietary Ca levels. Urinary creatinine, GFR increased in rats fed a high-and excess-Ca, diet, and GFR was highest in rats fed a excess-Ca/excess-Fe diet. These results suggest that excess intake of Ca may increase breaking force of femur, but not increase mineral contents of femur, and decrease kidney function. Furthermore, excess intake of Fe and Ca concurrently may aggravate kidney function leading to potential health problems in ovariectomized osteoporotic model rats.

  • It was hypothesized that variations within the range of usual calcium(Ca) and sodium(Na) intakes of Korean influence bone mineral density(BMD) in healthy premenopausal women The relationship of nutrient intake urinary excretion physical activity and circulating IGF-1 level with spine({{{{ { L}_{2 } }}}}-{{{{ { L}_{4 } }}}}) and femur BMD was determined in 47 normal premenpausal women. There was a positive relationship between BMD of the lumbar spine and body weight. The BMD of femoral neck was positively correlated with Ca and protein intakes from animal source and circulating IGF-1 level. There was a negative relationship between femur BMD and both Na intake and urinary excretion. The complex interrelations between femur BMD regression analysis, From this analysis. Ca intake from animal origin was the only significnat Premenopausal women of femur BMD. In the basis of femur BMD three groups were divided Premenopausal women of femur BMD$\leq$0.84g/cm2 showed depressed Ca intake of animal origin in later and early life and enhanced urinary Na excretion compared to women of femur study suggests that dietary Ca is a major constituent affecting femur BMD because of a decrease in net Ca absorption and an increase in urinary Ca loss.

  • Bone mineral density depends largely on the status of dietary minerals such as Ca, P, Mg, and F and proteins, physical activities, parathyroid hormone(PTH), calcitonin(CT), and vitamin D. The decrease of bone density often results in bone fractures and osteoporosis which is prevalent among postmenopausal women. This study was intended to examine the role of parathyroid hormone, calcitonin and cholecaliferol in bone density of mice that were fed different dual photon energy beams. We have measured three major parts of the bone : whole body, head and femur. The results are summarized as follows : 1) Bone mineral density (BMD) was more increased by feeding high Ca diet compared to that of the low Ca diet. 2) Both PTH and Vit D3 enhanced BMD in all of the different Ca levels. 3) When the dietary Ca was deequate CT showed a synergistic effect with PTH in boosting bone density, while CT+Vit D3 showed a negative effect. 4) CT tended to inhibit the effect of increasing bone density by PTH and Vit D3 in medium and low Ca groups. 5) The effect of increasing bone density by PTH in the head of mouse increased when dietary Ca was lower : The increment of bone density by PTH in high, medium, and low Ca was 3%, 8%, 19%, respectively. 6) Femur bone density was affected significantly by dietary Ca levels than hormones. The above observations indicate that bone mineral density can be improved by high dietary Ca and hormone injections including PTH, CT and cholecalciferol, and thus proper dietary and hormonal treatment may be used in preventing bone fractures and osteoporosis.

한국 젊은 성인 여성과 중년 여성의 소변중 Ca 배설과 이에 영향을 미치는 요인분석 (A Comparative Study on Urinary Ca Excretion in Young and Middle-Aged Korean Women)

  • A study was conducted to compare urinary Ca excretion and factors influencing urinary Ca excretion in 30 young and 62 middle-aged Korean women. Mean daily intake levels of total protein and P were significantly higher in middle-aged women but Ca and animal protein intake levels of the two groups were similar. The average percentage of daily Ca intake from milk and milk products in young women was 45% while in middle-aged women it was about 24% The frequency of milk consumption was inversely correlated with blood pressures of the subjects. Mean 24-hour urinary calcium excretion in young and middle-aged women were 163.7mg and 174.9mg respectively. The difference was not significant. Menopause of the mid-dle-aged women did not affect urinary calcium levels. However the proportion of subjects with more than 250mg of Ca in 24-hour urine tended to be higher in middle-aged group Factors significnatly correlated with urinary Ca excretion of subjects were systolic and diastolic The study verifies the need for more systematic studies on Ca requirements and the interrelation-ship among Ca and na metabolism blood pressures and bone loss in the middle-aged Korean.
