This study aims to provide an overview of the research on the chemical composition, nutritional value, biological activities, and potential applications of Camellia oleifera seeds. Camellia oleifera Abel. (Theaceae) is a type of woody plant found in various regions, including China, Japan, India, and Southeast Asia. This plant is highly valued for its cooking oil, as the oil extracted from its seeds contains many unsaturated fatty acids (90%), mainly oleic acid (80%), and various biologically active compounds. Oil derived from C. oleifera seeds has been shown to possess numerous health benefits, such as reducing low-density lipoproteins cholesterol levels, preventing cardiovascular diseases and cancer, and regulating blood pressure. Apart from its oil, the seeds of C. oleifera also contain remarkable biological compounds that offer additional health advantages. Despite these promising attributes, C. oleifera has yet to be widely recognized as a potential source of raw materials for pharmaceutical purposes. This lack of popularity and awareness has hindered further exploration of its pharmaceutical benefits and other uses. Through this article, we hope everyone can better understand this plant and have more practical applications in the future.

Although ovalbumin makes up 54% of the total egg white proteins, individual protein usage is rare. The primary applications of ovalbumin in the food industry relate to other proteins, such as whole egg whites. Ovalbumin has remarkable functional properties, such as those of gelation, foaming, and emulsification, which are crucial in the processing of food, however, its application as a standalone functional protein is severely constrained due to separation issues. In recent years, new methodologies for the large-scale separation of ovalbumin have emerged. Meantime, ovalbumin was identified as a good source to produce bioactive peptides with a variety of functional properties, including antibacterial, antioxidant, and angiotensin-converting-enzyme inhibitory actions, according to research. Newly discovered bioactive peptides from ovalbumin can be used in the food sector in addition to their well-known functional properties to create health-promoting products. Benefits extend beyond the food business to numerous other sectors, such as the pharmaceutical and cosmetic industries. Consequently, a gap between the existing and prospective future uses is found. The main goals of this study were to determine some possible factors for the long-term neglect of the major protein and to determine the growing potential for applications of ovalbumin and peptides.

Polychlorinated hydrocarbons are continuously released into the environment from various industrial processes. Trichloroethylene (TCE) and tetrachloroethylene (perchloroethylene, PCE) are of primary concern because of their large-scale production, wide industrial application, poor biodegradability, and tendency to circulate in the air and water. The common routes of human exposure to these compounds include inhalation, ingestion, and dermal adsorption. Additionally, they have been detected in various plant foods. Prolonged exposure to these contaminants is associated with certain risks. They are carcinogenic and have other toxic effects, including gastrointestinal, developmental, neurological, and hematological toxicity. To analyze these contaminants, they are generally extracted from various matrices, followed by instrumental analysis. Gas chromatography, often in combination with different detectors, is the most widely used analytical method. This review covers the toxicity, analytical methods, occurrence in foods, and risk assessment of these contaminants.

Soybean paste is a staple food used to make doenjang (DE), cheonggukjang (CGJ), and miso (MI). In this study, solid-phase microextraction followed by gas chromatography-mass spectrometry was used to identify volatile components in DE, CGJ, and MI, and principal component analysis (PCA) was performed to determine their correlation between soybean pastes. Esters and hydrocarbons accounted for more than 55% of the total volatile components. PCA showed that esters were highly correlated with DE; pyrazines were correlated with CGJ; and alcohols were highly correlated with MI. Because DE, CGJ, and MI are made of the same material, their overall volatile content tended to be similar. However, the main volatile components and fragrances were different. These findings will be used as basic research data to promote quality improvement of soybean-based fermented foods in Korea and Japan.

Ogi production results in nutrient loss. B. aegyptiaca seeds, rich in biomaterials, could enhance ogi's nutritional potential. This study aimed to fortify ogi with bioactives from B. aegyptiaca seeds, targeting a 16% protein inclusion, compared to ogi flour as control. Mineral profiles were analyzed, showing higher levels in the fortified samples, particularly in DAM-ogi and PP-ogi, which are implicated in diabetes control. Pasting profiles indicated higher values in PP-ogi, suggesting improved rheological properties due to B. aegyptiaca bioactives.

The poultry industry faces disposal difficulty in waste, but recent advancements in material science and sustainability have enabled the innovative transformation of waste into valuable resources. In this study, eggshell (EC) was added as a bio-filler to gum Arabic (GA) to fabricate a GA-EC bio-composite film. Bio-composites containing 0.5 g (GA-EC_0.5) and 1.0 g (GA-EC_1.0) EC dispersed in 30 mL of 15% GA solution were fabricated and characterized using standard analytical techniques. The GA-EC_0.5 composites showed significantly higher moisture content, transparency, water solubility, and water vapor permeability but lower tensile strength and thermal stability than GA-EC_1.0. Following a post-harvest wrapping of tomato fruits with the GA-EC composite films and storage at 25±2℃ for 20 days, significant (p>0.05) reductions in weight loss, pH, lycopene content, and activities of polyphenol oxidase and pectin methylesterase compared to unwrapped fruits were recorded. Adding EC to GA has enabled the fabrication of composite films with improved mechanical, barrier, and thermal properties with potential application in the post-harvest storage of tomato fruits.

This study analyzed the factors that influence menu choices through eye-tracking and questionnaires in menu design. Demographic data of subjects coincided with choosing a menu and eye-tracking data. Hot Crispy Chicken Burger is the most popular menu. The study found that regardless of the selected menu, the menu name (35.5 seconds), price (21.6 seconds), and image (16.0 seconds) were viewed the longest, followed by country of origin (8.81 seconds), calories (4.6 seconds), and special indications (p<0.05). The menu name and image were checked more frequently, while calorie information was checked less often. As a result of analyzing various factors that influence menu selection through, Consumer experience and image greatly influenced menu choices. Therefore, if you want to receive a menu selection, it is considered effective to make good use of the menu name and image. In results of principal component analysis (PCA) by gender showed. Men had the longest price in the fixation duration. But, for females, there was a significant difference in gaze fixation when they took the exam, with menu names and special indications being important selection criteria. Since the results show that selection criteria and information acquisition methods differ depending on gender, this research is thought to be able to suggest directions for menu design.

본 연구에서는 육가공 산업의 필수 공정인 냉동육 해동 시 발생하는 식육의 품질 저하를 최소화하기 위하여 진공 텀블링 해동 방식을 적용하고자 산업용 국산 임펠러-진공 텀블러(DVT, 6 ton)를 고안하고 이를 이용하여 해동한 냉동 돈육의 품질 특성을 현재 상업적으로 이용하는 자연해동(NTA)과 수입산 진공 텀블링 해동(IVT) 특성과 비교 분석하였다. 냉동 돈육(앞다리)의 자연해동 시간은 4,200분인데 반하여 DVT 해동은 165분이 소요되어 냉동 돈육 해동시간이 약 25배 단축되었다. 해동 시 돈육의 드립감량은 자연해동 2.08%에 비하여 DVT 해동은 0.85%로 낮아져 높은 해동 수율(99.2%)을 얻을 수 있었다. 자연 해동육에서 대장균군이 0.10±0.17 log CFU/g 수준으로 검출된데 반하여 DVT 해동육의 pH는 5.92, 총균수 1.96±0.01 log CFU/g, 대장균군 불검출로 높은 신선도를 보였다. 또한, DVT 해동육의 지방산패도(TBARS) 0.31±0.01 MDA mg/kg와 단백질변패도(VBN) 5.67±1.98 mg%를 보여 자연해동 돈육(각각 0.42±0.01 MDA mg/kg와 6.86±0.00 mg%)에 비해 지방과 단백질 변패도를 유의적으로 낮출 수 있는 것으로 나타났다. DVT 해동육의 보수력은 97.50±0.90%로 자연해동육(95.24±0.03%)에 비해 유의적으로 높았다. 자연해동(NTA) 후 조리한 돈육은 경도 212.03±0.02 N과 씹힘성 885.36±0.80이 진공 텀블링(DVT, IVT) 해동육에 비하여 각각 6.1배와 4.7배 높게 나타나 진공 텀블링 해동이 부드러운 조직감을 갖는 식육을 생산할 수 있는 것으로 나타났다. 해동육과 이를 가열조리한 돈육의 미세구조(SEM)를 관찰한 결과, 진공 텀블링 해동(DVT, IVT) 시료에서 근원섬유의 손상이 적어 섬유배열과 간격이 촘촘한 구조를 나타냈다. 본 연구에서 국내 최초로 고안한 산업용 대용량 진공텀블러는 해동 시 근육 조직의 손상을 최소화하여 보수력을 높이고, 드립감량을 감소시켜 부드러운 조직감과 함께 생산 수율을 높일 수 있을 뿐만 아니라 미생물학적 및 이화학적 변패도를 최소화할 수 있어 고품질의 육제품 생산에 활용될 수 있을 것으로 보인다. 또한, 본 장치는 수입산 진공텀블러와 비교해 우수한 품질의 해동육을 생산할 수 있어 본 연구자료를 이용한 국산 기술 자립화, 제품 품질 개선 및 수율 향상 등 육가공 산업 발전에 기여할 수 있을 것이라 사료된다.

대파 저장 중 품질에 영향을 미치는 가장 큰 요인은 잎의 색도변화와 수분손실에 의한 시들음이었다. 상온저장 중 대파 잎의 색도 중 L^*값과 b^*값은 저장 2일에서 4일이 경과하면서 급격히 높아졌고, a^*값은 저장 4일에서 6일이 경과하면서 급격히 증가하였으며, 잎의 황화 및 시들음 지수도 상온저장 2일이 경과하면서 급격히 증가하였다. 저온저장 시에는 색도가 안정적으로 유지되어 저장 5주째까지는 상품성 이내의 색도를 보였다. 처리구별로는 저장기간이 경과함에 따라 CR의 잎 변화가 AR처리구에 비해 빠르게 진행되었다. 줄기의 색변화 및 경도도 AR에서 보다 높게 유지되었다. 대파 줄기의 갈변 및 연화도 저장 기간경과에 따라 진행되었으나 잎의 색도변화 속력보다는 느려서 상품성 한계기간 이내에서는 상품성에 영향을 미치지 않는 수준이었다. 줄기 구부러짐은 현상은 상온 및 저온저장 말기 끈묶음 처리구들보다 포장필름 처리구들에서 유의하게 높았다. 상온저장 시에는 끈묶음과 필름포장 방법 처리들 간의 신선도의 차이가 미미한 반면, 1℃ 저온저장 시에는 필름포장처리구의 선도가 높게 유지되었다. 상온 및 저온저장 모두 뿌리를 다듬지 않은 채 유통하는 것이 유통수명을 연장할 수 있었다. 이화학적 품질 요인 및 외관 품질 평가를 총괄하였을 때 상온저장 시 저장유통수명은 약 3일, 저온저장 시에는 약 5주였다. 대파 연백부에 함유된 allicin과 quercetin 함량은 수확 후 품질 저하가 시작되는 초기에는 증가하다가 열화가 심각해지면서 감소하였다.

본 연구에서는 탈지난황을 활용한 항산화 소재 개발 가능성을 탐색하기 위해 탈지난황 단백가수분해물을 제조하고 항산화 활성을 평가하였다. 4종의 단백질 가수분해 효소(alcalase, bromelain, flavourzyme, neutrase)를 처리한 후 시간에 따른 각 효소별 가수분해도를 확인한 결과, 효소 처리군의 가수분해도가 비처리군에 비하여 전반적으로 높았으며, 특히 DEYA가 가장 높은 가수분해도를 보였다. 각 효소와 12시간 반응시켜 제조한 효소별 단백가수분해물의 ROS 소거 활성을 평가하기 위해 ABTS radical 및 H₂O₂ 소거 활성 실험을 진행한 결과, DEYA가 다른 가수분해물에 비해 유의적으로 높은 항산화 활성을 보이는 것으로 확인되었다. 이상의 실험을 기반으로 효소별 단백가수분해물 중 가장 높은 가수분해도와 항산화 활성을 보였던 DEYA를 상온에 보관하며 항산화 안정성 평가를 진행한 결과, DEYA는 L-ascorbic acid와 녹차 추출물 대비 월등히 우수한 안정성을 보였으며, 28일 차까지도 90% 이상의 항산화 활성을 유지하였다. 또한, DEYA는 난백 단백가수분해물, 갈색 거저리 유충 그리고 탈지대두와의 ABTS radical 소거 활성 비교 실험을 진행한 결과에서도 유사하거나 상대적으로 우수한 활성을 보였다. 최종적으로 본 연구에서는 산업적으로 이용되고 있는 lecithin 추출 공정과 효소적 가수분해를 통해 제조한 탈지 난황 단백가수분해물의 우수한 항산화 활성을 확인할 수 있었다. 이는 향후 항산화 기능성을 가진 기능성 식품과 식품첨가물 개발을 위한 기초 연구 자료로서 활용될 수 있을 것으로 기대된다.

본 연구를 통해 적하수오(Polygonum multiflorum) 에탄올 추출물이 갖는 in vitro 항산화 활성 및 뇌 신경세포 보호 효과를 확인하고자 하였다. 적하수오 0%, 20%, 40%, 60%, 80% 및 95% 에탄올 추출물 중 40% 에탄올 추출물이 다른 추출물에 비해 상대적으로 많은 총페놀성 화합물 및 총플라보노이드 함량을 나타냈으며, 적하수오 40% 에탄올 추출물은 우수한 ABTS 라디칼 소거 활성과 MDA 생성 억제 효과를 나타내었다. 특히, 40% 에탄올 추출물은 높은 α-glucosidase 및 acetylcholinesterase (AChE) 억제 활성을 나타내었다. 또한, 적하수오 40% 에탄올 추출물은 H₂O₂ 유도 HT22와 SK-N-MC 세포에서 세포 생존율을 증가시키고 세포 내 산화적 스트레스를 감소시킴으로써 효과적인 세포 보호 효과를 나타냈다. 마지막으로, HPLC 분석결과 적하수오 40% 에탄올 추출물의 주요 생리활성 물질은 2,3,5,4'-tetrahydroxystilbene-2-O-beta-D-glucoside(TSG)로 확인되었다. 따라서, 본 연구에서 나타난 적하수오의 항산화 활성 및 뇌 신경세포 보호 효과는 TSG를 포함한 다양한 생리활성물질에서 기인한 것으로 판단되며, 건강기능식품에 소재로서의 활용 가능성이 기대된다.

본 연구에서는 벨루가 렌틸 추출물(BLE)의 항염증 효능을 NO 생성 측면에서 검토하고 이와 관련된 분자 기전을 규명하고자 하였다. LPS, LTA 및 지방세포 공동배양에 의해 활성화된 RAW 264.7 대식세포에서 BLE는 독성이 없는 농도 범위에서 유의적인 NO 생성 저해 효과를 보였다. 이와 함께 BLE 처리에 따라 iNOS mRNA 및 단백질의 발현이 유의적으로 저해됨을 확인하였으며, 이는 BLE에 의한 NO 생성 억제 효과가 전사 수준에서의 iNOS 발현을 억제함으로부터 기인하는 것임을 시사한다. 추가적으로 BLE는 NO 외에도 활성화된 대식세포에서 증가하는 다양한 염증성 사이토카인 유전자(COX-2, IL-1β 및 IL-6)의 mRNA 발현 또한 유의적으로 억제하는 것으로 나타났다. BLE의 항염증 효과와 관련된 분자 기전에 관한 추가적인 연구를 수행한 결과, 항염증 관련 대표 기전인 NF-κB/MAP kinases 신호 경로와는 연관성이 없는 것으로 나타났다. 반면, BLE 처리에 따라 Nrf2 단백질 발현의 증가 및 활성화가 유도되고 HO-1의 발현이 유의적으로 증가하는 것을 확인함으로써 Nrf2가 HO-1의 발현을 증가시키기 위한 전사 인자로서 작용할 가능성이 높음을 확인하였다. 따라서, 본 연구를 통해 식용원료 유래의 잠재적인 항염증 소재로서 BLE의 활용 가능성을 확인할 수 있었으며, 향후 동물모델을 대상으로 항염증 효과를 입증하기 위한 추가적인 연구가 필요할 것으로 생각된다.

본 연구는 6개월 미만의 4명의 영아 분변에서 생육이 용이한 우점균을 분리하였고, 이들 중 Lactobacillus속의 유용한 균주를 발굴, 이를 이용하여 발효시켜 제조한 미나리 배양물에 대한 기능적 특성을 살펴보았다. 8주의 분리균주들 중 항생제 내성, 용혈성 등의 안전성을 확인한 후, L. rhamnosus L28과 L. reuteri 11-2 등 2주를 항염증 효능 평가를 위해 선발하였다. 선발한 시험균주 단독과 이들로 미나리를 발효시켜 제조한 미나리발효물 등의 시료들을 각각 처리하여 병원성 세균 4종에 대한 생육 억제능을 살펴본 결과, L. rhamnosus L28 균주 단독처리만으로도 양성대조구인 L. rhamnosus LGG균에 비해 B. cereus와 Sta. aureus 등에 대한 높은 항균활성을 나타내었고, 이 균주를 이용하여 발효시킨 미나리배양물(Oj+L28) 역시도 동일한 병원균들에 대해 25.03±0.00-36.14±0.00 mm의 범위로 억제환을 나타내어 높은 유해균 생육 억제능을 보였다. 또한, LPS로 자극시켜 대식세포 RAW cell에서 분비된 NF-kB/AP-1 전사인자, 활성산소(NO) 및 염증성 매개물질(TNF-α와 IL-6)의 활성 또는 생성량 억제 정도를 살펴본 결과, 양성대조구(LGG) 대비 시험균주 L. rhamnosus L28 단독 처리와 이 균으로 제조한 미나리 발효물(Oj+L28) 처리구는 항염증 효능을 나타내는 모든 지표에서 통계적 유의수준(p<0.05)으로 높은 억제 활성을 나타내었다. 특히, 사이토카인 IL-6 항목에서 L. rhamnosus L28 단독 처리의 억제율이 처리량별로 83, 96 및 99%로 L. reuteri 11-2균주보다 높은 억제 효과를 보였으며, Oj+L28 발효물 역시도 59-72%로 Oj 원액 및 Oj+LGG 배양물보다 낮은 생성량을 보였다. 또한 염증성 매개물질인 TNF-α와 IL-6의 생성량 역시도 L. rhamnosus L28 단독 처리 시 통계적 유의수준(p<0.05)으로 가장 낮은 값을 보여, LPS와 같은 항원 제시에 의해 자극된 면역세포의 기능조절에 도움을 줄 것으로 사료된다. 따라서, 본 연구에서 처음으로 발굴한 L. rhamnosus L28 균주와 이 균주로 발효시켜 제조한 미나리발효물의 높은 항염증 효과를 확인하여, 향후 동물시험 수준의 효능검증 및 기전 구명 등 심화연구를 통해 건강기능성 소재로서의 활용성을 높이고자 한다.

본 연구는 만성 알코올 유도 쥐에 대한 1.5% 헛개나무 열매 농축액이 첨가된 콩나물 혼합물의 숙취해소 및 간 기능 개선 효과를 확인하고자 하였다. 헛개나무 열매 농축액을 함유한 콩나물 혼합물군(SHM) 내 ampelopsin 및 L-asparagine의 함량은 10.52, 35.19 ppm으로 확인되었으며, 만성 알코올 급여에 의해 체중 변화량이 감소하고, 간 중량은 증가한 반면 SHM 처리시 유의적으로 체중 변화량이 증가하였으며, 간 중량이 감소하였다. 혈중 alcohol 및 acetaldehyde의 농도는 SHM군에서 2.89, 0.53 g/L로 가장 낮은 함량을 보였으며, 간 조직 ADH 및 ALDH의 활성은 SHM군에서 33.11, 102.06 U/L로 가장 높은 활성을 나타냈다. 만성 알코올 유도는 ALT, AST 및 GGT와 같은 간 기능 지표 효소들의 활성을 증가시켰지만, SHM 처리시 각각 41.00, 130.83 및 0.47 U/L로 활성이 유의적으로 감소하였다. 간 조직 및 혈중 triglyceride 함량은 SHM군에서 1.45와 33.00 mmol/L로 가장 낮은 값으로 나타났고, 만성 알코올 투여로 증가된 혈중 total cholesterol 및 LDL cholesterol 함량은 SHM에 의해 감소하였으며, 만성 알코올 투여로 인해 감소된 혈중 HDL cholesterol 함량은 SHM 처리시 증가하였다. 간 조직을 형태학적 및 병리학적으로 관찰한 결과, 만성 알코올 유도군의 간 조직은 형태학적 관찰에서 황갈색을 띠었고, 병리학적 관찰에서는 지질방울의 크기 및 수가 증가하였다. 그러나 SHM 처리시 형태학적으로 관찰한 간 조직의 색은 적갈색으로 나타났고, 병리학적으로 관찰한 간 조직의 지질방울 크기 및 수는 감소하였다. SHM군의 간 조직 및 혈중 지질 과산화 함량은 677.68, 76.26 nmol/g으로 가장 낮은 값으로 확인되었으며, 간 조직 및 혈중 GSH 함량은 SHM군에서 가장 높은 값인 19.93 및 20.08 μmol/kg으로 나타났다. 따라서 콩나물 또는 헛개나무 열매의 단일 섭취보다 혼합하였을 때 ampelopsin 및 asparagine과 같은 유효성분들의 시너지에 의해 SHM군에서 증진된 숙취해소 및 간 기능 개선 효과를 확인할 수 있었으며, 이는 기능성 식품 소재화에 대한 가능성을 제시하는 기초 자료로 활용될 수 있음을 시사한다.

Patulin has been reported as a risk factor in various foods, especially apple juice. This study monitored residual patulin and polyphenolic content in apple juice during post-irradiation storage conditions. Response surface methodology (RSM) was applied to monitor the changes in dependent variables (Yn, patulin, and polyphenolics) as affected by independent variables, such as storage temperature (Xi, -20℃ to 20℃), irradiation dose (Xii, 0-2 kGy), and storage period (Xiii, 0-20 days), which were based on a central composite design. The predicted peak point resulted in the lowest residual patulin content of 58.42 ppb with the corresponding independent parameter conditions, such as 18.19℃ of storage temperature, 1.24 kGy of irradiation dose, and 13.42 days of storage period. The residual patulin content of 58.42 ppb is the minimum desirable level, representing a 91% reduction compared to the non-irradiated control (675.00 ppb). A maximum polyphenolics content (11.98 mg/g) was obtained under the predicted maximum conditions of 14.40℃, 0.78 kGy, and 3.4 days. The most influential parameter in reducing residual patulin content while maintaining polyphenolic content in apple juice was irradiation dose (p<0.01), which showed potential to be applied in controlling the patulin levels in apple juice.
