Mineral Contents of Brown and Milled Rice

현미와 백미의 품종별 무기질 함량

Abstract

The objectives of this study were to analyze mineral contents of brown and milled rice of five varieties (Kwangan, Daean, Daejin, Sura, Hwaseong) and to compare those with Korean recommended dietary allowance. The ash contents of brown rice ranged from 1.28 to 1.45% and those of milled rice ranged from 0.51 to 0.62% The mineral contents of brown rices were P, 270.8∼327.2 mg/100 g; K, 216.0∼ 249.0 mg/100 g: Mg, 102.0∼111.0 mg/100 g, Ca, 11.8∼13.2 mg/100 g. The major minerals of milled rices were P, 125.3∼153.2 mg/100 g; K, 96.5∼118.6 mg/100g; Mg, 34.7∼40.0 mg/100 g; Ca, 6.0∼9.4 mg/100 g. Contents of phosphorus from average daily rice consumption (215.9 g) correspond to 90.7% of Korean RDA of phosphorus in brown rice while 42.3% in milled rice.

본 연구는 표준 경작법으로 재배한 육성 품종 5종(광안, 대안, 대진, 수라, 화성 )의 현미와 백미의 무기질 함량을 분석비교하고, 한국인 식생활에 있어서의 쌀로부터 섭취하는 무기질의 양과 권장량에 대한 비율을 알아보고자 하였다. 회분함량은 현미에서는 대진ㆍ수라(1.45%)>대안(1.30%)>광안 (1.29%)>화성 (1.28%) 순이었고, 백미에서는 광안(0.62%) >대진(0.60)>화성 (0.59%)>수라(0.53%))대안(0.51%) 순이었다. 현미의 무기질 함량은 인이 270.8∼327.2 mg/100 g, 칼륨이 216.∼249.0 mg/100 g, 마그네슘이 102.0∼111.0 mg/100 g, 그리고 칼슘이 11.8∼13.2 mg/100 g이었다. 반면에 백미의 무기질 함량은 인이 125.3∼153.2 mg/100 g, 칼륨이 96.5∼118.6 mg/100 g, 마그네슘이 34.7∼40.0 mg/100 g, 칼슘이 6.0∼9.4 mg/100 g이었다. 국민영양조사 결과와 비교해서 주식인 쌀로부터 섭취할 수 있는 무기질의 비율은 현미에서 인이 평균적으로 90.7%로 가장 많았고, 칼슘이 3.9%, 철이 남성의 경우23.7%,여성의 경우 17.8%, 아연이 남성의 경우 42.6%, 여성의 경우 51.2% 이었다. 또한 백미에서는 인은 42.3%, 칼슘은 2.6%, 철은 남성의 경우 14.4%, 여성의 경우 10.8%, 아연은 남성의 경우30.4%, 여성의 경우 36.5%이었다.
