A Study of Dietary Habits, Nutrition Intake Status and Serum Copper and Zinc Concentrations of Adolescent Athletes (청소년기 운동선수의 식습관 및 영양섭취 상태와 혈청 구리, 아연 함량에 관한 연구)

  • The purpose of this study was to investigate the dietary habits, nutritional status, and serum copper and zinc concentrations of adolescent athletes. 50 high school adolescent athletes (29 male, 21 female) took part in physical education high school and 47 high school adolescent non-athletes (21 male, 26 female) in general high school. Questionnaires, anthropometric measurements, 24-hour dietary recalls and blood analysis were conducted. In the males, the mean height, weight and body fat percents of athletes and non-athletes were 174.0/172.9 cm, 67.4/68.3 kg, and 8.9/20.0% (p<0.001) respectively. In the females, the mean height, weight and body fat percents of athletes and non-athletes were 163.7/159.3 cm (p<0.01), 58.7/55.7 kg (p<0.05), and 18.6/30.1 % (p<0.001) respectively. In both male and female athletes, intakes of animal fat were significantly higher and intakes of vitamin C were significantly lower than those of non-athletes. There was no significantly difference in zinc and copper intakes between athlete and non-athlete groups. The average serum zinc level of male athletes was significantly lower than that of male non-athlete. The average serum copper levels of male and female athletes were significantly lower than those of male and female non-athletes. Based on these results, exercise may effect on zinc and copper utilization of adolescent. Further studies on zinc and copper nutrition of adolescent athletes were needed to understand more mineral nutrition and exercise.

Relation among Mineral (Ca, P, Fe, Na, K,Zn) Intakes, Blood Pressure, and Blood Lipids in Korean Adults (일부 성인남녀의 무기질 (Ca, P, Fe, Na, K, Zn) 섭취와 혈압 및 혈중 지질과의 관련성)

  • The purpose of this study was to investigate the relation among mineral intakes, blood pressure, and blood lipids for health management of Korean adults over 20 years old. Subjects were recruited from the district where they lived, which included rural (Yoju, n = 137) , coastal (Taean, n = 100) , and urban district (Suwon, n : 117) . hnthropornekical measurement, blood pressure measurement, dietary intake assessment using 24-hour recall method, and blood collection and analysis of blood lipids were conducted. The average age, height, weight, and BMI were 54.1 years, 168.5 cm, 67.3 kg, and 24.5 kg/$m^{2}$ for men and 53.9 years,153.8 cm,59.2 kg, and 25.0 kg/$m^{2}$ for women, respectively. The mean daily intakes of total food and energy were 1219.1 g and 1740.9 kcal for men and 1071.3 g and 1432.6 kcal for women. The mineral intakes of men and women were 448.5 mg and 400.4 mg for calcium,955.3 mg and 803.7 mg for phosphorus, 13.3 mg and 11.1 mg for iron, 4302.8 mg and 3393.3 mg for sodium,2588.0 mg and 2264.9 mg for potassium, and 8.9 mg and 7.3 mg for zinc. The daily intakes of energy, calcium, zinc, vitamin $B_{2}$, and vitamin I were $76.1\%$, $60.1\%$, $73.1\%$, $68.6\%$, and $80.4\%$ of RDAs, respectively. The intakes of energy, calcium, zinc, vitamin $B_{2}$ and I were not meet Korean RDAs. Especially, calcium, zinc, and vitamin $B_{2}$ were less than $75\%$ of RDAs. Blood pressure of the subjects was 128.3/75.5 mmHg for men and 124.1/73.7 mmHg for women. Serum lipids of men and women were 180.2 mg/dL and 184.9 mg/dL for total cholesterol, 160.8 mg/dL and 137.6 mg/dL for triglyceride,41.5 mg/dL and 44.7 mg/dL for HDL-cholesterol,106.6 mg/dL and 112.7 mg/dL for LDL-cholesterol, and 3.5 and 3.3 for atherogenic index. While serum triglyceride and AI of men was significantly higher, HDL-cholesterol was lower than those of women. In the relation among mineral intakes, blood pressure, and serum lipids, we found a significantly negative correlation of intakes of calcium, calcium/phosphorus, calcium density with systolic blood pressure. There were significantly negative correlation between intake of calcium/phosphorus and serum cholesterol, calcium density and serum cholesterol, sodium intake and serum HDL-cholesterol. Based on these results, we concluded that high intakes of calcium, calcium/phosphorus and low sodium intake were associated with favorable blood pressure and serum lipid profiles in adult men and women. Zinc status and dietary quality of type 2 diabetic patients: implication of physical activity level

  • The purpose of this study was to analyze the relationships among zinc status, diet quality, glycemic control and self-rated physical activity level of type 2 diabetic patients. Dietary intakes for two non-consecutive days were measured by 24-hour recall method for seventy-six diabetic patients. Fasting blood glucose and HbA1c were measured for the assessment of glycemic control. We evaluated the extent of dietary adequacy by the percentage of subjects with a dietary intake of a nutrient less than the estimated average requirement(EAR), the dietary diversity score(DDS) and the dietary variety score(DVS). Zinc status was assessed from serum levels and urinary excretion. Dietary inadequacy was serious for five nutrients: riboflavin, calcium, thiamin, zinc and vitamin C. Dietary intakes from the meat, fish, and egg food groups and the milk food group were below the recommended level.   • To compare the dietary and urinary minerals with serum lipid and minerals this study was carried out on 30 rural housewives in Kyunggi area. Mean intake of energy was 1770.3Kcal and protein 55.5g per day. Mineral intakes per day were measured; sodium 4330mg phos-phorus 485.7mg calcium 388.0mg zinc 8.99mg and copper 2.23mg Urinary minerals were analy-sed ; sodium 4379mg phosphorum 371.3mg calcium 190.0mg zinc 328.0mg and copper 49.6mg. Serum contents of lipid and minerals were : cholesterol 169.0mg% triglyceride 70.6mg% $\beta$-lipoprotein 304.9mg% sodium 142.3mM phosphorus 3.94mg% calcium 9.06mg% zinc 1215.7 ppb and cooper 620.0ppb. Eietary sodium and zinc urinary copper were significantly related with serum lipids.

Comparison of salty taste acuity and salty taste preference with sodium intake and blood pressure based on zinc nutritional status in two rural populations in Korea

  • This study examined salty taste acuity and salty taste preference and sodium intake in relation to zinc nutritional status in 2 rural populations in Korea. And we also examined the main food contributors of their sodium intakes. We enrolled 218 adults (66 men and 152 women) from the Kangneung and Samcheok regions in Korea's Kangwon province in our study conducted from December 2011 to February 2012. Participants from each region were divided into 3 groups based on their serum zinc level (T1: lowest, T2: intermediate, T3: highest). We compared the salty taste acuity and preference, Na index (Dish Frequency Questionnaire for estimation of habitual sodium intake), blood pressure, and intakes of nutrients including sodium by 3 groups of serum zinc level. The results were as follows: a higher serum zinc level indicated a lower sodium intake and Na index (P<0.05). The salty taste acuity was considerably higher for participants from the Kangneung region than those from the Samcheok region (P<0.05). And the serum zinc level was significantly higher in participants from the Kangneung region than those from the Samcheok region (P<0.05). We further divided the participants into 2 groups: those who consumed more zinc than the recommended intake (RI) and the others. We compared salty taste acuity and salty taste preference in the 2 groups. The salty taste threshold and palatable salty taste concentrations were lower for the group with a zinc intake above RI than for the group with zinc intake below the RI. However, the difference was not significant. This study confirms that taste function differs depending on zinc nutritional status. In future, it is required to a large-scale, long-term, prospective study on the correlation between zinc intake, serum zinc levels, and taste perception function and blood pressure.

The Comparison of Growth and Nutrient Intakes in Children with and without Atopic Dermatitis (아토피피부염 유병여부에 따른 영유아의 영양섭취와 성장 비교 연구)

  • The prevalence of atopic dermatitis (AD) has increased recently all over the world. Several studies worldwide reported growth retardation associated with AD, but few studies were reported in Korea. Therefore, the objective of this study was to identity the differences in growth and nutrient intakes between Korean children with and without AD. The participants were 71 AD children and age, gender-matched 81 control children aged 10 to 36 months. Demographic information was gathered by questionnaires. Height and weight were measured at clinic and health centers. Height and weight for age, and weight for height were converted as deviation in Z scores using World Health Organization Standard. A 24 hour dietary recall method was performed to estimate nutrient intakes. A higher percentage of AD children had insufficient energy and intakes of calcium, phosphorus, iron, zinc and vitamin B2, defined as intakes lower than 75% of the Dietary Reference Intakes for Korean, compared to the control group (P < 0.001, P < 0.001, P = 0.003, P = 0.001, P = 0.014, P = 0.001, respectively). The percentages of children with height and weight for age Z score below than-1 (stunted) were significantly higher in the AD group (P < 0.001 and P < 0.001, respectively). Multiple food restriction, defined as ${\geq}$ 3 food elimination, was associated with insufficient energy and intakes of calcium, phosphorus, iron, zinc, vitamins A and B2. In conclusion, children with AD need regular nutrient assessment and education about alternative food choices to avoid r food elimination in order to prevent growth retardation or inadequate nutrient intakes. Further longitudinal studies for growth and nutrient intakes should be performed to understand the patterns of growth in children with AD.

A Study on Iron, Zinc and Copper Contents in Human Milk and Trace Element Intakes of Breast-fed Infants (모유의 철분,아연 및 구리 함량과 모유 영양아의 모유와 미량원소 섭취량에 관한 연구)

  • Concentrations of iron. zinc, and copper were measured in human milk samples collected longitudinally from 21 highly selected. healthy lactating women. And the daily milk and trace elements intakes of 14 exclusively breastfed infants were determined by the test-wei-ghing procedure and the direct analysis of milk samples at 6 or 7weeks postpartum. Significant decreases in iron. zinc and copper were found with time postpartum. Iron contents decreased from 0.33$\mu\textrm{g}$/$m\ell$ at 2-5 days to o.21$\mu\textrm{g}$/$m\ell$ at 12weeks. Zinc concentrations also declined from 4.15$\mu\textrm{g}$/$m\ell$ in colostrum to 2.33$\mu\textrm{g}$/$m\ell$ in matured milk at 12 weeks. Mean copper levels of colostum, transitional. and matured milk were 0.21$\mu\textrm{g}$/$m\ell$, 0.34$\mu\textrm{g}$/$m\ell$, and 0.26$\mu\textrm{g}$/$m\ell$ respectively. Data indicated that the amount of milk ingested ranged from 432g/day to 1266g/day and the mean intake was 768g/day. Daily mean intakes for iron, zinc, and copper were 0.19mg, 2.10mg, and 0.15mq respectively.

Survey of the Food Preferences and Nutrient Intakes of Elderly People Hospitalized in a Nursing Hospital in Daegu (대구지역 요양병원 입원노인의 식품선호도 및 영양소 섭취 실태 조사)

  • The number of elderly in care facilities is increasing in parallel with a rapid increase in the elderly population in Korea. We analyzed the meal satisfaction ratings, food preferences, and nutritional intakes of 74 patients aged ≥65 years living in a nursing hospital in Daegu. Food preferences were high for cooked rice, rice gruel, meat soup, soybean paste stew, beef, frozen pollack, squid, egg, spinach, sea mustard, cabbage kimchi, apple, peanut, drinking yogurt, pickled perilla leaves, and salted squid. Preferences for duck (P<0.01) and vegetable (P<0.01) cooking method were significantly different for men and women, and preference for soybean paste stew increased with age (P<0.05). Regarding nutrient intakes, men had higher energy (P<0.01), carbohydrates (P<0.05), and zinc (P<0.05) intakes than women, while women had higher vitamin C (P<0.05) intake than men. Furthermore, energy (P<0.001), carbohydrates (P<0.001), protein (P<0.05), dietary fiber (P<0.01), vitamin B6 (P<0.01), phosphorus (P<0.05), and zinc (P<0.001) intakes significantly decreased with age. Men had a significantly higher nutrient adequacy ratios (NARs) for carbohydrates (P<0.05) and cal- cium (P<0.01) than women, while women had a significantly higher NARs for protein (P<0.05), vitamin A (P<0.01), vitamin C (P<0.05), thiamine (P<0.01), riboflavin (P<0.001), iron (P<0.001), and zinc (P<0.01). Mean adequacy ratios were 0.69 for men and 0.75 for women. In particular, NARs for carbohydrates (P<0.01), vitamin B6 (P<0.01), and calcium (P<0.05) decreased significantly with age. In summary, the study shows that supplementing vitamin C, vitamin B6, calcium, and iron, reducing sodium, and providing meals that reflect preferences will improve the nutritional statuses of elderly residents in a nursing hospital.

  • The purpose of this study was to evaluate the nutritional status and growth of Korean infants, who were atending peripheral community clinics in low income areas, by anthropometric measurements and estimating dietary intakes. Dietary intakes and growth were compared among different feeding patterns of 143 infants until age 9 months. The overall mean nutrient intakes of infants in this study were below the recommended allowances except the calcium intake from significant difference in each groups; however, calcium, zinc and iron intake of the formula fed infant(FF) was higher than the breast fed infant(BF) or the mixed fed infant(MF). Form ages 4-6 months, the nutrient intakes were shown to be higher in groups that were given supplementary foods than groups that were not. From ages 7-9 months, all nutrient intakes were higher in or the formula and supplementary foods fed(ESF) infants than in the breast and supplementary food(BSF) or the formula and supplementary food(FSF) groups, All subjets in this study showed a large Z-score. The growth of infants up to 6 months of age showed no significant difference in the feeding pattern, however, after 7 months of age the BSF group had significantly lower weight than the FSF or the ESF groups, There were significant positive relationships between infants weight gain at age 7-9 months from birth and the current protein or zinc intakes. As a result the average status of nutrient intakes of infants in this area was loser than the RDA, however, the growth pattern was fairly good. Although the breast milk is beneficial for infants, mothers should be educated for the importance of supplemental food and its practice to support good mutrition(Korean J Community Nutrition 3 (2) : 174-189, 1998)

Changes in Food and Nutrient Intakes of College Students between 1999 and 2009 (대학생의 식품 및 영양소 섭취 변화 - 1999년과 2009년의 비교 -)

  • The purpose of the study was to examine the changes of food and nutrient intakes of college students between 1999 and 2009. Dietary survey of 169 college students was conducted by a 24-hour recall method for three days in 2009. Food and nutrient intakes in 2009 were compared with the data from 106 students collected by the same methods in 1999. The intakes of cereals & grain products and vegetables in 2009 were lower than those of 1999, but the intakes of meats, eggs, milk & milk products, and manufactured food were higher. The intake of rice per person decreased greatly from 452.2 g in 1999 to 351.4 g in 2009 in males, and from 306.9 g to 237.2 g in females. While the intakes of protein, fat, thiamin, niacin, vitamin $B_6$, phosphorus, potassium, zinc, and cholesterol were significantly higher, the intakes of dietary fiber were significantly lower in 2009 compared to 1999 both in males and females. The nutrients consumed less than the Recommended Intakes were vitamin A, riboflavin, vitamin C, and calcium in males and additionally folate, iron, and zinc in females in both 1999 and 2009. The ratio of carbohydrate, protein and fat as energy was 61 : 15 : 24 and 60 : 14 : 26 in 1999, and 54 : 16 : 30 and 56 : 15 : 29 in 2009 in males and females respectively, showing that carbohydrate intake decreased and fat intake increased greatly. Our data suggest that nutrition education is necessary for college students to help them consume more vegetables and fruits and less fat and cholesterol.
