  • The purpose of this study was to compare the mineral status of postmenopausal vegetarian women with those of the omnivores, and to investigate the relationship between dietary pattern and minerals status in postmenopausal Korean women. The research group was composed of vegetarian women (n = 38), all of them were seven day adventists, who had been on vegetarian diet over 20 yrs. Their anthropometric measurements, dietary intakes, and blood mineral concentrations were compared to age matched omnivores controls (n = 38). The average age of vegetarians and omnivores were 60.7 yrs and 60.5 yrs, respectively and there was no significant difference. The mean daily energy intake of vegetarians and omnivores were 1518.5 kcal and 1355.5 kcal, respectively and their was no significant difference. The mean calcium intake of vegetarians (492.6 mg) was not significantly different from that of omnivores (436.6 mg). The vegetarians consumed significantly greater quantities of magnesium (p < 0.001), iron (p < 0.001), copper (p < 0.001), manganese (p < 0.001) and dietary fiber (p < 0.05). There were no significantly differences in serum calcium, magnesium and manganese levels between vegetarians and omnivores. However, serum levels of phosphorus (p < 0.01), iron (p < 0.05), ferritin (p < 0.01), zinc (p < 0.001) and copper (p < 0.05) were significantly lower than those of omnivores. In conclusion, vegetarian postmenopausal women may have low bioavailability of iron, zinc and copper. Therefore it was needed that further study on mineral bioavailability of vegetarian diet. • The mineral status of native goats and forage species, namely; Cynodon plectostachyus, Pennisetum purpureum. Eleusine indica, Cynodon dactylon, Calopogonium muconoides, Centrosema pubescens, Leucaena leococephala, and Mimosa pudica in lahar affected areas of Concepcion, Tarlac, Philippines were determined. Forage and blood samples were collected six times in 1996-97, and analyzed for calcium, phosphorus, magnesium, sulfur, copper, iron, molybdenum, selenium, and zinc. Forage calcium and sulfur are non-limiting. Most species had low phosphorus, copper and selenium, while some had magnesium and zinc levels lower than the critical limit because of low mineral content and high percolation rate of lahar deposits. Iron and molybdenum were in excess. The effect of seasonal variation was observed only in copper, sulfur and iron. Average blood mineral concentration of the animals was above critical limit, but there were no significant differences between seasons. All the animals had plasma phosphorus and magnesium above critical level; but 20 % had low copper, zinc and selenium especially in dry season possibly due to insufficient amount of these elements and excessive molybdenum and iron in most forage. Conversely, calcium in forage was high; but 40 % of the animals had low plasma calcium concentration. Although no clinical signs of mineral deficiencies were observed, supplemental feeding would be important since the condition of the pasture in lahar-laden areas is not expected to improve in the next five years. Intensified use of L. leucocephala with better mineral profile would be ideal.

  • This study was carried out to estimate the relationship between dietary intakes, blood levels, and urinary excretions of zine, copper, and iron and serum lipids in 30 healthy adults living in Korean rural area. Analyses for the nutritional status of the subjects were performed by 3-day intake recored, duplicated diet collections, 24-hour urine collection, and venous blood sampling before measuring of blood pressure. The daily intakes of zinc, copper, and iron estimated for 3 days were 8.2mg, 3.0mg, and 12.7mg in men and 8.4mg, 3.7mg, and 12.3mg in women, respectively. The serum contents of cholesterol, triglyceride, and HDL-cholesterol were 165.9mg/dl, 119.4mg/dl, and 43.7mg/dl in men and 154.1mg/dl, 88.2mg/dl, and 47.1mg/dl in women, respectively. The serum levels of zine, copper, and iron were 146.0ug/dl, 120.3ug/dl, and 131.1ug/dl in men and 140.6ug/dl, 117.3ug/dl, and 112.2ug/dl in women, respectively. In the relation between dietary intakes, serum levels, and urinary excretions of these minerals, there were significantly positive correlation between zine intake and copper intake(p<0.05), copper intake and urinary excretion(p<0.001), and iron intake and serum zine level(p<0.05). In the relation between these minerals and serum lipids, dietary zine showed positive correlation with triglyceride(p<0.05), and serum zine/copper ratio showed negative correlation with HDL-cholesterol (p<0.05).

  • The relationships among physical growth, dietary intakes, and Zn & Cu status were investigated in total of 128 eight-year-old children selected from the primary school in Seoul. The mean weight and height were 28.3Kg and 129.6cm and the average BMI and R hrer index were 16.75 and 129.25. These values were a little higher than the ones for the average Korean children at the same age. The average serum Zn & Cu levels were 109.98$\mu\textrm{g}$/100ml and 84.13$\mu\textrm{g}$/ml. About 2.4% of the subjects had blood Zn level below the normal range and 8.6% had above the normal level. For Cu, about 43% of the subjects fell into the subnormal level. Daily dietary intakes of calorie, protein and ascorbic acid were relatively adequate but Fe, thiamin, riboflavin, and niacin were insufficient. Ca and vitamin A intakes were very poor. More than 50% of the subjects onsumed Ca and vitamin A less then 2/3 of RDA. There was no consistant relationship among the serum Zn and Cu levels, growth, and the nutrients intakes. But it was observed that serum Zn contents were higher as consumption of milks, fats and oil groups were high in the serum Zn contents were higher as consumption of milks, fats and oil groups were high in the several BMI groups, and lower in taller and heavier children within the group of 110-119% BMI rate. Therefore, it could be summarized that the Zn status of the children was favorable but the Cu status was inadequate. Serum Zn and Cu levels were found to be related to the overall quality and/or the quantity of diet and physical growth pattern of children.

  • The purpose of this study was to analyse copper intake and effect ofZn(30mg ZnSO4/d) supplementation on plasma copper level of Korean adults. Daily Cu intakes were studied in ninety subjects aging 20-20 years. Among them twenty four subjects participated in 6 weeks Zn supplementation study. The men consumed 1.47($\pm$0.64)mg of Cu and the women consumed 0.98($\pm$0.43)mg of Cu daily. the most abundant sources of Cu was meat, fish, egg and soybean group, the second was cereal and grain group and the third was vegetable group. These three groups supplied about 90% of copper in the subjects. The plasma copper level of the subjects was not changed much until two weeks of Zn supplementation. However, after two weeks of Zn supplementation plasma copper level was reduced continuously during the experiment. There was no significant difference in plasma Cu level between control and supplement group of the men, while the supplemented women showed significantly lower plasma Cu level than control group at week 4(p<0.01) and week 6(p<0.05). Although plasma Cu level of the subjects was slightly changed, its concentration in plasma was still in normal range in all groups and no one showed clinical Cu deficiency. Therefore the Zn supplementation of RDA level doesn't seem to cause any adverse effect on Cu status.

  • The purpose of this study was to investigate the relationship among nutritional status of copper and zinc, serum leptin, and lipids of 99 middle school girls residing in kyunggi-do, Korea. Subjects were divided assigned to one of two groups such as normal (BMI<85 percentile, n=58) and obese (85$\leq$BMI, n=41) groups. Subjects were evaluated based on anthropometric measurements, 24-hr dietary recalls and blood analysis. The mean age was 13.93 years. The mean weight (p<0.001), BMI (p<0.001), body fat (p<0.001) of obese were significantly higher then those of normal group. The mean daily energy intake was 94.2% of RDA for Korean. The ratio of energy coming from carbohydrate, fat and protein was 63:24:13. The mean daily intakes of Cu and Zn were 1.4 mg and 7.4 mg (73.7% of RDA), and there were no significant difference between two groups. The mean serum levels of leptin (p<0.001), LDL-cholesterol (p<0.05), triglyceride (p<0.01), TPH (total cholesterol/HDL; p<0.001), LPH (LDL/HDL; p<0.001) and AI (atherogenic index; p<0.001) of obese were significantly higher than those of normal group. The mean serum Cu level of obese was significantly higher than normal group but, the mean serum Zn level of obese was significantly lower than normal group. Serum Cu showed a significantly positive correlations with body weight (p<0.001), BMI (p<0.001), body fat (p<0.001), serum leptin, and LPH. However, serum Zn showed a significantly negative correlations with body weight (p<0.001), BMI (p<0.001), serum leptin (p<0.001), TPH (p<0.05), and AI (Atherogenic index; p<0.05). To summarize the results, the Zn intakes of middle school girls did not reach to RDA for Koreans. Also, increase of BMI may lead to decrease of serum zinc level and increase of serum copper level, and this change of serum zinc related to the change of serum leptin and serum lipids level in middle school girls during rapid growth.

  • This study was performed to analyze the relationship among sebum hydration content of the skin and nutritional intake, serum antioxidant minerals and antioxidant enzymes, and lipid peroxide concentration in 50 female subjects in their 20s. The skin type was divided into Dry Skin, Mixed Skin, and Oily Skin, and the dry skin group was 14%, the mixed skin group was 56%, and the oily skin group was 30% of all subjects. The average age of the subjects was $20.54{\pm}1.43$ years and BMI was 20.66. The average sebum content in each group was in the order of T-zone>forehead>chin>cheek. In case of the T-zone, a significant difference between the dry skin group and the oily skin group was observed, suggesting that the area is most sensitive to sebum content by skin type. Significant differences were not observed in energy and nutrient intakes by skin type. Serum concentrations of antioxidant minerals such as copper, manganese, zinc and selenium were not significantly different among the groups, but the dry skin group tended to be higher than the oily skin group. Serum catalase was significantly higher in the oily skin group (P < 0.05), and MDA was significantly higher in the mixed skin group (P < 0.05). The hydration of the cheek and serum zinc showed a negative correlation, and the sebum content of the cheek and GPx showed a significant negative correlation. The hydration of the forehead and serum copper showed a significant negative correlation, and the hydration of the forehead and GPx showed a significant positive correlation. The hydration of the chin and serum SOD showed a significant positive correlation. With these results, it is considered that the basic condition of nutritional status can affect the skin health.

  • Global production of zinc is about 13 million tons and zinc is the fourth-most widely used primary metal in the world following iron, aluminum and copper. When zinc is recycled to produce secondary zinc, it can save about 75 % of the total energy that is needed to produce the primary zinc from ore, and in therms of $CO_2$ emissions reduced by about 40 %. However, since zinc is mainly used for galvanizing of steel, the recycling rate of zinc is about 25 %, which is lower than other metals. The raw materials for recycling of zinc include dusts generated in the production of steel and brass, sludge in the production process of non-ferrous metals, dross in the melting of zinc ingots or hot dip galvanizing, waste batteries, and metallic scrap. Among them, steelmaking dust and waste batteries are most actively recycled up to now. Most of the recycling process uses pyrometallurgical methods. Recently, however, much attention has been given to a combined process of pyrometallurgical and hydrometallurgical processes.

  • BACKGROUND: Increase of heavy metals in agricultural ecosystem has become a social issue nationwide as it is related to public health. This study was performed to find out the status and long-term trends with consecutive application with the commercial liquid pig manure in the agricultural fields. METHODS AND RESULTS: Heavy metals including arsenic, cadmium, copper, lead, nickel, and zinc were analyzed in the 41 samples of paddy fields and 54 samples of upland fields consecutively applied with commercial liquid pig manure for 0 to 16 years. Heavy metal accumulation were not increased statistically at the both paddy and upland fields as the consecutive application year of commercial liquid pig manure were increased. However, some of surveyed upland soils exceeded the criteria of cadmium, copper, and zinc designated by the Soil Environmental Conservation Act in Korea. CONCLUSION: Therefore, analysis of heavy metals, specially copper and zinc, in agricultural fields is absolutely necessary before liquid pig manure application to the fields. In addition, heavy metal accumulation in agricultural fields following to the long-term application of liquid pig manure will be monitored periodically considering with bioavailability of copper and zinc to the crops as an essential nutrients.
