Dissolution of magnetite powders by 0.05 M citric acid was investigated at $50^{\circ}C$. All the tests were performed in the pH range between 2.0 to 5.0, which was adjusted using nitric acid or sodium hydroxide. Concentration of each of the dissociated chemical species of citric acid under various solution pHs was calculated using the ionization constants. Variation of zeta potential of magnetite with pH changes was also investigated. The dissolution reaction was explained by comparing the concentration of the dissociated chemical species of citric acid with the zeta potential. Longer than 3 h of induction time was required to dissolve the magnetite. The dissolution behaviour of magnetite was well described by the equation. The physical meaning of each parameter was explained successfully from the model equation.
Polystyrene particles (PS) with poly(ethylene glycol) units on surface were formed by an emulsifier-free emulsion polymerization using styrene, poly(ethylene glycol) methacrylate (PEG-MMA) or poly(ethylene glycol) dimethacrylate (PEG-diMMA) at pH 7, and followed by freeze-drying to give the corresponding powders. The structures of PS particles were confirmed by FT-IR spectroscopy, and the particle size and distribution the PS particle were observed by scanning electron microscopy and particle analyzer. Monodisperse polymer particles were obtained at a concentration of PEG-MMA 2∼5 mol% or PEG-diMMA 1 mol% relative to styrene. The highest zeta potential of polymer surface was measured to be 183 mV at a polymer of PEG-MMA 5 mol%, which was measured in dielectric medium by means of ELS-8000 dynamic light scattering.
Our aim was to investigate the effects of bromelain embedded in double emulsion (DE) on physicochemical properties of pork loin. We evaluated DE characteristics such as size, zeta potential, and microscopy after fabrication. We marinated meat with distilled water (DW), 1% (w/v) bromelain solution, blank DE, and 1% (w/v) bromelain loaded in double emulsion (DE E) for 0, 24, 48, and 72 h at 4℃, and prepared raw meat for control. The marinated samples were assessed for color, water holding capacity, cooking loss, moisture content, pH, protein solubility, Warner-Bratzler shear force (WBSF) and gel electrophoresis. The droplet size of 1% (w/v) bromelain embedded in DE was increased compared with blank DE (p<0.05) and values of zeta potential decreased. The increase in lightness and color difference range of the DE-treated group was lower than that of the DW-treated group (p<0.05). Moreover, treatment by immersion in 1% (w/v) DE E resulted in the highest water holding capacity values (p<0.05) and lower cooking loss values than water base treatment (p<0.05). Results for myofibrillar protein solubility and WBSF showed a similar trend. 1% (w/v) DE E showed degradation of myosin heavy chain after 48 h in sodium dodecyl sulfate-polyacrylamide gel electrophoresis. Thus, bromelain-loaded DE is useful for controlling and handling enzyme activity in food industry.

Soybean lecithin liposomes composed phosphatidyl choline, phosphatidyl ethanolamine, phosphatidyl inositol and phosphatidic acid were prepared by using the previously developed supercritical reverse phase evaporation method. The effect of phospholipid composition on the formation of liposomes and physicochemical properties were examined by means of trapping efficiency measurements, transmission electron microscopy, dynamic light scattering and zeta potential measurements. The trapping efficiency of liposomes for D-(+)-glucose made of CNA-Ⅰ which contains approximately 95% phosphatidyl choline is higher than that of CNA-II and CNA-O which contain approximately 32% phosphatidyl choline. However there is no any difference between the trapping efficiency of liposomes for D-(+)-glucose made of CNA-II which has saturated hydrocarbons tails and that of liposomes made of CNA-O which has unsaturated hydrocarbon chains. The electron micrographs of liposomes made of CNA-II and CNA-O show small spherical liposomes with diameter of $0.1\sim0.25{\mu}m$, while that of CNA-I shows large unilamellar liposomes with diameter of $0.2\sim1.2{\mu}m$. These results clearly show that phospholipid structure of phosphatidylcholine allows an efficient preparation of large unilamellar liposomes and a high trapping efficiency for water soluble substances. Liposomes made of CNA-II and CNA-O remained well-dispersed for at least 14 days, while liposome suspension made of CNA-I separated in two phase at 14 days due to aggregation and fusion of liposomes. The dispersibility of liposomes made of CNA-I is lower than that of CNA-II and CNA-O due to the smallar zeta potential of CNA-I.
Calculation of partial charge is important in chemistry. However, because there are many methods developed, it is of considerable interest to know how to calculate and apply properly to address various chemical problems. For basis set, usually double zeta quality is acceptable, and double zeta polarization function would be enough for most cases. To describe electronic state more accurately, Many electron configurations would be necessary to describe highly strained or anionic species. The NPA population introduced new concept about amide bonds, i.e., the planar geometry of nitrogen atom may not come from resonance, but from the lowering of p-orbital energy by electronegative carbonyl carbon atom. The issues for hypervalent atomic charges was also addressed by various charge derivation scheme. When the charge schemes were applied to organolithium compounds, the ionic nature of boding was revealed. This comes from the fact that previous Mulliken partial atomic charges overemphasized the covalent character, wihout much justification. The other partial charge derivation schemes such as NPA(natural population analysis), IPP (Integrated Projected Population) showed that much more ionic picture. ESP potential derived charges are generally believed to be suitable to describe intermolecular interactions, therefore they are used for molecular dynamics simulations and CoMFA (comparative molecular field analysis). The charge derivation schemes using multipole polarization was mainly applied to reproduce experimental infrared spectroscopy. In some reports these schemes are also suitable for intermecular electrostatic interactions. Charges derived from electron density gradient have shown the some bonds are not straight, but actually bent. The proper choice of charge-calculation method along with suitable level of theory and basis set are briefly discussed.
The effects of pH (5, 7 and 9) and ionic strength of different salts on the flocculation characteristics of humic acid by inorganic (alum, polyaluminum chloride (PAC) with degree of neutralization, r=(OH/Al) of 1.7) and organic (cationic polyelectrolyte) coagulants, have been examined using a simple continuous optical technique, coupled with measurements of zeta potential. The results are compared mainly by the mechanisms of its destabilization and subsequent removal. The destabilization and subsequent removal of humic acid by PAC and cationic polyelectrolyte occur by a simple charge neutralization, regardless of pH of the solution. However, the mechanism of those by alum is greatly dependent on pH and coagulant dosage, i.e., both mechanisms of charge neutralization at lower dosages and sweep flocculation at higher dosages at pH 5, by sweep flocculation mechanism at pH 7, and little flocculation because of electrostatic repulsion between negatively charged humic acid and aluminum species at pH 9. The ionic strength also affects those greatly, mainly based on the charge of salts, and so is more evident for the salts of highly charged cationic species, such as $CaCl_2$ and $MgCI_2.$ However, it is found that the salts have no effect on those at the optimum dosage for alum acting by the mechanism of sweep flocculation at pH 7, regardless of their charge.

We have studied surface roughness, contamination of impurity, bonding with some gas element, reflectance and zeta potential on masks to be generated or changed during photolithography/dry or wet etching process. Mask surface roughness was not changed after photolithography/dry etching process. But surface roughness was changed on some area under MoSi film of Cr/MoSi/Qz. There was not detected any impurity on mask surface after plasma dry etching process. Reflectance of mask was increased after variable plasma etching treatment, especially when mask was treated with plasma including $O_2$ gas. Blank mask was positively charged when the mask was treated with Cr plasma etching gas($Cl_2:250$ sccm/He:20 $sccm/O_2:29$ seem, source power:100 W/bias power:20 W, 300 sec). But this positive charge was changed to negative charge when the mask was treated with $CF_4$ gas for MoSi plasma etching, resulting better wet cleaning. There was appeared with negative charge on MoSi/Qz mask treated with Cr plasma etching process condition, and this mask was measured with more negative after SC-1 wet cleaning process, resulting better wet cleaning. This mask was charged with positive after treatment with $O_2$ plasma again, resulting bad wet cleaning condition.
In this work, the effect of NE plasma treatment generated by radio-frequency was investigated in acid-base surface values, ion adsorption characteristics, and surface free energies of carbon blacks. As the results, it was clearly found that the obvious improvement of the treatment is in the London dispersive component (${\gamma}s^L$) of surface free energy of carbon blacks. Also both electron-acceptor ( ${\gamma}s^+$) and -donor (${\gamma}s^-$) parameters for the specific component (${\gamma}s^{sp}$) were also increased with increasing the treatment time, resulting in increasing the surface functional groups of the carbon blacks studied, together with a consequence of the increases of acidic and basic surface functional groups, ion exchange, zeta potential, and ion mobility.

Oil in water nanoemulsion of astaxanthin was prepared by high pressure homogenization. The emulsifying conditions including emulsifier type, concentration and astaxanthin concentration were optimized. Stability of nanoemulsion was measured using zetasizer, freeze-fracture scanning electron microscope (FF-SEM), particle analyzer and colorimeter. The mean diameter of the dispersed particles containing astaxanthin ranged from 160 to 190 nm. Size distribution was unimodal and extended from 40 to 200 nm. The nanoemulsion prepared by glyceryl citrate/lactate/linoleate/oleate had smaller particle size and narrow size distribution. Stable incorporation of astaxanthin in nanoemulsion was performed and checked using high performance liquid chromatography (HPLC), freeze-fracture scanning electron microscope (FF-SEM). Physical stability of nanoemulsion was not significantly changed during storage at both light and thermal condition for a month with zeta potential value of -41 mV meaning stable colloid.

To study the dispersion factors of silica sol prepared from fumed silica powder, we prepared silica sol under an aqueous system using a batch type bead mill. The dispersion properties of silica sol have a close relationship to dispersion factors such as pH, milling time and speed, the size and amount of zirconia beads, the solid content of fumed silica, and the shape and diameter of the milling impellers. Especially, the silica particles in silica sol were found to show dispersion stability on a pH value above 7, due to the electrostatic repulsion between the particles having a high zeta potential value. The shape and diameter of the impellers installed in the bead mill for the dispersion of fumed silica was very important in reducing the particle size of the aggregated silica. The median particle size ($D_{50}$) of silica sol obtained after milling was also optimized according to the variation of the size and amount of the zirconia beads that were used as the grinding medium, and according to the solid content of fumed silica. The dispersion properties of silica sol were investigated using zeta potential, turbiscan, particle size analyzer, and transmission electron microscopy.
