While attempting to develop low salt, low fat and high fibre chicken nuggets, the effect of partial (40%) common salt substitution and incorporation of chickpea hull flour (CHF) at three different levels viz., 5, 7.5 and 10% (Treatments) in pre-standardized low fat chicken nuggets (Control) were observed. Common salt replacement with salt substitute blend led to a significant decrease in pH, emulsion stability, moisture, ash, hardness, cohesiveness, gumminess and chewiness values while incorporation of CHF in low salt, low fat products resulted in decreased emulsion stability, cooking yield, moisture, protein, ash, color values, however dietary fibre and textural properties were increased (p<0.01). Lipid profile revealed a decrease in total cholesterol and glycolipid contents with the incorporation of CHF (p<0.01). All the sensory attributes except appearance and flavor, remained unaffected with salt replacement, while addition of CHF resulted in lower sensory scores (p<0.01). Among low salt, low fat chicken nuggets with CHF, incorporation CHF at 5% level was found optimum having sensory ratings close to very good. Thus most acceptable low salt, low fat and high fibre chicken nuggets could be developed by a salt replacement blend and addition of 5% CHF.

This paper examines the physico-chemical properties and structural features of thio lignin and alcohol lignin preparations extracted from fast-growing poplar wood. The lignin preparations were characterized using UV, IR and alkaline nitrobenzene oxidation methods. The yield was higher in thiolignin due to its preparation from wood under drastic alkaline conditions and almost the total amount of alkaline degraded lignin was precipitated except acid soluble lignin. In case of ethanol lignin, structural modifications were comparatively less and form a cream colored lignin more or less similar to its original natural color. The methoxyl values were higher due to syringyl unit present in hard wood lignin in addition to guaicyl unit present in soft wood. The higher values of methoxyl content of isolated lignin revealed that it was built up of high syringyl units. The elementary analysis, methoxyl group and hydroxyl groups were presented by $C_{9}$ formula indicated that it was made up of phenyl propane monomers. Nitrobenzene oxidation of thio lignin and ethanol lignin yield more or less the chromatograms of similar pattern, except difference in relative percentage. The ultra violet spectra of lignins were quite similar, irrespective of the source and method of isolation. Infrared spectroscopy studies of poplar deltoides, thio and ethanol lignin shown different absorption bands which have been utilized for structural investigations.
This study was conducted to Investigate the effects of physico-chemical soil properties on the growth and yield of ginseng. 1 In the field survey, the yields of 6 year old ginseng were 2.46 Kg/3.3$m^2$, 2.13 Kg/3.3$m^2$, 1.44 Kg/3.3 $m^2$ in clay loam, loam and sandy loam soils, respectively 2. The missing plant rate for il year old ginseng were 33.6% and 51.6% in clay loam and sandy loam soils, respectively : the stem length and stem diameter of ginseng plants in sandy loam soil were smaller than those in clay loam soil. 3. Soil aggregation and porosity we're slightly higher in 6 year old ginseng fields than in 2 year ones. 4. Inorganic-N increased in 2 year and 3 year old ginseng fields reaching up to 100-120ppm, however it 1 decreased to 75 ppm, 34 ppm and 25 ppm in 4, 5 and 6 year old ginseng fields, respectively, It varied 1 more greatly in sandy loam soil than in clay loam. 5. The $P_2O_5$, K, Ca, and Mg contents differed little with plant age. Sandy loam had high N and $P_2O_5$ contents but low cation contents. 6. The yield of 6 year old ginseng fields were significantly correlated with clay contents and porosity. The missing Plant rate of 6 year old ginseng had a positive correlations with sand. and N contents.
The optimum level of fresh granulated low-calcium (0.2%) skim milk co-precipitate, as fat substitute in low-fat ground pork patties was determined on the basis of physico-chemical, cooking and sensory properties. Low-fat ground pork patties (<10% total fat), formulated with 15 per cent water, 4 per cent added fat, 1.5 per cent salt and 4-10 per cent milk co-precipitate, were evaluated for proximate composition, cooking characteristics and compared with control patties with 15 % added fat. The moisture and protein content of raw and cooked low-fat patties were significantly (p<0.05) higher than control. The incorporation of milk co-precipitate in low-fat patties improved cooking yield, fat and moisture retention and reduced shrinkage. The sensory properties of low-fat patties were comparable with control patties. The overall acceptability of low-fat patties formulated with 7% milk co-precipitate was significantly (p<0.05) higher than patties with 10% level and non-significantly (p<0.05) higher than low-fat patties containing 4% milk co-precipitate and control. Instrumental Texture Profiles of developed low-fat patties and control patties were comparable with slight increases in hardness and gumminess of the low-fat product. The developed low-fat ground pork patties (7% milk co-precipitate) had lower TBA values, better microbiological and sensory refrigerated storage stability than high-fat control patties packaged in air permeable films for 21 days.
Dental abrasive, dicalcium phosphate dehydrate (DCPD) was prepared and the several important factors affecting on the quality of toothpaste were investigated by means of set test, glycerine absorption, Coulter counter test, color difference, BET adsorption, mercury porosimetery, and rheogram comparing with two foreign DCPDs, MFO4 and Dentphos K. Sample DCPD was prepared by reaction between 85% H$_{3}$PO$_{4}$ and 15% milk of lime at $39^{\circ}C$ (pH6.5), and stabilized with TSPP and TMP. The physicochemical properties of Sample DCPD were obtained as follows: whiteness (98.99), average particle size (15.5 $\mu\textrm{m}$), pH (7.9), remainder particle weight (0.49w/w%), glycerine absorption value (64 ml), and set test (passed). N$_{2}$ adsorption curves (BET) of three kinds of DCPD showed non-porous type III isotherm. BET adsorption parameters of sample DCPD showed that surface area was 24.9 m$^{2}$/g, total pore volume 0.09 cm$^{3}$/g and average pore radius 72.0 $\AA$. The rheogram of the toothpaste containing each DCPD showed bulged plastic flow with yield vlaue and thixotropic behavior. These results meet standard requirements as abrasive standard, and suggested that synthesized sample DCPD could be used a dental abrasive such as a high quality grade in practice as foreign DCPDs.
This study was designed to determine the usability of lemon fiber (LF-2%, 4%, 6%) and carrot fiber (CF-2%, 4%, 6%) to produce lowfat beef hamburgers. To that end, a certain amount of fat was replaced with each fiber. The proximate composition, pH value, cholesterol content, cooking characteristics, color, texture profile, and sensory properties of low-fat beef hamburgers were investigated. LF increased moisture content and cooking yield due to its better water binding properties, while CF caused higher fat and cholesterol contents owing to its higher fat absorption capacity (p<0.05). LF resulted in a lighter, redder, and more yellow color (p<0.05). Hardness, gumminess, springiness, and chewiness parameters decreased when the usage level of both fibers increased (p<0.05). However, more tender, gummy, springy, and smoother hamburgers were produced by the addition of CF in comparison with LF (p<0.05). Moreover, hamburgers including CF were rated with higher sensory scores (p<0.05). In conclusion, LF demonstrated better technological results in terms of cooking yield, shrinkage, moisture retention, and fat retention. However it is suggested that CF produces better low-fat hamburgers since up to 2% CF presented sensory and textural properties similar to those of regular hamburgers.

The investigations were conducted to improve the physical properties by analyzing physico-chemical properties on the different soil families of textures at 20 upland fields located in the parts of Gyengsangbuk-do area. Soil physico-chemical properties were analyzed for bulk density, hardness, porosity, moisture, pH, EC and organic mater by soil depth on the different soil families of textures. Bulk density distributions were higher than 1.2 Mg $m^{-3}$ in the optimum range. Hardness distributions were lower than 20 mm in the optimum range. Therefore, the physical properties of upland soil was deteriorated. Correlation coefficient of bulk density with hardness and organic mater were higher significantly, that was positive and negative, respectively. The soil hardness had the greatest distribution degree to the crop yield and bulk density and organic matter followed. Conclusively, To improve the physical properties of upland soil was more effective to fertilizing organic matter than other ways.
This study was conducted to find the physico-chemical properties and the amino acid content of the pigs hoof hydrolysate, keratin protein and to investigate its fertilizer effect on the growth of crops. The keratin proteins such as pigs hoof were alkali-hydrolyzed to produce the hydrolysates. The chemical properties of the hydrolysate of pigs hoof was 6~7 of pH and $10{\sim}15dS\;m^{-1}$ of EC. Total amino acid contents released from the pigs hoof were 10.18%, respectively. The pot experiment was carried out for the cultivation of lettuce. The treatment design of these pot cultivation was composed of Control (compost + NPK), PHH-0.5, PHH-1.0, PHH-2.0 (${\times}2,000$ ; 1,000 ; 500 diluted solution of pig hoof hydrolysate). After lettuce cultivation, the pH values in all treatment soils were decreased than those in initial soils, and the exchangeable cation value was higher than that of control. In all PHH treatments, lettuce growth was better in the leaf length by 6~16% and the leaf width by 4~15% than in control. Therefore, the PHH solutions manufactured by hydrolysis process had plenty of amino acids, and among them PHH had the most abundant nutrients and amino acids with highest growth and yield effect on lettuce.
This research was conducted to investigate the influence of variouis organic substrates on growth and yield of organically grown ginseng seedlings in a shaded plastic house. In the investigation of optimal substrate, the eight substrate were formulated by adjusting blending rate of peatmoss, perlite, coir dust(coco peat), and vermiculite. Then, the changes in physico chemical properties of root substrates as well as their influences on the growth characteristics and yield were determined at six months after sowing. The elevation of the blending rate of peatmoss from 50% to 70% with decrease in the rate of inorganic component (mixture of perlite and vermiculite) from 50 to 30% resulted in the increase in container capacities and decrease in total porosities and air-filled capacities. The concentrations of $NH_4-N$, $P_2O_5$ and K increased as the incorporation rate of castor seed meal, phosphate ore, and langbenite, respectively, were elevated during the root medium formulations. The PPV-1 and PPV-4 substrates produced high stem length, stem diameter, shoot fresh weight, leaf area and root length among eight substrate. Root fresh weight was heaviest in PPV-4 compound nursery media. The results of this experiment will be utilized in the new substrate application for ginseng organic culture in shaded vinyl house.

The physicochemical properties of soil and the yield and quality of rice (Oryza sativa L. cv. Sailmi) were assessed using Italian ryegrass (Lolium multiflorum Lam. cv. Kowinearly)-rice double cropping systems in the paddy fields at Goseong and Miryang in southern Korea. The average temperatures during the ripening period were approximately 1 ℃ higher than the optimal temperature for rice ripening and the sunshine duration was reduced by frequent rainfall. Consequently, it was slightly below the optimal conditions required for rice ripening. In the soil at Goseong, winter Italian ryegrass cropping increased the pH, electrical conductivity, and the contents of organic matter, total nitrogen (T-N), available P2O5, K, Ca, and Mg than winter fallowing. Particularly, the contents of T-N and available P2O5increased significantly. In the soil at Miryang, Italian ryegrass slightly increased the electrical conductivity and the T-N, Mg, and Na contents. Therefore, winter Italian ryegrass cropping improved the physicochemical properties of paddy soils; however, Italian ryegrass-rice double cropping slightly reduced the culm length at both Goseong and Miryang, without markedly changing the panicle length or number compared to fallow-rice cropping. Furthermore, at Goseong, Italian ryegrass-rice double cropping slightly decreased the spikelet number and milled rice yield, and increased the ripened grain rate; however, at Miryang, contrasting results were observed. In addition, fallow-rice cropping revealed no differences in the head rice or opaque rice rates. The protein content was slightly increased in Italian ryegrass-rice double cropping, without significant changes in the amylose content or Toyo value, compared to that in fallow-rice cropping. The peak and breakdown viscosities were slightly decreased. These results indicate that winter Italian ryegrass cropping might alter rice taste but may not exhibit remarkable negative effects on rice cultivation. Therefore, Italian ryegrass-rice double cropping system is recommended for paddy fields in southern Korea. Nevertheless, to increase the rice yield and quality, fertilization standards for rice cropping that consider the changes in the T-N and organic matter contents in paddy fields caused by winter Italian ryegrass cropping need to be established.
