In this study, we observed differences in the fruit body genesis in with seasonal changes. The mushrooms generated different spines even when under same environmental conditions in equivalent growth chambers during different seasons. The growth chamber conditions were set at $18^{\circ}$, 1000 ppm CO and 95% humidity for uniform primordium formation. Following this, the humidity was reduced to 85% during growth and development. The characteristics of the fruit body were measured: yield (weight), length (size), hardness, and chromaticity. Each measure was relatively compared owing standard data for. We investigated the environmental factors to assess the cause of variation in fruit body. Change in temperature and humidity were especially focused on, apart from climate that can affect mushroom growth. It was observed that temperature and humidity both influence fruit body growth. Not the absolute value of the elevation, there was a change of climate which the temperature is lowered and lowered the humidity can be assumed that the changes in the environmental conditions inside the growth chamber the mushroom growth.

Pleurotus species are the most consumed and cultivated mushrooms in Korea. Although oyster mushrooms (P. ostreatus) can be cultivated automatically, their storability is slightly lower than that of king oyster mushrooms (P. eryngii) and winter mushrooms (Flammulina velutipes); therefore, the export proportion of oyster mushrooms is very low. Since Korean mushrooms are highly preferred across Southeast Asian, the export of oyster mushrooms in the form of complete substrates is expected to be more promising than that of fresh mushroom. Here, 1 and 2.5 kg complete substrates of P. ostreatus 'Soltari' and P. sajor-caju 'Sambok' were prepared and stored at different temperature from 0 to 15℃ for 10 days. Thereafter, the formation of fruiting bodies was induced. Since the 2.5 kg complete substrates required 70 days of incubation, their mycelia were at an advanced age and their fruiting bodies did not grown normally. When 70%-incubated complete substrates were stored at 5-10℃, the growth was faster and more uniform and stable fruiting bodies were formed. Export test of complete substrates to Vietnam using distribution containers set at 0℃ and 15℃ revealed that the growth period was shortened by 1-2 days when the distribution containers were set at 15℃ and the yield of 'Soltari' increased by approximately 10%. In addition, even though the yield of 'Sambok' was similar between treatments at 0℃ and 15℃, the quality of fruiting bodies from 15℃-distributed complete substrates was much better than that of those from 0℃-distributed substrates.
This study was carried out to investigate the effect of several substrates; used rockwool, several spent mushroom composts, and common used media, such as rockwool and vermiculite, on growth and fruit quality of cucumber. Cucumber grew dramatically in the rockwool+peatmoss (1:2 v/v) (RP) and fine granular rockwool in hydroponic system using Yamaztiki's solution for cucumbers. The yield of cucumber fruit was highest in recycled winter mushroom compost (RW), and followed by 100% perlite (Par), recycled oyster mushroom compost (RO), and RR but there was no significant difference among these three media. Soluble solid and firmness were higher in Per and vermiculite (Ver), and any difference was not found among the others. Vitamin C was not influenced by kind of substrate. The results confirm that several reused or recycled substrates have high possibilities for use as medium for hydroponic culture in cucumber.
The cultural characteristics of fruit bodies formation in the two selected strains(brown and yellow strain) of winter mushroom collected in Korea were investigated. The effects of various environmental conditions and physicochemical pretreatments were evaluated by the character of fruit bodies. There was no differences between two strains in non-selectivity of media, optimum temperature($11^{\circ}C{\sim}15^{\circ}C$), relative humidity(90%), and illumination(60 lux). In the application of alternated temperature (the best condition : $5^{\circ}C{\cdot}10^{\circ}C$ and $5^{\circ}C{\cdot}15^{\circ}C$), ultraviolet ray(30~50 seconds), electricity(5 seconds), thiamine hydrochloride(0.05~0.1%), urea, and IAA as a pretreatments, there was no differences between two strains. The brown strain had larger pileus and longer stipes than these of the yellow strain, while the yellow strain yielded more weight and number of the fruit body formation than the brown strain.
In this study, smart farm technology was used by farmers cultivating 'CHIKUMASSHU T-011' in order to develop an optimal growth model for the precision cultivation of bottle-grown winter mushroom and the results of the same are mentioned herein. Farmers participating in the experiment used 60 ㎡ of bed area with 4 rows and 13 columns of shelf shape, 20 horsepower refrigerator, 100T of sandwich panel for insulation, 6 ultrasonic humidifiers, 12 kW of heating, and 20,000 bottles of Flammulina velutipes mushroom spores. The temperature, humidity, and carbon dioxide concentrations, which directly affect the growth of the mushroom, were collected and analyzed from the environmental sensors installed at the winter mushroom cultivation area. The initial temperature was found to be 14.5℃, which was maintained at 14℃ to 15℃ until the 10th day. In the restriction phase, the initial temperature was 4℃ and was maintained between 2℃ and 3℃ until the 15th day, while during the growth phase, it was maintained between 7.5℃ to 9.5℃. Analysis of the humidity data revealed initial humidity to be 100%, which varied between 88% to 98% during primordia formation period. The humidity remained between 77% to 96% until the 15th day, in the restriction phase and between 75% to 83% during the growth phase. The initial carbon dioxide concentration was 3,500 ppm and varied between 3,500 ppm to 6,000 ppm during primordia formation period and was maintained at 6,000 ppm until the 15th day. During the growth phase, the carbon dioxide concentration was found to be over 6,000 ppm. Fruiting body characteristics of 'CHIKUMASSHU T-011' cultivated in the farmhouse were as follows: Pileus diameter of 7.5 mm and thickness of 4.1 mm, stipe thickness of 3.3 mm, and length of 154.2 mm. The number of valid fruiting bodies was 1,048 unit per 1,400 mL bottle, and the individual weight was 0.71 g per unit. The yield of fruiting bodies was 402.8 g per 1,400 mL bottle.

Gyeongbuk Agricultural Technology Administration carried out the nation opinion research to mushroom industry in 115 of the citizen and the provincials from 10/17/2008 to 10/18/2008. Which was for both grasping the citizen's opinion and habits and understanding farmers'. The result of the research is the following. 37.4 percent people preferred Lentimus edodes among the all respondents and 27.0 percent preferred Flammulina velutipes. As for the purchasing place, 57.4 percent buy them in large retail stores, 40.9 percent buy them in traditional markets. 67 percent of the respondents mainly use them in fall, 31.3 percent use them in winter. 88.7 percent of them mainly eat the mushrooms at home, 11.3 percent is at restaurants. 63.5 percent of them responded that the price of mushrooms was resonable, 26.1 percent answered that was expensive. In appearance, 27 percent of them chose yellow Flammulina velutipes as a good-looking mushroom, 19.1 percent chose Lentimus edodes.
Oyster mushroom is one of the popular mushrooms for Korean people and it is thus one of the mushrooms that were mostly cultivated in Korea in addition to winter and king oyster mushrooms. To promote the consumption in terms of its nutritional value and determine the absorption mechanism in its physiological and metabolic aspects, we investigated the sugar composition of its fruit bodies according to the amount of sugar component in the medium. As a result from the treatment of 4 different sugar components to the sawdust medium of oyster mushroom varieties (i.g., Suhan 1 ho, Yeorum, Chunchu 2 ho), we detected fructose, glucose, ribose, xylose as a monosaccharide with ${\alpha}$-lactose and trehalose as a disaccharide. The sugar alcohols were also detected including glycerol, mannitol, myo-inositol, and sorbitol. The sugar components that were detected in all treatments were trehalose, mannitol, ${\alpha}$-lactose, fructose, glucose, ribose, and myo-inositol and the rest of the components were found in some treatments with their different quantity included in the fruit bodies. The amount of monosaccharides included in fruit bodies is comparatively low and Suhan 1 ho contained them more than other varieties. There was no remarkable difference in the amount of sugar components in fruit bodies depending on treated sugars and their amounts in the treatment. With the increase of lactose treatment, the sugar components were markedly increased and the amount of trehalose in the fruit bodies was different according to the varieties. Therefore, it is not possible to detect the trend of sugar components according to the medium used in the cultivation. The sugar alcohols in the fruit bodies were comparatively contained more in Suhan 1 ho and Chunchu 1 ho. The amount of mannitol in the fruit bodies was not possible to be detected in terms of its trend according to the treatment. For myo-inositol, its quantity is gradually increasing in Suhan 1 ho and Chunchu 1 ho and it is not possible to detent the trend in Yeorum. In conclusion, we only detected ${\alpha}$-lactose as a sugar component that showed a correlation between the amount of treatment and the amount of the fruit bodies. Therefore, the sugar components detected in the fruit bodies were transformed rather than direct absorption into fruit bodies and further studies are needed to address this question.
Because the import of Inonotus obliquus have been rapidly increased in Korea, we developed the Inonotus species-specific marker by using various sequences including ITS sequences, PCR-RFLP and STS primers and used this marker to determine both genetic relatedness and strains discrimination of Inonotus spp. Total 17 different Inonotus spp. were examined by using ITS sequences and classified into 2 different groups. One strain, ASI74008 isolated from Kamchaka island of Siberia, showed the high sequence identity (98%) at the nucleotide level to the other I. obliquus DSM strain, indicating the ASI74008 belong to I. obliquus species. Comparison of banding patterns after restriction enzyme digestions with PCR amplicons of ITS region revealed some variations depending on the species and strains. However, PCR products amplified with STS primer showed species specific patterns. Therefore, use of both STS primers and PCR-RFLP could help for better strain identification.

This study was carried out to characterize the chemical components of Flammulina velutipes during storage by different packaging film application for developing export winter mushroom to south east asia area. Changes of weight and growth rate from Flammulina velutipes were the lowest in testing packaging film at $15^{\circ}C$ among the films. The pH changes of Flammulina velutipesg was the highest in imported packaging film at $25^{\circ}C$. The changes of colors was measured by Hunter's color value, L value and yellowness (+b) were slightly decreased during storage. But the L value and yellowness (+b) were not affected by packaging films. Six organic acids were detected such as oxalic acid, lactic acid, malic acid, citric acid, acetic acid and succinic acid. The content of total organic acids were increased by storage period.

The effect of the nitrogen content of sawdust medium (1.2~1.8%) and the restriction stage temperature (2, 4, and 6℃) on the growth and storage characteristics of Flammulina velutipes (winter mushroom) were investigated. With increased nitrogen content, the growth days shortened and the yield of the fruiting body increased. The effect of restriction temperature on the growth of the fruiting body differed depending on the nitrogen content. No difference in restriction temperature was evident for T1 with a low nitrogen content of 1.28%. In medium with a nitrogen content ≥1.55%, the yield and length of the pileus and stipe increased as the restriction temperature decreased. The weight loss ratio according to the storage period did not change according to the nitrogen content in the medium. A low weight loss ratio of 1.50 to 1.93% was observed at a restriction temperature <4℃. When T3 with high nitrogen content in the medium was treated at a restriction temperature of 4℃, the fruiting body color values after 31 days of storage were 84.81 (L) and 6.3 (ΔE). This color change was minute compared to that after other treatments. The sensory characteristics score was 5.2 after 31 days of storage, and the quality remained acceptable for consumption.
