This experiment was conducted to study the effects of growth stage and variety on the quality of whole crop rice(WCR) silage at National Institute of Animal Science, RDA from 2004 to 2005. Two types of rice("Chucheong" for food and "Hamasari" for whole crop) were harvested at six different growth stages (heading, flowering, milk, dough, yellow ripen and fully ripen stage) and ensiled each harvest stages. Crude protein(CP) content of all whole crop rice silage was also decreased with progressed maturity at harvest and TDN(total digestible nutrient) content of WCR was increased. The average CP content of whole crop rice was higher than that of food rice. The contents of ADF(acid detergent fiber) and NDF(neutral detergent fiber) decreased with delayed harvest maturity. The content of TDN estimated from ADF content was increased with progressed maturity, but there was not found significant difference between rice varieties(p<0.05). The average pH value was 4.69 and it was increased with delayed harvest maturity. Acetic and butyric acid content were decreased, but lactic acid content was increased with progressed maturity. The experiments presented here show that all rice varieties may give a good quality silage. But some wrong practical method(grain loss, productivity, nutrient value, etc.) will make poor quality of rice silage. Therefore, dough stage of harvest maturity will be recommendable as proper harvest time for making high quality of whole crop rice silage in Korea.

The aim of this study was to characterize the interactions of rice and Burkholderia glumae, a causal agent of bacterial grain rot of rice, at molecular levels using whole genomic sequences and to identify genes important for pathogenicity and symptom development. To do these, we sequenced whole genome of the bacterium and constructed cosmid clone profiles. We generated pools of mutants using various transposons and determined mutation sites by sequencing rescued plasmids. We focused on studying toxoflavin biosynthetic genes, quorum sensing regulation, and Hrp type III protein secretion systems. We found that two possible operons consisting of five genes are involved in toxoflavin biosynthesis and their expression is regulated by quorum sensing and LysR-type regulator, ToxR. We have isolated the nn PAI of B. glumae and characterized by mutational analyses. The hrp cluster resembled most the putative Type III secretion systems of B. pseudomallei, which is the causative agent of melioidosis, a serious disease of man and animals. The Hrp PAI core region showed high similarity to that of Ralstonia solanacearum and Xanthomonas campestris, however some aspects were dissimilar.
The aim of this study was to investigate food culture represented by the grain yard, water well, kitchen, and meat storage space which were depicted in the mural painting of An-Ak tomb No. 3. The mural paintings of An-Ak tomb No. 3 were compared with those of ancient Chinese tombs before the 4th century in order to understand their characteristics. Above all, the tomb murals describe the form and function of the stove (buttumak) as well as the cuisine using the cauldron (sot) and steamer (siru) in a very interesting manner. The meat storage space of An-Ak tomb No. 3 shows whole carcasses of animals such as roe deer, dog, and pig. However, Chinese murals show that while small animals such as soft-shelled turtle, fish, chicken, duck, pheasant, rabbit, etc. were stored as whole carcasses without being cut into pieces, large animals such as cows and pigs were slaughtered and each piece of their carcasses such as the head, thigh, meat loaf, and cardiopulmonary part was separately depicted. These tomb murals vividly describe the food culture of Koguryo and China before the 4th century.

The morphology of the high burnup $UO_2$ spent fuel, which was oxidized and annealed in a PIA (Post Irradiation Annealing) apparatus, has been observed. The high burnup fuel irradiated in Ulchin Unit 2, average rod burnup 57,000 MWd/tU, was transported to the KAERI's PIEF. The test specimen was used with about 200 mg of the spent $UO_2$ fuel fragment of the local burnup 65,000 MWd/tU. This specimen was annealed at $1400^{\circ}C$ for 4hrs after the oxidation for 3hrs to grain boundary using the PIA apparatus in a hot-cell. In order to oxidize the grain boundary, the oxidation temperature increased up to $500^{\circ}C$ and held for 3hrs in the mixed gas (60 ml He and 100 ml STD-air) atmosphere. The amount of 85Kr during the whole test process was measured to know the fission gas release behavior using the online system of a beta counter and a gamma counter. The detailed micro-structure was observed by a SEM to confirm the change of the fuel morphology after this test. As the annealing temperature increased, the fission products were observed to move to the grain surface and grain boundary of the $UO_2$ matrix. This specimen was re-structured through the reduction process, and the grain sizes were distributed from 5 to $10\;{\mu}m$.
This study aimed to determine the optimal harvesting time for covered barley to make grain silage, in Honam region of Korea. We harvested six varieties of barley every third day from 24 to 42 days after heading (DAH). The moisture content decreased from 62.4% at 24 DAH to 24% at 42 DAH. The moisture content at 36 DAH was 44.3%; however, moisture content at 39 and 42 DAH was lower than 40%. Yield of covered barley significantly increased from 24 to 42 DAH (p < 0.05). Yield at 36 DAH (557 kg/10a) was not significantly different from that at 39 and 42 DAH (p < 0.05). With respect to the feed value of barley grain silage, the amount of crude fiber and crude ash was different by harvesting time (p < 0.05). However, the amount of crude protein, crude fat, and total digestible nutrients (TDN) from 24 and 42 DAH was not significantly different. The pH of grain silage from 24 to 42 DAH was between 3.8 and 4.2 and it was stable until 36 DAH (p < 0.05). However, the pH of grain silage at 39 and 42 DAH was 5.2 and 5.8, respectively, which was higher than the pH of silage with good fermentation quality. The lactic acid content of barley grain silage from 24 to 42 DAH decreased from 5.5% to 0.5% (p < 0.05). The amount of lactic acid at 36 DAH was higher than that at 39 and 42 DAH (p < 0.05). With respect to moisture content, yield, feed value, and fermentation, the optimal harvesting time for grain silage of covered barley was 36 DAH. This could increase the use efficiency of harvesting machine for barley and reduce the harvesting time gap between whole barley silage and grain silage in Korea. Moreover, using barley grain silage for animal feed could reduce the import of corn.
An engineering design of the machines and equipment for processing grain as well as an understanding of processing itself need the knowledge of thermal properties of grain. Thermal properties of grain are thermal conductivity, thermal diffusivity and specific heat. Knowledge of any two and the bulk density of grain enables the third to be calculated. Several workers have investigated these properties, with special emphasis on thermal conductivity and diffusivity. However, some information is available on the specific heat of rough rice and barley but it is available only for a foreign variety of grain and for as a function of moisture content only. The objectives of this study were to develop a model for the specific heat of rough rice and barley which were a staple products in Korea as a function of initial temperature, moisture content and porosity of grain with cooling curve method, and to analyze the effect of these factors on the specific heat of rough rice and barley. The results of this study are summarized as follows; 1. The specific heat was $1.8209-2.7041kJ/kg\;^{\circ}K$ for Naked barley, 1.8862-2.5625 k.l/kg K for Covered barley, $1.5167-2.3779kJ/kg\;^{\circ}K$ for Japonica rice and $1.5260-2.3981kJ/kg\;^{\circ}K$ for Indica rice. 2. The model for the specific heat of rough rice and barley as a function of initial temperature, moisture content and porosity of grain was developed. 3. Specific heat of rough rice was decreased with initial temperature, but specific heat of barley was increased with initial temperature. 4. On the whole specific heat of sample grain was increased with moisture content of grain. 5. Specific heat of the grain was found to decrease with porosity except Indica rice.

We investigated the nutritive value and ruminal in situ dry matter degradability of whole crop rice silage prepared using Chucheongbyeo (WCRS) as a roughage source for ruminants. The crude protein (7.54%), acid detergent fiber (29.63%), neutral detergent fiber (62.98%), and total digestible nutrient (TDN) (57.88%) found higher in WCRS than those of rice straw. Manganese content in the WCRS was the highest, followed by carbon, iron, zinc, and copper, but magnesium content was the lowest. Glutamic acid content in WCRS was the highest, followed by leucine, asparagine, alanine, valine, arginine, and methionine content was the lowest. We examined ruminal in situ digestibility from total whole crop rice (TWCR), rice husks containing rice (RHR), whole crop rice except RHR (WER), and husked grain (HG) for 3, 6, 12, 24, and 48 hours. Ruminal in situ digestibility in the HG was the highest, followed by RHR, TWCR, and WER. Therefore, we suggest that ruminal in situ degradability was influenced by parts of whole crop rice, and the content of manganese and glutamic acid were the highest in WCRS.
The study was conducted to investigate the effect of whole-wheat ratio and nutrition information provision on purchasing behavior and consumer intention among individuals in their twenties who lack calcium intake. In the end, this study aims to provide basic data on the development and marketing strategy of customized nutrition-reinforced snacks. Regarding whole wheat ratios, the acceptance of taste of whole wheat flour was highest in ZF but didn't seem significant difference with HF's. The familiarity of taste and flavor (P <0.001), purchase intention (p <0.001) and recommendation intention (p <0.001) were higher in order of ZF, HF and TF. Regarding information provision, familiarity of taste and flavor (P <0.05), purchase intention (p <0.05) and recommendation intention (p <0.05) were higher in order of detailed information group, non - information group and simple information group. Therefore, developing calcium-fortified biscuit, mixing whole wheat flour with normal flour might reduce consumer's resistance, Also, providing detailed information on the degree of fortification of calcium and dietary fiber might cause a synergistic effect on consumption.
Six commerical rice varieties were cultivated and harvested at different locations in 1987 and 1988 to clarify the degree of locational variations. of several characteristics related to rice grain quality using the rice samples harvested from 8 to 20 locations for a variety each year. Locational variations of percent brown rice, percent milled rice, 1000-grain weight and amylose content were small, but whole grain rate, alkali digestibility, gel consistency, percent white-center and white-belly grain, degree of chalkiness and degree of translucency showed larger variations between locations. The degree of locational variation of sensory evaluation score for eating quality of cooked rice were varied from small to large along with rice variety used and year cultivated. Texture palatability index and stickiness of cooked rice among rheogram characteristics showed larger locational variations, but cohesiveness and springiness showed smaller variations between locations. Set back, break down and maximum viscosity showed larger locational variations among amylogram characteristics of rice flour. Special attention was given to a cultivated location, Anseong, because rice samples harvested at Anseong showed lower percent white-center and white-belly grain, and low set back and high break down in Chucheongbyeo, lower percent white-center and white-belly grain, higher texture palatability index and viscousness/hardness ratio, and low set back and high break down in Dongjinbyeo, higher texture palatability index, and low set back and high break down in Yongmunbyeo, lower percent white-center and white-belly grain in Sangpungbyeo, and low set back and high break down in Samkangbyeo. No other locations in this study produced rice samples showing wide acceptable quality-related characteristics except Anseong.

Six japonica and three Tongil type cultivars that were released in different years and planted to a large area during different periods were grown at the experimental farm of Seoul National University in 2001 and compared for traits related to dry matter production and grain yield. The varieties chosen were Jodongji released in 1896, Paldal in 1944, Jinheung in 1962, Nagdong and Tongil (Tonsil type) in 1971, Milyang#23 (Tongil type) in 1976, Hwasung in 1986, Ilpum in 1991, and Dasan (Tonsil type) in 1996. The more recent cultivars tended to have lower canopy light extinction coefficients (K). The K value was 0.601 in the oldest cultivar, Jodongji, and decreased below 0.5 in the cultivars released since 1971. Radiation use efficiency (RUE) was significantly different among cultivars before heading stage, showing no consistent tendency with the year of release and not significantly different after heading. Leaf area duration (LAD) was significantly different among varieties, and LAD values tended to be higher in the more recent cultivars. In particular, this tendency was more obscure in Tongil type cultivars. LAD of whole growth period had a significantly positive correlation with dry matter yield at harvest $(r=0.776^*)$. Dry matters measured at heading and harvest tended to be higher in recently released cultivars, but not significantly. The grain yield of Jodongji was the lowest but there was no significant difference among the other varieties in japonica, while higher yield occurred in the more recent Tongil type. Grain yield was correlated with grain number per square meter, and the more recent Tongil type cultivars had the greater grain number per square meter, In conclusion, not only the dry matter and grain yield but also related traits except K value showed no clear changes when compared with the year of their release in japonica cultivars. However, the increased grain yield in the more recent Tonsil type cultivars might have resulted from the enhanced LAD that lead to the higher dry matter production and in turn to the enlarged sink size.
