수도의 등숙기간 및 등숙속도 연구 II. 이삭의 부위별 차이 (Studies on the Duration and Rate of Grain Filling in Rice (Oryza sativa L.) II. Difference between the Parts of a Panicle)

  • Varietal differences of grain filling duration and rate are generally recognized in rice (Oryza sativa L.). But the differences of grain filling characteristics between the parts within a panicle might be present since it takes 6-8 days to finish anthesis in a panicle. To elucidate this, 6 Japonica and 6 Japonica/Indica varieties were grown under three nitrogen levels at the Experimental Farm of Chungbuk National University in 1986, and grain filling characteristics of top, middle and bottom parts of a panicle were analyzed. Rice grain filling duration could be divided into 3 phases, i.e., Lag phase(LP) of 5 days after heading. Linear increasing period (LIP) of 5-20 days after heading and Late filling period (LFP) thereafter. Grain weight difference between the panicle parts was greater during LIP in all the varieties and was decreased during LFP. The difference was greater in Japonica/Indica varieties. Samgangbyeo and Seomjinbyeo had the shortest and the longest grain filling durations with 22.6 and 37.1 days, respectively. In average, grain filling duration of the bottom part of a panicle was 1-2 days shorter than that of top or middle part. The differences were negligible in Daecheongbyeo, Taebaegbyeo and Milyang 23, while it was greater in Tongil with 4.9 days. Grain filling rates were ranged from 0.612 to 1.097 mgㆍgrain$^{-1}$ㆍday$^{-1}$ㆍMilyang 23 showed the lowest rate with 0.612-0.682 mgㆍgrain$^{-1}$ㆍday$^{-1}$, while the rates of Baegyangbyeo, Yongmoonbyeo, Samgangbyeo, Nongbaeg and Daeseongbyeo were about 1 mgㆍgrain$^{-1}$ㆍday$^{-1}$ㆍGrain filling rate of bottom part of a panicle was lower than that of top or middle part. The difference was samll in Nongbaeg and Daeseongbyeo, while it was the greatest in Tongil with 0.222 mgㆍgrain$^{-1}$ㆍday$^{-1}$. Grain filling duration and rate were not afftected by nitrogen level, but varietal and spatial differences of grain filling characteristics were highly significant. However, the spatial difference of grain filling rates within a variety was not significant. Grain filling characteristics of each part of a panicle were significantly correlated (r=0.7207-0.9879) with those of a whole panicle.

  • Wheat was brought to solve food scarcity with aid from the United States caused by the Korean War. The Korean government launched a campaign to encourage mixed rice and wheat meals due to shortage of rice production in the 1960s, Wheat consumption began in earnest. However, it is difficult to rebuild the domestic wheat production base devastated by the Korean War with the technology at the time. Thus, wheat was mainly consumed from imported in the past. Since then, as wheat consumption has increased due to westernization and diversification of dietary life, wheat became the second staple grain in Korea. In this situation, the government enacted the Wheat Industry Promotion Act to create a basis for sustainable production and consumption of wheat in Korea. This study sought to improve the self-sufficiency of domestic wheat by examining the possibility of using "Ariheuk", a variety of new Korean wheat, as a rice supplement in the same context as the govemment's policy. Wheat has been used as a raw material for the processed food, such as noodles and bread. However, we approached it by using whole wheat as a nutritional grain. Participants were recruited from the agri-food consumer panel conducted by Rural Development Administration. We set a final sample of 525 consumer panels based on the age of census household heads. The experiment was conducted in such a way that participants cooked and ate 100% rice meal and rice containing 20% whole wheat meal. Participants completed the sensory evaluation questionnaire with online. For this experiment, all participants were given same whole wheat product. The sensory evaluation questionnaire consisted of color, glossiness, stickiness, aroma, chewing, sweetness, nuttiness, chewiness, softness, bursting, flavor, texture and swallowability. The sensory evaluation results were analyzed by giving -3 points to +3 points. The former points were given to the response that 100% rice meal is very superior to the response that rice containing 20% whole wheat meal. The latter points were given vice versa. Zero point was given to the response that they are similar each other. As a result, rice with 20% whole wheat meal was better than 100% rice meal in terms of color, aroma, chewiness, bursting and flavor. In case of sweetness and glossiness, there didn't exist significantly different. On the other hands, 100% rice meal was better in terms of softness and swallowability. As a result of ANOVA by age groups, from 30s or younger to 60s or more, there was significant difference among the groups in terms of color, chewiness and bursting. As a result of post-hoc analysis with Duncan's multiple range test (p < 0.05), 50s were evaluated to be significantly superior in color, chewiness and bursting compared to other age groups. In conclusion, it is appropriate to use whole wheat as a supplement to rice in order to improve the self-sufficiency of domestic wheat. As a strategy to promote domestic wheat consumption, in case of Ariheuk, it is necessary to provide an experience through whole wheat tasting and to establish a marketing strategy segmented by age groups.

귀리 도정 부위별 메탄올 추출물의 항산화 성분 및 항산화 활성 (Antioxidant Compounds and Antioxidant Activities of Methanolic Extracts from Milling Fractions of Oat)

  • 본 연구에서는 국내에서 개발된 귀리의 도정 부위별 메탄올 추출물의 항산화 성분 및 항산화 활성을 비교 분석하고자 하였다. 항산화 성분으로는 총 폴리페놀 및 플라보노이드 함량을 측정하였으며 항산화 활성은 ABTS 및 DPPH 라디칼 제거능, 환원력을 측정하였다. 실험 결과 귀리의 도정 부위별 메탄올 추출물 중 bran 추출물의 총 폴리페놀 및 플라보노이드 함량이 각각 41.53 mg gallic acid equivalents/100 g sample 및 12.07 mg catechin equivalents/100 g sample로 whole grain 및 endosperm 추출물보다 높은 함량이 함유되어 있는 것을 확인하였다. 또한, 이러한 항산화 성분이 다량 분포하는 bran 추출물의 ABTS 및 DPPH 라디칼 제거능, 환원력이 각각 42.34 mg Trolox equivalent antioxidant capacity(TEAC)/100 g sample, 24.18 mg TEAC/100 g sample, $A_{700}=0.76$으로 나타나 whole grain 및 endosperm 추출물보다 우수한 항산화 활성을 가지는 것으로 나타났다. 본 연구 결과는 귀리의 도정 부위별 항산화 성분 및 항산화 활성 연구에 있어 기초 자료로써 활용될 수 있을 것으로 생각하며, 우수한 항산화 성분 및 활성을 가지는 귀리의 bran층은 기능성 식품의 제조에 있어 좋은 소재로 활용될 수 있을 것으로 생각한다.

볶은 잡곡 종류를 달리하여 제조한 별미장의 품질 특성 (Quality Characteristics of Byeolmijang Prepared by Different Variety of Roasted Grain Powders)

  • The purpose of this study was to examine the quality characteristics of byeolmijang prepared several roasted whole grain powders (oat, brown rice, black soybean, corn) for eight weeks. As the fermentation progressed, the pH decreased from 6.10~6.12 to 4.48~4.92 and the total acidity increased dramatically from 0.41~0.48% to 1.67~2.24%. There were no differences in the moisture content. The content of reducing sugar decreased, in particular, brown rice sample(C) decreased significantly than the other samples during fermentation. In color, L and b-value decreased all samples, whereas a-value showed a tendency to slightly increase. The total cell counts and lactic acid bacteria revealed an increasing tendency during fermentation. In case of the amino-type nitrogen contents, it increased significantly during the fermentation period, especially control sample (A) showed the highest content significantly. The total polyphenol of all samples increased in the fermentation period. ABTS and DPPH radical scavenging activities also increased, especially corn sample (E) had the highest levels. In by electronic tongue analysis, corn sample (E) revealed higher umami and sourness than the control. So, by adding roasted corn powder, it can enhance function and taste of byeolmijang.

수도 품종간의 필요수량 차이에 관한 연구 (Studies on the Consumptive Use of Irrigated Water in Paddy Rice)

  • This experiment was conducted to find out the consumptive use of irrigated water for calculation of duty water in paddy rice. Tall statured Japonica rice varieties, Nongbaek (early), Jinheung (medium) and Akibare (late), and short statured Tongil typed varieties, Josaeng Tongil(early), Suweon 264 (medium) and Suweon 258(late) were planted on the experimental farm of Kon-Kuk University in 1979. The results obtained in this study were as follows: 1. During the experimental period, the daily mean temperature was almost similar, the relative humidity was higher as much as 2.8%, the amount of rain fall was 100mm less and the pan evaporation was 70mm less compared with those of 30 years average, respectively. 2. The paddy soil was silty loam, which was suitable for the rice cultivation. 3. Varietal differences were find out for plant height, culm length, number of tillers, number of panicles, heading date, matured grain ratio, 1000-grain weight and rough rice yield. This difference might he the cause of varietal difference of the consumptive use of irrigated water during the rice growing period. 4. The evapotranspiration was gradually increased after transplanting and showed the peak from booting to heading stage of rice varieties. The average evapotranspiration through the whole growing period was 5.67-5. 80mm/day for tall statured Japonica varieties, and 5.99-6. 39mm/day for short statured Tongil typed varieties. 5. The ratio of evapotranspiration to pan-evaporation through the whole growing period was 1.49-1.50 for Japonica varieties, and 1.60-1.66 for Tongil typed varies. 6. Average amount of percolation in paddy field was 3. 62mm/day through the whole growing period of rice plant. 7. K-value in Blaney & Criddle formula was 0.94-0.98 for Japonica varieties and 1.02-1.08 for Tongil typed varieties, and coefficient consumptive water use (Kc-value) was 0.95-1.02 for Japonica varieties and 1.04-1.12 for Tongil typed varieties in this study. 한국 쌀의 입형구분과 상품 품위등급 설정 (Classification of Grain Type and Marketing Grades for Korean Rice Varieties)

  • 우리 나라에서 재배되고 있는 주요 벼품종들의 입형을 조사하여 입형에 따른 품종군을 구분하고 도정율과 발의 상품가치를 높히고자 1995년 경기도 여주군 가남면 건국대학교 농과대학 실습농장에서 47개의 주요 품종을 재배, 수확하여 실험한 결과를 요약하면 다음과 같다. 1. 공시품중의 현미 장폭비는 1.57∼2.25범위로서 통일형 품종을 제외하면 장폭비가 모두 2.0이하의 단원형에 속하였다. 2. 단립(장폭비 2.0이하)에 속하는 품종들의 평균 장폭비는 1.77, 변이계수는 4.79%로서 입형의 균일도에 차이가 심하였다. 3. 현미의 장폭비에 의하여 1군은 1.75이하, 2군은 1.76∼l.80, 3군은 1.81∼l.90, 4군은 1.91∼2.00, 5군은 2.01 이상으로 5등급하면 현재 분류방법보다 더 균일한 입형을 가진 품종군으로 분류할 수 있었다. 4. 1군과 2군에 속하는 품종들은 도정시 체눈의 크기가 1.7mm(001체)를 사용하는 것이 도정율과 쌀알의 균일도를 높일 수 있으며 3군과 4군에 속하는 품종들은 체눈의 크기가 2.0mm를 사용하는 것이 좋았다. 5. 쌀의 이화학적 및 취반특성은 품종 고유의 특성으로 위에서 분류한 등급간에는 뚜렷한 차이가 없으며 일반적으로 1군에 속하는 품종들이 밥맛이 좋다고 평가되었다.

압출성형 및 효소처리가 전곡립의 특성에 미치는 효과 (Effects of Extrusion and Enzyme Treatment on Characteristics of Whole Grains)

  • 전곡립(whole grains)의 압출성형 및 효소처리에 따른 가공학적 특성과 생리적 특성을 연구하였다. 압출공정 처리한 전곡립 시료의 이화학적 특성은 호화도, 소화도, 저향전분 등을 측정하였으며, 이를 압출공정 처리하지 않은 생원료 및 볶음시료와 비교하였다. 압출공정은 모든 곡류의 호화도를 크게 증가시켰으며, 특히 보리의 경우에는 압출공정에 의해 원료시료 보다 약 7배정도 증가하였다. 소화도 역시 압출공정에 의해 원료시료나 볶음시료에 두드러지게 증가하여 보리의 경우 2.6배까지 증가하였다. 또한 압출공정에 의해 저항전분의 감소 등이 뚜렷하게 관찰되었다. 전곡립을 압출공정과 식물세포벽 분해효소를 복합적으로 처리한 경우 처리하지 않은 원료와 비교하여 ${\beta}-sitosterol$이 최대 13배까지 증가하였다. 압출공정 후 효소처리는 생리활성 물질의 유리효과 뿐만 아니라 수용성 식이섬유 함량의 증가 소화율의 증가 등 각종 이화학적 특성도 향상시키는 것으로 나타났다. 이러한 결과는 압출공정과 효소처리를 복합적으로 적용하였을 때 전곡립의 가공학적 특성과 생리적 특성이 뚜렷하게 향상되는 것을 의미하는 것으로 산업적인 유용성이 매우 높다.

Investigation of harvest time of paddy rice for green whole rice grains considering transplanting time and nitrogen fertilization

  • This study was conducted to investigate the growth characteristics and yield of whole green rice grains during the ripening period. These were investigated using Hopumbyeo and Unkwangbyeo at two transplanting times and with two kinds of nitrogen fertilization. The transplanting times were May 30 and June 20, respectively, using 30-day seedling culture and transplanting conducted with 3 - 4 plants per hill in planting space of $15cm{\times}30cm$. During nitrogen fertilization, 9 kg and 18 kg was used, respectively. The harvest of the green whole rice grains was carried out on the 15th, 20th, 25th, 30th, and 40th day after the heading date. The clum length was greater with later planting and with application of more nitrogen. The rice yield was higher with nitrogen fertilization of 18 kg/10 a when transplanted on May 30 for Hupumbyeo, and for Unkwangbyeo, was higher at 9 kg/10 a nitrogen fertilization when transplanted on May 30. The protein content of Hopumbyeo was higher when the nitrogen fertilizer was 18 kg/10 a, and that of Unkwangbyeo was lower than that when transplanting on June 20. The greenness was not related to the nitrogen fertilization level when transplanted on May 20 but for later transplanting, the greenness was higher when the nitrogen application was increased, and the greenness was the greatest about 30 days after the heading date.

Nitrogen Use and Yield of Silage Corn as Affected by Hairy Vetch(Vicia villosa Roth) Soil-incorporated at Different Time in Spring

  • Winter green manure crops including legume increase grain yield of subsequent crop and substitute N fertilizer requirement with organic-No Hairy vetch grows vigorously and can provide N-rich green manure for corn with its soil incorporation after wintering. But, grain yield of corn as succeeding crop would be reduced if its planting time is delayed until late spring. This experiment was carried out to find the proper incorporation time of hairy vetch green manure and planting time of subsequent corn in cropping system with winter hairy vetch(green manure)-summer corn. Hairy vetch was incorporated into soil at a ten-day interval between April 10 and May 10 and corn was planted at 5 days after each hairy vetch incorporation. Soil nitrate concentration on April 10 and 20 in hairy vetch plot was slightly lower than that at winter fallow. Above-ground dry matter and organic-N of hairy vetch increased linearly with delayed hairy vetch incorporation time from April 10 to May 10. Average dry matter and organic-N produced by hairy vetch were 5.7 ton/ha and 248 kgN/ha, respectively. Corn growth and yield decreased as delayed corn planting time after May in spite of increasing dry matter and N-yield of hairy vetch. Nitrogen concentration of corn grain, stalk and whole plant at harvest were the highest in May 5 planting, but total N-uptake of May 5 planting were not different from that of April 25 planting because of lower grain yield. It was concluded that the proper incorporation time of hairy vetch and corn planting time were April 20 and April 25, respectively, because grain yield was the highest and corn could use hairy vetch-N effectively to produce dry matter.

급동형태(扱胴形態)와 작물(作物)의 수분함량(水分含量)이 맥주보리의 탈곡성능(脱糓性能)에 미치는 영향(影響) (The Effects of the Drum Configuration and the Crop Moisture Content on the Threshing of Malting Barley)

  • The purpose of this experiment was to evaluate the effect of the drum structures and crop moisture contents on the performance of newly developed throw-in type axial thersher. Sachun No.2 malting barley with four different crop moisture levels was used as the testing material. Four different types of threshing drum; the cylindrical drum-equipped with teeth or rubber bars and the conical drum-equipped with teeth or rubber bars were tested. The results are summarized as follows; 1. The threshing efficiency of cylindrical drum was higher than that of the conical one, and the drum with teeth was more effective in threshing than the one with bars. However, the higher the threshing efficiency over the whole range of moisture levels and drum speeds given, the more the rapid and unexpectable variations in threshing efficiencies 2. The separation efficiency of the conical drum was decreased as drum speed was increased and was not so much influenced as crop moisture content. But in case of the cylindrical drum, the result was shown in opposite way to that of the conical one. The separation efficiency of the drum with teeth was higher than that of the drum with bars and no significant decrease in separating efficiency was found at wet crop condition. 3. Foreign matters other than grain passing through the concave sieve was decreased as crop moisture content was increased, and the purity was increased at middle range of drum speed regardless of drum types. 4. Minimum grain loss was found at 700 rpm to 800 rpm of drum speed for all types of drums. The effect of crop moisture content on total grain loss was varied with drum types. As far as the grain loss is concerned, the conical drum having teeth was not so greatly influenced by various crop moisture contents and drum speeds as compared with the other types of drum. 5. Generally, the crop moisture content has more relevant effect on the germination than the drum speed regardless of drum types. The germination percentage of grain threshed by the conical drum and the bar attached drum were higher than those of cylindrical one and teeth attached one, respectively.
