가자 분말 첨가량에 따른 식빵의 품질 변화 (Effects of the Amounts of Terminalia chebula Retz Powder on the Quality of White Pan Breads)

  • This study was carried out to investigate the quality of white pan breads as affected by various amounts of Terminalia chebula Retz (TC) powder, in which the breads were prepared with 0, 2, 4, and 6% TC powder. The samples and a control bread were compared in terms of bread quality characteristics, including pH, baking loss rate, loaf volume index, moisture content, TBARS values, texture, color, and sensory qualities in order to determine the optimal amount of TC powder in the formulation. The pH levels of the bread samples containing TC powder ranged from 5.30 to 5.44, while the control bread had a pH of 5.68. The loaf volume index values of the samples prepared with 2~6% TC powder were lower than that of the control. After 7 days storage, the moisture content of the control bread had decreased by 14.4%, while the moisture contents of the breads with added TC powder had decreased by approximately 8~10%. The breads with TC powder had lower TBARS values as compared to the control bread. For texture characteristics, hardness increased with the addition of TC powder, and was especially increased in the sample containing 6% TC powder. Cohesiveness and springiness, however, decreased with the addition of TC powder. For color, lightness of the bread crust and crumb decreased with the addition of TC powder, whereas redness and yellowness increased. In terms of sensory quality, the bread containing 2% TC powder was preferred over the control bread, as estimated by appearance, crust color, taste, and overall quality, while the 6% TC bread had the lowest preference scores. These results suggest that the addition of 2% TC powder to white pan bread had optimal effects for improving shelf-life and enhancing bread quality.

김치 유산균으로 제조한 preferment 첨가 수준에 따른 white pan bread의 품질특성 (Study on the Properties of White Pan Bread Made by Adding Preferment Prepared by Lactic Acid Bacteria Isolated from Kimchi)

  • 김치에서 분리한 L. brevis를 접종하여 제조한 preferment를 첨가한 식빵의 품질 특성을 살펴보았다. Preferment의 첨가수준이 증가할수록 pH를 감소시켰고, 산도는 증가시키는 경향을 보여주었다. 식빵의 품질 평가에 있어서 비용적은 preferment의 함량을 20%까지 하였을 때 높게 나타났으며, 25% 첨가하였을 때에는 오히려 낮은 비용적을 나타내었다. 그러나 수분함량 및 수분활성도에서는 대조구와 preferment 첨가구간의 유의적 차이를 보이지 않았다. 물성특성에서는 hardness와 gumminess에서 preferment 첨가함량이 증가함에 따라 감소하였고, spinginess는 증가시켰다. 그 외 cohesiveness와 색도(L, a, b값)은 모두 대조구와 유의적인 차이를 나타내지 않았다. 관능검사에서는 preferment가 신맛과 감칠맛을 증진시켰고, 20%의 preferment를 첨가하였을 때, 부피, 감칠맛, 조직에서 탄성에 우수한 영향을 주었다. 따라서 식빵을 제조하는데 있어 김치 유산균의 preferment의 첨가 수준은 식빵의 품질 특성 및 관능검사가 우수하게 나타난 20%의 첨가구가 바람직한 것으로 사료된다.

  • The purpose of this study was to evaluate the quality characteristics of white pan bread added with wheat sprout powder without treatment (WP) and wheat sprout powder with only enzyme treatment (WPE), only lactic acid bacteria treatment (WPL) and enzyme and lactic acid bacteria treatment (WPE&L). The three different powder concentration levels of 1%, 3%, and 5% were added to flour to produce the white pan bread. The bread volume and specific volume of the WPE&L group were the highest among all the addition groups. The bread weight, a-value, and b-value of the WP group was highest among all the addition groups, but the bread baking loss and the L-value of the WP group was the lowest among all the addition groups. The texture measurements indicated that the hardness, gumminess, and chewiness values of the bread were the highest in the WP group. The sensory evaluation test showed that bread in the WPE&L group with 3% wheat sprout powder was the best among all the samples studied. Based on our findings, we suggest that the enzyme and lactic acid bacteria pretreated wheat sprout powder is an effective ingredient for improving the overall quality of white pan bread.

Trehalose가 식빵의 품질 특성에 미치는 영향 (Effects of Trehalose on Quality Characteristics of White Pan Bread)

  • Trehalose가 식빵의 품질 특성에 미치는 영향을 평가하기 위하여 밀가루 대비 설탕을 6% 첨가한 것을 대조구로 하여 설탕 6%와 함께 trehalose를 각각 2, 4, 6% 첨가하여 식빵을 제조하였다. 부피 및 비용적, 굽기손실률, 조직감, 수분함량, 수분활성도, crumb 색도 등을 분석하였고 관능검사를 실시하였다. 부피와 비용적은 trehalose 4% 첨가구가 2,140 mL 및 3.96 mL/g으로 가장 컸고, 굽기손실률은 6% 첨가구가 9.07%로 가장 적었다. 조직감 분석에서 경도는 저장 7일까지 trehalose 4% 첨가구가 가장 낮았다. 수분 함량과 수분활성도는 저장 7일 동안 trehalose 6% 첨가구가 가장 높았고, crumb 색도는 6% 첨가구가 가장 밝은 것으로 나타났다. 관능검사에서 trehalose 4% 첨가구가 96.1점으로 가장 높은 점수를 얻었다. 이상의 trehalose 첨가량을 달리한 식빵 제조 실험에서 제품 특성에 긍정적인 영향을 주는 것으로 나타나 빵에 활용 시 품질 향상에 효과가 있을 것으로 사료되었다.

상황현미 분말이 첨가된 식빵의 품질 특성 (Quality Characteristics of White Pan Bread Containing Brown Rice Fermented with Phellinus linteus)

  • This study was carried out to investigate the quality characteristics of breads with added Phellinus linteus grown in brown rice (BRPL). For color values, with increasing added BRPL powder, "lightness" decreased in the crumb while "redness" and "yellowness" increased ($^{***}$ p<0.001). The highest scores in volume and specific volume were observed in white pan bread with 5% BRPL powder added. When 10%, 15%, and 20% BRPL powder were substituted for equal amounts of strong flour, the volume and specific volume ratios of white pan bread decreased ($^{***}$ p<0.001). In texture measurements for white pan breads, hardness decreased slightly with the addition of 5% BRPL powder, but significantly ($^{***}$ p<0.001) increased with addition of 10%, 15%, and 20% BRPL powder. The addition of the BRPL powder significantly increased the springiness, gumminess, and brittleness of the white pan bread. The highest sensory scores for color, flavor, taste, and overall acceptance were obtained from white pan bread with 5% BRPL powder added ($^{***}$ p<0.001). By the results of these experiments, we can conclude that the hightest quality of bread with added BRPL powder has no more than 10% added BRPL powder content.

홍삼 분말을 첨가한 식빵의 품질특성 (Quality Characteristics of White pan bread with Led Ginseng powder)

  • This study investigated properties of bread utilizing extracts of ginseng powder. Ginseng powder bread was baked. Addition of 1~3% of ginseng powder extract to wheat flour was carried out. Rheological properties, dough pH, dough volume, bread volume, water absorption capacity, baking loss, bread color, bread texture, and sensory evaluation were tested to examine properties of bread baked with extracts of ginseng powder. The results are as follows. The dough pH decreased gradually with increasing ginseng powder extract concentration. The bread volume, baking loss, and bread weight increased with increasing use of ginseng powder extract, and springiness and cohesiveness increased as red ginseng powder additive concentration increased. Lightness of the L decreased while a and b increased. In the sensory evaluation, ginseng powder with 1% ginseng powder extract was evaluated as the best for taste, texture, flavor, and overall acceptability.

올리브유를 첨가한 식빵의 품질특성에 관한 연구 (Quality Characteristics of White Pan Bread with Olive Oil)

  • 쇼트닝을 4% 첨가한 식빵과 올리브유를 0, 4, 6% 첨가한 식빵의 품질특성을 조사하기 위하여 수분함량, 굽기 손실, 비용적, 경도 및 탄력성 등을 측정하였다. 제품의 수분함량은 쇼트닝을 4% 첨가한 식빵이 $38.68{\pm}0.41%$, 올리브유를 4%와 6% 첨가한 식빵이 39.8% 내외로 유사한 값을 나타냈고, 굽기 손실은 쇼트닝 및 올리브유를 첨가한 식빵에서 차이를 나타내지 않았으나 유지를 첨가하지 않은 식빵은 낮은 굽기 손실을 나타냈다. 비용적은 쇼트닝을 4% 첨가한 식빵이 올리브유를 4% 첨가한 식빵보다 약간 높은 값을 나타냈고, 올리브유를 6% 첨가한 식빵은 3.90 ml/g로 유지를 첨가한 실험군 중 가장 낮은 값을 나타냈다. 경도와 탄력성은 쇼트닝을 4% 첨가한 식빵과 올리브유를 4%와 6% 첨가한 식빵에서 유의적인 차이가 없었고, 올리브유를 첨가하지 않은 식빵의 경도 값이 가장 커 조직이 단단한 것으로 나타났다.

꾸지뽕잎 분말을 첨가한 식빵의 품질 특성 (Quality Characteristics of White Pan Bread with Cudrania tricuspidata Leaf Powder)

  • 본 연구는 기능성 성분들이 함유하고 있는 꾸지뽕잎 분말 첨가에 따른 식빵의 품질 특성을 알아보고자 진행하였다. Mixograph, pH, TPA, 부피, 비용적, 수분, 영상분석, 색도, 기호도 검사, 보존성 검사를 통하여 꾸지뽕잎 분말을 첨가한 식빵을 분석하였다. Mixograph를 측정 결과, 꾸지뽕잎 분말을 첨가한 반죽은 제빵 적성에 적합하였다. 꾸지뽕잎 pH의 경우 분말의 첨가량이 많아질수록 pH는 높아졌으며, 1차 발효 후와 식빵의 pH는 첨가량이 많을수록 낮아졌다. TPA 분석결과, 꾸지뽕잎 분말 첨가량이 높아질수록 경도, 씹힘성, 검성은 높아졌으며, 탄력성, 응집성, 탄성은 유의적인 차이가 없었고, 꾸지뽕잎 식빵의 부피와 비용적은 감소하였다. 영상분석 결과 기공의 조밀도, 껍질의 두께, 크기는 첨가량이 많아질수록 유의적인 차이를 보여주었으며, 색도는 꾸지뽕잎 분말의 첨가량에 따라 L값은 어두워졌다. 기호도 검사 결과, 외관과 조직감은 CLP3가 대조구보다 좋았으며, 맛과 전체적인 기호도는 CLP2가 대조구보다 더 좋게 평가되었다. 보존성 측정 결과, 경도는 24, 48, 72시간 동안 모두 꾸지뽕잎 분말 1~2% 첨가한 시료가 대조구와 유의적인 차이를 보이며 경도가 낮았으며, 적은 양의 꾸지뽕잎 첨가가 식빵 속질의 부드러움을 유지하는데 좋은 것으로 사료되며, 수분함량이 낮아지긴 하였으나, 대조구와 유의적인 차이가 없었다.

브로콜리 분말을 첨가한 식빵의 품질 및 항산화 특성 (Quality and Antioxidant Properties of White Breads Enhanced with Broccoli (Brassica oleracea L.) Powder)

  • This study was conducted to investigate the quality and antioxidant properties of white breads enhanced with broccoli powder (BP) (0%, 2.5%, 5.0%, 7.5% and 10.0%). L-value significantly decreased with increasing levels of BP, but a- and b-values increased (p<0.05). Baking loss rate, bread volume, and specific volume were reduced with the addition of BP, whereas the pH of the dough and bread weight increased. The hardness, gumminess and brittleness of breads with BP were higher than those of control breads (p<0.05). Upon sensory evaluation, the 2.5% and 5.0% BP breads showed no significant differences in color, flavor, taste, texture, or overall acceptability compared with controls (p<0.05). The 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity of bread significantly increased with increasing BP content (p<0.05). Accordingly, bread quality can be improved by the substitution of 5% BP in place of flour.

물의 종류에 따른 식빵의 품질특성 (Quality Characteristics of White Pan Bread with Different Water Types)

  • The purpose of this study was to examine the quality characteristics of white pan bread according to the different types of water (tap water (still water), purified water, still water, light water, classical water, and bold water). Pan breads were statistically analyzed using texture profile analysis, fermentation, texture, suitability, image analysis, color, moisture content, and statistical analysis. This result will contribute to the commercialization of pan bread using various kinds of water. Ultimately, we analyzed the quality characteristics of various kinds of water, depending on the carbonic acid content on the dough and the pan bread, and to derive the optimum kinds and ratios of the water to be applied to the pan bread. As a result of the study, the best findings were obtained with water containing carbonic acid content more than the classical water according to overall characteristics, durability (Width of Tail and Integral), foot efficiency, softness, volume and preference check. Therefore, when white pan bread is produced by using water containing a carbonic acid content (5~7.5 mg/L) or more of the classical water, it affects the quality characteristics and a good obtains positive response to from consumers. In this study, the quality characteristics of pan bread based different kinds of water which were not available in the past, and the quality characteristics of pan bread, which can be used as the basic data for future research, were well analyzed.
