Breadmaking is a complex system in which many variables govern the production of acceptable bread. Lipids, a minor component of wheat flour, function importantly in bread-making. Shortening, or fat, is one of the essential ingredients in commercial baking. Beneficial shortening effect depends on type and quantity of lipids present in wheat flour and also on wheat flour quality. Surfactants have been used in baking industry during last decade because certrain surfactants can replace shortening and/or natural flour lipids. A proper combination of lipidshortening-surfactant is more useful in the production of specialty breads such as whole wheat breads, high protein breads, high fiber breads or even non-wheat composite breads rather than in the production of regular white breads. This presentation is a review of recent studies on the contribution of flour lipids, shortening, and surfactants, alone or in combination in the production of breads; illustrations are mainly from data obtained in the author's laboratory.
What satisfies the desire of human beings about taste most easily is sweet taste, and it has seemed that the pronoun of sweet taste is sugar. Sugar is used in confectionery and bread-making essentially, and it has influence on the structure and touch of baked confectionery. In addition, if we soften the and apply heat, coloring is made. Thus, it colors good. It doesn't have a sweet taste, but it has the effect to emit fragrance variously, balance and soften the product. The kinds of sugar are very diverse, and it is sugar to be referred to as white sugar is used most frequently. In this study, this researcher examined the classification of physicochemical property and melting point etc. of sugar in confectionery and bread-making through theoretical study, about the simple classification of sugar. In addition, this researcher approached about the role of sugar in confectionery and bread-making and about the influence to have when it is more or less than proper quantity, centering around function. As the result, this researcher extracted the importance of sugar in confectionery and bread-making. It means that the increase of 5% of sugar quantity decreases the absorption quantity of moisture by 1% in bread-making and that the excess of 8% of sugar slow the action of yeast in straight method. Besides, there are the properties such as absorptive property, permeability, storage nature, aging prevention of starch, oxidation restraint of oils and fats, the gelation action of pectin, the fermentation acceleration of yeast, and the emulsification-maintaining-nautre and antiseptics effect of fat-soluble material. And in confectionery, sugar makes fragrance and peel color, increases the storage nature with moisture maintenance and has the softening effect. So, it is considered that the attitude to study and make efforts continuously on the basis of the role of sugar will have to be unfolded in confectionery and bread-making.
This study investigated the effects of freeze-dried sweet pumpkin powder on the baking of bread. Freeze-dried sweet pumpkin powder (0, 3, 6, 9, or 12%) was supplemented during the baking process and the bread volume, weight, specific volume, baking loss rate, texture, and sensory characteristics were measured. The results were following. Freeze-dried sweet pumpkin contained 4.88% water, 4.40% protein, and 4.02% ash. The L-values (brightness) of the bread were significantly lower as increasing amounts of sweet pumpkin powder were added (p<0.001). However, higher values for the a-value (redness) and b-value (yellowness) were observed (p<0.01 for both values). The volume and baking loss rate decreased when the sweet pumpkin powder was added. In contrast, the weight significantly increased as sweet pumpkin powder was added (p<0.01) and the intensity of dark brown color increased. The outer side of the bread was balanced overall, but the outer skin of the bread appeared darker as the amount of sweet pumpkin powder increased. The overall acceptability, hardness (p<0.001), elasticity (p<0.01), cohesiveness (p<0.01), gumminess (p<0.01), and brittleness (p<0.001) increased as sweet pumpkin powder increased as well. However, when sweet pumpkin powder was added at 12%, the overall acceptability value was fairly low. Sensory parameters, such as taste (p<0.001), color (p<0.001), and flavor (p<0.05) were observed when sweet pumpkin powder was used at 3% and these results were lower than the control. Overall acceptability (p<0.001) was best when sweet pumpkin powder was used at 9% and the texture was best when sweet pumpkin powder was used at 6%.
BACKGROUND/OBJECTIVES: The association between dietary patterns and depression has been reported but the results have been inconsistent. This study was conducted to investigate the association between dietary patterns and depression in middle-aged Korean adults. SUBJECTS/METHODS: The participants were selected from a community-based cohort, a subset of the Korean Genome and Epidemiology Study. Depression was assessed using the Korean version of the Beck Depression Inventory (BDI) and those with a BDI score ${\geq}16$ were defined as having depression. The subjects' food intakes over the year preceding the survey were estimated by using a validated semi-quantitative food frequency questionnaire. Dietary patterns were identified by using factor analysis. Multiple logistic regression was used to assess the association of dietary pattern with depression. RESULTS: Among 3,388 participants, 448 (13.2%) were identified as having depression. We identified two major dietary patterns: 'Healthy' dietary pattern was characterized by high intakes of vegetables, soybeans, mushroom, seaweeds, white fish, shellfish and fruits and a low intake of white rice. 'Unhealthy' dietary pattern was characterized by high intakes of white rice, meats, ramen, noodles, bread and coffee and a low intake of rice with other grains. Compared with subjects in the lowest quartiles, those in the highest quartiles of the healthy dietary pattern had a significantly lower odds ratio (OR = 0.59, 95% CI: 0.42-0.82, P for trend = 0.0037) after adjusting for potential confounders. In contrast, the unhealthy dietary pattern was negatively associated with depression (OR = 1.65, 95% CI: 1.19-2.28, P for trend = 0.0021). CONCLUSION: This results suggest that a healthy dietary pattern (rich in vegetables, soybeans, mushroom, seaweeds, white fish, shellfish, and fruits) is associated with low risk of depression. Whereas an unhealthy dietary pattern (rich in white rice, meats, ramen, noodles, bread, and coffee) is associated with a high risk of depression in middle-aged Korean adults.
본 연구는 여러 가지 생리활성 물질을 가지고 있는 콩식이섬유의 섭취를 증가시키기 위하여 콩식이섬유 SF-1450과 SF-1260을 각각 강력분에 0~12% 첨가하여 식빵을 제조하였다. 콩식이섬유 복합분의 식이섬유 함량은 SF-1450, SF-1260 각각 72.0%, 67.8%이었다. Mixograph 특성은 midline peak height, width at peak, width at 8.00 에서는 콩식이섬유 첨가량이 증가할수록 증가하는 경향을 보였다. 식빵의 비용적은 콩식이섬유 첨가량이 증가할수록 대조구보다 유의적으로 감소하는 경향을 보였다. Crust 색도변화는 콩식이섬유의 첨가량이 증가할수록 각각 L값은 4~12% 첨가구에서 대조구보다 유의적으로 증가하였고 a값은 SF-1450은 6~12% 첨가구, SF-1260은 8~12% 첨가구에서 대조구보다 유의적으로 감소하였으며 crumb 색도변화는 b 값의 경우 대조부보다 유의적으로 증가하였다.(p<0.05). Texture의 특성인 경도의 경우 SF-1450은 10~12% 첨가구에서, SF-1260은 6~12% 첨가구에서 대조구보다 유의적으로 증가하였다. 이상에서 살펴본 바와 같이 콩식이섬유 첨가식빵의 관능특성은 첨가량이 증가함에 따라 대조구보다 품질이 떨어지는 현상을 보였고, 이화학적 분석과 전체적인 기호도를 종합해보면 SF-1450의 경우는 2~4%, SF-1260의 경우는 2% 첨가구의 경우가 우수하게 평가되었다.
식빵 반죽의 WRC(water retention capacity)는 들깻잎 시료의 첨가량이 증가할수록 유의적으로 증가하였고, Rapid visco analysis(RVA)중에 호화개시 온도는 첨가량이 증가할수록 유의적 차이를 나타내며 증가되었다. 들깻잎 분말의 첨가량이 증가할수록 시료간에 유의적인 차이를 보이며 최고점도와 최저점도는 감소하였다. 식빵의 명도(L값)는 들깻잎 분말을 첨가하지 않은 대조군이 가장 높게 나타났으며 적색도(a값)와 황색도(b값)은 시료간에 유의적인 차이를 나타냈다. 식빵의 경도는 첨가량이 증가할수록 유의적인 차이를 보이며 증가하였다. 씹힘성은 들깻잎 분말을 7%를 첨가한 첨가군이 가장 높게 나타났다. 식빵의 기호도 검사 결과는 외관(appearance) 이 들깻잎 분말을 7%를 첨가한 첨가군이 가장 낮게 나타났으며 색(color)은 외관과 마찬가지로 깻잎 분말을 가장 많이 첨가한 첨가군이 가장 낮게 나타났다. 향(flavor)은 대조군이 가장 낮게 나타났으며, 쓴맛(bitter)은 3%를 첨가한 첨가군이 5.21로 가장 높게 나타났다. 전체적인 기호도(overall acceptance)는 3%를 첨가한 첨가군이 6.07로 가장 높게 나타났으며, 들깻잎 분말을 가장 많이 첨가한 첨가군이 4.03으로 가장 낮게 나타났다. 위 결과를 미루어 볼 때 들깻잎을 첨가하여 제조한 식빵이 대조군 보다 좋은 점수를 받았으며 5%이상의 들깻잎 분말을 첨가시에는 오히려 식빵의 기호도가 감소하였다.
대두분과 청국장분은 소맥분에 비해 조단백질(44.6%)이 약 3~4배, 회분(5.4%)은 15~18배, 조지방(18.4%)은 8~11배, 섬유소(12.2%)는 4배 높은 것으로 나타났다. Farinograph에서는 대두분과 청국장분의 첨가량을 증가함에 따라 수분흡수율이 증가하였으며, 형성 시간은 대조구에 비해 청국장분 혼합율이 증가함에 따라 길어지는 경향을 보였다. 반죽의 힘이나 강도의 지표가 되는 반죽의 안정도에서는 대두분과 청국장분의 함량이 증가할수록 안정도가 감소되었다. 대두분과 청국장분의 혼합비율이 증가할수록 부피가 감소하였으나, 빵의 무게는 무거워졌다. 빵 단면(bread crumb)의 색상은 대두분과 청국장분 함량이 5%, 10%, 20% 증가함에 따라 색의 밝은 정도를 나타내는 명도(lightness)값은 점차 감소하여 어두워지는 경향을 나타냈고, 적색(redness)과 황색(yellowness)값은 약간씩 감소하는 경향을 보였다. 관능검시 결과 색, 향, 조직감, 맛과 전체적인 기호도에서 대두분 10%, 청국장분 5% 첨가군이 가장 높은 점수를 보였으나 통계적으로 유의적인 차이를 나타내지 않았다.
식빵반죽의 아밀로그램의 setback은 대조군이 $480.0{\pm}12.25B.U.$, M-4가 $215.0{\pm}5.00B.U.$로 maltogenic amylase의 첨가량이 증가할수록 유의적으로 감소하였다. 파리노그램 특성은 흡수율, mixing tolerance index, stability 등 대조군과 maltogenic amylase의 첨가군과 유의적인 차이는 없었다. 익스텐소그램의 RTE(resistance to extensibility)/EXT(extensibility)는 대조군과 첨가군 간에 유의적 차이는 없었으나 RTE 90분과 AUC(area under curve) 135분에서 대조군과 비교하여 유의적으로 증가하여(P<0.05) 식빵반죽에 maltogenic amylase를 사용하면 빵의 부피에 영향이 있을 것으로 판단되었다. 식빵의 texture profile analysis는 대조군과 비교하여 maltogenic amylase 첨가군의 경도가 유의적으로 낮게 나타났으며(P<0.05) M-3, M-4가 대조군과 비교하여 약 1~3일 정도 노화가 지연된 것으로 생각된다. 빵의 탄력성과 응집성은 대조구와 유의적 차이는 없었으나 점착성과 씹힘성은 유의적으로 감소하여(P<0.05) 식감 개선에 영향을 주는 것으로 나타났다. Imaging scan 결과 대조군과 비교하여 4, 5구역의 평균 기공 크기는 maltogenic amylase 첨가량이 증가할수록 유의적으로 증가하였으며(P<0.05) $0.4mm^2$ 이하의 미세기공은 maltogenic amylase의 첨가량이 증가할수록 94.90~95.70%로 대조군과 비교하여 조밀하고 일정한 기공구조를 가진 것으로 나타나, 빵의 부피는 빵 내부의 기공 수, 기공의 신장성 증가와 밀접한 관계가 있었다. 관능검사는 맛, 풍미, 조직감, 식감과 촉촉한 정도가 대조구와 비교하여 높게 나타났다. 이상의 결과로 maltogenic amylase를 식빵반죽에 첨가 시 반죽의 물성이 개선되었으며 식빵 내부구조가 조밀하고 일정한 기공구조를 형성하여 식감과 관능검사에서 우수한 결과를 나타내어 화학적 첨가물을 사용하지 않고도 식빵의 품질을 향상시킬 수 있음을 확인하였다.
식빵의 외형 특성과 속질의 기공들을 정확히 평가하기 위해서 우리밀 함량을 달리한 식빵들을 만들어 스캐너와 CrumbScan을 이용해서 객관적으로 분석하였다. 껍질의 두께는 우리밀 함량이 높을수록 얇아졌으며, 20%나 30%의 경우 두께는 0.31cm로 같았다. 또한 우리밀의 증가는 부피의 증가와도 관계가 있었으며, 20%의 경우에서 대조구와 비교하여 최대 22.1%의 증가가 있었으나, 30%의 경우에는 다소 부피가 감소하여 구조력의 약화를 보였다. 식빵 속질은 우리밀이 첨가될수록 조밀도가 낮아져서 기공의 크기가 커졌으나, 오히려 일정한 크기의 기공이 분포됨을 알 수 있었다. 기공의 형태도 우리밀이 첨가되면 덜 찌그러지는 것으로 나타나서 반죽의 탄성이 줄고 점성이 증가되는 것을 알 수 있었다. 절단 위치에 따른 분석에서 전반적인 기공의 형태는 차이가 없었다. 기공의 찌그러진 정도는 껍질 부분이 가장 심했으며 중심 부분이 가장 원형인 것으로 나타났다. 특히 가운데 절단면의 경우 가장자리 부분과 비교하여 급격한 찌그러짐을 보여 식빵의 중심부가 오븐 팽창이 많음을 보여 주었다결과적으로 우리밀 20% 함량의 식빵이 가장 좋은 품질을 갖는 것으로 나타났으며, 주관적으로는 매우 얻기 어려운 껍질의 두께나 기공의 조밀성 및 분포등을 통해 객관적인 평가를 할 수 있었다. 이러한 실험 결과는 국내에서 식빵 품질에 대한 표준화 작업이 이루어진다면 상당히 유용하게 사용되리라 생각된다.
