Effect of Autoclave and Microwave Treatments on Quality of Bread (반죽에 가압가열 및 Microwave 처리가 빵의 품질에 미치는 영향)

  • This study conducted autoclave and microwave treatments on dough to determine if there were any changes in quality after the dough was cooked into bread. Wheat dough after secondary fermentation was treated with a microwave (1 min), an autoclave (30 min), and both an autoclave and microwave (30 min/1 min). We then measured the pH, moisture content, color, texture, and sensory evaluation. The results showed that pH was slightly decreased when it was treated in an autoclave (baking and no baking) and autoclave/microwave (baking and no baking). When microwaved and baked, the moisture content most decreased compared to the control. In crust color, there were no considerable differences in lightness, redness, or yellowness compared to the control, except when microwaved (no baking). The lightness of the crumb color decreased, while redness and yellowness increased, when dough was treated with an autoclave (baking and no baking) and autoclave/microwave (baking and no baking). Hardness, gumminess, chewiness and shear force were significantly increased when dough was treated with an autoclave (baking and no baking) and autoclave/microwave (baking and no baking) compared to the control. In the sensory evaluation, there were no considerable differences in color, aroma, taste, or overall preference when microwaved and baked. Color, aroma, shape, and overall preference were the worst when the dough was treated with autoclave/microwave (baking and no baking). These results suggest that autoclaving and microwaving may reduce the quality of bread, and countermeasures to this problem are necessary.

Antioxidative Capacities of Stachys sieboldii MIQ and Ginseng Powders and Their Effects on Quality Characteristics of Cookies (초석잠과 인삼의 항산화 활성 및 분말로 첨가한 쿠키의 품질 특성)

  • Antioxidative capacities of Stachys sieboldii MIQ and 6-year-old ginseng powder were assessed after extraction with 80% ethanol, and their addition effects on quality characteristics of cookies were determined. Stachys sieboldii MIQ showed 3.12-fold higher total phenol content (TPC) and higher antioxidative capacities than ginseng based on higher values of 2,2-diphenyl-1-picrylhydrazyl radical scavenging capacity, ferric reducing antioxidant capacity, and Trolox equivalent antioxidant capacity (P<0.05). The 80% ethanol extract was then fractionated with $H_2O$ (Fr. I), 30% (II), 50% (III), 70% (IV), and 100% ethanol (V). Fractions of Stachys sieboldii MIQ extract showed 2.2-fold (Fr. I)~6.1-fold (III) higher TPC and higher antioxidative capacities than ginseng extract fractions. TPC was in the order of fractions III> II> I> IV> V for Stachys sieboldii MIQ extract while in the order of fractions I~III> IV~V for ginseng extract, assuming that Stachys sieboldii MIQ contained more phenolic compounds with higher polarity than ginseng. Addition of 5% and 10% Stachys sieboldii MIQ and ginseng powder increased spread ratio in cookies compared to 100% wheat flour, and 10% addition of Stachys sieboldii MIQ resulted in the darkest and most reddish cookies. In the sensory evaluation, cookies with 5% and 10% Stachys sieboldii MIQ received higher scores for taste preference and higher overall acceptability than ginseng or control cookies. Therefore, powder of Stachys sieboldii MIQ could impart more favorable sensory characteristics as well as higher antioxidative capacity than ginseng in bakery products.

Quality Characteristics of Bread with Dried Persimmons Hot-Water Extracts (곶감 열수추출물을 첨가한 식빵의 품질특성)

  • To develop foods using dried persimmon, hot-water extracts of dried persimmons were added into strong wheat flour in the ratio of 10, 20, 30, and 40% and the quality characteristics of baked products were investigated. The proximate compositions of dried persimmons hot-water extracts were 70.37% of moisture, 1.72% of crude protein, 0.18% of crude lipids, 1.99% of crude ash and 4.37% of crude fiber, respectively. With increasing the addition of dried persimmons hot-water extracts, moisture content of the added breads was increased to 47.20% from 41.12% of non-added bread and water activity to 0.576 from 0.495. Water binding capacity of the added dried persimmons hot-water extracts rasied weight of the bread but decreased specific volume. In the hunter's color values the more dried persimmons hot-water extracts was added, the lower L vaules we, and the higher a and b values we. In the texture property, the addition of dried persimmons hot-water extracts increased hardness, gumminess and chewiness, while decreased adhesiveness and fracturability. Judging from texture, taste and overall acceptability of the product, recommended substitution level for hot-water extracts of dried persimmons in bread was 30% or less.

Evaluation of Dietary Manganese Intake in Korean Men and Women over 20 Years Old (20세 이상 일부 성인남녀의 망간 섭취상태 평가)

  • This study was peformed to estimate manganese intake and the major food source of manganese in Korean adults. The 354 subjects aged over 20 years were measured anthropometrics and dietary intake using 24-hour recall method. Daily intake and the major food sources of manganese were calculated using manganese database of food composition tables in Korea, USA and Japan. The average age, height, weight and BMI were 54.6years, 165.7cm, 67.2kg and $24.5kg/m^2$ for men and 53.8 years, 153.7cm, 59.1kg and $24.9kg/m^2$ for women, respectively. The daily energy and manganese intake of men were significantly higher than those of women (1740.9 kcal vs. 1432.6 kcal; p<0.001, 3.7mg vs. 3.2mg; p<0.01). However, daily manganese intake per 1000kcal between men and women was not significantly different (2.2mg/1000kcal vs. 2.3mg/1000kcal). Daily manganese intakes from each food group were 1.9mg from cereals, 0.5mg from vegetables, 0.4mg from pulses and 0.2mg from seasonings. The 20 major food sources of dietary manganese were rice, soybean, sorghum, Kimchi, tobu, wheat flour, red pepper powder, small red bean, glutinous millet, soybean paste, potato, Ramyeon, green pepper, noodle, buckwheat Naengmyeon, soybean sprout, laver, watermelon, perilla seeds powder and soy sauce. Manganese intake from these 20 foods was 74.0% of the total dietary manganese intake. In conclusion, daily manganese intake of the subject was 3.4mg (2.2mg/1000 kcal) and met adequate intake of manganese. The mai or food sources of manganese were cereals, pulses, and vegetables such as rice, soybean, sorghum, Kimchi and tobu.

Quality Characteristics and Antioxidant Activities of Cookies Supplemented with Aronia Powder (아로니아 분말을 첨가한 쿠키의 품질 특성과 항산화 활성)

  • The feasibility of incorporating aronia powder (AP) as a value-added food ingredient into convenient food products was investigated using cookie as a model system. AP was incorporated into cookies at amounts of 0, 1, 2, 3, and 4% (w/w) based on total weight of wheat flour. The pH level of cookie dough decreased significantly with increasing levels of AP (P<0.05), whereas moisture content and density were not directly affected by levels of AP incorporation. The spread ratio increased significantly upon addition of AP; however, it was not significantly affected by level of AP incorporation. The loss rate of cookies decreased significantly with increasing levels of AP (P<0.05). In terms of color, lightness and yellowness decreased while redness increased significantly (P<0.05) with increasing levels of AP. Use of AP significantly decreased hardness of cookies (P<0.05), but no significant differences were found between control and 1% sample, 1% and 2% sample, 2% and 3% sample, and 3% and 4% sample (P>0.05). 2,2-Diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid (ABTS) radical scavenging activities were significantly elevated by AP addition, and they increased significantly as AP concentration increased in the formulation (P<0.05). Correlation analysis indicated that acceptances of color and chewiness were negatively correlated well with the level of AP incorporation, density and moisture content of cookie dough, and cookie redness, whereas they were positively correlated with pH of cookie dough, loss rate, and hardness (P<0.01 or P<0.05). Finally, consumer acceptance test indicated that the highest levels of AP incorporation (4%) had an adverse effect on general consumer preferences. In contrast, cookies with moderate levels of AP (2%) are recommended based on overall scores to take advantage of the antioxidant properties of AP without sacrificing consumer acceptability.

Effects of Various Diets on Growth and Body Composition of Juvenile Olive Flounder, Paralichthys olivaceus (배합사료 종류가 넙치 Paralichthys olivaceus 치어의 성장 및 체성분에 미치는 영향)

  • The 7-week feeding experiment was conducted to investigate the effects of one experimental diet (ED) and five different commercial diets (CDs) on growth and body composition of juvenile olive flounder, Paralichthys olivaceus. An ED was formulated to contain 50.0% crude protein (CP) from fishmeal, casein, zein and wheat flour and 15.0% crude lipid (CL) from squid liver oil. Five CDs for seawater fish were two domestic E commercial diet (DECD) and C commercial diet (DCCD), three imported H commercial diet (IHCD), M commercial diet (IMCD) and O commercial diet (IOCD) containing 53.1~58.0% CP and 4.8~12.7% CL, respectively. Each diet was fed to triplicate groups of juvenile olive flounder initially weighing $29.1{\pm}0.8g/fish\;(mean{\pm}SD)$ in a flow-through seawater system with a water temperature of $23.4{\sim}28.0^{\circ}C$. Weight gain (WG) was significantly greatest in fish fed the IMCD; intermediate responses were observed for fish fed the DECD, DCCD, and IOCD, while the IHCD and the ED produced the lowest WG values. Feed efficiencies (FE) were similar to WG excluding fish fed the DCCD; FE was also greatest in fish fed the DCCD. Survival with no significant difference approached 100% for fish fed the all six diets in this experiment. Whole-body crude protein and ash contents were not affected excluding moisture and crude lipid by the different type of diets. Therefore, type of diets appeared to be important factor in influencing WG, FE and whole-body moisture and crude lipid of juvenile olive flounder; the best diet for juvenile olive flounder was determined to be the imported commercial M diets containing intermediate protein (55.9%) and lipid (12.7%) in natural seawater based on highest WG, and FE, respectively. This study indicates that the one commercially formulated diet containing intermediate protein and lipid used in this experiment could be a practical diet for juvenile olive flounder; these differences in growth performance between ED and CDs may be due to different dietary protein and lipid levels.

Effects of Dietary Probiotics Supplementation on Juvenile Korean Rockfish Sebastes schlegeli (치어기 조피볼락 Sebastes schlegeli 사료내 생균제 첨가효과)

  • A 12-week feeding trial was conducted to investigate the effects of dietary supplementation of probiotics as a feed additive for juvenile Korean rockfish Sebastes schlegeli. Four experimental diets supplemented with no probiotic(Control), Bacillus polyfermenticus(BP), Bacillus licheniformis(BL) or Bacillus polyfermenticus plus Saccharomyces cerevisiae(BP+SC) at $1.0{\times}10^7$ CFU/kg diet as a dry-mater(DM) basis were prepared by mixing with a basal diet. After 12 weeks of the feeding trial, fish fed BP+SC diet showed significantly higher weight gain(WG), feed efficiency(FE), specific growth rate(SGR) and protein efficiency ratio(PER) than those of fish fed control diet(P<0.05), however there were no significant differences in WG, FE, SGR and PER among fish fed the BP, BL and BP+SC diets. Fish fed BP and BP+SC diets showed significantly higher condition factor(CF) than that of fish fed control and BL diets. Fish fed BP, BL, BP+SC diets showed significantly higher hepatosomatic index(HSI) than that of fish fed control diet, however there was no significant difference in HSI among fish fed BP, BL and BP+SC diets. Fish fed BP+SC diet showed significantly lower serum glucose than that of fish fed control diet, however there was no significant difference in serum glucose among fish fed BP, BL and BP+SC diets. Fish fed BP+SC diet showed significantly higher respiratory burst activity(NBT assay) than that of the fish fed control and BL diets, however there was no significant difference in NBT assay between fish fed BP and BP+SC diets. Fish fed BP and BL diets showed significantly higher lysozyme activity than that of the fish fed control diet, however there was no significant difference in lysozyme activity among fish fed BP, BL and BP+SC diets. Fish fed BP and BP+SC diets showed significantly lower cumulative mortality than that of the fish fed control diet, however there was no significant difference in cumulative mortality among fish fed BP, BL and BP+SC diets after the challenge test. From these results, dietary B. polyfermenticus, B. licheniformis and B. polyfermenticus plus S. cerevisiae supplementation in juvenile Korean rockfish diet could enhance growth performances, non-speicific immunities and a higher resistance against the specific pathogen.

  • This study was conducted in order to determine the effect of autoclave and microwave treatments on cookies. Wheat dough was treated in an autoclave (30 min), a microwave (1 min), and both autoclave and microwave (30 min/1 min). The treated dough was baked or non-baked and cookies quality was assessed. The pH, moisture content, color, and texture were measured, and sensory evaluation was performed. The pH showed a slight increase when dough was treated in a microwave (before baking) and decreased in both the autoclave and autoclave/microwave (after baking) treatments. The moisture content showed a significant increase, compared to the control, in autoclave treatments. Regarding surface color of cookies, lightness was decreased in all treatments and redness was higher compared with the control, except for microwave (before baking), and yellowness was lower compared to the control, except for microwave treatment (after baking). Hardness, gumminess, chewiness, and shear force showed a significant increase when dough was treated in an autoclave/microwave (after baking) compared to the control. In the sensory evaluation, color, taste, texture, shape, and overall preference of cookies treated with an autoclave/microwave (after baking) showed a low score. These results suggest that autoclaving and microwaving may reduce the quality of bread and that preparation of countermeasures is necessary.

Effects of Fermented Products by Formitella fraxinea and Sarcodon aspratus on In Vitro Ruminal Fermentation (In vitro 반추위 발효에 미치는 Formitella fraxinea와 Sarcodon aspratus 발효물질의 영향)

  • In order to determine the effect of fermentation by the mycelia of fungal species, Formitella fraxinea and Sarcodon aspratus, on the in vitro dry matter digestibility and pH of mixtures with sawdust plus 20% wheat bran w/w, on dry matter basis to use as a feedstuff or an additive including fungal mycelium into a feedstuff. The mixtures were unfermented (UF) and fermented by Formitella fraxinea(FF) and Sarcodon aspratus(SA) for two weeks at $29^{\circ}C$ in a incubator. Fungal fermentation products were added to the basal diet to the level of 0, 1, 3 and 5%, w/w of diets each. The in vitro dry matter digestibilities, soluble sugar contents and pH of fermentation fluids were measured at 24, 48 and 72hr after fermentation begin. Neutral detergent fiber(NDF) contents in mixtures were lower for SA and UF(80.4 and 82.2%) than for FF(88.3%) (P<0.05). In vitro DM digestibility for 48h was higer for SA(21.2%) than for UF and FF(17.9 and 12.2%). The in vitro dry matter digestibility for 24hr was higher for diets added with FF 1% as 49.18%, and lower for diet added with FF 5%(43.07%) than basal diet(44.98%)(P<0.05), and tended to be higher for the diets added with fungal products. The pH of in vitro fermentation fluids for 24 and 48 hrs fermentation were lower for diets added with all FF and SA than for UF(P<0.05). However, those for 72 hrs fermentation were higher for SA 1%(6.74) than other diets(P<0.05). The soluble sugar concentration of in vitro fermentation fluid was not different between diets for 24 hr fermentation. However, those were higher for all additive diets than basal diet for 48 and 72 hrs fermentation(P<0.05). It could be concluded that dairy cow's diets added with fungal fermentation products have positive effects, and expected it will be more beneficial if more fungal mycelium was contained.

Effective Tillering Pattern and Grain Yield on Different Sowing Depth in Barley (보리 파종심도에 따른 유효분벽의 양상과 수량)

  • This study was aimed to provide understanding on the eco-physiological response of barley tillers as affected by sowing depth. Yield and yield contribution rate of tillers were investigated with the data of field experiments in the former Wheat and Barley Research Institute of Suwon, Korea from October 1983 to July 1984. When barley was sowed in various depth of 1, 3, 5, 7 and 9cm below the ground surface, 13 mainstem leaves appeared by 3 and 5cm treatments, and 11 leaves by 1, 7 and 9cm treatments. The effective tillers were observed from 8/0 in lcm depth, while 10/0 in 3-5cm depth and 9/0 in 7cm depth. There was no coleoptile tiller in 7cm depth sowing. Deep and shallow sowings produced fewer leaves and tillers, as early growth was hindered by deep sowing whereas cold damage was apparent in shallow sowing. Accordingly, more effective tillers per plant and higher grain weight per ear were observed in 3∼5cm depth sowing. Yield contribution by the tillers with various sowing depth was as follows: mainstem, 1, 2, 11, 3, 21, 4 and 12. The contribution of 1P, 13, 2P, 23 and 31 varied with the treatments.
