아밀로오스 함량별 쌀전분의 이화학적 특성 (Physicochemical Properties of Rice Starch by Amylose Content)

  • 가공식품의 원료로써 잘의 가공 적성을 파악하기 위하여 아밀로오스 함량에 따라 가공용으로 육종된 8가지 품종에 대한 전분의 이화학적 특성을 조사하였다. 분리전분의 아밀로오스 함량은 $16.7{\sim}29.7%$이었으며 IR 30, Godael, Aguja 및 Lengkwang의 고 아밀로오스 품종에, Seomjinbyeo, BG-3, B개 및 Samgangbyeo는 저 아밀로오스 품종으로 분류할 수 있었다. 전분의 물 결합력과 blue value는 각각 $87.0{\sim}103.0$$0.178{\sim}0.305$이었으며 아밀로오스 함량이 증가할수록 아밀로그램의 호화온도와 break down ratio는 증가 한 반면 최고점도는 무관하였다. 0.1% 전분 현탁액의 광투과도는 저 아밀로오스 품종의 경우 $50^{\circ}C$부터 증가하기 시작하였으나 고 아밀로오스 품종은 $65^{\circ}C$이후부터 급격히 증가하였고 $75^{\circ}C$ 이상에서는 차이가 없었다. 또한 팽윤력과 용해도는 저 아밀로오스 품종에서 높게 나타났다. 한편 각종 쌀 전분겔의 노화속도상수는 Aguja 품종이 0.219로 가장 높았고 Seomjinbyeo가 0.057로 가장 낮았으며 아밀로오스 함량이 높을수록 노화속도가 빨랐다.

시나리오별 논에서의 molinate 노출위험도 분석: (2) 노출위험도 평가 (Scenario-Based Exposure Risk Assessment of Molinate in a Paddy Plot ; (2) Exposure Risk Assessment)

  • Exposure risk assessment of pesticide molinate using the RICEWQ model in a rice paddy plot was performed to observe the effects of various water and pesticide management scenarios. Several scenarios were developed to represent the specific water and pesticide management practices of rice cultivation in Korea. The results of the scenario analysis using the RICEWQ model simulation from the previous studies were analysed. The molinate risk for aquatic organisms is evaluated by the ratio of the predicted environmental concentration(PEC) and the predicted no-effect concentration(PNEC). The results showed that the no-effect periods for aquatic organisms for the deep, shallow and very shallow irrigation conditions were 33.3, 28.9 and 25.6 DATs for the lable rate application and 36.4, 33.7 and 30.8 DATs for the double lable rate application, respectively. The higher application rate showed greater exposure risk to the aquatic organisms. Based on this study, the withholding period of molinate practiced in Korea, that is 3 to 4 DATs, must be much longer. The results of this study can be used for the non-point source pollution control and environmental policy making regarding pesticides.

Responses of Rice (Oryza sativa L.) Yield and Percolation Water Qualities to Alternative Irrigation Waters

  • Objective of this study was to investigate the influences of harvest index and percolation water quality as irrigated the discharge waters from an industrial and a municipal wastewater treatment plants and seawater (1:5 seawater: tap water) as alternative water resources during tillering stage for drought stress. There were four different treatments such as the discharge water from an industrial (textile dyeing manufacture plant) wastewater treatment plant (DIWT), discharge water from the municipal wastewater treatment plant (DMWT), seawater (1:5) and groundwater as a control. For the initial chemical compositions of alternative waters, it appeared that higher concentrations of COD, $Mn^{2+}$, and $Ni^+$ in DIWT were observed than reused criteria of other country for irrigation, and concentrations of $EC_i$, Cl, and $SO_4$ in seawater were higher than that for irrigation. Harvest index was not significantly different between DIWT and DMWT with different irrigation periods in two soil types, but that of seawater (1:5) is decreased with irrigation periods in clay loam soil and not different between 10 days and 20 days of irrigation periods in sandy loam soil. For percolation water qualities, values of sodium adsorption ratio (SAR) are increased with prolonging the irrigation periods of seawater (1:5) and DIWT, but those of DMWT were almost constant through the cultivation periods regardless of the irrigation period in both soil types. EG of percolation waters is eventually increased with prolonging days after irrigation regardless of irrigation periods in both soil types. Therefore, it might be concluded that there was potentially safe to irrigate the discharge water from municipal wastewater treatment plant relative to harvest index, SAR and $EC_i$ values of the ground water through the rice cultivation period at tillering stage for drought period.

  • Swampland is a potential alternative land to be used in various agricultural production activities in Indonesia, because Indonesia have 33.41 million hectares of swamp land that consists of 13.28 million hectares nontidal swamp and million hectares 20.13 tidal swamp. In the province of South Sumatra, because of unpredictable water level in the field before planting, farmers have been doing agronomic adaptation method through the delay time of transplanting and forced to apply more than one the nursery practice with the combination of a floating nursery method and a dry-bed nursery method. This study was aimed to (1) evaluate the seedling growth and tillering pattern of several popular Indonesian rice varieties, and (2) look for alternative technologies to get a better rice seedlings under two nursery methods in the nontidal swamp land. In the first experiment, the seedling growth characteristics of five rice varieties (Ciherang, Inpara 5, Inpara 9, Inpari 29, and Inpari 30) was evaluated by two methods of nursery, i.e. floating nursery and dry-bed nursery. In the second experiment, rice variety of Inpari 30 was treated with Zn seed priming and foliar fertilizer of 2,300 ppm N at the nursery stage. Those treatments were combined with the time of seedling under floating and dry-bed nursery. The results of the first experiment showed that of the five varieties tested, dry-bed nursery method showed better seedling growth than floating nursery. This was indicated by high leaf number, tiller number, tillers pattern, shoot-root ratio and relative growth rate. Ciherang and Inpari 30 showed high tiller number, and they had produced tertiary tiller in the sixth week of observation. Moreover, shorter period of floating and dry-bed nursery in combination with the treatment of Zn seed priming and spraying seedling with foliar fertilizer N could improve the growth of seedlings.

오염(汚染) 관개수(灌漑水)가 벼 생육(生育) 및 미질(米質)에 미치는 영향(影響) (Effect of Polluted Irrigation Water on the Rice Growth and the Grain Quality)

  • 금호강(琴湖江) 하류(下流)의 오염(汚染)된 하천수(河川水)를 관개수원(灌漑水源)으로하는 농가답(農家畓) 두곳(경산통(慶山統):Gk, 규암통(窺岩統):Gy)에서 관개(灌漑)수의 오염도를 조사하고, 합리적(合理的)인 시비법(施肥法) 개선(改善)의 기초자료(基礎資料)를 얻고자 시험(試驗)을 실시(實施)하였다. 관개수질(灌漑水質)은 pH는 6.7~7.4, COD:21.3~52.8, $NH_4-N$:3.2~5.3ppm, $PO_4$:1.6~6.0ppm으로서 오염도(汚染度)는 6월(月)이 가장 심(甚)하였고 8월(月)은 적었다. 공시토양(供試土壤)의 화학적(化學的) 특성(特性)은 pH가 경산통(慶山統)은 5.6~6.0 규암통(窺岩統)은 6.1~6.3이었고, 인산(燐酸) 및 규산함량(珪酸含量)은 규산처리구(珪酸處理區)에서 가장 높았다. 벼 초장(草長), 경수(莖數) 및 수량(收量)은 질소감비구(窒素減肥區) 떨어지지 않았다. 백미중(白米中) $Mg/(K{\times}N)$비(比)와 호응집성(糊凝集性)은 질소감비구(窒素減肥區)에서 가장 높았고, 알카리붕 괴도와 단백질함량(蛋白質含量)은 적었다. 따라서 오염관개수(汚染灌漑水)가 유입(流入)되는 논에서는 식미(食味)를 감안할때 질소감비(窒素減肥)가 바람직하였다.

Effects of Feeding Purple Rice (Oryza sativa L. Var. Glutinosa) on the Quality of Pork and Pork Products

  • Purple rice is a strain of glutaneous rice rich in anthocyanins and ${\gamma}$-oryzanol. Both types of compounds are involved in antioxidant and lipid metabolism of mammals. Three experimental diet types were used which consisted approximately by half either of purple rice, white rice or corn. Diets were fed to $3{\times}10$ pigs growing from about 30 to 100 kg. Meat samples were investigated either as raw or cured loin chops or as smoked bacon produced from the belly. Various physicochemical traits were assessed and data were evaluated by analysis of variance. Traits describing water-holding capacity (drip, thaw, and cooking losses) and tenderness (sensory grading, shear force) of the meat were mostly not significantly affected by the diet type. However, purple rice feeding of pigs resulted in lower fat and cholesterol contents of loin and smoked bacon compared to white rice, but not compared to corn feeding except of the fat content of the loin. The shelf life of the raw loin chops was improved by purple rice as well. In detail, the occurrence of thiobarbituric acid reactive substances after 9 days of chilled storage was three to four times higher in the white rice and corn diets than with purple rice. The n-6:n-3 ratio in the raw loin chops was 9:1 with purple rice and clearly higher with 12:1 with the other diets, meat lipids. Level and kind of effect of purple rice found in raw meat was not always recovered in the cured loin chops and the smoked bacon. Still the impression of flavor and color, as well as overall acceptability were best in the smoked bacon from the purple-rice fed pigs, whereas this effect did not occur in the cured loin chops. These findings suggest that purple rice has a certain, useful, bioactivity in pigs concerning meat quality, but some of these effects are of low practical relevance. Further studies have to show ways how transiency and low recovery in meat products of some of the effects can be counteracted.

알파미분 첨가에 따른 흰떡의 이화학적 특성변화 (Changes in the Physicochemical Properties of Korean rice cake by the Addition of Gelatinized Rice flour)

  • 알파미분이 흰떡의 품질특성에 미치는 영향을 살펴보기 위하여 각 첨가량별(0, 25, 35, 45%) 이화학적 특성을 살펴보았다. 흰떡의 호화도는 조리 전의 무첨가구의 경우 5.75%에서 첨가 후 12% 이상으로 증가하였고, 조리 후의 경우에도 무첨가구 52%에서 첨가구 85% 이상으로 크게 증가하였으며, 색도의 경우는 알파미분을 첨가함으로써 명암도가 증가하였으나 함량에 따른 시료간 유의차는 보이지 않았다. 알파미분을 첨가하여 제조한 흰떡의 조리 전 경도는 무첨가구에 비하여 첨가하였을 경우 전반적으로 높은 값을 나타내었으며 조리 후의 경우에도 비슷한 경향을 나타내었다. 냉동저장 후 조리한 경우에는 알파미분 첨가에 따른 효과는 나타나지 않았다. 조리특성 실험에 있어서는 알파미분 첨가구의 경우 냉장, 냉동저장구 모두 무첨가구보다 조리중 수분흡수율이 높았다. 알파미분을 첨가하여 제조한 흰떡의 미세구조를 주사전자현미경으로 관찰한 결과 알파미분을 첨가한 경우 무첨가구에 비하여 내부 구조가 속성 복원력을 갖도록 변화되었음을 알 수 있었다.

Effects of Controlled Drainage Systems on Soybean (Glycine max L.) Growth and Soil Characteristics in Paddy Fields

  • Crop production in rice paddy fields is of great importance because of declining rice consumption and the low self-sufficiency ratio for field crops in Korea. A controlled drainage system (CDS) is recognized as an effective means to adjust water table (WT) levels as needed and control soil water content to improve the soil environment for optimum crop growth. The present study evaluated the effects of a CDS on soil characteristics, including soil water distribution and soybean development in paddy fields. The CDS was installed with two drain spacing (3 m and 6 m) at the experimental paddy field at the National Institute of Crop Science, Miryang, Korea. It was managed with two WT levels (0.3 m and 0.6 m) during the growing season. Soil water content, electrical conductivity and plant available nitrogen content in the soil were significantly greater in the 0.3 m WT management plots than in the 0.6 m plot and the control. At the vegetative stage, chlorophyll content was significantly lower with higher WT control because of excess soil moisture, but it recovered after the flowering stage. Soybean yield increased with WT management and the 0.6 m WT treatment produced the greatest grain yield, $3.38ton\;ha^{-1}$, which was 50% greater than that of the control. The CDS directly influenced outflow through the drains, which significantly delayed nutrient loss. The results of this study indicated that WT management by CDS can influence soil characteristics and it is an important practice for high yielding soybean production in paddy fields, which should be considered the crop growth stages for stable crop production.

경지 정리된 광역 논에서 영양물질 수지와 배출 특성 (Nutrient Load Balance in Large-Scale Paddy Fields during Rice Cultivation)

  • 벼농사가 주변 수계의 수질에 미치는 영향을 평가하기 위해 경기도 이천시 부발읍의 광역 논을 대상으로 2002년 5월부터 2003년까지 9월까지 벼 재배기간 동안 논에서 양분물질인 질소와 인의 유입 및 유출부하량을 조사하였다. 재배기간 동안 평균 시비량은 질소가 2002년에 $129.0kg\;ha^{-1}$ 그리고 2003년에 $145.1kg\;ha^{-1}$이었으며, 인은 각각 $56.5kg\;ha^{-1}$$55.1kg\;ha^{-1}$로서, 질소 시비량은 2003년에 약간 많았으나 인 시비량은 비슷하였다. 조사기간 동안 물 수지는 2002년에 강우량 888 mm, 관개수량 1,321 mm, 침투수량 1,028 mm, 지표유출량 677 mm, 증발산량은 342 mm이었고, 2003년에 강우량 1,115 mm, 관개수량 1,493 mm, 침투수량 1,147 mm, 지표유출량 865 mm, 증발산량은 276 mm 이었다. 강우량과 지표배출수량은 2002년과 2003년 모두 결정계수($r^2$)가 각각 0.92와 0.81로 선형적인 양의상관으로 나타나 재배기간 중 논에서의 배출수량은 강우량이 증가할수록 선형적으로 증가하였다. 강우, 관개수, 지표 배출수, 침투수 및 작물흡수량의 질소 부하량은 2002년에 각각 9.9, 41.6, 22.1, 5.5, $123.6kg\;ha^{-1}$이었으며, 2003년에는 각각 15.8, 55.4, 17.3, 7.5, $119.1kg\;ha^{-1}$이었다. 강우, 관개수, 지표 배출수, 침투수 및 작물흡수량의 인 부하량은 2002년에 각각 2.1, 13.0, 3.6, 1.8, $64.0kg\;ha^{-1}$이었으며, 2003년에는 각각 1.6, 15.0, 5.0, 1.2, $61.4kg\;ha^{-1}$이었다. 강우량 및 배출수량과 양분물질 배출 부하량과의 관계는 강우량 및 배출수량이 증가할수록 논에서의 양분물질 배출 부하량은 선형적으로 증가하였다. 또한, 재배시기별 질소와 인의 유입 부하량과 유출 부하량 차이는 전 생육기간동안 유입 부하량이 유출 부하량보다 많아 논은 양분물질을 흡수하는 기능을 가지고 있었다.

수도직파재배에서 토양의 물리성 변화가 용수량과 생육 수량에 미치는 영향에 관한 연구 (A Study on the Variation of Soil Physical Properties on the water requirement, growth, and yield in the direct Sowing culture of rice)

  • The research is conducted to study the effect of the soil physical properties in the direct sowing culture on the water requirement, growth, and yield of rice with Early-Tongil at the experimental paddy field of the Sangju agri. and seri. junior college in Keyngbuk province from 6th May to 15th September in 1977. The experimental plots are designed with the four plots which are non-irrigated standard (plowing to 15cm), non-irrigated deep lowed (plowing to 25cm), irrigated standard (plowing to 15cm), and irrigated deep plowing plot (plowing to 25cm) and also each plot is repreated four times by the split plot design. The results obtained are summarized as follows: 1) The soil sample was ML to 10cm depth from ground surface and those from 10cm to 20cm depth and from 20cm to 30cm were CL. Each specific gravity was 2. 6, 2. 6 and 2. 7. 2) The weather during culturing period was the sane as the normal year of mean temperature. The precipitation was little and the distribution of it was disordered comparing to normal year but the heavy sunshine gave good effect on ripening. 3) Percolation loss was increased more at the non-irrigated plot than at the irrigated plot, and that of deep-plowed plot was increased more. 4) Grain yield per 10a. of non-irrigated deep plowed plot was 898kg, it was greated than others but there wa no significance. 5) A significant difference in the number of spikelets per panicle was found between nonirrigated plot and irrigated plot, and the number of spiklelets per panicle at the nonirrigated plot was more than that of the irrigated plot. But there was no significance in the other yield components-number of panicle, fertility abd ripening ratio-at the irrigated plot, ut weight of 100 grains was higher at non-irrigated plot. 6) Yield and growth at the deep plowed plot were higher than those of standard plowed plot.
