Traditional Jeupjang - A Study on Traditional Jeupjang (Succulent Jang) - (전통즙장 - 전통 즙장에 대한 연구 -)

  • In the past, Korea had many kinds of jeupjang (succulent jang), a rapidly maturing original Korean jang (fermented soybean paste) of which there is no record in Chinese cookbooks. However, this local delicacy has almost been forgotten. Therefore, we looked for information about jeupjang in cookbooks written prior to the Joseon Dynasty in Korea (1392~1910) and in the 1950s. Among the recipes, there were 34 jeupjangs prepared with vegetables, such as eggplant and cucumber, and 9 without. The main ingredients of jeupjang are soybean, bran (wheat crust), and barley, and wild wheat is also used. Jeupjang is made in small portions to expedite its rapid maturation, but the most common form is egg-shaped, and there is also a flat or round, hilt-shaped version. In most cases, jeupjang consists of a mixture of meju powder (moldy soybean), water, and salt. Other ingredients can include nuruk (moldy bran), bran, wheat flour, an alcoholic beverage, maljang (dried fermented soybeans), ganjang (liquid soy sauce), malt, and takju (Korean murky wine). Jeupjang meju can be fermented in a vessel, most widely in baskets made of straw (sum and dungumi) or willow or interwoven twigs (chirung), but jars can also be used. The leaves of the paper mulberry are generally used for the mat and cover, but straw or leaves of the sumac, mulberry, or pine tree, soy, and fallen leaves are also used. Unlike other jangs, jeupjang is matured at $60^{\circ}C$ to $65^{\circ}C$, using heat emitted from the decomposition of horse dung, haystacks, or manure. Jeupjang became defunct or was transformed into jeomjang, jiraejang, mujang, paggeumjang, makjang, jipjang, and tojang. These jangs differ from jeupjang in that they use rice, malt, or hot pepper powder.

Sensory Characteristics of Functional Muffin Prepared with Ferulic acid and p-Hydroxybenzoic Acid (Ferulic acid와 p-hydroxybenzoic acid가 첨가된 기능성 머핀의 관능적 특성)

  • The Physical and sensory characteristics of muffins prepared with flavonoids such as ferulic acid and p-hydroxybenzoic acid were evaluated for the development of functional foods using these flavonoids. The solubilities of ferulic acid and p-hydroxybenzoic acid were over 1% in water and the solutions showed a good thermal stability. However, 1% ferulic acid and p-hydroxybenzoic acid solution showed a color change during heating. The volume and maximum height of the control muffin were the greatest among the muffin groups. The volume of the muffins decreased with the increase of flavonoid concentration. The volumes of muffins with p-hydroxybenzoic acid were smaller than those of muffins with ferulic acid. The L, a and b values on crust and crumb of the muffin groups were not significantly different. The chemical flavor, bitterness and after taste of the muffins prepared with ferulic acid were stronger than those of the control muffins. Savory flavor and sweetness of the muffins with ferulic acid were weaker than those of the control muffins. The muffins with p-hydroxybenzoic acid were not significantly different from the control muffins in the appearance, flavor, taste, texture and overall acceptability. These results demonstrated that p-hydroxybenzoic acid may be useful as an additive to muffin.

Effects of Indigestible Dextrin on Bowel Function and Serum Lipid in Rats (난소화성 덱스트린이 횐쥐의 장기능 및 혈청 지질에 미치는 영향)

  • The present study was undertaken to evaluate the effect of indigestible dextrin on bowel function and serum lipid. Recently developed indigestible dextrin is water soluble dietary fiber obtained by heating and enzyme-treatment of potato starch with low viscosity. SD male rats weighing 80~85g were divided into three groups; control diet(IC), control +5% pectin(IP), control +5% indigestible dextin(ID). Experimental rats were fed one of the experimental diets ad libitum for six weeks. Weight gain, food intake, and food efficiency ratio were not significantly different among other groups. Those of ID tended to be higher than in IP and IC. Weights of liver, spleen and kidney were not significantly different among groups. Epididymal fat pads weight in W and ID tended to be lower than in IC. The weight of cecum was sinificantly higher in m than in other groups(p<0.05). The weight and length of large intestine tended to be higher in IP and ID than in IC. Total feces excretion of ID and If tended to be more than that of IC. Transit time was shorter in IP than in other groups. Serum total lipid, total cholesterol and TG levels were higher in IC group than other groups. The fecal excretion of lipid was significantly higher in IP than in other groups(p<0.05). That of ID tended to be more than that of IC, so fat apparent absorption of ID was lower than that of IC. Ca absorption were decreased more in IP than in other groups(p<0.05).

PROCESSING OF STEAMED FISH CAKE FROM CARP MEAT (잉어 어묵(kamaboko) 제조에 관한 연구)

  • In this paper, the effects of some additives to the quality of fish cake such as salt, polyphosphate, and starch were tested. Besides, that of washing and alterative heating procedure were also discussed. From the result of quality test by measuring jelly strength and sensory evaluation the product was quite palatable to common, and the addition of salt and starch as 3 and 5 to 15 percent respectively, resulted in the best jelly strength of the product, it was markedly enforced when a small amount of polyphosphate ($0.3\%$) was added. It is suggested for a processing method of carp meat fish cake that meat is to be bleached by wasing at least 8 times repeatedly with tenfold tap water by volume of meat, and that the meat is previously chilled at 2 to $3^{\circ}C$ for so minutes and ground thoroughly with addition of 3 percent of salt, 5 to 15 percent starch, and 0.3 percent polyphosphate, and finally heat processed by two stages: at first, heated for 1 hour at $35^{\circ}C$ and alteratively heated for 30 minutes at $90^{\circ}C$ as the final.

Determination of Heterocyclic Amines and Acrylamide in Agricultural Products with Liquid Chromatography-Tandem Mass Spectrometry

  • Heterocyclic amines (HCAs) and acrylamide are unintended hazardous substances generated by heating or processing of foods and are known as carcinogenic and mutagenic agents by the animal experiments. A simple method was established for a rapid and accurate determination of 12 types of HCAs (IQ, MeIQ, Glu-P-1, Glu-P-2, MeIQx, Trp-P-1, Trp-P-2, PhIP, $A{\alpha}C$, $MeA{\alpha}C$, Harman and Norharman) and acrylamide in three food matrices (non-fat liquid, non-fat solid and fat solid) by isotope dilution liquid chromatography-tandem mass spectrometry (LC-MS/MS). In every sample, a mixture of internal standards including $IQ-d_3$, $MeIQx-d_3$, $PhIP-d_3$, $Trp-P-2-^{13}C_2-^{15}N$ and $MeA{\alpha}C-d_3$ was spiked for quantification of HCAs and $^{13}C_3$-acrylamide was also spiked for the analysis of acrylamide. HCAs and acrylamide in sample were extracted with acetonitrile and water, respectively, and then two solid-phase extraction cartridges, ChemElut: HLB for HCAs and Accucat: HLB for acrylamide, were used for efficiently removing interferences such as pigment, lipid, polar, nonpolar and ionic compounds. Established method was validated in terms of recovery, accuracy, precision, limit of detection, limit of quantitation, and linearity. This method showed good precision (RSD < 20%), accuracy (71.8~119.1%) and recovery (66.0~118.9%). The detection limits were < 3.1 ng/g for all analytes. The correlation coefficients for all the HCAs and acrylamide were > 0.995, showing excellent linearity. These methods for the detection of HCAs and acrylamide by LC-MS/MS were applied to real samples and were successfully used for quantitative monitoring in the total diet study and this can be applied to risk assessment in various food matrices.

Evaluation Techniques for Residual Structural Performance of a Reinforced Concrete slab under Fire Damage (화재 피해를 입은 철근콘크리트 슬래브의 잔존 구조성능 평가기법)

  • This study proposes non-destructive rebound-hardness and ultrasonic testing methods to more accurately evaluate the residual structural performance of reinforced concrete structures in a fire. Techniques are also proposed to assess the stiffness used in the deflection calculation with natural frequencies obtained by vibration tests. In the compressive strength evaluation using rebound hardness, the residual compressive strength of thick specimens and a larger water/cement (W/C) ratio were shown to be large. The homogeneity of concrete at high temperature compared to ambient temperature conditions was assessed by the velocity of ultrasonic waves that penetrate the concrete, and it followed W/C or thickness of slab makes little different results. To assess the stiffness of fire-damaged slabs and increase in deflection, the natural frequency was measured by vibration tests and incorporated into the equation of the stiffness. The application of this technique to the slab experiment showed that it can be a very reasonable evaluation technique. In addition, to evaluate the residual strength of a member after fire, a test of the strength of a component was carried out during and after heating.

Analysis of Ammonium Carbamate Used as a NOx Reducing Agent for the SCR System of Marine Diesel Engines (선박용 디젤엔진 SCR 시스템에 NOx 환원제로 사용되는 암모늄 카바메이트의 물질 성분 분석 연구)

  • SCR technology, which uses urea-water as a NOx reducing agent, has been widely used to reduce NOx in marine diesel engines. However, as an alternative NOx reducing agent, solid-phase ammonium carbamate has several advantages, such as low-temperature NOx reduction performance and NH3 storage capacity. This study presents a method for evaluating the purity of ammonium carbamate using EA, FTIR, and XRD to investigate the change in the material characteristics of ammonium carbamate when it is exposed to various temperature and pressure conditions. In this study, it was found that the purity of ammonium carbamate can be effectively evaluated via EA analysis. The FTIR analysis results confirmed that the properties of ammonium carbamate did not change even after repeated heating and cooling under thermal decomposition temperature conditions, which may be applied to the SCR system of marine diesel engines. Additionally, it was found that when ammonium carbamate was exposed to the atmosphere for a long time, it transformed into ammonium carbonate.

Antimicrobial Activity of the Aerial Part (Leaf and Stem) Extracts of Cnidium officinale Makino, a Korean Medicinal Herb (천궁(Cnidium officinale Makino) 지상부(잎과 줄기) 추출물의 항균활성)

  • This study was carried out to investigate the usefulness of the aerial part of Cnidium officinale Makino as a bioactive material source. The aerial part(leaf and stem) of Cnidium officinale Makino was extracted with three kinds of solvents and determined their antimicrobial activities against several bacteria and yeast strains using the paper disc method and the microtiter dilution method. The extracts of the Cnidium offocinale aerial part exhibited the broad spectrum of antibacterial activity against Gram (+) and Gram (-) bacteria, including food-borne pathogens such as Listeria monocytogenes, Salmonella typhimurium, and Staphylococcus aureus. The extracts of Cnidium officinale also showed antifungal activity against Saccharomyces cerevisiae. The ethyl acetate extracts completely inhibited the growth of Staphylococcus aureus and Pseudomonas aerogenes, and moderately inhibited the growth of Escherichia coli and Enterobacter cloacae at the concentration of 0.5 mg/mL. However, water extract of Cnidium officinale exhibited lower antimicrobial activity than ethyl acetate and methanol extracts. The inhibitory effect of the ethyl acetate extract of Cnidium officinale Makino was not destroyed by heating at $100^{\circ}C$ for 30 min or at $121^{\circ}C$... for 15 min. These results suggest that the aerial part of Cnidium officinale Makino could be a useful source for a natural antimicrobial material.

Feasibility of Microwave for the Solubilization of Cattle Manure and the Effect of Chemical Catalysts Addition (우분의 가용화에 대한 마이크로웨이브의 적용성 및 화학적 촉매의 첨가에 따른 효과)

  • Microwave (MW) is an effective method for solubilizing organic solids because it has thermal, non-thermal and ionic conduction effects by dielectric heating and high energy efficiency. In this study, we evaluated the application of MW to the solubilization of cattle manure and investigated the solubilization ratio of cattle manure by solid concentration, MW power and target temperature. And $H_2SO_4$ and NaCl were added to investigated the effects on the MW-assisted solubilization. Also, we evaluated the solubilization efficiency by biochemical methane potential(BMP) test according to the solubilization conditions. Maximum SCOD increment per energy supply was 70.5 mg $SCOD_{increased}/kJ$ at 12% of the solid concentration, MW power of 800 W and the target temperature of $40^{\circ}C$. And SCOD concentration went up 153.2% compared to the initial concentration. In the MW-assisted solubilization with $H_2SO_4$ and NaCl as chemical catalysts, SCOD concentration was increased by 36% and 22.7%, respectively, compared to the result of MW. The methane production was increased by 13.3% and 11.3% with the addition of $H_2SO_4$ and NaCl. Therefore, MW is an effective method for solubilization of cattle manure, and it is necessary to use chemical catalysts to increase the solubilzation efficiency.

Determination of Estrone by Adsorptive Stripping Voltammetry (흡착 벗김 전압전류법에 의한 에스트론의 정량)

  • Estrone such as estriol and estradiol can not be determined by votammetric methods, because these are electrochemically inactive in the potential windows for mercury drop electrode. Nitro-derivatives of estrone are electro active and nitration of estrone is accomplished by heating the solution involving estrone and sodium nitrite in a water-bath at $100^{\circ}C$ for 30 min. Such nitro-derivatives are determined directly by voltammetry. The electrochemical behavior for nitrated estrone was investigated by cyclic voltammetry. The trace estrone was determinated by differential pulse adsorptive cathodic stripping voltammetry. Nitrated estrone gives a well defined voltammetric wave at ca. - 0.61 V (vs. Ag/AgCl electrode). The electrochemical reaction was irreversible process in sodium borate buffer at pH 11 and nitrated estrone was strongly adsorbed on the surface of mercury electrode. The optimal experimental conditions for the determination of nitrated esterone were found to be 0.05 M sodium nitrate, 0.01 M sodium borate, pH 11.0, and an accumlation potential of 0.10 V (vs. Ag/AgCl). The detection limit was as low as $1{\times}10^{-9}M$ for estrone with 2 min accumulation time.
