다양한 소재가 첨가된 누룽지의 이화학 특성 분석 (Analysis of Physicochemical Properties of Nurungji Added with Various Materials)

  • 지속적으로 감소하는 쌀 소비량을 해결하기 위해 쌀을 주원료로 하며 식사대용식은 물론 스낵으로도 제공될 수 있는 누룽지 제품의 다양성을 확보하고자 기능성을 보유한 7종의 천연 소재를 첨가하여 기호도와 상품성을 증가시킬 수 있는 누룽지를 제조하고 이화학적 특성을 분석하였다. 물 결합력은 흑임자를 첨가한 누룽지에서 264.13%로 가장 높게 나타났으며 경도는 갈색거저리를 첨가한 누룽지에서 0.36 N으로 가장 낮은 값을 보였다. 환원당 함량은 단호박을 첨가한 누룽지를 30분 침지하였을 때 1.47%로 가장 높게 나타났다. 다양한 소재를 첨가한 누룽지의 2,2-diphenyl-1-picryl-hydrazyl 유리라디칼 소거활성을 측정한 결과 단호박과 비트 첨가 누룽지에서 높은 소거능을 보였다. 관능평가 결과 전체적 기호도는 흑임자 첨가 누룽지에서 4.3으로 가장 높게 나타났다. 여러 소재가 첨가된 누룽지의 이화학적 특성 분석과 관능평가 결과 다양한 식품으로서의 적용이 가능한 것을 확인하였다.

시멘트 수화에 따른 6가 크롬의 고정화 특성 (Binding of the Hexavalent Chromium Ions in the Process of Cement Hydration)

  • 시멘트 내 6가 크롬은 피부질환이나 암을 유발할 수 있는 유해한 인체에 유해한 이온으로 잘 알려져 있다. 본 연구에서는 사람에게 영향을 주는 시멘트 내 6가 크롬의 정량적 분석을 하고자 시멘트 및 시멘트 경화체 내 6가 크롬의 고정화에 대해 평가하였다. 국내에서 생산되는 일반 포틀랜드 시멘트 3종과 플라이애쉬, 고로슬래그 미분말, 실리카퓸을 사용하여 수용성 및 산가용성 6가 크롬을 분광광도법으로 측정하였다. 측정결과, 시멘트 내 수용성 6가 크롬의 농도는 10.5-18.9 mg/kg-cement 범위였으며 혼화재료 내 수용성 6가 크롬의 양은 매우 적게 측정되었다. 시멘트 내 산가용성 6가 크롬의 농도는 172.4-318.2 mg/kg-cement 범위로 측정되었으며 수용성 6가 크롬에 비해 증가하였다. 그러나 크롬의 pH에 의존적인 용해 특성에 따라 용매의 pH가 저감된다고 하여 산가용성 6가 크롬의 농도가 항상 크게 측정되지는 않았다. 시멘트 수화 후 수용성 6가 크롬은 2.0 mg/kg-cement 정도로 감소하였으며 이는 크롬산-에트링게이트 생성에 의한 결과임을 확인할 수 있었다.

쌀눈쌀가루 배합 비율과 조리 방법에 따른 약과의 품질특성 (Quality Characteristics of Embryonic Rice Flour Substituted Yakgwa Cooked using Different Frying Methods)

  • In this study, when manufacturing Yakgwa, 0, 25, or 50% of embryonic rice flour (ERF) was substituted for wheat flour (WF) to make the dough. After making Yakgwa by hot air frying (HF) or deep-fat frying (DF) methods, physicochemical characterization and acceptance tests were conducted. ERF had a higher water-binding capacity and a lower fat-binding capacity than WF (p<0.05). Yakgwa prepared by HF had lower crude fat contents, peroxide values, and expansion rates, but higher hardnesses, lightnesses, and rednesses (p<0.05) than that prepared by DF. Higher ERF substitution ratios reduced acid values and expansion rates and increased hardness (p<0.05). Acceptance testing showed 0% ERF Yakgwa prepared by HF had a significantly higher acceptance than Yakgwa prepared by DF. HF was found to have a positive effect on product acceptability. Yakgwa prepared with the DF method by substituting WF with ERF resulted in better flavor and overall acceptability than Yakgwa prepared with WF alone (p<0.05).

Effects of Protein Functionality on Myofibril Protein-Saccharide Graft Reaction

  • The myofibril protein (MP) isolate-saccharide graft reactions was prepared using the Maillard reaction with saccharides. The effects of various saccharides on protein functionality and quality of the Maillard reaction were investigated and compared with those of MP. The grafting degree of the MP isolate-saccharide graft reaction was significantly higher in the reducing sugar-treated groups (lactose, glucose, fructose, and palatinose). The browning intensity of the MP isolate-saccharide graft reaction with fructose, sucrose, and erythitol was higher than that observed in the control reaction (p<0.05). MP that reacted with reducing sugars (glucose, fructose, palatinose, and lactose) had fainter bands than MP that reacted with non-reducing sugars (sucrose, erythitol, trehalose, sorbitol, and xylitol). MPs conjugated with glucose exhibited higher protein solubility. The palatinose and lactose treatments were maximum in water binding capacity, though no significant difference in oil binding capacity among the saccharide treatments was observed. The emulsion stability of the MP isolate-saccharide graft reaction with palatinose and erythitol was higher than that of the control reaction. Therefore, reducing sugars have good protein functionality in the MP isolate-saccharides graft reaction.

제분방법을 달리한 찹쌀가루로 만든 인절미의 텍스처 특성에 물 첨가량이 미치는 효과 (The Effect of Added Water Volume on the Textural Properties of Injulmi made from Waxy Rice Flours using Different Milling Methods)

  • This study was investigated textural properties of Injulmi affected by milling methods, varieties and added water volume. Sinsunchalbyeo and Hwasunchalbyeo flours were made using Rin-dry milling(PDM) and roll-wet milling(RWM) methods. The proximate composition of waxy rice starches and waxy rice flours were similar. Water binding capacity, soluble carbohydrate and damaged starch of waxy rice flour by RWM: were higher than those of waxy rice flours by PDM. By increasing added water volume, hardness and adhesiveness of Injulmi were decreased. By increasing storage time, hardness of Injulmi was increased, but adhesiveness was decreased. The hardness of Injulmi made from waxy rice flours by PDM was higher than by RDW.

콘크리트의 화학적 특성을 고려한 철근 부식 임계 염소이온 농도 (Chloride Threshold Value for Steel Corrosion considering Chemical Properties of Concrete)

  • 본 연구에서는 혼합 콘크리트의 염소이온 고정화 능력, 수화물의 부식 억제 능력(Buffering capacity) 및 모르타르 내 철근 부식 측정을 통하여 콘크리트 내 철근 부식의 임계 염소이온 농도를 도출하였다. 실험 시 결합재로서 보통 포틀랜드 시멘트(OPC), 30% 플라이애시(PFA), 60% 고로슬래그 미분말(GGBS), 10% 실리카퓸(SF)를 치환한 혼합 시멘트를 사용하였다. 염소이온 고정화는 수분추출방법을 이용하여 측정하였으며, 시멘트의 부식 억제 능력은 결합재에 따른 산에 대한 저항성 측정을 통해 평가하였다. 염소이온이 함유된 모르타르 내 철근 부식은 재령 28일에 선형 분극 방법을 이용하여 측정하였다. 실험 결과, 염소이온 고정화 능력은 결합재 내의 $C_{3}A$ 함유량과 물리적 흡착에 의해 크게 영향을 받음을 알 수 있었다. 염소이온 고정화 정도는60% GGBS > 30% PFA > OPC > 10% SF 의 순으로 나타났다. pH 감소에 따른 시멘트의 부식 억제 능력은 같은 pH 값에서 결합재의 종류에 따라 다양하게 나타났다. 부식전류가 $0.1-0.2{\mu}A/cm^{2}$에 이를 때 부식이 발생한다는 가정하에, 부식에 대한 임계 염소이온 농도에 대하여 OPC는 1.03, 30% PFA는 0.65, 60% GGBS는 0.45, 10% SF는 0.98%로 각각 계산되었다. 그에 비해 임계 염소이온 농도의 새로운 표현방법으로 제시한 [$Cl^{-}$]:[$H^{+}$] 몰 농도비의 단위로 계산하였을 때, 임계 염소이온 농도는 결합재에 관계없이 0.008-0.009로 도출되었다.

Developing a Virus-Binding Bacterium Expressing Mx Protein on the Bacterial Surface to Prevent Grouper Nervous Necrosis Virus Infection

  • Grouper nervous necrosis virus (GNNV) infection causes mass grouper mortality, leading to substantial economic loss in Taiwan. Traditional methods of controlling GNNV infections involve the challenge of controlling disinfectant doses; low doses are ineffective, whereas high doses may cause environmental damage. Identifying potential methods to safely control GNNV infection to prevent viral outbreaks is essential. We engineered a virus-binding bacterium expressing a myxovirus resistance (Mx) protein on its surface for GNNV removal from phosphate-buffered saline (PBS), thus increasing the survival of grouper fin (GF-1) cells. We fused the grouper Mx protein (which recognizes and binds to the coat protein of GNNV) to the C-terminus of outer membrane lipoprotein A (lpp-Mx) and to the N-terminus of a bacterial autotransporter adhesin (Mx-AIDA); these constructs were expressed on the surfaces of Escherichia coli BL21 (BL21/lpp-Mx and BL21/Mx-AIDA). We examined bacterial surface expression capacity and GNNV binding activity through enzyme-linked immunosorbent assay; we also evaluated the GNNV removal efficacy of the bacteria and viral cytotoxicity after bacterial adsorption treatment. Although both constructs were successfully expressed, only BL21/lpp-Mx exhibited GNNV binding activity; BL21/lpp-Mx cells removed GNNV and protected GF-1 cells from GNNV infection more efficiently. Moreover, salinity affected the GNNV removal efficacy of BL21/lpp-Mx. Thus, our GNNV-binding bacterium is an efficient microparticle for removing GNNV from 10‰ brackish water and for preventing GNNV infection in groupers.

CA2 혼입 페이스트의 부식저항성에 관한 연구 (A Study on Corrosion Resistance of CA2-Mixed Paste)

  • Deterioration in durability of structures due to the steel corrosion is difficult to determine whether or not corrosion is initiated and how much propagated, and moreover, repair and maintenance are not easy to deal with. Therefore, preventive treatments can be the best option to avoid the deterioration. Various methods for preventing corrosion of steel, such as electrochemical treatments, anti-corrosion agents and steel surface coatings, are being developed, but economic and environmental aspects make it difficult to apply them to in-situ field. Thus, the purpose of this study was to improve corrosion resistance by using CA-based clinker that are relatively simple and expected to be economically profitable Existing CA-based clinkers had problems such as flash setting and low strength development during the initial hydration process, but in order to solve this problem, CA clinker with low initial reactivity were used as binder in this study. The cement paste used in the experiments was replaced with CA2 clinker for 0%, 10%, 20%, and 30% in OPC. And the mixture used in the chloride binding test for the extraction of water-soluble chloride was intermixed with Cl- 0.5%, 1%, 2%, and 3% by weight of binder content. To evaluate characteristic of hydration heat evolution, calorimetry analysis was performed and simultaneously chloride binding capacity and acid neutralization capacity were carried out. The identification of hydration products with curing ages was verified by X-ray diffraction analysis. The free chloride extraction test showed that the chlorine ion holding ability improved in order OC 10 > OC 30 > OC 20 > OC 0 and the pH drop resistance test showed that the resistance capability in pH 12 was OC 0 > OA 10 > OA 20 > OA 30. The XRD analyses showed that AFm phase, which can affect the ability to hold chlorine ions, tended to increase when CA2 was mixed, and that in pH12 the content of calcium hydroxide (Ca(OH)2), which indicates pH-low resistance, decreased as CA2 was mixed

Physicochemical Properties of Starches Isolated from New Potato Cultivars in Korea

  • Physicochemical properties of starches isolated from 3 new potato cultivars developed by Potato Valley Ltd. were investigated and compared to those of starch isolated from 'Superior' being distributed prominently in Korea. Significant differences were observed in physicochemical properties such as granule size, amylose content, phosphorus content, water binding capacity, swelling power, solubility, and in vitro digestibility of starches from different potato cultivars. Thermal properties were evaluated using differential scanning calorimetry (DSC), and onset gelatinization temperatire ($T_o$), peak temperature ($T_p$), and enthalpies of gelatinization (${\triangle}H$) of different potato cultivars ranged as $58.0{\pm}0.3-61.7{\pm}0.4^{\circ}C,\;63.7{\pm}0.2-$ $66.5{\pm}0.0^{\circ}C$, and $15.6{\pm}0.5-17.0{\pm}0.3$ J/g, respectively. Pasting properties were evaluated using a rapid visco analyzer (RVA), and pasting temperature, peak viscosity, and final viscosity of different potato cultivars ranged as $65.0{\pm}0.1-68.9{\pm}0.1^{\circ}C$, $8,163.7{\pm}196.3-9,035.7{\pm}6.4$ cp, and $4,397.7{\pm}166.7-7,025.0{\pm}271.3$ cp, respectively. Especially, 'Gogu valley' starch showed the highest values in the amylose and phosphorus content among tested potato cultivars and higher water binding capacity, swelling power, and solubility than those of other tested starches. And it also showed high pasting temperature, peak viscosity, trough viscosity, and final viscosity as compared to other tested starches.

pH, 온도, 단백질함량에 따른 돼지혈장 단백질의 보수력 변화 (Effects of pH, Temperature, and Protein Content on Water Binding Capacity of Hog Plasma Protein)

  • 도축장에서는 폐기되는 돼지 혈액으로부터 혈장을 분리하여, pH, 온도, 단백질함량에 따른 혈장 단백질 보수력의 변화를 조사하였다. 돼지 혈액으로부터 혈장분리는 1400g-force에서 가장 좋았다. 단백질 농도가 5%인 혈장액을 $85^{\circ}C$에서 30분간 가열하였을 때 pH가 증가함에 따라 혈장단백질보수력은 급격히 증가하다가 pH 7 이후에는 완만한 증가를 나타냈다. 단백질 농도가 5%이고 pH 7인 혈장액에서의 보수력은 gel화 온도가 높을수록 짧은 시간 내에 높은 보수력을 나타냈으며 가열 초기에 급격히 증가하다가 일정 가열 시간 이후에는 큰 변화를 나타내지 않았다. pH가 7인 혈장액을 $85^{\circ}C$에서 30분간 가열하였을 때 혈장 단백질의 농도가 증가함에 따라 단위 단백질 무게당 보수력은 감소하였다.
