Quality Characteristics of Chicken Breast Surimi as Affected by Water Washing Time and pH Adjustment

  • This study was carried out to compare the quality properties of chicken breast surimi manufactured by four different procedures/methods. Surimi was made from chicken breast by washing two (T1) or four times (T2) with water as well as by pH adjustments at 3.0 (T3) or 11.0 (T4). The contents of moisture and crude fat were significantly higher in the surimi manufactured from pH-adjusted material than after washing. Again, collagen and yield were significantly higher in chicken breast surimi manufactured from washed than pH-adjusted samples, whereas crude protein was higher in the pH-adjusted than washed surimi samples. There was no significant difference in myofibrillar protein content among the surimi manufactured after different washing times and differences following pH adjustments were found. T4 showed highest myofibrillar protein content rating among the surimi samples. All physical characteristics were higher in pH-adjusted chicken breast surimi than in T1 and T2 washed surimi samples. The pH-adjusted surimi had higher hardness, gumminess and chewiness than washed surimi samples (p<0.05). The chicken breast surimi made by pH adjustments had higher lightness (L*) than when made by washing times, whereas pH 3.0-adjusted surimi samples had lower whiteness (W) then the other surimi samples. Myoglobin content was significantly higher in the surimi manufactured from pH-adjusted chicken breast samples.

사과 중 Diazinon, Fenitrothion, EPN의 잔류량과 저장, 각피 및 세척에 의한 잔류농약 제거에 관한 연구 (Studies on the Residues of Diazinon, Fenitrothion, and EPN in apple and removal of Pesticide Residues by Storing, Peeling and Washing)

  • Organophosphorus pesticide residues such as Diazinon, Fenitrothion and EPN in apple and effect of storage peeling and washing on removal of the residues from apple soaked in 3 kinds of pesticides solutions for 20 seconds were studed with gas chromatography-nitrogen phosphorus detecter(GC-NPD). Result obtained are as follows : 1) Average concentrations of DiaEinon, Fenitrothion, and EPN detected in apple of control group were 0.022, 0.007 and 0.008 ppm respectively. 2) Decreasing rates of Diazinon on 7 th, 14 th, 21 st, 28 th, and 35 th day after soaking apple on the pesticide solution were 41.3% , 68.6% , 87.0%, 96.9% and 99.5% respectively. In case of Fenitrothion were 46.9%, 66.3%, 84.9%, 93.2% and 97.3% and EPN were 45.7 %, 76.2%, 85.4%, 95.7% and 99.4% respectively. 3) The removal rate of Diazinon, Fenitrothion and EPN by washing with water alone were 93.7%, 70.6% and 51.5% respectively, and 97.1% , 78.4% ailed 76.5% by washing with 0.2% detergent solution respectively. The results obtained in this study have show that 3 kinds of pesticides detected in app- les were below the Korean standard for residual pesticides and pesticides contaminated in apples were decreased in considerable degree by washing with water and 2% detergent solution and removed almost completely after storage for 35 days (5 weeks). Therefore, it would be concluded that washing and peeling will be the most effective way for safely because more than 90% of pesticide exist in peel.

  • 원자력 발전소에서 증기발생기를 장기간 운영할 경우 슬러지가 증기발생기 내부에 축적되어 좋지 못한 영향을 미치게 된다. 본 논문은 이러한 슬러지를 효율적으로 제거할 수 있는 슬러지 세척장치의 설계 및 그 제어방법에 관한 것이다. 본 논문에서는 슬러지 세척장치 설계를 위해, 첫째, 수학적 모델 적용과 랩테스트를 통해 고압수 분사를 위한 노즐을 설계하고, 둘째, 슬러지 세척장치 구동에 필요한 성능 파라미터에 대한 수학적 이론을 정립한다. 셋째, 정립된 성능파라미터에 기반하여 세척장치의 물리적 구조체를 설계하고, 마지막으로 장치의 구동방법을 제시한다. 본 논문에서 제시하는 슬러지 세척장치는 증기발생기의 벽면을 따라 이동하면서 전열관 배열 틈사이에 대응하여 고압수를 분사하는 방식으로 슬러지를 제거함으로써 상대적으로 슬러지가 다량 형성되는 내측 바닥면이 매우 효과적으로 세척될 수 있다.

수질 배출기준 및 세제 안전기준에 적합한 산업용 알칼리 세탁세제의 세척성과 세탁조건 연구 (A Study on the Washability and Washing Conditions of the Industrial Alkaline Laundry Detergent Suitable for Water Discharge Standards and Detergent Regulations)

  • Laundry industry has traditionally been considered an industry that generates large amounts of wastewater and Volatile Organic Compounds(VOCs). This is still the case until now. Household laundry detergents are produced and distributed within the safety regulations on the amount of harmful substances detected. While industrial laundry detergents are often distributed without safety regulations, and even laundry workers manufacture and use them on their own. This contaminates water and air and also threatens the safety of workers. This study is a basic study for distributing eco-friendly detergents(EFD-A) developed through previous studies to the laundry industry. Safety, washability and wastewater quality of EFD-A are evaluated. Three existing commercial detergents(PD1, PD2, LD4) are also evaluated to compare with EFD-A. The safety of detergents is confirmed by the content of optical brightener, VOCs, and arsenic. Washability is evaluated by the difference in reflectance of washed and unwashed artificial soiled fabrics according to detergent concentration, washing temperature, and washing time. TOC is used as the index of assessing the wastewater quality. The results are as follows; EFD-A doesn't contain the optical brighteners, VOCs, and arsenic. The optimal washing conditions for EFD-A are 3 g/L concentration, 40 ℃ washing temperature, and 30 min washing time. The soil removal efficiency is about 71 %, which was similar to or somewhat superior to that of PD1, PD2, and LD4. TOC is 63.5 %, which is about 15 % lower than the discharge limit. Through this study, the developed detergent EFD-A can be used as a safe and eco-friendly detergent for the human body and the environment.

열화된 인쇄지의 보존처리방안 연구 (Study of Conservational Methods for the Old Printing Papers)

  • Printing papers published in between 1950's and 1990's were treated with three methods such as distilled water washing, $CaCO_3$ solution washing and methyl cellulose solution coating for improving their conservational properties. Accelerated aging with $80^{\circ}C$ and 80% RH for 14 days was applied to the testing papers. Results showed that distilled water and $CaCO_3$ washing kept increased pH even after accelerated aging, but did not improve folding endurances for 1950's-60's papers. Methyl cellulose treatment did not increased pH of the old papers, but increased folding endurances remarkably for 1950's-60's papers even after accelerated aging. It suggests that methyl cellulose treatment after $CaCO_3$ washing should give improvements both in pH and folding endurance.

  • The purpose of this study is to find out the washing methods specified on the care labels of vapor-permeable & water-proofed fabrics and to investigate the consumers' real washing methods in their home and their cognition. In this study, the condition of care labels on 35 products was investigated and consumers' washing methods and cognition were surveyed. The subjects were consisted of majoring clothing textiles' female, female student attending in other major and married-women. Data were analyzed SPSS 10.0. The major results were as follows : 1. The care labels of Vapor-permeable & waterproofed fabric products used in this survey followed the rule of KS K that is stated that care labels must include over 3 instructions. It was the most popular type of care labels to organize with washing methods, bleaching methods, weaving methods, drying methods, ironing methods. 2. Most consumers have vapor-permeable & waterproofed fabric products, but their consciousness of this fabric is low. The rate of consumer confirming the care labels was 76.6% but 67.8% of them answered they take care of textile products with their experiences. 3. Consumers' understanding of care instructions on care labels was investigated that most consumers understand domestic care instruction, but they didn't know almost all international one.

  • 본 고는 토양세척-폐수처리-처리수재활용의 친환경공정순환시스템에 대한 이론적인 조사와 국내외 실제적용사례를 조사하였다. 광산폐기물에 함유된 이동성과 용해성이 큰 비소 및 독성 중금속들은 주변 토양 및 지하수를 오염시킬 수 있기 때문에 오염토양은 적절하게 처리되어야 한다. 국내외에서 비소와 중금속 오염토양에 시도되었거나 성공한 기술은 반응벽체(reactive barriers) 및 복토(encapsulation), 고형화(solidification)/안정화(stabilization), 토양세척(soil washing), 식물정화기법(phytoremediation) 등이 있는데, 이 중 본고는 용액을 사용하여 토양으로부터 오염물질들을 제거하는 물리화학적인 기술인 토양세척에 대해 다루었다. 토양세척의 한가지 큰 문제점은 처리 후에 폐수가 대량으로 발생한다는 것이고, 이 폐수에는 세척용액의 리간드와 결합한 오염물질들이 함유되어 있기 때문에 추가적인 처리공정이 필요하다. 그 처리기술에는 오염물질과 세척용액의 특성에 따라 다양한 물리, 화학, 생물학적 처리가 있는데, 그 중에서 화학적 처리기술인 침전/공동침전법, 멤브레인막여과법, 흡착처리법, 이온교환처리법, 동전기처리법에 대해서 본문에 자세히 언급하였다. 마지막으로 각각의 처리법에 따라 실제 토양세척폐수처리 및 재활용에 관한 최근 국내외 연구사례 대해 소개하였고, 이러한 기술들을 바탕으로 토양세척폐수발생문제를 해결하고 수자원절감을 통한 공정의 전반적인 비용효과를 높일 수 있을 것이다.

전기분해수 세척방법을 이용한 신선초 녹즙의 저장 특성 (Storage Attribute of Angelica keiskei Juice Treated with Various Electrolyzed Water)

  • 본 연구에서는 증류수 및 전기분해수인 차아염소산나트륨수와 미산성차아염소산수를 이용한 신선초 세척방법이 녹즙의 저장 중의 일반세균수, pH, 색도, polyphenol 함량, 전자공여능 및 총 항산화력 변화에 미치는 영향을 분석하였다. 녹즙의 저장기간 중 일반세균수는 증류수 세척 방법에서 저장 24시간 만에 식품공전에서 기준치로 제시한 $10^5$ CFU/mL보다 높은 균수를 보인 반면 전기분해수 세척방법에서 저장 4일이 지나도 $10^5$ CFU/mL 이하의 균수가 유지됨을 확인할 수 있었다. 그리고 저장기간 동안 녹즙의 pH 및 색도는 모두 유의적인 차이를 나타내지 않고 일정범위에서 유지되었으며, 녹즙의 항산화성은 polyphenol 함량, 전자공여능 및 총 항산화력 모두 세척방법 간 유사한 결과를 나타내었고, 저장일수가 증가할수록 감소하는 유사한 경향을 나타내어 녹즙의 저장 중 전기분해수에 의한 영향을 나타내지 않았다. 이는 신선초에 대한 전기분해수 세척 방법이 녹즙의 미생물학적 위험은 감소시키면서 품질에는 영향을 나타내지 않는 결과라고 생각되며, 이는 전기분해수 세척 방법이 녹즙의 품질 및 저장성 향상에 기여할 것으로 생각된다.

다양한 채소류에서 마이크로버블 및 전기분해수의 세척 살균 효과 (Sterilization Efficacy of Washing Method Using Based on Microbubbles and Electrolyzed Water on Various Vegetables)

  • 본 연구에서는 채소류의 표면에 인위적으로 균을 오염시킨 후 수도수, 마이크로버블수, 전기분해수 및 마이크로버블-전기분해수 세척에 의한 미생물 살균 효과를 알아보았다. 우선 수도수와 마이크로버블수 세척에 의한 살균 효과를 비교한 결과, 수도수와 마이크로 버블수 사이에 살균력 차이는 미세하게 마이크로버블수가 높게 나타났다. 유효 염소 농도별 전기분해수와 마이크로버블-전기분해수 세척에 의한 살균 효과를 비교한 결과, 유효염소 농도가 100 mg/L인 전기분해수는 5분간 세척 후 채소류의 종류에 따라 미생물이 잔존하였지만, 100 mg/L인 마이크로버블-전기분해수는 5분간 세척 후 모든 채소류에서 균이 검출되지 않았고, 200 mg/L인 마이크로버블-전기분해수에서는 1분간 세척 후에 모든 채소류에 미생물이 검출되지 않았다. 따라서 각 유효 염소 농도별 마이크로버블-전기분해수가 전기분해수에 비해 짧은 세척시간에 효과적인 살균이 된 것으로 나타났다. 종합적으로 마이크로버블-전기분해수 세척 기술이 미생물학적 위험은 감소시키면서 표면 살균 효과가 낮은 채소류와 같은 신선편의 식품에 적합한 살균 기술로 생각된다.

한약수치에 관한 연구(제 8보): 오수유 탕포법 (Studies on the Processing of Crude Drugs(VIII): The Changes of Physico-chemical Parameter and Biological Activities by Processing of Evodia Fruit)

  • We have studied the physico-chemical change and pharmacological transformation of traditional herbal medicines with processing. Evodia fruit (EF) has processed for the purpose of detoxification and reduction of its bitter taste. There are various methods of processing EF in Oriental medicinal reference. Among them, we processed EF according to the method of Sang-han theory, the most famous medicinal reference. We processed EF with washing in hot water, and then dried. Processed EFs(PEFs) were prepared according to the above procedure through repetition of 1,3,5 and 7 times respectively. The contents of weight loss, water extract, diluted ethanol extract, ether extract, total ash, acid insoluble ash, alkaloids and limonin in non-processed EF (NPEF) and PEFs were examined. The weight loss, and contents of water extract and dilute ethanol extract in PEF showed decrease in proportion to increase of washing time, while the contents of ether extract, total ash and acid insoluble ash showed little change as compared with those of NPEF. And the content of evodiamine and rutaecarpine was not changed distinctly. However, the content of limonin decreased in the final processed material in proportion to increase of washing times with hot water. And the intense of bitter taste in PEF was also reduced. These results were ascribed to the flowing-out of the water-soluble portion. The biological activities of NPEF and PEF were also investigated. In the test of DPPH scavenging effect, xanthine oxidase inhibition effect and TBA-Rs effect, PEF was more effective than NPEF in vitro. Also, both NPEF and PEF showed potent analgesic and anti-inflammatory effects against in mice. Especially, PEF by 3 times washing with hot water was more effective than other PEFs. From these results, it is considered that PEF should be prepared by 3 times washing with hot water.
