A Study on the Volatile Flavor Components in Kimchis (김치의 휘발성(揮發性) 향미성분(香味成分)에 관(關)한 연구(硏究))

  • The volatile flavor components of Kimchis were identified and the volatiles of fermented Kimchis (1.29% NaCl and 4.89 NaCl) were compared with those of raw Kimchi (1.29% NaCl). After the existence of carbonyls and sulfur compounds were confirmed by precipitation method, vacuum distillation was carried out to collect the volatiles of Kimchis in traps submerged in ice+salt, dryice-acetone and liquid N, respectively. The volatile flavor components were identified by GLC. The results were; 1. 17 volatile flavor components of Kimchis were identified by comparison of retention time with those of known compounds and acetaldehyde, acetone, ethanol, ethyl sulfide were positively identified by m.p., IR, UV, TLC. etc. 2. Ethanol was the most abundant volatiles of Kimchis and the content was much higher in fermented low salt Kimchi than in unfermented low salt Kimchi. 3. On the contrary, acetaldehyde and volatile sulfur compounds were reduced in fermented Kimchis, especially in fermented low salt Kimchi.

Volatile Components of Flower and Seed of Safflower (홍화꽃 및 홍화씨의 휘발성성분)

  • Volatile components in flower and seed of safflower were identified. Volatile flavor compounds of safflower (Carthamus tinctorius L.) was extracted by simultaneous steam distillation and extraction method using Likens and Nickerson's extraction apparatus. Concentrated extract was analyzed and identified by gas chromatography and GC-mass spectrometry. Main volatile components in flower were terpene compounds, including p-cymene, limonene, ${\alpha}-phellandrene$, ${\gamma}-terpinene$, camphor, 4-terpineol, selinene, ${\beta}-caryophyllene$, torreyol, ${\beta}-eudesmol$, and 10 acids including 3-methylbutanoic acid, 2-methylbutanoic acid, and acids of $C_{2},\;C_{5}-C_{11}$. Main volatile components in seed and safflower were 20 aldehydes including hexanal (7.17%), (E)-2-heptenal (1.10%), (E,Z)-2,4-decadienal and (E,E)-2,4-decadienal.

Studies on the Volatile Flavor Components and Biochemical Characterizations of Artemisia princeps and A argyi (강화쑥의 생화학적 특성 및 휘발성 향기성분에 관한 연구)

  • This study has attempted to examine the effect of Artemisia princeps and A. argyi on liver function-related enzymes in rats with $CCl_4$ adminisration. The activities of serum aspartate aminotransferase(AST), alanine aminotransferase(ALT) and alkaline phosphatase(ALP) from A. princeps were decreased by 33, 23 and $19\%$, respectively, compared to control. The activities of AST, ALT and ALP from A. argyi were decreased by 37, 33 and $26\%$, respectively. Total phenol contents were 10.2 mg/mL and 4.7 mg/mL in A. princeps, and A. argyi, respectively. Also, flavonoid contents were $6.1\;mg\%\;and\;3.6\;mg\%$ in A. princeps, and A. ar효i, respectively. Ethanol extract from A. argyi showed higher electron donating ability toward DPPH than A. princeps. A total of 31 volatile components(3 hydrocarbons, 10 terpenes, 5 carbonyls, 8 alcohols and 5 esters) were indentified in A. princeps, and A. argyi. The major volatile components of A. princeps were $\delta$-3-carene($2.2\%$) in terpenes and nerolidol($0.9\%$) in alcohols. The major volatile components of A. argyi were eugenol($1.4\%$) in alcohols and thyl pentadecanoate($1.1\%$) in esters.

Changes of Volatile Compounds in Flue-cured Leaf Tobacco during Aging (황색종 잎담배의 후숙과정 중 정유성분의 변화)

  • This study was carried out to investigate the changes of essential oils in flue-cured leaf tobacco during aging for 21 months. The threshed leaf tobacco(BlO) produced in 2002 crop year was aged for 21 months in the warehouse of Oc-Cheon Leaf Tobacco Processing Factory. The leaf tobacco were sampled at three month intervals for analysis of volatile compounds. Volatile compounds were identified by GC/MS and comparison of gas chromatographic retention time with those of the authentic standard. The total of 75 compounds from the steam volatile concentrate of the flue-cured leaf tobacco were identified; they were 15 hydrocarbons, 12 alcohols, 3 aldehydes, 18 ketones, 7 esters, 10 acids, 3 phenols, 4 furans, 2 pyrrols and 1 pyridine. The major components of essential oil were neophytadiene, solanone, megastigmatrienone and phytol. After a aging period of 21 months, most of volatile compounds showed a gradual increasing tendency.

Volatile Flavor Components as a Function of Electrical Stimulation and Chiller Aging for m. longissimus and biceps femoris of Hanwoo Beef

  • The aim of the study was to evaluate the effect of an early post-mortem low voltage electrical stimulation (ES) to localized part of carcasses [m. longissimus lumborum (LL) and m. biceps femoris (BF)] and determined the tenderness and flavor compounds of Hanwoo steers (n=16). Carcasses were stimulated within 30 min post-mortem for 60s using 60 volts and muscles aged 2 and 14 d. Degradation of Troponin-T were accelerated by ES and degraded little faster in BF muscle than LL. Level of free amino acid content of stimulated and aged muscles was significantly (p<0.05) greater than control for both muscles. Totally 63 volatile compounds were identified by using SPME-GC. The ES treatment significantly (p<0.05) affected the level of 20 volatile compounds of LL as well 15 volatiles in BF muscle along with total amounts of ketones, sulfur containing, pyrazines and furans. Low voltage ES could be applied to reduce the aging time and improve volatile flavor development by increasing important desirable volatile compounds such as 2-methylpyrazine, 2,5-dimethylpyrazines and 2-acetylthiazole etc. due to released free amino acids from protein degradation.

  • Volatile components of pinenut were identified. Pinenut was extracted by simultaneous distillation and extraction method after Soxhlet extraction. The odor profile of the extract was very similar to that of pinenut. This extract was then fractionated into four fractions by Preparative TLC. These all fractions were analyzed by a combination of glass capillary gas chromatography (FTD, FID capillary GC) and mass spectrometry. One hundred and nine components, including 26 hydrocarbons,17 esters,16 aldehydes,12 ketones,31 alcohols, 11 bases, 2 acids and 3 miscellaneous components were identified.

  • This study was investigated to compare the volatile flavor components in fuji, tsugaru, hongro and jonathan (Malus pumila M.). In the results of analyzing the volatie components of four varieties apples with GC-FID and GC/MS, 100, 68, 85 and 94 volatiles were identified in fuji, tsugaru, hongro and jonathan apples, respectively. Hexanal, butanol, (E)-2-hexenal, hexanol,3-methy-1-butanol, ethy1actate, ethyl butyrate, 2-methybutyl acetate and hexy1 acetate were major flavor components in the four varieties of apple, though there were several differences in composition of colatiles.

STUDIES ON THE VOLATILE AROMA COMPONENTS OF KOREAN BURLEY TOBACCO (한국산 버어리잎담배의 휘발성 향기 성분 연구)

  • Volatile aroma components were extracted from Korean burley tobacco (grades: heavy-1, heavy-5, thin-1, and thin-5) by using a vacuum steam distillation apparatus. Individual flavor components were identified by combination of Carbowax20M (used silica capillary gas chromatography and mass spectrometry. Out of the identified components, neophytadiene (43.6ppm), megastigna-4,6,8-trien-3-one (4isomers) (3.32-23.5 1ppm), ethanol (1.8ppm), and ethylacetate (4.7ppm) were contained less in burley heavy grade-5 tobacco than in heavy grade 1 ; neophytadiene (43.7pp), megastigma-4,6,8-triers-3-one (4 isomers) (1.09-3.03ppm), ethylacetate (7.9ppm), and ethanol (8.4ppm), were less in burley thin grade 5 tobacco than in thin grade 1 : nicotin (75.79ppm), and solanone (8.5ppm) were less in burley heavy grade 1 tobacco than in burley heavy grade 5: solanone (5.76ppm), geranylacetone (9.02ppm), phenylacetaldehyde (1.12ppm), $\beta$-phenylethylalcohol (1.93ppm), and dihydroactinidiolide (1.39ppm) were less in burley thin grade 1 than in burley thin grade 5. On the other hand, iso-valeraldehyde, n-valeraldehyde, dimethylpyrazine, and propionic acid were not identified in Korean burley tobacco, but in American burley tobacco.

  • This study was carried out to investigate the effect of storage period on flavor components of Korean kiwifruits (Actinidia deliciosa Planch.) stored at $20^{\circ}C$. The major volatile components of Korean kiwifruits analyzed by GC and GC-MS were pentanal, methyl butanoate, ethyl pentanoate, heptanone, (E)-2-hexenal, ethyl hexanoate, 1-hexanol, cyclohexanol, butyl hexanoate, linalool oxide, linalool, butyl heptanoate, methyl benzoate, ethyl benzoate. Among them, (E)-2-hexenal was the major component in premature fruit but on further ripening ethyl butanoate began to dominate the component profile.

Major Odor Components of Raw Kimchi Materials and Changes in Odor Components and Sensory Properties of Kimchi During Ripening (김치재료의 주요한 냄새성분과 김치숙성중의 냄새성분 및 관능적특성의 변화)

  • Changes in major volatile odor components (VOC) and sensory properties of kimchi during ripening for 4 days were investigated, and major VOCs of the raw materials of kimchi were also analyzed. Seven of eight major VOCs of kimchi originated mainly from garlic, while one originated from ginger. During 4 days of kimchi ripening, the amount of ethanol, which was substantially higher than that of other VOCs, increased continuously but decreased slightly on the fourth day. The amount of diallyl disulfide decreased during ripening, while that of allyl mercaptan decreased on the first day and increased slightly thereafter. The amount of methyl allyl sulfide, diallyl sulfide, and methyl trisulfide increased continuously during ripening, while that of dimethyl disulfide and methyl propyl disulfide increased until the second day and decreased thereafter. Scores of overall acceptability, taste, and odor for kimchi ripened for 2 days were significantly higher than those of other samples (p<0.05). The correlation between scores of overall acceptability and the amount of dimethyl disulfide or methyl propyl disulfide was higher than that of other VOCs.
