Study on the Establishment of Nutrient Requirements for Infant Formular (국내 조제유의 영양성분 규격기준 설정 방안)

  • This study was conducted to evaluate the nutrition quality of the commercial infant formulas and to seek the solution to the establishment of the standard of nutrient requirements for infant formula in Korea. Nutrition informations were obtained from the labels of nineteen commercial infant formulas manufactured by 3 different companies, and the actual amounts of some nutrients were analyzed and compared to the labeled amounts. In addition, the nutrient composition of the commercial infant formulas was compared to the composition of breast milk, RDA for infants, and Codex standard for infant formula. The kind of minerals, vitamins and special components added to the commercial infant formulas were the major differences among 3 manufacturers. For some nutrients, the analyzed amounts were lower than the labeled amounts. In addition when different batches of the same kind of infant formula were analyzed, the large variations in the amounts of certain nutrients were noted. These data suggest that the nutrition labeling informations need to be validated, and nutrients added to the formulas are to be homogenized thoroughly. In order to solve these problems, therefore, like other countries, we need to establish the standard of nutrient requirements for infant formulas. Considering the available data on breast milk composition, RDA for infants and coordination with the international standard, we suggest the adoption of the Codex standard for infant formula may be the best way to manage the nutrition quality of commercial infant formulas at the present time.

The Content Analysis of Amino Acids Including GABA of Chlorella protothecoides under Mixtrophic Culture (혼합영양 배양에서 Chlorella protothecoides의 GABA를 포함한 아미노산 함량 분석)

  • Chlorella is quantitatively and qualitatively high in protein with balanced essential amino acid profiles, vitamins and minerals. ${\gamma}-Aminobutyric$ acid (GABA) is broadly distributed in nature and fulfills multi-physiological functions including effect such as a health-promoting functional compound. To improve the GABA production, Chlorella protothecoides were grown through the modified mixtrophic culture medium containing 2L of sterilized bristol medium with 0.01% urea and 4.0% glucose in a 5L fermenter. The results showed that nineteen kinds of amino acid including GABA at C. protothecoides sample were analyzed using high performance liquid chromatography (HPLC). Glutamic acid in total concentration (%) of amino acid is the most abundant amino acid (33.10%), followed by alanine (20.48%) and GABA (17.48%). Three amino acids including GABA were responsible for more than 70% total concentration in C. protothecoides sample including eight essential and nine non-essential amino acids: aspartic acid, asparagine, serine, glutamine, histidine, glycine, threonine, arginine, tyrosine, valine, methionine, tryptophan, phenylalanine, isoleucine, leucine, lysine. As a result of this experiment, it is expected that Chlorella will be developed to a critical product having high value as, GABA, functional food materials.

A Study on Dietary Behavior of University Students Majoring in Judo (유도를 전공으로 하는 대학생들의 식생활 행동에 관한 조사연구)

  • This study was undertaken to investigate dietary status, food habits, and nutritional knowledge of university students majoring in judo (n=239) and to evaluate the effect of dietary behavior on their athletic activities. Mean daily dietary intakes (3,854.0 kcal) were similar to mean daily energy consumptions (3,975.5 kcal). Average daily intakes of most vitamins and minerals were higher than Korean Recommended Dietary Allowances except for the intake of vitamin A. Self-confidence on judo affected dietary behavior of the subjects: Subjects who had more self-confidence on judo showed more interest in good nutrition and concerned more about foods which could promote their athletic activities. Many side effects were manifested after sudden weight control for judo competition during school days. Therefore, it is suggested that good education on nutrition is necessary not only for athletic students, but also for coaches and trainers of the students. Ten weeks of education on nutrition significantly improved both food habits and nutritional knowledge of the subjects. Food habits were positively correlated with self-confidence on judo. Therefore, it is suggested that improvement of food habits through good education on nutrition would be helpful to improve athletic activities of the students.

  • Wheatgrass is a type of young grass that contains a lot of vitamins, minerals, and protein even compared to grain products produced from its mature cereal plants. In the context of product development and increasing product sales value, a study on the use of wheatgrass extract as an ingredient of fermented beverage was conducted. In this study wheatgrass used was self-grown using a tray in the Laboratory. The variation of wheatgrass extracts used was obtained from the twin-gear type extractor, slow-squeeze type extractor, and chopped wheatgrass. In the extraction process, the performances of the process: density, extract yield, processing capacity, and the rate of production, were analyzed. For another analysis, the physicochemical properties both of wheatgrass extracts and fermented beverages were also analyzed. The physicochemical properties analyzed included TSS, pH, acidity, and others content. The results of extraction performance analysis and physicochemical characteristics of wheatgrass extract planted at 10-20℃ based on this research gave the best results using the twin-gear extractor. The twin-gear type of extractor used in this study. All of these results were also in accordance with the statistical analysis conducted in this study.

Effect of cultivars on hairy root induction and glucosinolate biosynthesis in a hairy root culture of Kimchi cabbage (Brassica rapa L. ssp. Pekinensis

  • Cruciferous vegetables are rich in biologically active compounds such as glucosinolates and have various health benefits. Among these vegetables, Kimchi cabbage (Brassica rapa L. ssp. Pekinensis) is one of the most popular leafy vegetables due to the presence of the highest amounts of numerous vital phytonutrients, minerals, vitamins, and antioxidants. This study aims to investigate the effects of six cultivars (Chundong 102, Asia No Rang Mini, Hwimori Gold, Asia Seoul, Wol Dong Chun Chae, and Asia Bbu Ri) on hairy root induction and glucosinolate biosynthesis in the hairy root cultures of Kimchi cabbage. Seven different glucosinolates, in this case sinigrin, gluconapin, glucoerucin, glucobrassicin, 4-methoxyglucobrassicin, gluconasturtiin, and neoglucobrassicin, were detected in the hairy root cultures of Kimchi cabbage. Among the different cultivars, Asia No Rang Mini was the most promising candidate for hairy root stimulation, as it achieved the highest values for the growth rate, root number, root length, transformation efficiency, and total glucosinolate content. Overall, the Asia No Rang Mini cultivar of Kimchi cabbage performed best as a promising cultivar hairy root culture for glucosinolate production.

Analyses of Major Nutritional Components of Gang-Hwa Getbul Eel (강화갯벌장어의 주요 영양성분 분석에 관한 연구)

  • Gang-Hwa Getbul eel is a well known well-being food in the Korean food industry. In this study it was undertaken to analyze crude compositions, minerals, and vitamins of Gang-Hwa Getbul eel. As a result of initial analysis, the ranges of moisture, crude protein, crude fat, and crude ash were $56.6{\pm}0.0$, $17.3{\pm}0.4$, $14.4{\pm}2.9$, and $1.2{\pm}0.1%$, respectively. Regarding mineral compositions, the concentration ranges of Ca, Fe, Mg, P, K and Na were $413.8{\pm}91.1$, $0.8{\pm}0.1$, $29.5{\pm}7.8$, $361.9{\pm}118.4$, $116.4{\pm}43.3$, and $131.8{\pm}42.4$ mg/100 g, respectively. Finally vitamin A was found being present at $2571.3{\pm}194.6$ I.U/100 g.

  • The nutritive value of foods is the most essential and fundamental data in food administration, nutrition surveys, dietary clinic, and in the conduct of nutritional education. The nutritive values of 283 different kinds of selected Korean foods were investigated and reported in our previous reports already. In this report, another 21 kinds of Korean foods are studied for their proximate components, minerals and vitamins. The foods were sampled at random from the markets or from cultivating fields. The methods of sampling and of chemical analysis were same as employed in the previous reports. The results are shown in the table. The nutritive value of the rest of Korean foods will be studied continuously.

A Study on School Feeding (학교급식에 관한 연구)

  • The purpose of this study is to present the basic rule on the planning standard menu for the improvement of nutritional school lunch program through analysis of their food habits and daily energy expenditure. 1. The purpose of the school lunch program is to get on adequate diet in quality and quantity through right food habits and nutrition education for the most active growing children. 2. At present time in Korea, school lunch program has not been carried out nutritionaly so that it should be improved immediately. 3. The ratio of the daily diet should be given to the students breakfast 1. lunch 1.1, dinner 1.5, through analysis of their daily energy expenditure by their activity. 4. The result of the analysis of for food habits shows that children like foods which were used at home commonly and dislike foods not commonly used. 5. The basic rule on the planning school lunch menu is presented as follows. 1) The ratio of the aily diet should be given as breakfast 1, lunch 1.1. dinner 1.5, for calories, and minerals and vitamins should be given 1/3 to 2/5 of a daily requirements. 2) It should be selected foods which most children like foods when plan menu for school lunch. 3) Green, yellow vegetables should be given over 50 gm. 4) Milk should be given 180cc.

  • Nutritional assessment and support are often overlooked in the critically ill due to other urgent priorities. Unlike oxygenation, organ dysfunction, infection, or consciousness, there is no consensus of indicators. Making it difficult to evaluate the effectiveness of an intervention. Nevertheless, appropriate nutritional support in the critically ill has been associated with less morbidity and lower mortality. But, nutritional support has been considered an adjunct, for body weight maintenance and to help patients during the inflammatory phase of illness. Thus, it has been assigned a lower priority, compared to mechanical ventilation or hemodynamic stability. Recent findings have shown that nutritional support may prevent cellular injury due to oxidative stress and help strengthen the immune response. Large-scale randomized trials and clinical guidelines have shown a shift from nutritional support to nutritional therapy, with an emphasis on the importance of protein, minerals, vitamins, and trace elements. Nutrition is also important in neurocritically ill patients. Since there are few studies or recommendations with regard to the neurocritical population, the general recommendations for nutritional support should be applied.

The Anti-inflammatory Mechanism of Blueberry is through Suppression of NF-kB/Caspase-1 Activation in LPS-induced RAW264.7 Cells

  • Blueberry (BB), fruit of Vacciniumi, has been hailed as an antioxidant superfood. BB is a rich source of vitamins, minerals, flavonoids, phenolic acids and known to have a variety of pharmacological actions. The purpose of this work is to clarify the anti-inflammatory mechanism of BB in lipopolysaccharide (LPS)-activated RAW264.7 macrophage. We explored the effects of BB on the production of inflammatory cytokines, prostaglandin E2 (PGE2) and expression of cyclooxygenase (COX)-2 in LPS-activated RAW264.7 macrophage. Moreover, to investigate the molecular mechanisms by BB, we evaluated whether BB modulate nuclear factor-kappa B (NF)-kB pathway and caspase- 1 activation. The findings of this work demonstrated that BB alleviated the LPS-enhanced inflammatory cytokines and PGE2, as well as COX-2 levels. Additionally, we demonstrated that the anti-inflammatory mechanism of BB occurs due to the attenuation of IκB-α degradation, NF-kB translocation and caspase-1 activation. Conclusively, these findings provide evidence that BB may be useful agents in the treatment of inflammation.
