  • The achievement of maximal peak bone mineral density (BMD) in early life is one of the most important strategies for the prevention of osteoporosis, which is affected by nutritional status. However, it has been reported that young Korean women do not consume the optimal levels of nutrients because of the frequent practice of body weight reduction. Therefore, this study was conducted to investigate the relationship between nutrient intakes and BMD in young Korean women. Bone mineral density was measured at the lumbar spine by dual-energy X-ray absorptiometry. Information on health status, lifestyle and physical activity was obtained by questionnaire. Dietary intake was ascertained from a 3-day dietary record. The study sample included 112 Korean women aged 20$\sim$39 yr. In accordance with the energy intake of subjects, individuals who had an energy intake that was greater than 80% of the Korean Dietary Reference Intake (KDRI) were assigned to the control group (Control), while those who had an energy intake lower than 80% of the KDRI were assigned to the low intake group (LI). The intake of all nutrients in the LI group was significantly lower than that of the Control. Control subjects also showed nutrient intakes higher than the KDRI, except for Ca and folate. However, LI subjects showed intakes of energy, fiber, Ca, Fe, K, Zn, vitamin A, vitamin B1, vitamin B2 and folate that were lower than the KDRI. The BMD of the lumbar spine in LI subjects was significantly lower than that of the Control subjects. These results suggested that lower nutrient intake has a negative impact on BMD in young women.

  • We studied daily micronutrient intake from vitamin-mineral supplements, health-related life style, clinical case of diseases and food frequency of the Korean middle-aged (40-59 yr, n = 404) to compare the characteristics of non-user (n = 270) and user (n = 134) of vitamin-mineral supplements. Rate of supplement use of the middle-aged was 33.2% and there was significant difference in education level (p = 0.0084) and family income (p = 0.0476) of user and nonuser. Smoking habit (p = 0.0844) and drinking frequency (p = 0.0606) tended to be lower in a supplement user than a non-user. The medical history of a case was significantly higher in users (67.9%) than in non-users (44.4%) (p = 0.001), which suggests that medical history is one of the important motivations of supplement use. Supplement users had the medical history of digestive disease (34.1%), anemia (11.0%) and hypertension (9.9%) in order. Vitamin C was the most frequently supplemented nutrient (81.3%) among vitamin-mineral supplement, and the next orders were vitamins E (73.1%), B$_2$(68.7%) and B$_{6}$ (60.4%). Mean intakes of vitamin B$_1$, iron, selenium, vitamin E, and vitamin C from supplement was 4,260%, 4,030%, 1,660% and 1,330% of RDA, respectively. The supplement users tended to consume most food items including milk & milk products (p < 0.01), rice (p < 0.01), grains (p < 0.05) and cookies (p < 0.01) less frequently than non-users. Conclusively, nutrient intake of vitamin B$_1$, iron, selenium, vitamin E, and vitamin C from supplement was excessively high compared to RDA. We suggest that the toxic effect of excessive supplementation should he informed to supplement user and nutritional education should be focused on the optimal supplement dose.e.

  • Bones are important parts in sustaining the shape of the body, but they are also metabolic organs which undergo bone remodeling by constant bone resorption and formation. Osteoporosis, the typical metabolic bone disease, is characterized by a reduction in bone mineral density (BMD). Women more than men are at risk fir osteoporosis-related fractures, especially in the lumbar spine, wrist, and hip region. Risk of fracture depends on one's BMD, which open determined by the peak bone mass value achieved at skeletal maturity and followed by subsequent age-and menopause-related bone loss. Genetic and environmental factors are known to play a key role in bone metabolism and diet is considered as one of the important environmental factors. The purpose of the present study was to assess the status of BMD and bone mineral content(BMC) to clarify the relationships between dietary intakes and the risk of osteoporosis in adult women in Taegu. Subjects were 130 healthy females in between 20 and 69 years of age. BMD and BMC of the lumbar spine(venebrae L2-4) of the subjects were measured by dual energy X-ray absorptiometry. The average age of the subjects was 47.4${\pm}$11.7 years old, the average weight was 57.2${\pm}$8.4kg, the average age of menarche was 16.6${\pm}$1.9 years old and the average age of menopause was 48.4${\pm}$5.3 years old. The nutrient intakes of the subjects measured by the convenient method were generally lower than the level of RDA. The result of nutrient intake assessed has shown that the average energy intake was 1701${\pm}$316kca1 which is 85.1% of the RDA and the average calcium intake was 485.4${\pm}$172.3mg which is 69.3% of the RDA. The intakes of protein, vitamin A, vitamin B$_1$, niacin were greater than the RDA, whereas the remaining nutrient intakes were lower than the RDA. The average BMD of the subjects was shown to be 1.06${\pm}$1.09g/$\textrm{cm}^2$. The highest BMD of 1.24${\pm}$0.14g/$\textrm{cm}^2$ was noticed in the subjects of 30s compared to 20s, 40s, 50s, 60s. The BMD values were compared by the relative body weight(R3W) of the menopause subjects, and it was found that the underweight group had significant lower BMB while the rest of the groups did not have any differences in BMD. The most strongly correlated nutrient with BMD among the menopause subjects appeared to be calcium. The women whose Ca intakes were higher than 500mg showed the significantly higher BMD than those with Ca intakes lower than 500mg. This study suggests that the most effective way to prevent osteoporosis and to reduce the incidences of fractures seems to be minimizing bone loss through the adequate intake of calcium as well as avoiding underweight, especially in menopausal women. • Objectives: This study examined the effects of nutrition education focused on personalized daily energy requirement and food units using Food Exchange System on anthropometric, biochemical characteristics, nutrition knowledge, dietary attitude and nutrient intakes for overweight and obese in a public health center. Methods: The subjects were 60 overweight/obese women based on BMI (educated 30 vs. non-educated 30, 50~64 years). Educated group was provided individual and/or group lessons (40 min/lesson/week, 5 week), 'Introduction: obese & health', '6 nutrients and 6 food groups', 'My obesity & daily needed energy', 'Meal planning for personalized daily energy and food units using Food Exchange Systems', and 'Smart food choices'. After education, we examined the differences in anthropometric/biochemical characteristics, nutrition knowledge, dietary attitude and nutrient intakes between educated group and non-educated group. Results: After nutrition education, in the educated group, there were improvements on anthropometric/biochemical characteristics, nutrition knowledge, dietary attitude and nutrient intakes in the educated group compared to the non-educated group. We observed a decrease in the mean weight, total cholesterol (TC) and the incidence of overweight/obesity and hypercholesterolemia and an increase in the mean lean body mass. The scores of nutrition knowledge, 'Function of carbohydrate, protein, vitamin, mineral' and 'Food Sources of fat, vitamin, mineral' were increased. The scores of dietary attitudes, 'Taking a joyful meal, a leisurely meal, a balanced meal, a meal with sufficient vegetables, a meal with diversity, a meal with spicy foods, a meal with overeating' were increased. The intakes of energy, carbohydrate, fat, protein, vitamin A, thiamin, Zn and cholesterol were decreased. The scores of INQ, protein, vitamin A, vitamin C, thiamin, riboflavin, vitamin B6, folate, Ca, P, Fe, Zn were increased. Conclusions: The nutrition education focused on personalized daily energy requirement and food exchange unit using Food Exchange System for overweight and obese may improve food behavior, dietary intakes and symptoms of overweight and obese, even in a community health center.

  • A total of 216 women of natural menopause over 40 years were interviewed to find the relationships among general environmental fctors, anthropometric measurements, daily nutrient intake, and BMD. The average age of the subjects was 54.0 years. Average ages of menarche and menopause were 16.7 years and 47.7 years, respectively. In general, energy and nutrients intake of the subjects were relatively low compared to the Korean recommended dietary allowances(RDA). Specifically, intakes of energy, protein, clcium, iron, and vitamin A were lower than Korean RDA, BMD levels of lumbar spin (LS), femoral neck(FN), ward's triangle(WT), and trochanter(TC) were significantly decreased wit age in descending order of LS, FN, TC, and WT BMD, accordingly. BMD levels of FN and TC of the subjects were higher compared to those of the same age but BMD levels of LS and WT were lower than those of the same age from the general population. For factors related to BMD levels, hight, weight, BMI, and hip circumference had positive correlations with BMD. On the other hand, menarche, and WHR had negative correlations with BMD. Protein, lipid, iron, vitamin B1, vitamin B2, and niacin intake among factors related nutrient intakes were positively correlated with BMD levels. Based on the stepwise regression analysis, the factors and vitamin B1 intakes. Overall, BMD was decreased with age as can be expected. For those being tall, moderately weighed, and smaller waist circumference, BMD levels were high when the relationships of body characteristics and BMD levels were considered. The higher BMD levels were found for those with high intake of protein and vitamin B1. From the findings, it is suggested that the women after menopause keep the optimum body weight and good eating habits. Specially intakes of good quality protein, vitamin B1 seemed to be important.

  • This study was conducted to examine the correlation among bone mineral density (BMD), hair and nail calcium and magnesium contents, and nutrient intakes in preschool children in Chungnam district. A total of 111 preschool children (61 boys, 50 girls) measured the anthropometric characteristics, the bone mineral density of carpus using DEXA and hair and nail calcium and magnesium contents were analyzed by ICP spectrometer. The average ages of the study subjects were 55.7 months in boys and 53.0 months in girls (3.8${\~}$7 years). The birth height and weight of subjects were 51.0 cm and 3.3 kg in boys and 50.3cm and 3.2kg in girls, respectively. The average height, weight, $\%$ body fat, and obesity index were 111.6 cm, 19.6 kg, $15.0\%,\;96.1\%$ in boys and 108.6 cm, 18.5 kg, $17.5\%,\;98.1\%$ in girls, respectively. The bone mineral density in carpus was $0.25 g/cm^2$ in boys and $0.24 g/cm^2$ in girls. The hair calcium and magnesium contents were 440.9 ppm, 16.4 ppm in boys and 373.2 ppm, 28.9 ppm in girls. The nail calcium and magnesium contents were 9.4 ppm, 2.1 ppm in boys and 10.4 ppm, 2.4 ppm in girls. The intakes of energy, calcium, iron, zinc, vitamin A. niacin, and vitamin C did not meet the Korean RDAs. The ultradis and average carpus BMD were positively correlated to the plant calcium intake (p < 0.05, p < 0.05). And the ultradis, distal, and average carpus BMD were positively correlated to the plant iron intake (p < 0.05, p < 0.05, p < 0.05). The average bone mineral density in the carpus was positively correlated to the nail magnesium content (p < 0.05). Therefore, more systematic studies to investigate the roles of iron and calcium intakes, nail magnesium content in bone development of preschool children were required.

  • Changes in nutritional and health status brought on by a two-year balanced diet were assessed with anthropometric measurements as well as hematological and lipid profiles in 56 healthy young men. Recommended dietary allowances (RDA) were adjusted with estimated daily weighted activity factor. The weighted resting energy expenditure factor of the subjects was 2.37 $\pm$ 0.05. Compared with RDA, all nutrient intakes were adequate and 56% of energy was supplied by carbohydrates, 18% by protein and 26% by fat. The vitamin and mineral intakes except vitamin B-2 were higher (26.46-129.88%) than RDA. Vitamin B-2 intake was 92.15 \ulcorner 14.16% of RDA. There was no seasonal variation on nutrient intakes. Height was increased and systolic blood pressure was decreased by balanced diet for two years. Body weight, diastolic blood pressure and body mass index (BMI) were unchanged. The level of hemoglobin and hematocrit was not changed, the level of plasma protein was decreased and the level of plasma total cholesterol and albumin was increased. These results suggest that a balanced diet can increase height and complement health status achieved through vigorous exercise, even in adults, and that the level of Korean RDA for energy is adequate to maintain existing body weight.

  • This study was performed to investigate the degree of different stresses in university students of outer region of Seoul and to search the influence of food habit and nutrient intakes in stress. The data was collected by questionnaire method for self-diagnosed different stresses, dietary habit, and physical status and 24 hours recall for nutrient intakes. The subjects were 282 students attended at the lecture Food and Health. Diet balance was no difference with gender but food intakes were more diverse in female. Nutrient intake of male students was lower in vitamin A and riboflavin, but that of female was low in vitamin A and iron. The university students outer region of Seoul had more stress situation in frustration, deprivation and self-efface than in the stress of the noise and Type-A behavioral stress. Total self-diagnosed dietary habit score was better in the group of no susceptive overload stress than that of the high susceptive group. Same trend of dietary behavior score was in the group of no noise and anxiety-response stress than that in the susceptive groups. The quantity of nutrient intakes was correlated with different kind of stress. Niacin intake was positively related with the stress from life-events, and food induced stress. Thiamin intake was positively related with food induced stress. But the intake of iron, calcium, niacin and riboflavin were negatively related with the stress of noise. Therefore, we could concluded that different kind of stresses were influenced in dietary behavior and vitamin-mineral nutrient intakes. More research would be needed at the aspects of health promotion in the stressful situation of modern society.
