Effect of $CaCO_3$ on the Chonggukchang Meju Fermentation by B. subtilis ($CaCO_3$가 Bacillus subtilis에 의한 청국장메주 발효에 미치는 영향)

  • This study was carried out to investigate the effect of $CaCO_3$ on the Chungkookjang Meju fermentation. B. subtilis was cultured on the Meju added 0, 0.01, 0.1, 1% $CaCO_3$, respectively, and the chemical composition, protease activity, amino acid and vitamin B complex were examined with fermentation time. The inner temperature of the $CaCO_3$ treatments during fermentation was increased as compared with the control group. Titratable acidity in Meju decreased as $CaCO_3$ concentration increased. And protease activity and amino-nitrogen content were however high in same order. The content of amino acid was on the increase in every treatments, it made no difference between $CaCO_3$, treatments and the control. Vitamin B complex content in the $CaCO_3$ treatments was increased than in the control. The 0.01% added treatment showed the highest amount of vitamin B complex content in all the treatments.

Quality Characteristics of Ear Mushroom by Various UVB (Ultraviolet B) Treatment Conditions (다양한 자외선(UVB) 처리조건에 의한 목이버섯의 품질 특성)

  • To examine the possibility of ear mushroom (EM) as a source of natural vitamin D, the UVB (ultraviolet B) was treated according to sample drying status, drying methods before UVB treatment and harvest time. And then, vitamin D2 and ergosterol contents were investigated. According to the sample drying status, the vitamin D2 contents of fresh and freeze-dried EM (whole) increased to 4,634.4~4,780.9 ㎍/100 g D.W. (dry weight) under UVB dose 52.5~70.0 kJ/㎡ and above 18,693.1 ㎍/100 g D.W. under above 105 kJ/㎡, respectively. By drying methods before UVB treatment, vitamin D2 contents of EM powder (below 500 ㎛) that dried in the vinyl house and freeze-dryer increased to 4,886.2~5,132.9 ㎍/100 g D.W. under above 105 kJ/㎡ and 17,103.7 ㎍/100 g D.W. under 70 kJ/㎡, respectively. Ergosterol content decreased with increasing UVB dose in all experiments. According to the harvest time, vitamin D2 content under UVB dose 210 kJ/㎡ showed marked difference and in order of June, July, August, October and April. As for the results, the optimum harvest time, drying method before UVB treatment, sample size, UVB dose for the EM contained high vitamin D2 content were June, freeze-drying, whole, and 105 kJ/㎡, respectively.

Changes in Antioxident Nutrients and Vitamin $B_1$ Contents of Gamma Irradiated Foods Consumed most Frequently in Korea (한국인 다소비 섭취 식품의 방사선 조사후 항산화 영양소와 비타민 $B_1$의 변화)

  • Food irradiation has been steadily increased in many countries concomitantly with increasing international trades and concerns about naturally occurring harmful contaminants of food. Although, irradiation provides an excellent safeguard for the consumer by destroying harmful bacteria, it would be necessary to investigate nutritional adequacy of irradiated foods with a special emphasis on such foods as red pepper powders, cold-water fishes (mackerel), sesame seeds that are widely consumed in Korea. These food items are of special concern due to the fact that most of them are imported and that several nutrients contained in them are sensitively reacting to irradiation. We observed changes in the antioxidant nutrients contents, such as vitamin A, $\beta$-carotene, vitamin C and total phenol, and also vitamin B$_1$ in the foods that were irradiated at different dose levels. The nutrients contents in red pepper were respectively 98.6% and 92.3% for total phenol, and 97.8% and 94.5% for $\beta$-carotene, right after irradiation at the dose of 10 and 20 kGy. The vitamin C contents decreased with irradiation doses up to 76.4% (10 kGy) and 68.5% (20 kGy) and B$_1$ contents decreased to 54.9% and 80.7% of non irradiated red pepper. When the mackerel was irradiated at the applied dose of 3 and 7 kGy, total phenol concentration of the irradiated fish was respectively 91.3% and 94.2% of non irradiated fish. The amounts of vitamin A were 82.6% (3 kGy) and 78.0% (7 kGy) of unirradiated sample and vitamin B$_1$ contents reduced to 30.5% and 51.5%. $\alpha$-Tocopherol content was 33.9% of the non-irradiated one when it was irradiated at 7 kGy. Vitamin A and ${\gamma}$-tocopherol contents in sesame seeds linearly decreased with the applied doses (5 and 10 kGy) Vitamin A contents decreased up to 87.8% (5 kGy) and 82.9% (10 kGy) and that of ${\gamma}$-tocopherol were 72.4% and 66.5% of the unirradiated sample.

Ultraviolet (UV)-B Irradiation Increased Vitamin D2 Contents in the Fruit Bodies of Pleurotus eryngii var. ferulae (자외선(UV)-B 조사에 의한 아위느타리버섯(Pleurotus eryngii var. ferulae) 자실체의 비타민 D2 함량 증가)

  • The fresh fruit bodies of Pleurotus eryngii var. ferulae was irradiated with ultraviolet (UV)-B (280-320 nm) in order to increase vitamin $D_2$ contents, which was assayed using HPLC (Waters 1525, USA). The vitamin $D_2$ contents were $3.5{\mu}g/g$ after 3 min UV-B irradiation ($21.6KJ/m^2$) and $6.02{\mu}g/g$ after 5 min UV-B irradiation ($36KJ/m^2$), respectively, which showed the significant increase considering the vitamin $D_2$ content ($0.01{\mu}g/g$) before UV-B irradiation. This increasing effect was confirmed also for other edible mushrooms; Pleurotus eryngii, from $0.09{\mu}g/g$ to $2.75{\mu}g/g$ (3 min) and $5.21{\mu}g/g$ (5 min); Lentinus edodes, from $0.021{\mu}g/g$ to $3.02{\mu}g/g$ (3 min) and $3.78{\mu}g/g$ (5 min); Pleurotus ostreatus, from $0.19{\mu}g/g$ to $9.63{\mu}g/g$ (3 min) and $11.6{\mu}g/g$ (5 min). Although the original content of vitamin $D_2$ was the highest in P. ostreatus, the extent of increase by UV irradiation was remarkably high in P. eryngii var. ferulae.

Palm Vitamin E Prevents Osteoporosis in Orchidectomized Growing Male Rats

  • Testosterone deficiency increased bone resorption, giving rise to osteoporosis. Testosterone deficiency also increased lipid peroxidation and free radical formation. Free radicals have been shown to be toxic to osteoblasts as well as to activate osteoclasts. In this study, the effects of giving an antioxidant, i.e. vitamin E-rich extract from palm oil on bone mineral density and calcium content was studied. Palm vitamin E prevented the loss in bone mineral density due to orchidectomy, seen in the whole femur, proximal amd midshaft regions, as well as L4 vertebra. Similar observations were seen in bone calcium content of the L5 vertebra. Giving palm olein also prevented the loss in bone mineral density in the femoral midshaft and L4 vertebra; and bone calcium content in the L5 vertebra. In conclusion, vitamin E-rich extract from palm oil was effective in preventing the loss in bone mineral density and calcium content of orchidectomized male rats. This action is probably due to its role as an antioxidant.

  • Optimal pH temperature and sucrose content for the production of vitamin B$_{12}$ and riboflavin by Bacillus megaterium and Enterobacter aerogenes was studied by microbiological analysis. Optimal pH for the production of B$_{12}$ was 6.0 by B. megaterium while the pH for E. aerogenes was 5.0. However, upon the addition of sucrose the optimal pH for B. megaterium shifted to 7.5 but E. aerogenes remained at pH 5.0. In the absence of sucrose, pH did not influence the yields of riboflavin produced by either bacterium. Addition of sucrose stimulated synthesis of riboflavin by both bacteria. Temperature had little effect on the production of vitamins by either bacterium.

Vitamin $B_{12}$ Contents in Some Korean Fermented Foods and Edible Seaweeds (한국의 장류, 김치 및 식용 해조류를 중심으로 하는 일부 상용 식품의 비타민 $B_{12}$ 함량 분석 연구)

  • There is a limitation to estimate vitamin $B_{12}$ intake due to lack of data on vitamin $B_{12}$ content in many Korean foods. In this study, vitamin $B_{12}$ content was determined in some soybean or vegetable-fermented foods, edible seaweeds and other frequently consumed foods in Korea by microbioassay using Lactobacillus delbruecki ATCC 7830. The traditional type of Doenjang and Chungkookjang contained 1.85 ${\mu}g/100$ g and 0.69 ${\mu}g/100$ g of vitamin $B_{12}$, respectively, while the factory-type of Doenjang and Chungkookjang contained 0.04-0.86 ${\mu}g/100$ g and 0.06-0.15 ${\mu}g/100$ g. Vitamin $B_{12}$ was not detected in steamed soybeans and Tofu which is a not-fermented soybean product, indicating that vitamin $B_{12}$ in Doenjang and Chungkookjang might be produced during the fermentation process. The Korean-style soy sauce contained 0.04 ${\mu}g$ vitamin $B_{12}$/100 mL, but vitamin $B_{12}$ was not detected in Japanese-style soy sauce and white miso. Commercial Kimchi, a representative Korean vegetable- fermented food, made of Korean cabbage, Yeolmu, or Mustard leaves contained 0.013-0.03 ${\mu}g$ vitamin $B_{12}$/100 g, while Kimchi without red pepper and fermented fish sauce (White Kimchi) did not. Vitamin $B_{12}$ content was very high in some edible seaweeds such as laver (66.76 ${\mu}g/100$ g dry weight) and sea lettuce (84.74 ${\mu}g/100$ g dry weight), and it was 17.12 ${\mu}g/100$ g of dried small anchovy, 1.07 ${\mu}g/100$ g of whole egg, and 0.02 ${\mu}g/100$ g of coffee mix. From these results, it is assumed that Koreans take substantial amount of vitamin $B_{12}$ from plant-origin foods. And, with these data, we will be able to calculate dietary vitamin $B_{12}$ content more correctly than before. In conclusion, soybean-fermented foods, Kimchi, laver and sea lettuce are recommendable as good sources of vitamin $B_{12}$ for vegetarians or Korean elderly on grain and vegetable based diet.

Effects of Addition of Citron Peel Powder on the Proximate Composition, Minerals, Vitamin A, C content and Fatty Acid Composition of Emulsion-type Sausage (유자과피 분말 첨가가 유화형 소시지의 일반 성분, 무기물, 비타민 A, C 함량 및 지방산 조성에 미치는 영향)

  • This study was carried out to investigate the effects of addition of citron peel powder(OJ 0/0, 0.60/0, 0.9 %) on proximate composition, minerals, vitamin A, C content and fatty acid composition of emulsion-type sausages. The moisture content of sausage containing 0.3% citron peel powder were significantly(P< 0.05) higher compared to those for control. The crude fat content of sausage containing citron peel powder were significantly( P< 0.05) lower compared to those for control. The crude ash content of sausage containing 0.9% citron peel powder were significantly(P< 0.05) higher compared to those for control. The minerals, vitamin A and C content of sausage containing citron peel powder were significantly(P < 0.05) higher compared to those for control. The palmitic acid(CI6: 0) and linoleic acid(CI8: 2) content of sausage containing citron peel powder were higher compared to those for control, but the palmitoleic acid(CI6: I) content of sausage containing 0.9% citron peel powder were lower. The total saturated fatty acid content of sausage containing 0.3% citron peel powder were significantly(P < 0.05) lower compared to those for control.

Study on the Vitamin Contents of Commercial Powdered Infant Formula (국내 시판 유아용 고형 조제분유의 비타민 함량에 관한 조사)

  • This study was conducted to investigate both fat-soluble and water-soluble vitamin contents of commercial powdered infant formula for obtaining basic data on infant nutrition. Ten commercial infant formula based on cow's milk were collected and the contents of fat-soluble vitamins (vitamin A, D, E, K) and water-soluble vitamins (vitamin C, thiamin, riboflavin, niacin, $B_6$, folate, $B_{12}$, pantothenic acid, biotin) were compared with Dietary Reference Intakes for Koreans (KDRIs). The overall vitamin contents in 100 g and in 100 kcal of infant formula satisfied the recommended formula regulation (KDRIs) and Codex. In infant formula during 0-5 monthly age, fat-soluble vitamin A, D, E, K could supply 178.6%, 205.3%, 208.4%, 976.3% of adequate daily vitamin intakes, respectively. Water soluble vitamins, vitamin C, thiamin, riboflavin, niacin, $B_6$, folate, $B_{12}$, pantothenic acid, biotin could supply 173.2%, 237.2%, 269.8%, 295.9%, 431.6%, 165.8%, 1186.3%, 203.8%, 408.3% of adequate daily vitamin intakes, respectively. In infant formula during 6-11 monthly age, all vitamins satisfied their adequate daily intakes as well. Vitamin A, D, E, K supplied 199.2%, 262.3%, 220.5%, 626.46% of adequate daily vitamin intakes. Vitamin C, thiamin, riboflavin, niacin, $B_6$, folate, $B_{12}$, pantothenic acid, biotin could supply 179.5%, 210.2%, 264.7%, 241.5%, 206.0%, 166.9%, 699.5%, 247.0%, 475.0% of adequate intake of KDRIs. From this study, evaluation of vitamin contents of commercial infant formula was established, which could strengthen the basic information on infant nutrition.

Characterization of Edible Pork By-products by Means of Yield and Nutritional Composition

  • Basic information regarding the yield and nutritional composition of edible pork by-products, namely heart, liver, lung, stomach, spleen, uterus, pancreas, and small and large intestines, was studied. Our results revealed that the yields varied widely among the pork by-products examined; in particular, liver had the highest yield (1.35%); whereas, spleen had the lowest yield (0.16%). The approximate composition range (minimum to maximum) of these by-products was found to be: moisture 71.59-82.48%; fat 0.28-19.54%; ash 0.155-1.34%, and protein 8.45-22.05%. The highest protein, vitamin A, B2, B6, and total essential amino acid (EAA) contents were found in liver. Large intestine had the highest fat content and lowest EAA content. Heart had the highest vitamin B1 content, whereas pancreas had the highest niacin and vitamin B3 contents. The concentrations of Fe and Zn were highest in liver and pancreas. Total saturated fatty acids (SFA) levels and polyunsaturated fatty acids (PUFA) levels between the by-products ranged from 43.15-50.48%, and 14.92-30.16%, respectively. Furthermore, with the exception of large intestine, all the by-products showed favorable PUFA/SFA ratios. The study indicated that almost all of the pork by-products examined were good sources of important nutrients, and that these data will be of great importance in the promotion of the consumption of edible pork by-products, as well as their utilization in meat processing.
