The objective of this study was to investigate important factors affecting food choice, specific dietary changes over past few years and to find out consumer opinions concerning the use of yogurt and oligosaccharides. Results of this study showed that three most important factors in food selection were taste (52.5%), nutrition (23.4%) and safety (15.8%). Three most important nutritive factors were protein (26.3%), calorie (19.2%) and vitamin (13.8%). Specific dietary changes of the respondent over past few years didn't affect meat intake, but increased vegetable and fruit intakes. Majority of the respondent (52.3%) ate yogurt more than 3 times per week and 35.6% of them ate $3{\sim}4$ times per month. Reasons for intake of oligosaccharides were as follows; low calorie (40.8%), sweetener (28.3%)and bifidogenic factor (25.0%). The respondent regarded that yogurt had more preventive effect of disease than that of oligosaccharide.
An efficient transient expression system has been developed and characterized for the production of foreign genes in seedlings. The seedlings can be easily produced from commercial seeds used for vegetable sprouts. In principal, a chemical abrasive was employed to generate wounds in seedlings prior to vacuum-infiltration with Agrobacterium tumefaciens bearing the target gene. This optimized chemical wounding-assisted agro-infiltration process resulted in up to 15-fold increase in $\beta$-glucuronidase (GUS) enzyme activity. This procedure has been used efficiently to express hepatitis B surface antigen (HBsAg) protein in a transient mode. Therefore, seedlings with proper wounds can be suggested as a convenient tool for the production of useful recombinant proteins.
This experiment was planned to develop a functional supplements by food resources to prevent and lessen the bad effects caused by the environmental pollution such as bad food, air, water and heavy metals exposed to people these days. As for Its primary stage, the nutrient profile and sensory characteristics of the duck-extract were evaluated in this study. The duck-extract was formulated by the mixture of bone and internal organs of ducks and 6 medicinal herbs which were able to be used as foods and known to help the excretion and the repression of the poison inside the body for a long time. As we compared the six medicinal herbs mentioned above to the vegetable herbs, the nutrient profile of the medicinal herbs were superior to the vegetable herbs. The duck-extract was composed of protein 49.92%, carbohydrate 37.02%, dietary fiber 20.99%, lipid 7.60% and ash 5.46%. The ratio of Ca to P was 1 : 1.4, which was a suitable ratio for absorption, the contents of Na and K were low and those of micro-elements such as Fe, Mn, Zn and Cu high compared to other meat extracts. The essential amino acids accounted for 30.91% of total amino acids. The result of sensory evaluation was better in overall preferences than the ones which are already in the market. From these results, the nutrient profile of the duck-extract was estimated to be able to supply enough nutrients to the people whose nutritional balance was destroyed these days. This study also showed the effective way of using duck-extract and its application to the oriental medicine.
In recent yearn, eating habit that is not right causes disease the dietary fiber (DF) intakes of Korean decreases. Occurrence of chronic disease such as constipation increased gradually. This study was performed to investigate of high fiber standard recipes for one day including major source of DF such as vegetables, cereals and grain products, seaweeds, fruits, fungi and mushrooms, and legumes and products for improving constipation through dietary treatment. Nutrient analysis per person marked energy, protein, fat and DF content. The food of high I : S ratio (Insoluble fibers: Soluble fibers) are soybean sprout salad, rice gruel with vegetables, pan fried mushroom with vegetables. The food of low I:S ratio are fermented soybean paste stew, fried rice with kimchi, fruits salad with yogurt dressing and seasoned noodle with vegetables. The representative high fiber diet menu is rice gruel with vegetable, rice with radish and oyster, fermented soybean paste stew, kimchi stew, assorted soybean sprout salad, three kinds of pancake roll, pan fried mushroom with vegetables, fruits salad with yogurt dressing and seasoned noodle with vegetables. The menu developed in this study, contains fiber of at least 8.97 times of RDA and in point view of 1 day intake, that is similar to the scope of RDA, 20-25 g per day. This findings should be appliable to nutritional education and medical food for constipation. And also, the aim of study is constipation patients easily applicate that developed the food of high fiber using Korean common food. And the result of the study will be the basic data about clinical test of food developed in this study and the danger of high fiber diet. The representative high fiber diet menu is rice gruel with vegetable, rice with radish and oyster, fermented soybean paste stew, kimchi stew, assorted soybean sprout salad, three kinds of pancake roll, pan fried mushroom with vegetables, fruits salad with yoghurt dressing and seasoned noodle with vegetables. This findings should be applicable to nutritional education and medical food for constipation.
The purpose of this study is to evaluate dietary quality of Korea Antarctic expedition by menu analysis. Basic menu pattern, intake of dish and dish group, DDS (dietary diversity score), daily nutrients supply, and NAR (nutrient adequacy ratio) & MAR (mean adequacy ratio) were analyzed using 1 year menu list for the 10th Korea Antarctic expedition. Most frequently served basic menu patterns were ${\ulcorner}$Rice + Soup + 2 Side dish + Kimchi (53.5%)${\lrcorner}$ and ${\ulcorner}$Rice + Stew + 2 Side dish + Kimchi (13.4%)${\lrcorner}$. In the analysis of dish group, excluding Rice and Kimchi, ${\ulcorner}$Grilled foods${\lrcorner}$ and ${\ulcorner}$Pan-fried foods${\lrcorner}$ were served more than 25% per month. Most frequently served dishes were "pan-fried rolled egg", "grilled seaweed", "kimchi soup", "fruits cocktail, canned" and "salt-fermented squid". The kinds of served dishes were very restrictive. The average score of DDS showed 2.88 for summer and 2.97 for winter. Dairy group was almost not served. Fruit & Vegetable groups were also served a little as canned product. The energy ratio of Carbohydrate : Fat : Protein was 56.5 : 23.9 : 19.2, and 56.9 : 24.5 : 18.3, for summer and winter, respectively. Both seasons had higher ratio of carbohydrate and lower ratio of fat compared to the recommended ratio (44 : 40 : 16) in polar area. Ca : P ratio was very poor, 0.40 in both seasons. NAR scores of Ca, vitamin A, vitamin $B_2$ and vitamin C were also very low, ranged from 0.6 to 0.7. Consequently, a well-planned menu supplying adequate amount of dairy, fruit and vegetable is necessarily required including Ca, vitamin D, vitamin A, vitamin $B_2$ and vitamin C intake, and some nutritionally well-educated members are urgently needed to join in the expedition.

Modulation of biotransformation enzymes is one mechanism by which a diet high in fruits and vegetable may influence cancer risk. Inhibition of cytochrome P450s (CYP) and concomitant induction of conjugating enzymes are hypothesized to reduce the impact of carcinogens in humans. Thus, exposure to types and amounts of phytochemicals may influence disease risk. Like other xenobiotics, many classes of phytochemicals are rapodly conjugated with glutathione, glucuronide, and sulfate moieties and excreted in urine and bile. In humans, circulating phytochemical levels very widely among individuals even in response to controlled dietary interventions. Polymorphisms in biotransformation enzymes, such as the glutathione S-transferases (GST), UDP-glucuronosyltransferases (UGT), and sulfotransferases (SULT), may ocntribute to the variability in phytochemical clearance and efficacy; polymorphic enzymes with lower enzyme activity prolong the half-lives of phytochmicals in vivo. Isothiocyanates (ITC) in cruciferous vegetables are catalyzed by the four major human GSTs: however reaction velocities of the enzymes differ greatly. In some observational studies of cancer, polymorphisms in the GSTMI and GSTTI genes that result in complete lack of GSTM1-1 protein, respectively, confer greater protection from cruciferous vegetable in individuals with these genotypes. Similarly, we have shown in a controlled dietary trial that levels of GST-alpha-induced by ITC-are higher in GSTMI-null individuals exposed to cruciferous vegetablse. The selectivity of glucuronosyl conjugation of flavonoids is dependent both on flavonoid structure as well as on the UGI isozyme involved in its conjuagtion. The effects of UGI polymorphisms on flavonoid clearnace have not been examind; but polymorphisms affect glucuronidation of several drugs. Given the strong interest in the chemopreventive effects of flavonoids, systematic evaluation of these polymorphic UGTs and flavonoid pharmacokinetics are warranted. Overall, these studies suggest that for phytochemicals that are metabolized by, and affect activity of, biotransformation enzymes, interactions between genetic polymorphisms in the enzymes and intake of the compounds should be considered in studies of cancer risk. Genetic polymorphisms in biotransformation enzymes may account in prat for individual variation in metabolism of a wide range of phytochemicals and their ultimate impact on health.
The survey was carried out to obtain some fundmental data to improve the dietary life and to establish the nutritonal education and policy on inhabitants limed in isle area near by demilitarized zone in Korea. For this, 33 families in the area of Kyodong island located at Kanghwa-Gun, Kyungki province were randomly selected. Trained surveyors visited each house to survey the food and nutritional status in summer during 3 days in August, 1987. The results are summarized as follows ; The number of foods they were taking totalled 17 categories and 134 kinds of which 104 kinds were vegetable foods. The average amount of food intake was 1465.3g per person per day, animal food occupied 9.6% only. The intake amount of fruit among vegetable foods, and fishes, shells, milk and eggs among animal foods was lower than the national average. Each proportion of carbohydrates fat and protein to the total energy intake was 70.4%, 9.7% and 19.9%. The foods they used to take a lot were rice, potatoes. cucumbers, cabbage KIMCHIE and YULMOO KIMCHIE in order of their intake amount. The energy intake was 3064 Kcal which is higher than nutritional requirements, and the energy ratio of cereals to the total energy in take is 76%. If the amount of fat intake is fixed to 20% of total energy intake, the amount of fat intake is 68g, but the actual amount of fat intake was only 33g. With an increase of total energy intake, supply of calcium and vitamin A should be increased much more.
To determine the effect of low dose gamma radiation on the germination and enzyme activities, seeds of Chinese cabbage (Brassica compestris L. cv. Hanyoreum) and radish (Raphanus sativus L. cv. Chungsukoungzoung) were irradiated at the dose of 2-50 Gy. The germination rate of irradiation group was higher than that of the control. Especially it was highest at the early stage. The germination rate of Chinese cabbage was high at 2 Gy and 8 Gy irradiation group and that of radish was high at 2 Gy, 6 Gy and 10 Gy irradiation group. Growth of both seedlings of Chinese cabbage and radish increased positively in low dose irradiation group. The height of Chinese cabbage was noticeably high at 4 Gy and 10 Gy irradiation group and that of radish at 6 Gy irradiation group. The protein contents of seedlings from seeds irradiated with the low dose gamma radiation was higher than the control, especially at the early stage. The enzyme activities of seedlings from seeds irradiated with the low dose gamma radiation was high at 4 Gy and 10 Gy irradiation group. These results suggest that the germination, growth and enzyme activities of old vegetable seeds could be promoted by the low dose gamma radiation.
Possible correlations between nutrient intake add health status-as assessed by anthropometric measurements, physical performance and biochemical measurements-were investigated, using 514 healthy young men aged 20 years old who had no apparent health problems. The intakes of nutrients were estimated using a three-day dietary recall method. Height and body weight were measured, and body mass index (BMI) was calculated. Physical performance was tested using sit-ups, push-ups, a loom sprint and a 1,500m run. When compared with the Korean recommended dietary allowances (Korean RDA), the subjects nutrient intakes were adequate except for calcium. The intake of calcium was 516.66$\pm$293.43mg/day, which is 73.80 % of the Korean RDA. The subjects averaged 174.51$\pm$7.07cm in height, 68.17$\pm$9.25 kg in body weight and 22.23$\pm$2.16 in BMI. The associations between nutrient intakes and anthropometric measurements, and between nutrient intakes and physical performance, were weak. The intake of vegetable fat was positively correlated to body weight, whereas the intake of carbohydrate was negatively correlated to BMI. The intake of carbohydrate was positively correlated to the level of performance in the loom sprint, and the intake of vegetable Int was positively correlated to the level of performance of sit-ups. No correlation was found between nutrient intakes and the following biochemical measurements of the blood: the levels of glucose, total protein, total cholesterol, triglyceride, hemoglobin and hematocrit. These results suggest that anthropometric measurements and level of physical performance can be associated with energy nutrient intakes, even in moderately active, well-nourished, young men. No correlation was found between nutrient intake and biochemical measurements, probably because all subjects had a reasonably well-balanced diet.
