Comparative Studies of the Combined Dietary Animal and Vegetable Proteins on Growing and Blood Compositions the Weanling Rats and Mice (식이중의 동물성 및 식물성단백질의 종류와 배합비율에 따른 흰쥐 (Rat)와 흰생쥐 (Mouse)의 성장과 혈액성분에 관한 비교연구)

  • In order to investigate the effect of the combined dietary animal and vegetable proteins on growing female and male rats and mice. 25 female and 25 male rats of 4 weeks old weighing approximately 43-65g and 47-60g, respectively, were subjected to feeding trials for 4 weeks and then subsequently to metabolic trials for 10 days. In case of mice, 25 female and 25 male mice of 4 weeks old weighing approximately 12-17g and 12-16g, respectively, were equally treated. The dietary energy level was set as 3600 kcal ME/kg, and protein and fat provided respectively 12 and 5% of the dietary energy. The rest 83% of the energy level was supplied with appropriate amounts of starch and glucose. The following results were obtained. The body weight gain of female and male rats were increased as the combined dietary animal protein level increased. Whereas that of male mice was the highest for the diet E(Ap 10+Vp 90). Food efficiencies both of female and male rats were improved as combined dietary of animal protein increased. Male rats were superior to that of female. In the mice, the food efficiency value of male mice was superior to that of female. And the values of the male showed the same fashion as that in the growth rate, although it was not for the female. Protein efficiencies, both of female and male rats, were improved as combined dietary of animal protein level increased. That of male mice was in accord with the body weight gain and food efficiencies. But that of female mice was not accordant. Nitrogen retention of the experimental diets in the same protein level was in proportion to nitrogen intake. That of male mice was improved as animal protein level increased, but, that of female mice was not. Body protein utilizability was found to be superior in mice to rats. Blood serum protein level was not found to be affected by the experimental diets in the same protein level. The best combination ratio of animal and vegetable protein seems to be variable depending on the sex and species of animals, and the best diets for female and male rats and female and male mice were found to be experimental diet A(Ap 10+Vp 90) or diet B(Ap 75+Vp 25), diet C(Ap 50+Vp 50), and diet E(Ap 10+Vp 90), respectively. From the above-mentioned results that there was no difference in growth rate of body weight gain from the weanling period to puberty, and that the protein requirements of rats and mice were different from each other.

Occurrence of Sclerotinia Rot on Perilla Caused by Sclerotinia sclerotiorum under Structured Cultivation Condition (Sclerotinia sclerotiorum에 의한 시설재배 들깨 균핵병 발생특성)

  • Sclerotinia rot caused by Sclerotinia sclerotiorum frequently causes serious and unpredicable yield losses of the leaves of perilla growing under structured cultivation as vegetable in Korea. Temperature for mycelial growth ranged from 5 to $30^{\circ}C$ with optimum temperature d $20^{\circ}C$. Sclerotia were formed fewer at low temperature, but their dry weight was heavier than that at high temperature. The apothecia were formed from the sclerotia that buried up to 3 cm soil depth at $15^{\circ}C$ in moisture condition. The incidence of perilla Sclerotinia rot caused by S. sclerotiorum was observed throughout the growing season at greenhouse. The occurrence of this disease was especially severe from January to February of low temperature period. The average incidence rates of this disease was up to 15%. The significant occurrence of this disease was showed mainly in the continuous cropping field for more than five years. The incidence of this disease increased according to the increase of continuous cropping year. The incidence rates of this disease reached up to 20% in the continuous cropping field for ten years. Also it was firstly investigated the natural infection caused by S. sclerotiorum on weed plants, Gnaphalium affine and Mazus pumilus in farmer's field. The casual fungus showed pathogenicity on 11 weed plants species tested, and more severe pathogenicity on G. affine, Latuca indica and Ixeris dentata included in the family Compositae. This result suggests that effective crop rotation and weed eradication can be the method for organic control of perilla sclerotinia rot, and sudden outbreaks of this disease on perilla growing under structure after paddy rice call be explained by the presence of weed hosts.

Distribution of Weed Population in the Paddy Field in Korea, 1981 (최근(最近) 한국(韓國)의 논 잡초분포(雜草分布)에 관하여)

  • Nationwide survey of weed population in paddy rice field was conducted from 1760 fields all around Republic of Korea in 1981. The weed species observed include 2 species of grasses, 7 species of sedges, and 18 species of broadleaf weeds, and the dominant weed species were Monochoria vaginalis, Sagitraria trifolia, Potamogeton distinstus, Sagittaria pygmea and Cyperus serotinus. More and many weeds were growing in single cropped field than double cropped field. In single cropped fields, weed population was reduced when autumn plowing was conducted. In double cropped fields, more weeds were growing in barley or wheat grown fields than vegetable gown fields. Among the five paddy soil types, more weeds were growing in saline soils and poorly drained soils than others. The proportion of annual and perennial weeds in national average was 44% and 56%, and perennials became more dominant in central part of the peninsula. Autumn plowing and double cropping appeared to reduce the perennial weed population, however, the increased perennial weed population, presumably due to continuous use of herbicides which controls mostly annuals, seemed to an urgent problem to be solved.

  • This study is for constructing detailed data to secure biological diversity and maintain a healthy ecosystem in Backsasil Valley Ecological and Scenery Conservation Area, and for preparing an ecological management plan fit for the protected area. The period for this study was from April 2010 to May 2013. Recently, the increase of visitors to Baeksasil Valley, as well as the plantation and dissemination of introduced vegetable species, become factors accelerating ecological disturbance. Major research contents included the reviews of the management system of the protected areas, the necessity of ecological management at the basin level, establishing the system of a management plan, research and analysis of environment ecology, analysis of threatening factors, goal-setting, management strategies, and a plan through SWOT analysis. Survey items were the natural environment, major components of ecosystem, and human-use. The goals of ecological management were basin zone management for amphibians, conservation and restoration of forest vegetation for conservation habitat of Dryocopus martius, conservation habitat of Zelkova serrta for nature landscape, and management of users for environment protection. The conservation management plan at a basin zone level contains the management of point and non-point pollution sources in the upstream, securing growing conditions for native plants, securing safe habitats for amphibians, and securing of habitats for major wild birds. Also, restoration of natural forests, management of native plants and introduced vegetable species, and restoration of degraded forest paths are suggested for the restoration plans.

  • The growth responses of Chinese Cabbage, lettuce, and spinach were evaluated to investigate the feasibility of carbonized rice-hulls as a sanitary cultivation media instead of soil. The carbonized rice-hulls were pretreated with several inorganic acid such as nitric, sulfuric, hydrochloric, and phosphoric acid for neutralization. The neutralization of the carbonated material using nitric, sulfuric, and phosphoric acid did not alter the growth responses of these vegetables compared to those of control plants grown on the normal cultivation soil. Especially, the nitric acid pretreatment resulted in the better growth of these plants than the mixture of soil and compost. This is probably due to the additional supply of the nitrate-nitrogens. However the growth responses of lettuce and spinach on the carbonated materials neutralized with hydrochloric acid were different and appeared to be having symptom which is analogous to the chloride toxicity during the late stage of growing. Although no difference was observed in chemical composition, the contents of protein-nitrogen were higher in the plants grown on the carbonated material compared to those of plant grown on the mixture of soil and compost. Based on our preliminary results, the carbonized and neutralized rice-hulls are very useful bed material for the sanitary cultivation under the controlled environmental condition.

Spicy Taste of Korean Traditional Food (한국 전통음식에 사용된 매운 맛)

  • The origin of Korean traditional food's spicy taste dates back to the first telling of the Dangun myth-a story of a tiger and bear who tried to reincarnate themselves in human form by eating garlic and wormwood. For a long time, Koreans have eaten spicy vegetables such as green onion, garlic, ginger, mustard, leeks, corni, cinnamon bark, and Chinese peppers (Zanthoxylum schinfolium) and Zanthoxylum bungeanum. In prehistoric times, spicy vegetables were probably used to eliminate the smell of meat. In the agricultural age, they were used to supplement meals with fresh taste. They were also used as a substitute for salt (salt was very precious and expensive) as well as side dishes for the poor. Spicy vegetables have also been used as a substitute for main dish like medicinal gruel and used to increase the spiciness of soup, and they are usually used as a side dish and with condiments in namul (cooked vegetable dishes), sangchae (salad), ssam (wrapped in greens and garnished with red-pepper paste or other condiments) and Kimchi. In addition, chili pepper was introduced to the Korean Peninsula in the middle of the Joseon Dynasty (mid-15th, 16th century). The soil and climate of the Korean Peninsula are suitable to growing chili pepper, and chili pepper has excellent adaptability and productivity. Accordingly, it is processed to red pepper powder and has become a major part of traditional Korean food along with Chinese pepper. Since the Joseon Dynasty, many kinds of Kimchi made with red pepper powder have been developed, and most Koreans enjoy them these days. The main characteristics of Korean food are spiciness and honest-to-goodness taste.

  • Acute respiratory virus infectious diseases are a growing health problem, particularly among children and the elderly. Much effort has been made to develop probiotics that prevent influenza virus infections by enhancing innate immunity in the respiratory tract until vaccines are available. Lactobacillus plantarum GB-LP2, isolated from a traditional Korean fermented vegetable, has exhibited preventive effects on influenza virus infection in mice. To identify the molecular basis of this strain, we conducted a whole-genome assembly study. The single circular DNA chromosome of 3,284,304 bp was completely assembled and 3,250 protein-encoding genes were predicted. Evolutionarily accelerated genes related to the phenotypic trait of anti-infective activities for influenza virus were identified. These genes encode three integral membrane proteins, a teichoic acid export ATP-binding protein and a glucosamine - fructose-6-phosphate aminotransferase involved in host innate immunity, the nonspecific DNA-binding protein Dps, which protects bacteria from oxidative damage, and the response regulator of the three-component quorum-sensing regulatory system, which is related to the capacity of adhesion to the surface of the respiratory tract and competition with pathogens. This is the first study to identify the genetic backgrounds of the antiviral activity in L. plantarum strains. These findings provide insight into the anti-infective activities of L. plantarum and the development of preventive probiotics.

A Study of Dietary Intake and Bone Mineral Density in Competitive Female Athletes (여성 운동 선수들의 골밀도 및 영양섭취실태에 대한 연구)

  • The purpose of this study is to investigate the dietary intake and bone mineral density(BMDs) in college women(n = 10), female swimmers(n = 10), and female weight lifters(n = 10). BMDs of lumbar spine(L2-L4), femoral neck, ward's triangle, and trochanter were measured with dual-energy X-ray absorptiometry. The results are summarized as follows. In swimmers and weight lifters, mean daily intakes of energy, protein, and fat were higher than those of college women and the intake of carbohydrate was significantly high in weight lifters. Also in swimmers and weight litters, mean daily intakes of animal flood, phosphorus, vitamin A, vitamin B$_1$, vitamin B$_2$, niacin, vitamin C, and cholesterol were found higher than those of college women but there was difference among the types of exercise. According to correlation analysis between nutrient intake and BMDs, intakes of energy, protein, carbohydrate, and vitamin B$_1$ were positively associated with BMDs of lumbar spines. According to stepwise multiple recession analysis, BMDs of lumbar spines were affected by intakes of protein, Fe, phosphorus, and vitamin B$_2$, also BMDs of femur were affected by each of vegetable protein, dietary fiber, and fe. from the above explanation, the nutrient intakes can be independent factor besides exercise. In conclusion, the weight lifting, resistant exercise, resulted in increase of both BMDs of lumbar spines and femur specially in growing and adult period of female. Whereas swimming lead to increase of BMDs of lumbar spine and decrease of BMDs of femur in female.

Effect of Surface Cover on the Reduction of NPS Pollution at a Vegetable Field (야채재배 밭에서 지표피복의 비점오염원 저감효과)

  • This research was focused on the effect of rice straw and rice straw mat on the reduction of upland field non-point source (NPS) pollution discharges. Six experimental plots of $5{\times}22m$ in size and 3% in slope prepared on gravelly sandy loam soil were treated with control, rice straw cover and rice straw mat cover. Radish in Spring growing seasons were cultivated. NPS pollution discharge was monitored and compared with respect to the treatments. The surface cover rate of rice straw and rice straw mat right after the treatments was 64.7% and 73.7%, respectively. Rainfall of the 16 monitored events ranged from 12.8 mm to 538.2 mm. Runoff coefficient of the events was 0.01~0.67 in control plot, 0~0.63 in rice straw plot and 0~0.45 in rice straw mat plot. The reduction of runoff compared to the control plot was 5.4~99.7% in rice straw plot and 32.9~100% in rice straw mat plot. The reduction of NPS pollution load was 52.0% for SS, 28.5% for T-N and 35.2% for T-P in rice straw plot and 79.8% for SS, 68.3% for T-N and 53.3% for T-P in rice straw mat plot. This research revealed that rice straw mat cover on the soil surface could not only increase the crop yield and farmer's income but also reduce the NPS pollution loads significantly.

Growth and Ginsenoside Content in Different Parts of Ginseng Sprouts Depending on Harvest Time (수확시기에 따른 새싹삼의 부위별 생육 및 Ginsenoside 함량 변화)

  • Background: Since the revised Ginseng Industrial Act was passed, ginseng sprouts have become a new medicinal vegetable for which there is high consumer demand. However, the existing amount of research and data on ginseng production has not kept pace with this changed reality. Methods and Results: In this study we analyzed the changes in the amounts of ginsenosides in different parts of growing ginseng sprouts during the period from when organic seedlings were planted in nursery soil until 8 weeks of cultivation had elapsed, which was when the leaves hardened. In the leaves, ginsenoside content increased 1.62 times with the panaxadiol (PD) system and 1.31 - 1.56 times with the panaxatriol (PT) system from 7 to 56 days after transplantation. During the same period, the total ginsenoside content of the stems decreased by 0.66 - 0.91 times, and those of the roots increased until the $21^{st}$ day, and then underwent steep declines. The effect of fermented press cake extract (FPCE) and tap water (TP) on the total amount of ginsenoside per plant were similar, and could be represented with the equations $y=1.4330+0.2262x-0.0008x^2$ and $y=0.9555+0.2997x-0.0031x^2$ in which y = ginsenoside content x = amount of and on the total amounts of FPCE or TP, respectively after 26.4 days, however, the difference between ginsenoside content with FPCE and TP widened. Conclusions: These results suggested that the amounts of ginsenosides in different parts of ginseng varied with the cultivation period and nutrient supply. These findings also provide fundamental data on the distribution of ginsenosides among plant parts for 2-year-old ginseng plants in the early-growth stage.
