The objective of this study is to establish outcome validity for three instruments that assess whether subjects met recommendations for daily servings of fruits and vegetables for“Stage of Change”research. A convenience sample of 294 college students was recruited from introductory nutrition classes at Michigan State University in the United States. To measure servings of fruits and vegetables, separately, three types of methods (self-rated intake, 24-hour recall and food frequency) were used in comparison to the servings from a three-day food record, the criterion used. The outcome validity was assessed based on whether or not at least two servings of fruits and three servings of vegetables were reported. Validity was assessed by sensitivity, to measure the ability to detect low intakes, and by specificity, to measure ability to detect adequate intakes. Cohen's kappa was used as well to examine the agreement between the three methods and a three-day food record. The results showed, for fruits, the 24-hour recall had the best agreement (recall 0.54, self-rated : 0.31, food frequency : 0.29) with a three-day food record for servings consumed by people in pre-action or post-action stages. Sensitivity for fruit was also best using a recall (0.81). For vegetables, however, all three methods had low agreement (food frequency : 0.27, recall : 0.21, self-rated : 0.17) with the results of the three-day food record. Self-rated intakes for vegetables had the best sensitivity (0.66) and the food frequency had the best specificity (0.73). Therefore, researcher can use the 24-hour recall method to identify people who consume inadequate servings of fruit. To detect adequate vegetable intake, the food frequency was best of the three methods. Accuracy may be improved by probing for vegetables in mixed dishes and on sandwiches. To determine the effects of circulation frequency of nutrient solution, three frequencies of 10min. on/10min. off; 10min. on/110min. off; and 10min. on/1,430min. off. treatments were applied to leafy vegetable production using deep flow technique (DFT) systems and their growth and phytonutrient content were investigated. In the 10min. on/I,430min. off treatment, dissolved oxygen concentration (DOC) 17 days after treatment decreased to 2.8mg. $L^{-1}$, known to be a low DOC that causes hypoxia, and thereafter decreased to 1.5mg. $L^{-1}$ 20 days after treatment. Fresh weight of 7 leafy vegetables in the 10min. on/1,430min. off treatment was lower by 0${\sim}$24% than those in the 10min. on/110min. off treatment, and those in the 10min. on/10min. off was higher by -2${\sim}$34% than those in the 10min. on/110min. off treatment as control. As the more frequent circulation was applied, the higher phosphorous content and the lower carbon to nitrogen ratio (C/N ratio) and total ascorbic acid contents were resulted. Results indicate that the circulation frequency of 110min, on/110min. off could be recommended for the production of the tested leafy vegetables in DFT systems.
Purpose: This study aimed to analyze the trends in kimchi, vegetable, and fruit consumption among the Korean population and identify the factors associated with this consumption. The goal was to provide fundamental data for developing appropriate guidelines to increase kimchi consumption by understanding its characteristics. Methods: The analysis utilized data from the Korea National Health and Nutrition Examination Survey (KNHANES) conducted between 1998 and 2020. A total of 81,680 adults, aged 30 years or older, were included in the trend analysis. For the analysis of factors associated with kimchi, vegetable, and fruit intake, a subgroup of 22,122 adults aged 30 years or older from the KNHANES (2016-2020) was divided into two groups: 30-64 years old and 65 years old or older. Since the KNHANES data employed a complex sampling design, the statistical analysis was conducted using the appropriate complex sampling design method. Results: The overall consumption of kimchi exhibited a declining trend among both men and women. Specifically, there was a significant decline in the intake of baechu kimchi among both genders. The decline in kimchi consumption above the standard was associated with a decrease in meal frequency and an increase in the frequency of eating alone. However, the patterns for unsalted vegetables and fruits differed compared to kimchi. Conclusion: In this study, there was a decline in kimchi consumption among both men and women, and the potential factors associated with this trend included Westernized dietary habits, the presence of a spouse who influenced dietary habits, and an increased frequency of solitary dining due to the rise in single-person households. Therefore, it is necessary to develop dietary guidelines that consider these factors.

The purpose of this study is to verify the relation between vegetarian diet and the risk factors of cardiovascular disease. To do the present study the vegetarians were selected; 127 Buddhist nuns (age : 23 ~ 79 yrs) from Oonmoon Temple in Choungdo District, Gyeongsang Book-do. For control subjects, 235 healthy female adults (age : 23~79yrs) were selected. They were the teachers, the nurses of the hospital of Gyeongsang National University and the housekeepers living in Chinju Gyeongsang Nam-do. This study was conducted from October 1996 to February 1997. The contents are consisted of anthropometric measurement, questionnaries about eating behavior and intake frequency of food group and clinical examination. The results were summarized as follows. The average ages of vegetarians and non-vegetarians were 44.2 yrs and 40.5 yrs respectively. Average body mass index (BMI) of vegetarians and non-vegetarians were 22.4 and 21.0, WHR were 0.8 and 0.8, percentage of body fat were 28.7 and 26.5 and the average duration of vegetarian diet of the vegetarians was 13.1 years. Eating behavior score of vegetarian was significantly higher than those of non-vegetarians. Eating behavior score was negatively of correlated with levels of serum total-cholesterol, LDL-cholesterol and atherogenic index (AI). In intake frequency of green vegetable, lemon-yellow vegetable, bumb and seaweeds of the vegetarians more than those of non-vegetarians. Levels of total cholesterol, LDL-cholesterol, AI, diastolic blood pressure, blood sugar and HDL cholesterol of non-vegetarians were significantly higher (p<0.01) than those of vegetarians, but ratio of HDL cholesterol/total-cholesterol was lower in non-vegetarians. Consequently, vegetable diet can be considerably diet help to decrease the risk of cardiovascular disease.
This study was carried out to obtain the information concerning the perception and utilization patter of the housewives about the edible oil and fats. Data were obtained through questionnaires from 442 housewives in Chonbuk area. The eating frequency of food that used oil & fat was affected by age, residing area and educational level. family's preference score of food that used oil & fats was 3.34 point in the 5 point scale. 47% of the subjects answered that the intake rate of oil & fats had more from vegetable oils than animal sauces. Most of the subjects had negative response such as increased cholesterol and body weight for psychological state after the intake of food that used oil & fats. The main reason why some housewives did not use frequently oil & fats was inconvenience of tidying up. The kinds of the oil & fat used frequently were soybean oil, sesame oil, com oil and perilla oil. The nutrition knowledge score rotated to oil & fat was 7.62 point in the 10 point scale. The eating frequency of food that used oil & fats and its preference were positively correlated. These results indicate that the housewives haute a widespread tendency to pursue a health and convenience in the utilization of edible oil & fats.
The health, anthropometry, food habits, food intake frequency and nutrition intake of 747(219 men and 528 women) elderly people living in Inchon were investigated. Mean BMI, WHR, triceps skinfold thickness, BIA, blood pressure of the subjects were 23.4, 1.0, 15.6mm, 28.6%, 137.5/78.8mmHg in men and 24.9, 0.87, 22.6mm, 36.2%, 130.8/73.8mmHg in women respectively. Over the half of the subjects perceived themselves unhealthy and 86.2% of the elderly suffered from one or more illness. Ratios of the smoking and the drinking elderly were 40%, 43% in men and 12%, 11% in women. The major reason to stop smoking or drinking was the concern about their health. Food habit score of the subjects was relatively high (14.45/18.0) but food intake frequency score were relatively low (21.18/33.0) except the food groups of cereal & grain, white vegetable and sweets. The foods consumed by the elderly were very limited in quality and also in quantity. The daily intakes of calorie, protein, iron, vit. B1, niacin and vit. C were less than 2/3 of RDA and the amounts of calcium, vit. A and vit. B2 consumption were less than 1/2 of RDA.

Housewives identified barriers to increasing vegetables and fruit consumption, including preference for other foods, lack of availability, cost, and time and effort to prepare. Several implications for nutrition interventions were suggested. First, a key motivation for these women was eating healthy food when they are pregnant, suggesting a persuasive appeal to use in interventions. Second, review of the women's current behaviors led to an identification of four specific behaviors that had the most potential for increasing overall consumption. Finally, the findings suggested ways in which nutrition interventions could address each of the barriers identified.
The purpose of this study was to evaluate the relationship between socioeconomic factors, health behaviors and overweight and to provide information in the policy making process for ensuring health equity. Data of 66,249 adolescents aged 12 to 18 years were derived from the Ninth Korean Youth's Risk Web-based Study, which was conducted in 2013. Multiple logistic regression analysis revealed that overweight were related with gender, parental education, frequency of having breakfast, fruit consumption, vegetable consumption, snack consumption, and frequency of physical activity. Therefore public health programmes should target unhealthy behaviour of adolescents from lower socioeconomic groups to help prevent future life-course disadvantages in terms of health and social inequalities.
BACKGROUND/OBJECTIVES: This study examined the associations between food consumption frequency of Korean adults and self-perceived chewing difficulty, using the food frequency questionnaire (FFQ, 112 items) from 2013-2016 of the Korea National Health and Nutrition Examination Survey (KNHANES). SUBJECTS/METHODS: Subjects were divided into not difficult in chewing (NDC) and difficult in chewing (DC) groups, with 24.17% being classified into DC. Males and females consumed 35 and 37 items less frequently than the other sex, respectively. Due to the remarkable gender difference in food consumption, gender-stratified one-sided survey regression analysis was performed after adjusted for the effect of age, household income, and self-rated health status. RESULTS: Thirty-four items of FFQ were significantly less consumed by the DC group. Females exclusively consumed less beverages and alcohol while males showed the same for fruits and milk·dairy products. Consumption frequency of 8 items such as steamed potatoes·grilled potatoes, stir fried beef, other kimchi·fresh vegetable kimchi, orange, sour pork·pork cutlet, tteokbokki and green tea were significant only in males. In contrast, 17 items including cooked rice with other grains and legumes, boiled egg·steamed egg, Korean cabbage kimchi, banana, and tofu stew·soft tofu stew were significant only for females. Finally, items that showed significance for both were 9 items including loaf bread, ready-to-eat cereal, steamed sweet potatoes·grilled sweet potatoes, stir-fried lotus roots·stir-fried burdock, green laver salad·brown seaweed salads, apples, tomato·cherry tomatoes, squid (raw, dried shredded, boiled, stir-fried), and curd type yogurt. CONCLUSIONS: Findings in this study suggest chewing difficulty may be an important nutritional issue that has to be dealt with for healthful food consumption, with distinct interest of gender.
During handling unitized products, they are subjected to a variety of environmental hazards. Shock and vibration hazards are generally considered the most damaging of the environmental hazards on a product and it may encounter while passing through the distribution environment. A major cause of shock damage to products is drops during manual handling. The increasing use of unitization of pallets has been resulted in a reduction of the shock hazards. This has caused an increasing interest in research focused on vibration caused dam age. Damage to the product by the vibration most often occurs when a product or a product component has a natural frequency that falls within the range of the forcing frequencies of the particular mode of transportation being used. Transportation vibration is also a major cause of fruit and vegetable quality loss due to mechanical damage. This study was conducted to determine the vibration characteristics of the corrugated fiberboard bones for packages of pears, and to investigate the degree of vibration injury of the pears in the boxes during the simulated transportation environment. The vibration tests were performed on an electrohydraulic vibration exciter. The input acceleration to exciter was fixed at 0.25 G for a single container resonance test and 0.5 G for the vertical stacked container over the frequency range from 3 to 100 Hz. Function generator (HP-33120A) was connected by wire to the vibration exciter for controlling the input acceleration at a continuous logarithmic sweep rate of 1.0 octave per min. The peak frequency and acceleration on the single box test were 22.02 Hz, 1.5425 G respectively, and these values on the vertical stacked boxes were observed from the bottom box 19.02, 18.14, 16.62 and 15.40 Hz and 2.2987, 3.7654. 5.6087, and 7.9582 G, respectively. The pear in the bottom box had a slightly higher damage level than the fruit packed in the other stacked boxes. It is desirable that the package and transportation system has to be so designed that 15∼20 Hz frequency will not occur during the transportation environment.
