This study was conducted to investigate the disease preventive behavior and health promoting behavior of a community residents. The subjects were selected by convenient sampling and the total number was 300(Female, 170, Male, 130). The data were collected by face to face interviews during the period of Sep. 15-30, 1999. The measurement tool for this study was the rating score for disease preventive behavior and health promoting behavior. The instrument was developed by the researcher based on the tool of Korea Institute for Health and Social Affairs. The data were analyzed by percentage, mean, t-test, ANOVA. $x^2-test$ by Windows SPSS/PC program(v7.5). The results were as follows: 1. In the comparison of disease preventive behavior rates between male and female, there was a statistically significant difference in physical examination, measuring the blood pressure and vaccination for B type hepatitis. In the comparison of disease preventive behavior rates among the age, there was a statistically significant difference in physical examination, measuring the blood pressure. 2. The rating score for the health promoting behavior of the men subjects was lower than that of the women subjects. In the comparison of health promoting behavior scores between male and female, there was a statistically significant difference in smoking, drinking, regular exercise, breakfast eating, vegetable consumption and teeth brushing. In the comparison of promoting Behavior scores among the age, there were significant difference, there was a statistically significant difference in smoking, sleeping, seat belt use, breakfast eating and salty eating.
Hypertension and obesity are important modifiable risk factors for cardiovascular disease, the leading cause of death in Korea. Therefore, we assessed the association between dietary pattern and obesity in hypertensive patients to formulate health promotion strategies for the older population. Dietary information was collected from hypertensive patients visiting community health education and information center by using 24 hour recall method. The 2005 DRIs for Koreans was used to evaluate the dietary adequacy. When subjects were categorized by body mass index (BMI) as normal, overweight and obese, no significant difference in energy intake was found among groups. Dietary intakes of folate, and vitamin C in obese hypertensive patients were significantly lower than in normal weight patients (p < 0.05). When we compare the nutritional status by waist circumferences, dietary intakes of zinc, vitamin A, thiamin, vitamin C and folate were significantly lower in the obese group. Vegetable intake was significantly lower in the obese group according to BMI as well as waist circumference. Energy intake from carbohydrate was significantly higher in obese hypertensive patients (p < 0.05). Obese hypertensive patients had a higher risk of nutritional inadequacy compared to normal weight patients. Our results indicated the need for developing interventions that encourage greater consumption of vegetables while cutting down salt intake with wise selection of staple foods, for obese hypertensive patients.
Consumption of pepper, a major spice vegetable used for seasoning Kimchi, continues to increase, but cultivation is in decline due to shortage of rural labor in Korea. The 39.2% of total labor requirement for conventional pepper cultivation was available for harvesting work. Therefore conventional manual harvesting should be turned to mechanical harvesting for labor-saving, cost-reducing and easy work. Surveys on conventional pepper cultivation patterns, labor requirements for various pepper cultivation works, and farmers' opinions on the mechanization of pepper harvesting were conducted to obtain basic informations. The labor requirement for pepper harvesting was 954 h/ha out of a total labor requirement of 2,436 h/ha for pepper cultivation. Harvesting was the hardest work, and hiring workmen for harvesting was also difficult. Farmers preferred to develop a small-scale pepper harvester using agricultural tractor or cultivar. Most farmer agreed to change cultivation pattern for mechanization of pepper harvesting, but hesitated to adopt new one-time-harvesting pepper varieties.
To develop Allium victorialis var. platyphyllum (Liliaceae) for an available functional food, pharmacological experiments on the extracts of this plant were undertaken in the rat treated with streptozotocin, poloxamer-407 and $CCl_4$. The two MeOH extracts were obtained from the leaves and the bulbs, respectively. The three agents, streptozotocin, poloxamer-407 and $CCl_4$, were treated to induce diabetes mellitus, hyperlipidemia and hepatic injury, respectively. Treatment with the leaf extract lowered blood glucose by 24.9% at 200 mg/kg (p.o.) in the STZ-treated rat and prohibited the increase of body weight, water consumption and food intake. This exσact also significantly decreased not only thε plasma cholesterol and triglyceride in the poloxamer-407-treated rat by 35.3% but also serum ALT by 49.0%. The potency was found by overall estimation on the experimental results as followings: 200 mg/kg leaf extract> 200 mg/kg bulb extract> 100 mg/kg leaf exσact> 100 mg/kg bulb extract. These results suggested that this plant might have the availability for a functional food. It was also suggested that the leaves are more effective than the bulbs for the functional vegetable, especially in hyperlipidemia and hepatic injury.
As a result of life-style changes, consumer's concerns of food have shifted from calories and nutrition to health and convenience. Fresh-cut products are one such new direction for fruit and vegetable consumption. In this study, the vitamin C, mineral, and pesticide contents of various fresh-cut products were analyzed. According to sensory evaluations, the key reason for a lower than expected overall acceptability of many fresh-cut products is that they are likely to have browning and can easily lose their freshness. Also, the sensory evaluation showed that shriveling, the degree of browning, softening around the cut edge, and off-flavors were the primary factors affecting the quality of fresh-cut products. As a nutritional factor of quality, vitamin C content was not practical with regard to fresh-cut lettuce because the level was very low. For product safety, residual pesticides were detected in the fresh-cut products, but the results showed that all items were under permitted levels and considered safe. In evaluation of the microbial levels of the fresh-cut market products, the levels of viable cells, mold, yeast, coliform bacteria, and enterobacteriaceae were not significantly different based on the summer and winter seasons. The levels of S. aureus and Listeria spp. in the products were higher during the summer season than the winter.
The purpose of this study was to evaluate the diversity of food intake among Korean college students of a nutrition education course through the internet. Subjects were 796 nation-wide college students (male 278, female 518). A dietary survey collected from 3 day-recalls were analyzed by the Computer Aided Nutritional Analysis Program. Diet variety was assessed by DDS (dietary diversity score), MBS (meal balance score), and DVS (dietary variety score). The foods consumed in largest amounts were rice (54.42 g), citrus fruit (36.41 g) and milk (30.91 g). The foods consumed most frequently were rice (65.28%), garlic (63.65%) and salt (63.64%). The average food intake was 1325.3 g (male 1420.6 g, female 1274.1 g), with vegetable and animal food comprising 78.5% and 21.5% of total food intake, respectively. The consumption of the major five food groups comprised DDS, and 66.0% (male 56.1%, female 71.3%) of subjects had a DDS of 5 and 27.4% (male 33.5%, female 24.1%) of subjects had a DDS of 4..Groups most frequently missed were dairy products (56.5%) and fruits (41.6%). The average of MBS were 10.88 (11.61 in Seoul, 11.03 in Kyungsang, 10.88 in Chungcheong, 10.85 in Incheon, 10.57 in Kyunggi) in male and 11.08 (11.47 in Kyungsang, 11.20 in Seoul, 11.18 in Kyunggi, 10.82 in Chungcheong, 10.64 in Incheon) in female. Male students in Seoul (18.2) and female students in Kyungsang (18.6) had the greater number of consumed food items. Subjects who had higher DDS had significantly higher DVS (p < 0.001). Based on these results, the food intake of the subjects regarded as not adequate, especially with regards to the dairy and fruit groups. Considering their nutritional characteristics, dietary guidelines as well as education should be made to improve the food intake and include various foods in their diet.

The consumption of fresh vegetables has been related to recurrent outbreaks of foodborne diseases (FBD) worldwide. Therefore, the development of effective alternative technologies is necessary to improve the safety of these products. This study aimed to isolate and identify epiphytic lactic acid bacteria (LAB) from fresh fruits and leafy vegetables and characterize their antagonistic capacity due to their ability to produce bacteriocins or antibacterial compounds. For this, 92 LAB isolates from fruits and leafy vegetables were screened for antagonistic activity. Two strains with the highest and broadest antagonistic activities were selected for further characterization; one from cantaloupe melon (strain CM175) and one from cilantro leaves (strain C15). The cell-free supernatants (CFS) of CM175 and C15 were found to exhibit antagonistic activity against FBD-causing pathogens. The CM175 and C15 strains were identified as Pediococcus pentosaceus and Lactobacillus graminis, respectively. Notably, the P. pentosaceus CM175 CFS stopped the growth of Salmonella Typhimurium, Salmonella Saintpaul, Staphylococcus aureus, and Listeria monocytogenes, and delayed Escherichia coli O157:H7 growth. Moreover, L. graminis C15 CFS delayed the growth of all indicator pathogens, but did not completely stop it. Organic acids and bacteriocin-like molecules were determined to be possibly exerting the observed antagonistic activity of the identified LAB strains. Thus, application of the antagonistic compounds produced by Pediococcus pentosaceus and Lactobacillus graminis could be a novel and ecological strategy in developing antimicrobial biopreservatives for the food industry and mitigating FBD by reducing the biological contamination in fruit and vegetable orchards, mainly via their potential in controlling both gram-negative and gram-positive pathogenic bacteria.
Purpose: The purpose of this study was to examine the differences in preventive health behaviors of school-age children according to their mothers' health beliefs and attitudes toward the prevention of infectious diseases. Methods: This study was conducted with 121 pairs of 4th to 6th grade elementary school children and their mothers from October 13 to October 30, 2020. The collected data were analyzed using descriptive analysis, an independent t-test, a one-way ANOVA, Sheffé's test, Pearson's correlation coefficient analysis and a multiple linear regression. Result: The mean and SD of mother's health belief in preventing infectious diseases was 3.58±0.41, the mean and SD of mother's attitude toward preventing infectious diseases was 3.39±0.38, and the mean and SD of late school-age children's preventive health behavior was 3.52±0.37. The multiple linear regression results show that the children's vaccination behavior was influenced by their mothers' perceived benefits in preventing infectious diseases. In addition, the child's vitamin C and vegetable consumption was influenced by the mother's perceived susceptibility in preventing infectious diseases, and the child's mask-wearing behavior was influenced by the mother's perceived seriousness in preventing infectious diseases. Conclusion: In order to improve the health behavior of school-aged children, programs or education are required to enhance the health beliefs and attitudes of their mothers, who were shown to affect the preventive health behavior of their children.
BACKGROUND/OBJECTIVES: The objective of this study was to describe the development process of the Korean Healthy Eating Index (KHEI) based on the Korea National Health and Nutrition Examination Survey (KNHANES). SUBJECTS/METHODS: The components of KHEI were selected based on Dietary Guidelines for Koreans, domestic and overseas dietary quality indices, and results of the analysis of association with chronic diseases. The standards for scoring of KHEI were selected based on the 2015 Dietary Reference Intakes for Koreans (KDRI). The KHEI scores of Korean adults were calculated using a 1-day 24-h recall data in the 2013-2015 KNHANES. RESULTS: The KHEI included eight adequacy components evaluating the proper intake of recommended foods such as fruit, vegetable, and milk and three moderation components evaluating the consumption of food that limit intake such as sodium and saturated fatty acid. In addition, three balance components assessing the balance of energy intake were included. The KHEI score was defined to range from the minimum of 0 point to the maximum of 100 points. Among Korean adults, the total KHEI score was 63.2 out of 100. Gender and age differences were found in the average of total KHEI scores. Women showed higher score than men (61.7 in men and 64.7 in women, respectively). By age group, 20s and 30s showed the lowest scores with 57.4 and 61.1 respectively, and the scores increased with age by peaking at 67.8 in ages 60-69 and slowed down again in ages 70 or over. CONCLUSIONS: The KHEI can be useful for establishing and assessing national nutritional policies and in epidemiological studies to assess the relationship between overall dietary quality and chronic diseases. KHEI will need to be continuously updated to reflect changes in dietary guidelines and the KDRI.
This study was conducted to identify the major dietary patterns of Korean adult men and to examine the relationship between subjective stress perception and these dietary patterns using data from the 2014~2016 Korean National Health and Nutrition Examination Survey (KNHANES). Of the 23,080 total subjects, adult men between the ages of 19 and 64 who did not take the questionnaire or answer the questions relating to depression, and cases where the daily energy intake was less than 500 kcal or more than 5,000 kcal in the Food Frequency Questionnaire were excluded. This left a total of 3,464 subjects who were included in the final analysis. We performed a factor analysis based on the yearly mean intake frequency of 41 food groups to identify the major dietary patterns. Three major dietary patterns were identified (factor loading >0.3), including the 'Healthy pattern', 'Processed meat pattern', and the 'Alcohol pattern'. The 'Healthy pattern' was characterized by higher intake of beans, tofu, vegetable, fish, and fruits. The 'Processed meat pattern' was characterized by high consumption of processed meats and instant foods. The 'Alcohol pattern' was characterized by a higher intake of alcohol. As a response to the subject's subjective perception of stress, the most answered 'a little' according to age, marital status, occupation, income, residential area, smoking status, drinking status, and exercise status. People whose diets followed the 'Processed meat' and 'Alcohol' patterns had significantly higher scores on subjective stress perception compared to people following the 'Healthy pattern'. To manage subjective stress, it is more effective to maintain health by relieving stress through a healthy method that combines healthy eating and exercise rather than following an unhealthy diet as characterized by the 'processed meat' and 'alcohol' dietary patterns.
