A Kinetic Study on the Hydration Process of Barley Kernels with Various Polishing Yields (도정수율별 보리의 수화공정(水和工程)에 관(關)한 속도론적(速度論的) 연구(硏究))

  • The hydration characteristics of barley kernels with various polishing yields were investigated at temperatures of $20-60^{\circ}C$ and their sorption kinetics were studied. The moisture gain in initial stage of hydration was directly proportional to square root of hydration time and there was a break point at the moisture gain of 0.45-0.55g $H_2O/g$ solid. The hydration rate was great in order of polishing yield of 50, 70, 95, 90 and 100%, and increased with increasing hydration temperature. The diffusivity of water into barley kernels followed Arrhenius equation, and the activation energies in hydration reaction of polished barley were ranged from 6.9 to 9.5 Kcal/mole and that of non-polished one was 11.6Kcal/mole.

  • The atomization of barley tea concentrate with paint spray gun of two fluid nozzle was investigated. The physical properties of barley tea concentrate were correlated to the operating parameters; soluble solid concentration, viscosity, specific gravity and surface tension. The air to liquid feed ratios at various barley tea concentration were correlated to the air pressures applied. The diameters of sprays at various air pressures (from 164 mmHg to 564 mmHg) and soluble solid concentrations (from 3.1% to 25.2%) were also investigated.

Effects of Water Activity on Crispness and Brittleness, and Determination of Shelf-life of Barley Flake (보리 후레이크의 수분활성도(水粉活性度)가 Crispness와 Brittleness에 미치는 영향(影響) 및 품질수명의 결정)

  • The texture characteristics, crispness and brittleness, of the barley flake developed by FRI in 1980 were measured with both sensory and instrumental methods. Bend and penetration test were done to determine those characteristics instrumentally, and compared each other and with sensory evaluation. And the changes in those characteristics with various water activity were studied, and the textural critical water activity was acquired. The shelf-life was also estimated with various packaging materials. It was found that crispness could be represented as the reciprocal of deformation and brittleness as that of fracture force in the barley flake. Both crispness and brittleness decreased as water activity increased. And the results from the penetration test correlated better with those from the sensory evaluation than the bend test's. The average shelf-life of the barley flake was 43 days in PE film and 9400 days in laminated Al foil on the basis of only textural characteristics.

Enhanced Antioxidant Enzymes Are Associated with Reduced Hydrogen Peroxide in Barley Roots under Saline Stress

  • Antioxidant enzymes are related to the resistance to various abiotic stresses including salinity. Barley is relatively tolerant to saline stress among crop plants, but little information is available on barley antioxidant enzymes under salinity stress. We investigated temporal and spatial responses of activities and isoform profiles of superoxide dismutase (SOD), catalase (CAT), ascorbate peroxidase (APX), non-specific peroxidase (POX), and glutathione reductase (GR) to saline stress in barley seedlings treated with 200 mM NaCl for 0, 1, 2, 5 days, respectively. In the control plant, hydrogen peroxide content was about 2-fold higher in the root than in the shoot. Under saline stress, hydrogen peroxide content was decreased drastically by 70% at 2 d after NaCl treatment (DAT) in the root. In the leaf, however, the content was remained unchanged by 2 DAT and increased about 14 % at 5 DAT. In general, the activities of antioxidant enzymes were increased in the root and shoot under saline stress. But the increase was more significant and consistent in the root. The activities of SOD, CAT, APX, POX, and GR were increased significantly in the root within 1 DAT, and various elevated levels were maintained by 5 DAT. Among the antioxidant enzymes, CAT activity was increased the most drastically. The significant increase in the activities of SOD, CAT, APX, POX, and GR in the NaCl-stressed barley root was highly correlated with the increased expression of the constitutive isoforms as well as the induced ones. The hydrogen peroxide content in the root was most highly correlated with the CAT activity, indicating an increased role of CAT in hydrogen peroxide detoxification under salinity stress. In addition, the results suggest the significance of temporal and spatial regulation of each antioxidant isoform in determining the competence of the antioxidant capacity under saline stress.

The Use of Multiple Seed Vigor Indices to Predict Field Emergence and Grain Yield of Naked and Malting Barley (복합종자세지수를 이용한 보리 포장출아률과 수량예측)

  • In order to estimate field seedling emergence and grain yield by the information collected from various laboratory seed vigor tests, each two malting and naked barley cultivar seeds were artificially aged according to the standard aging treatment suggested by the Association of Official Seed Analysts. The seed vigor tests adopted were warm- and cold-germination test, tetrazolium vigor test and electrocon. ductivity test. Field emergence of malting barley (Y) was estimated by Y=-2.962+0.229X$_1$ (% warm germination) -0.001X$_2$ (vigor of warm germination test: WGT) +0.354X$_3$ (vigor of cold germination test: CT) -0.558X$_4$ (% cold germination). The multiple correlation coefficient indicated that % warm germination. was contributed 64 % of the variation in seedling emergence rate of malting barley. The vigor of warm and cold germination tests, and % cold germination contributed additional 4, 7, and 9%, respectively, upon addition of the variables into regression. For naked barley, the regression equation of emergence rate was less efficient(R$^2$=54%) than that of malting barley(R$^2$=84%). A model to predict grain yield by the results of various seed vigor tests was not evaluated for both malting and naked barlev.

Contents of $\beta$-Glucan in Various Cereals and Its Functional Properties

  • A soluble dietary fiber, $\beta$-glucan, contained in oat and barley has nutritional benefits such as hypocholesterolemic effects and influences blood glucose regulation. The contents of $\beta$-glucan in both cereals range from 3 to 7% with the exception of a certain barley genotype which contains up to 16% $\beta$-glucan. $\beta$-Glucan is distributed mainly in the cell walls of endosperm and the distal (bran) portion of kernel. Various procedures have been developed for increasing the extraction yield of $\beta$-glucan. Oat gum prepared with weak alkali extractionand alcohol proecipitation following protein removal usually contains 80% $\beta$-glucan.The most commonly used method for $\beta$-glucan quantitiation is an enzymatic procedure combining lichenase plus $\beta$-glucosidase followed by measuring the amount of glucos released by glucose oxidase-peroxidase treatment. The increase in foam-and emulsion-stabilizing capacity of $\beta$-glucan is due to the increase in viscosity of the aqueous phase. Therefore, $\beta$-glucan shows great potentials as a thickener and a stabilizer.

  • The bread-baking properties of mixed naked barley/wheat flour blends with various food additives were investigated in the study, and changes of loaf volume of mixed naked barley/wheat flour blends prepared by lactic acid method were observed. Addition of egg yolk, soybean flour, gluten, C.M.C. and ascorbic acid were levels of 7%, 10%, 4% ,1% and 100 ppm, respectively. The addition of these food additives to 50% barley/50% wheat flour blends yieled an increase in loaf volume. Specific loaf volumes of 50% barley/50% wheat flour blend with egg yolk, soybean flour, gluten, C.M.C. and ascorbic acid were 2.85, 2.04, 2.69, 2.77, 2.56 and 2.56 ml/g bread, respectively. As the replacement percentages of wheat flour increased, the effect of food additives on loaf volume increased. In particular, the specific loaf volume of 30% barley flour/70% wheat flour blend was similar to that of 100% wheat flour bread.

  • The cropping management factor, C, in the Universal Soil Loss Equation (USLE) has been measured on a newly reclaimed Yesan sandy loam of 20% slope under various cropping system. Soil losses measured from lysimeter were 12.9, 5.4, 3.1, and 1.2 ton/10a for clean tilled, corn, barley-soybean, and grass, respectively. The values of C to be utilized in Soil-Loss Equation was obtained as fallows; corn 0.47, upland rice 0.34, barley-soybean 0.18, barley-sweet potato 0.10, grass 0.08, barley-corn 0.34, wheat-soybean 0.25, barley-corn (Soybean) 0.42, barley-corn (sweet potato) 0.37, wheat-sesame 0.20, barley-red pepper 0.18, red pepper 0.32, sesame 0.28, potato-soybean 0.26, respectively. According to the comparisons between the actual soil loss measured by lysimeter and the soil loss predicted by the USLE, the smallest difference of both method came from barley-soybean while the largest came from corn.

  • Contents of inorganic compounds in various cereals (Rice: 62, Barley: 39, Soybean: 58, Unhulled barley: 59) collected from Youngnam Districts in 1989 were determined by the atomic absorption spectophotometer. The results abtained as follows: The ranges of zinc level in rice, barley, soybean and unhulled barley were 46.91-76.28 ppm, 42.24-77.06 ppm, 73.39-103.69 ppm and 48.08-272.49 ppm, and those of manganes in each samples were 4.96-14.75 ppm, 20.62-16.28 ppm, 23.31-42.488 ppm and 23.52-30.15 ppm respectively. The ranges of iron level in rice, barley, soybean and unhulled barley were 65.38-141.33 ppm, 52.22-133.25 ppm, 106.32-240.20 ppm and 66.44-108.64 ppm, and those of calcium in each samples were 10.25-33.67 ppm, 68.94-136.62 ppm, 492.20-967.84 ppm and 75.30-165.85 ppm respectively. Meanwhile, contents of sodium in rice, barley, soybean and unhulled barley were 291.60-453.60 ppm, 462.25-773.60 ppm, 463.83-792.67 ppm and 777.90-950.90 ppm and those of potassium in above samples were 716.00-1180.60 ppm, 1363.60-1686.00 ppm, 2233.84-2792.67 ppm and 2042.10-2141.46 ppm respectively.

Effect of Seeding Date and Rates on Rice Growth and Yield in Barley / Rice Relay Cropping System (보리 입모중 벼 파종시기 및 파종량이 생육과 수량에 미치는 영향)

  • To investigate the effect of seeding date, seeding rate, and sprouted seeds on seedling establishment, yield and its components of rice in barley /rice reley cropping as a minimum tillage, Gancheokbyeo rice seeds sowed by hand broadcast in various overlapped days befer barley harvest. The highest rice seedling stand was at sowed on the day just before barley harvest and l00kg per hectare of seeding rate with sprouted seeds. Also number of tiller and panicle showed the similar tendency. Delayed rice heading dates were found 2 days at l0-day overlap, 2 days at 5-day overlap, and 4 days at 0-day overlap before barley harvest compared with machine transplanting rice at just after barley harvest using l0-days old seedling. The culm length of broadcast rice shortened 2∼4cm compared with the transplanting rice. The rice plants lodged slightly at seeding rate l00kg per hectare and at sowed on the day of barley harvest. The rice panicle number increased with later date sowing and higher seeding rate. Number of spikelets per panicle and ripened grains decreased at higher seeding rates. Sprouted seeds and higher seeding rates showed higher rice yield at later sowing dates.
