This study was designed to investigate the effects of calcium supplementation on calcium metabolism in seven healthy college women, aged from 19 to 21 years old. For this purpose, metabolic studies were conducted for two weeks. During the first week, the subjects ate experimental diet which nutrients composition was similar to their usual intake. And during the consecutive second week, they ate the same experimental diet supplemented with 500mg of calcium daily. The results were summarized as follows ; 1) Fecal excretion of calcium increased significantly (P<0.05), but urinary excretion of that did not show any change after supplementary intake of calcium. 2) Mean apparent calcium absorption was 28.5% and retention was 182mg/day when subjects ate the experimental diet without calcium supplementation. Calcium retention was significantly ate the experimental diet without calcium supplementation. Calcium retention was decreased to 24.1% by additional intake of calcium. 3) Phosphorus balance did not show any change after additional intake of calcium. 4) Serum calcium level was also not changed by additional intake of calcium. 5) Serum calcium level increased significantly(P<0.05) but serum phosphorus level did not show any change after additional intake of calcium. The above results showed that supplementation of 500mg calcium daily can be helpful to increase calcium retention as well as the peak bone mass in young women eating usual Korean diets.

BACKGROUND/OBJECTIVES: Despite the importance of a low-iodine diet (LID) for thyroid cancer patients preparing for radioactive iodine (RAI) therapy, few studies have evaluated dietary intake during LID. This study evaluated the amount of dietary iodine intake and its major food sources during a typical diet and during LID periods for thyroid cancer patients preparing for RAI therapy, and examined how the type of nutrition education of LID affects iodine intake. SUBJECTS/METHODS: A total of 92 differentiated thyroid cancer patients with total thyroidectomy were enrolled from Seoul National University Hospital. All subjects completed three days of dietary records during usual and low-iodine diets before $^{131}I$ administration. RESULTS: The median iodine intake was $290{\mu}g/day$ on the usual diet and $63.2{\mu}g/day$ on the LID. The major food groups during the usual diet were seaweed, salted vegetables, fish, milk, and dairy products and the consumption of these foods decreased significantly during LID. The mean energy intake on the LID was 1,325 kcal, which was 446 kcal lower than on the usual diet (1,771 kcal). By avoiding iodine, the intake of most other nutrients, including sodium, was significantly reduced during LID (P < 0.005). Regarding nutritional education, intensive education was more effective than a simple education at reducing iodine intake. CONCLUSION: Iodine intake for thyroid cancer patients was significantly reduced during LID and was within the recommended amount. However, the intake of most other nutrients and calories was also reduced. Future studies are needed to develop a practical dietary protocol for a LID in Korean patients.
balance and to estimate daily energy requirement in 43 Korean female college students maintaining their usual diet and activity level. Energy intake and expenditure were measured in two separate periods about one month apart, each period lasting for 3 days. All the subjects participated in both periods. Energy intake was assessed by two methods ; weighed diet record and duplicate portion analysis of diet minus fecal and urinary excretion. Mean daily energy intake level calculated from diet records was 28.5 kcal/kgB.W(1, 476 kcal/day), and similar to the level of 27.8 kcal/kgB.W(1, 438 kcal/days) obtained from the chemical analysis of duplicate portions. Mean daily energy expenditure, calculated from activity records of each subject, was 34.6 kcal/kgB.W, or 1.39 times BMR, which corresponds to light activity level. Mean daily energy balance of subjects was -5.9 kcal/kgB.W. Mean daily requirement of energy, calculated from the activity records of the subjects, was 34.6 kcal/kgB.W, similar to the level of the Korean RDA for light activity level. The results of this study indicate that 1) the activity level of the study subjects corresponds to the sedentary level ; 2) present Korean RDA for energy for light activity is adequate for the subjects ; and 3) the subjects should increase their energy intake since they are largely in negative energy balance.
This study aims to get basic datea on the usual dietary forms of many korean families bringing up either elementary, or junior high or senior high students. Our interest is focused on which factor is decisive in shaping their diet, which way of cooking is preferred and how the korean traditional way of diet is preserved. 407 of housewives of suweon city answered the questions, and the result shows that more than half of them (54.1%) decide the contents of their diet according to their husbands’ taste 77.4% of them regard dinner as the most important meal. The number of side dishes are usually 3 or 4 (57.2%). In preparing their diet, 41% take account of ‘taste’ first, but for many of college graduate housewives ‘nutrition’ is the primary concern. As for main dish, cooked rice (55.3%), and soybean soup (66.1%) are preferred. Both meat and fish are commonly grilled. 83.1% of them enjoy dining out once or twice a month, and when they they dine out, korean-style restaurant is preferred (43.7%). The most frequently used processed food is ham (19.2%), and secondly, ramyon (17.8%).
The Ca and P balance studies were carried out with two different diets varying Ca levels : the current Korean RDA level(normal Ca diet) and the high level (High Ca diet) which was determined by adding 2SD to mean Ca intake of all subjects. The subjects were sever healthy adult woman, aged from 25 to 32 years old. The metabolic studies were conducted for two weeks with a days recess in between : during the fist week with normal Ca diet and during the second week with high Ca diet. The composition of nutrients excepting Ca of both diets was similar to subjects usual intake. The result were summarized as follows: Mean daily Ca intake was 728.8mg from norma Ca diet and 945.5mg from high Ca diet. Fecal excretion of Ca increased significantly(p<0.05) on high Ca diet, but urinary excretion of Ca did not show any differences between the two diet periods. There were also no significant differences in Ca retention between the two diet periods but it tended to be greater during high Ca diet period: 112.1mg/day during normal Ca diet period vs 208.2mg/day during high Ca diet period. Mean apparent Ca absorption was 41.2% on normal Ca diet and 42.1% on high Ca diet, indicating it was not affected by high Ca intake level used in this study. On the contrary, P retention was significantly increased up to 109.4mg/day with high Ca diet as compared to- 41mg/day with normal Ca diet. There were no significant differences in fecal and urinary excretion of P but those to be lower during high Ca diet period. The above results showed that higher Ca intake more than current RDA(700mg/day), in the level of 945.5mg/day, could increase Ca retention through Ca absorption comparable to the rate appeared on RDA level intake. P retention was also improved by high Ca intake. Therefore, higher Ca intake than the current RDA level seemed to produce favorable effects on bone health in adult women. However, the current RDA level seemed to be relatively appropriate, considering the results that all the subjects but one maintained positive Ca balance with normal Ca diet. The possibility that high, long-term intake of carbohydrates that are rapidly absorbed as glucose may increase the risk of type 2 diabetes has been long-standing controversy. A high consumption of carbohydrates with a high glycemic index produces greater insulin resistance than did the intake of low glycemic index carbohydrates. This study was designed to evaluate the cabohydrate intake status include glycemic index and correlation carbohydrtae intake status with anthropometry factors & other nutrients in usual diet of the Korean type 2 diabetes mellitus. In 104 tpye 2 diabetes mellitus patients(mean age : 51.8yr, male=44.femal=60), we determined carbohydrte intake status include glycemic index with 24hr recall method and measured anthropometry. Mean daily carbohydrtae intakes and glycemic index were 307.3g(male 323.1g, female 295.5g) and 90.7(male 93.4, female 88.8), respectively. We found a strong and statistically significant association between carbohydrate ratio and glycemic index in obese factors, other nutrient. But carbohydrate intake/kg of body weight was low a significant differences in obese factors, other nutrient. Also glycemic index was effected by total energy intake and carbohydrate ratio than carbohydrate intake/kg of body weight. In conclusion, emphasis for dietary modification should be total energy intake and carbohydrate ratio in diabetes mellitus patient.

The above results showed that daily supplementary intake of calcium can be effective to decrease diastolic blood pressure through inducing the change of sodium metabolism in young women eating usual Korean diets.
A study was conducted to investigate nitrogen balance and to estimate daily nitrogen requirement in 43 Korean female college students students maintaining their usual diet and activity levels. Nitrogen intake and excretion were measured in two separate peroids about one month apart, each period lasting for 3 days. Nitrogen intake was assessed by duplicate portion analysis of diet, and N excretion in faces and urine were measured during the study period. Mean daily nitrogen intake level was 129.3mg/kg B.W and the apparent digestibility of nitrogen was 76%. Mean daily urinary nitrogen excretion was 113.5mg/kg BW. 895 of total nitrogen intake. Mean daily nitrogen balance of subjects was -14.5mg/kg BW. Mean daily requirements of nitrogen for 0 balance, calculated by regression analysis of N balance and energy-adjusted N intake. were 1) 197.mg/kg B.W with the present energy intake level of the study subjects. 2) 157mg/kg B.W when energy intake is sufficient to maintain energy balance, and 30 130mg/kg B.W. when energy intake is Korean RDA level for moderate activity. When energy intake level is sufficient to meet their requirement, daily protein requirement for 0 balance is about 1.0g/kg B.W. The results of this study indicate that nitrogen intake level of young female college students is not sufficient to meet their requirements, and they should increase protein intake together with increase in energy intake.
BACKGROUND/OBJECTIVES: This study aimed to evaluate the food sources of zinc and the usual intake of dietary zinc among Korean toddlers and preschool children. SUBJECTS/METHODS: A total of 2,679 children aged 1-5 years was selected from the 2009-2013 Korea National Health and Nutrition Examination Survey (KNHANES) data. Dietary data collected from a single 24-h recall were used to evaluate the food sources of zinc. To estimate usual zinc intake, the distribution obtained from single 24-h recall data in the total sample was adjusted using the ratio of within-to-between-person variance in zinc intake obtained from 2-day 24-h recall sub-sample data of the 2009 KNHANES. The proportion of children with usual zinc intake below the estimated average requirement (EAR) and above the tolerable upper intake level (UL) was assessed. RESULTS: The main sources of zinc in Korean children were grains, dairy products, and meat. The mean usual intakes of zinc among all individuals, those aged 1-2 yrs, and those aged 3-5 yrs were 5.50, 5.01, and 5.83 mg/d, respectively. In all participants, 1.1% of the children consumed zinc below the EAR, whereas 10.7% exceeded the UL. The proportion of children with excessive zinc intake was 25.6% in the 1-2 yrs age group and 0.6% in the 3-5 yrs age group. CONCLUSIONS: According to the current UL, the risk of excessive zinc intake appears to be high among Korean toddlers. Future studies that monitor the health effects of excessive zinc intake are needed to appropriately guide zinc intake in children.
In this study, we investigated the effects of lowering the fat and cholesterol in the diets of 26 Korean hypercholesteolemic men($\geq$240mg/dl). They consumed 2378kcal/day with 20.9% of the energy deriving from fat, and a cholesterol intake of 282mg(118mg/1000kcal). The experimental diet consisted of 2400kcal, the same as their usual diet, but the fat content was restricted to 15%, and the cholesterol level to below 100mg/1000kcal. The subjects kept to this diet for four weeks and were asked to maintain their usual life activities during the experimental period. The dietary intake and levels of plasma lipid, lipoprotein-cholesterol and apoprotein of the subjects were analyzed before, two weeks into, and after four weeks dietary intervention. After two of the dietary intervention, there were no significant changes of plasma total cholesterol or triglyceride levels but there was some changes of phospholipid level. However, after four weeks, the levels of plasma total cholesterol, triglyceride, and phospholipid had decreased significantly: 18.2%, 32.9%, and 11.9%, respectively. And the LDL-cholesterol and VLDL-cholesterol levels also showed a marked reduction of 18.1%, and 33.0% respectively without change of HDL-cholesterol level. There were no changes in the levels of Apo-A 1, Apo-B, or Lp(a). The changes of the plasma lipid levels were significantly associated with the changes in dietary fat intake but not the cholesterol intake. In conclusion, although the responses to the dietary intervention varied among the individual subjects, the lowering of dietary fat component from 21% to 15% of energy intake seems to be an effective way to reduce plasma cholesterol and triglyceride levels without decreasing HDL-cholesterol level. It was also found that the restriction of dietary cholesterol to below 100mg/1000kcal not seem to be effective for the hypercholesterolemic patient who already consuming below 300mg/day of cholesterol.
