재래식 조선 간장의 소비 실태 및 소비자 관능 검사 (Consumption Pattern of Korean Traditional Soy Sauce and Consumer Sensory Evaluation)

  • 재래식 조선 간장의 이용률은 83.5%로 나타났으며 노년층의 이용률은 91.7%로 높은 비율을 나타냈다. 재래식 조선 간장 사용의 경우 간장을 집에서 담그어먹는 비율은 60.5%로 나타났으며 역시 노년층으로 갈수록 87.5%로 높은 비율을 나타냈다. 친척등 다른 집에서 얻어다 먹는 비율은 19.1%,시중에서 구입하는비율은 18.4%로서 연령층 별로는 젊은층일수록 높게나타났다 재래식 조선 간장의 사용이유는 88%가 '구수한 맛과 향기를 내기위해서'라고 하였다. 재래식 조선 간장으로 조리하는 비율은 미역국이84.5%로 가장 높게 나타났으며, 고깃국의 경우는74%, 생선국의 경우는 40.9%, 콩나물국의 경우 33.3%,생선찌개의 경우 34.5%,된장찌개의 경우 14.5%,김치 찌개의 경우 12.1%가 재래식 조선 간장을 이용한다고 하였다 소비자 관능검사 결과 여러 시료 간장으로 조리한 미역국의 구수한 맛은 유의적인 차이가 없었으나 미역맛과 기호도에서는 유의적인 차이를 보였다. 미역국의 기호도 경향은 노년층에서 소금을 넣은 미역국보다 재래식 조선 간장으로 끓인 미역국을 선호하는 경향이 더 뚜렷하였다.

한식 간장의 이화학 및 관능적 특성 - 대기업 시판 제품과 경기지역 소규모 농가 생산 제품의 비교 - (Physico-Chemical and Sensory Properties of Commercial Korean Traditional Soy Sauce of Mass-Produced vs. Small Scale Farm Produced in the Gyeonggi Area)

  • The core ingredient of traditional Korean style soy sauce is soy bean without any wheat or rice incorporated. National brands as well as regional micro-brewed companies constitute the soy sauce market in Korea. The present study investigated the physico-chemical and sensory properties of soy sauces produced by small-scale or mass-production. Additionally, the key physico-chemical parameters sufficiently representing the critical sensory characteristics have been identified. Ten types of soy sauce brewed by the Korean traditional method were selected for the study. Among these samples, seven types were brewed in small-scales in the Gyeonggi-do region whereas the other 3 types were mass-production products of major national brands. The total solid, reducing sugar, salinity, sugar content, amino nitrogen, CIELAB, acidity, and pH of soy sauce samples were measured for the physico-chemical analysis. A generic descriptive analysis was conducted to analyze the sensory characteristics of the samples using six trained panelists. The descriptive panel developed 21 sensory attributes. The data were statistically analyzed using ANOVA, PCA and PLSR. Overall, the micro-brewed products showed significantly higher value of salinity and acidity but lower content of reducing sugar than the mass-production products. The micro-brewed soy sauces elicited stronger fermented flavor, sourness, and bitterness whereas the national brand products elicited stronger alcoholic odor, sweetness and umami taste. Sugar content, acidity, and amino nitrogen showed strong relationships with fish sauce flavor, umami taste, and rich flavor. Salinity was closely related to the overall flavor intensity.

Comparisons of Beef Fatty Acid and Amino Acid Characteristics between Jeju Black Cattle, Hanwoo, and Wagyu Breeds

  • Jeju black cattle are known as one of Korea's traditional cattle. However, Hanwoo is more well-known to Korean meat consumers as representative beef cattle. Despite the popularity of these two breeds, comparison of the nutritional characteristics between Jeju black cattle and Hanwoo have not been studied. Here, we compared the fatty acid and amino acid characteristics between two Korean traditional cattle and Wagyu breeds. A total of 62 cattle were used in this study. The Jeju black cattle beef had significantly higher unsaturated fatty acids than Hanwoo (p<0.05). Savory fatty acids, including oleic acid were also higher than in Hanwoo cattle (p<0.05). The negative flavor fatty acids, such as palmitic acid were significantly lower than in Hanwoo (p<0.001). On the other hand, linoleic acid which imparts a negative flavor was higher than Hanwoo (p<0.05). Amino acids, including alanine and glutamine, usually representative of the umami taste were present in significantly higher proportions in Jeju black cattle (p<0.05). In addition, bitter tasting amino acids, including valine, leucine, isoleucine, and methionine were lower in Jeju black cattle beef than in Hanwoo (p<0.05, p<0.001, p<0.001, and p<0.001 each). Taken together, our results suggest that Jeju black cattle beef had higher savory flavor and umami taste which affected consumers preference for the meat.

김치 독자성의 근거와 형성 과정에 대한 고찰 (A Study on the Basis and Formation Process of Kimchi's Uniqueness)

  • The Chinese Sigyeong records the foods of the Primitive Pickling Period, pickling being a universal vegetable storage method, but does not indicate the origin of the pickled vegetables or the location of the source of transmission. Kimchi mainly used salt and sauce-based soaking materials at the beginning of the Fermented Pickling Period (beginning in the 1st to 3rd centuries A.D.), and it differed from the Chinese method, which used alcohol and vinegar. In the Umami-Flavored Pickling Period (beginning in the 14th and 15th centuries A.D.), jeotgal, fermented seafoods, were added, and pickles with a completely new identity were created, one different from any other pickles in the world. Lastly, entering the Complex Fermentation and Pickling Period (beginning in the 17th and 18th centuries), the technical process evolved using a separate special seasoning containing red pepper as the secondary immersion source after pickling in brine, the primary immersion source. As a result of this, kimchi was transformed into a food with a unique form and taste not found anywhere else. The unique characteristic of kimchi is that the composition of original materials, a combination of salted marine life and vegetable ingredients, is its core identity, and there is a methodological difference in that it is completed through a second process called saesaengchae (生菜)-chimchae (沈菜).

위암환자의 치료 후 식사 경험 및 후미각 변화의 정성적 탐색 (Qualitative Exploration of Dietary Characteristics and Changes in Taste and Smell in Post-Surgical Gastric Cancer Patients)

  • To develop customized food products for gastric cancer patients, it is crucial to understand their dietary characteristics and changes in their perception of smell and taste due to their condition. This study conducted in-depth interviews and administered olfactory and gustatory tests on 20 patients with gastric cancer. A control group of 20 healthy, gender and age matched individuals, was included for comparison. Patients reported difficulties in sustaining their appetite, particularly during chemotherapy. This could be attributed to gastrointestinal discomfort and an altered perception of smell and taste. The olfactory test revealed that cancer patients were significantly less sensitive than the control group. Also, a smaller number of participants in the cancer group were reported to have a normal taste function, which enabled them to perceive umami, one of the five basic taste compared to those in the control group. These findings demonstrated that gastric cancer patients experience post-surgical digestive issues, chemotherapy-induced changes in smell and taste, and appetite loss. To improve the quality of life of these patients and the efficacy of the treatment, it is necessary to consider not only their nutritional requirements but also other factors such as appetite loss and discomfort when developing meals specifically for them.

  • Volatile compounds in salt fermented anchovy on the market were analyzed by vacuum simulta neous distillation solvent extraction/gas chromatography/mass spectrometry/olfactometry(V SDE/ GC/MS/O) and aroma extract dilution anlaysis(AEDA). Predominant odorants(Log3FD$\geq$8) in sample were ethyl methylbutanoate(candy like/sweet) and 2 ethyl 3,5 dimethylpyrazine(nutty/baked potato like). Besides these compounds, 6 odorants such as ethyl 3 methylbutanoate(sweet/floral/ candy like), 3 methylbutanal(dark chocolate like), (Z) 4 heptenal(rancid/fish like), (methylthio) propanal(soy sauce /baked potato like), (E,Z) 2,6 nonadienal(melon /cucumber like) and (E,E) 2,4 decadienal(fatty/cooked soybean like) were potent in odor value of salt fermented anchovy. Seven amino acids having high taste value in sample were glutamic acid, aspartic acid(sour and umami taste), lysine, alanine(sweet), histidine, valine, and methionine(bitter).

  • Volatile flavor compounds in Korean salt fermented shrimp on the market were analyzed by vacuum simultaneous distillation solvent extraction/gas chromatography/mass spectrometry/olfac tometry(V SDE/GC/MS/O) and aroma extract dilution anlaysis(AEDA). A total of 32 volatile com pounds were detected by GC/O analysis. Of these, 18 were positively identified, and composed of S containing compounds(5), aldehydes(4), ketones(3), N containing compounds(3), ester(1), alcohol(1) and aromatic hydrocarbon(1). Predominant odorants(Log3FD$\geq$4) in salt fermented shrimp were 2,3 butanedione(sour/buttery), 1 octen 3 one(earthy/mushroom like), dimethyl trisulfide(cooked cabbage /soy sauce like) and 2 acetylthiazole(grainy/nutty). Predominant free amino acids were aspartic acid, glutamic acid(sour and umami taste), arginine, methionine(bitter) and lysine(sweet and bitter) in evaluation of taste value.

Nutrient composition and taste properties of Sargassum fusiforme from the Wando region

  • This study examined the nutrient composition and taste properties of Sargassum fusiforme (SF) from two locations in the Wando region (Wando-eup: WD-A, Sinji-myeon: WD-B) and control region in Korea. The protein content of the SF in Wando regions was higher than that of the control, while the carbohydrate content was lower. The WD-A region had the lowest calorie content and the highest ash level when compared to the other regions. The potassium, iron, and zinc contents of the in WD-A were significantly higher than the other groups, but the sodium, phosphorus, and magnesium contents were lower. Free and constitutive amino acids, as well as the total and essential amino acid content, were higher in Wando regions than in the control. When analyzing using an electronic tongue, the SF from the WD-A region had the highest umami and sourness and the lowest bitterness and sweetness. Therefore, the results of this study can serve as fundamental data for seaweed research in the Wando region.

쌀단백질 효소분해물을 이용한 효모추출물의 제조 (Preparation of Yeast Extract Using an Enzyme Hydrolysate of Rice Protein)

  • 쌀단백질을 효소분해하여 제조한 배양액으로 천연조미소재로 사용할 효모추출물을 제조하기 위한 최적 공정조건을 조사하였다. 쌀단백질(5%, w/w)을 단백분해효소 인 $Delvolase^{(R)}$로 효소분해한 상등분획에 3%(w/w) 수준으로 포도당을 첨가한 배지 조건이 가장 적절하였으며 이 조건에서 2.3 g/L의 효모를 회수하였다. 회수한 효모에는 RNA가 188.1 mg/g수준으로 함유되어 있었으며 GMP 및 IMP는 각각 $650.33{\pm}48{\mu}g/g$, $69{\pm}21{\mu}g/g$ 함유되어 있었다. 이와 같은 효모추출물에 효모배양액의 제조 후 남은 쌀단백질 잔사의 효소분해물(Rrh)을 혼합하면 감칠맛이 상승하였는데 미각센서 분석기로 측정한 결과 효모추출물의 감칠맛이 4.88에서 Rrh의 첨가 후에는 9.25로 증가하였으며 관능검사에서도 감칠맛의 증가를 확인할 수 있었다. 이와 같이 효모추출물에 쌀단백질 잔사의 효소분해물이 추가되면 효소분해 과정 중 생성된 다양한 맛 성분으로 인해 감칠맛 이 상승되어 전체적인 기호도가 높아지므로 천연조미소재 로서의 활용이 가능함을 알 수 있었다.

소산파를 이용한 다채널 광섬유형 미각센서의 제작 및 기본 맛에 대한 패턴분석 (Pattern recognition and characteristics of basic taste substances using the evanescent wave in multichannel optical fiber sensor)

  • 소산장 흡수를 이용한 다채널 광섬유형 미각센서를 제작하여 인간이 느끼는 다섯 가지의 기본 맛 및 혼합 맛에 대한 센서의 특성을 평가하고 그에 대한 패턴을 분석하였다. 센서소자는 광섬유의 클래드 층을 제거하고 그 대신 실리콘 폴리머내에 6가지의 색소를 고정화한 감지막을 각각 코팅하여 다채널로 제작하였으며, 측정하고자 하는 미물질의 농도변화에 따른 감지막내로의 소산장의 흡수량 변화를 측정하는 방법을 이용하였다. 제작된 센서로부터 얻어진 출력값에 대한 응답패턴을 제작한 결과, 5가지의 기본 맛 즉, 단맛, 짠맛, 신맛, 쓴맛 및 우마미를 내는 대표 물질들에 대해 각기 다른 패턴을 얻을 수 있었으며 센서의 감도는 인간이 느낄 수 있는 역가 이상의 넓은 범위에서 선형적인 측정이 가능하였다.
