다랑어 위내에 들어있는 꽁치 머리의 빈도 해석 (An Analysis of the Frequencies of the Saury Heads(bait) Retained in the Tuna Stomachs)

  • 주낙으로 어획된 다랑어의 위내에 들어있는 꽁치 머리의 빈도분포를 해석하여 미끼를 삼킨 다랑어가 그 낚시에 낚이는 어획률을 추정하기 위하여 2항분포식에서 유도한 수식을 적용하였다. 꽁치 머리를 삼킨 다랑어가 그 낚시에 낚이는 확률을 p, 낚이지 아니하는 확률을 q, 낚시에 낚인 다랑어가 그 낚시에서 미끼 꽁치 머리를 위속에 보유하는 확률을 r, 낚이기 전에 삼킨 꽁치 머리를 보유하는 확률을 t로 하는 수식에 꽁치 머리빈도의 관측치를 적합 시켜서 다음과 같은 $\frac{p}{p+q^t}$값과 r의 최적추정치를 얻었다. 황다랑어; $\frac{p}{p+q^t}$=0.789, r=0.598 눈다랑어; $\frac{p}{p+q^t}$=0.810 r=0.608, 날개다랑어; $\frac{p}{p+q^t}$=0.838, r=0.621.

다랑어의 미끼 섭취 습성 (The Biting Behavior of Tuna on Baits)

  • 꽁치를 통째로 미끼로 하는 다랑어 주낙으로 어획된 다랑어 위속에 들어있는 꽂치 토막의 어체부체별 빈도에서 다랑어의 섭취 습성을 추측하였다. 꽁치 토막을 머리와 꼬리의 유무에 따라 분류하여 꽁치 온마리(A토막) 머리 토막(B토막) 몸통 토막(C토막) 및 꼬리 토막(D토막)으로 구분하고 다랑어 위를 위속에 들어있는 꽁치 토막에 따라 독립적으로 구분하여 A위 , B 위 및 C, D위로 정하고이 호정별로 3개의 소표본을 얻은 다음 소표본마다 그 유의특성을 제거하기 위하여 위와 동-발인 꽁치 토막의 빈도에서 위와 동수만콤의 빈도를 제외한 나머지 빈도에서 위의 호정과 꽁치 토막의 부위와의 관련성을 $X^2$검정하여 다음의 결론을 얻었다. (1) 꽁치의 머리 토막을 삼키고 어획된 다랑어는 먼저 꼬리 토막을 떼어 삼킨 다음 그 꽁치의 머리토막을 삼킨 것으로 인정되는 것이 많다. (2) 꽁치의 머리 토막을 삼킨 다랑어의 조획률은 꽁치 온마리를 삼킨 다랑어의 조획률보다 높아.(3) 꽁치의 머리(A토막과 B토막)를 삼킨 다랑어가 낚시에 낚이지 아니한 것은 아마 꽁치의 꼬리부를 먼저 물어서 그 미끼의 머리가 낚시에서 연도된 것을 삼켰을 것이다.

비정제유 첨가가 참치유 보강 에멀젼의 산화방지활성에 미치는 영향 (Effects of Adding Unrefined Oil on the Antioxidant Activity of a Tuna Oil-Enriched Emulsion)

  • This study was conducted to evaluate the effects of adding unrefined oil on the antioxidant activity of a tuna oil-enriched emulsion by determining DPPH radical scavenging activity, reducing power, and inhibition of low-density lipoprotein (LDL) oxidation in vitro. The emulsion consisted of tocopherol-stripped canola (18.3 g) and tuna (9.1 g) oil, one of the unrefined oils (4.6 g), such as extra virgin olive, mustard, perilla, or sesame oil, 0.5% acetic acid (64 g), and egg yolk powder (4 g). The control emulsion contained only canola (21.4 g) and tuna oil (10.6 g), as oil sources,with the same composition of the remaining ingredients. The emulsion with added unrefined oil, particularly mustard oil, showed higher radical scavenging activity and reducing power than those of the control emulsion. The radical scavenging activity and reducing power of the emulsion with added unrefined oil were higher at 1,000 ppm than at 500 ppm thus, the effect was concentration-dependent. Adding sesame or perilla oil to the tuna oil-enriched emulsion resulted in higher inhibition of LDL oxidationwhereas adding olive oil increased LDL oxidation. The results clearly showed that adding roasted mustard, sesame, or perilla oil improved the antioxidant activity of a tuna oil-enriched emulsion by increasing free radical scavenging activity, reducing power, and inhibiting LDL oxidation. The results also suggest that adding unrefined oils produces a healthier fish oil-enriched salad dressing recipe.

태평양 수역 우리나라 다랑어선망어업의 조업 특성 및 해양환경에 따른 어장 변동 (Changes in fishing characteristics and distributions of Korean tuna purse seine fishery by oceanographic conditions in the Pacific Ocean)

  • Fishing characteristics of Korean tuna purse seine fishery in the Pacific Ocean were investigated using logbook data compiled from captain onboard and the statistical data from 1980 to 2014. Changes in fishing ground and correlation between marine environmental factors and fishing patterns were investigated using Oceanographic index. The proportion of unassociated set was higher than that of associated set. The catch proportion of yellowfin was higher in the unassociated set, while that of skipjack and bigeye was higher in the associated set. Due to vessels, fishing gears and Korean captains' high-level of skills in fishing technology optimized for the unassociated set and preference of large fishes, especially large yellowfin tuna, it showed unique fishing characteristics focusing on the unassociated set. As for fishing distributions of Korean tuna purse seine fishery and impacts of oceanographic conditions on the fishery, the main fishing ground was concentrated on the area of $5^{\circ}N{\sim}10^{\circ}S$, $140^{\circ}E{\sim}180^{\circ}$ through the decades. When stronger El-nino occurred, the range of fishing ground tended to expand and main fishing ground moved to the eastern part of western and central Pacific Ocean. During this season, yellowfin tuna had high CPUE and catch proportion of yellowfin tuna in the eastern part also increased. As for the proportion of fishing effort by set type, proportion of log associated set was high during El-nino season while that of FAD associated set was high during La-nina season.

중서부태평양해역 다랑어어업의 생태계기반 어업 위험도 평가 (Evaluation of Korean distant water tuna fisheries in the Western and Central Pacific Ocean using ecosystem-based fishery risk assessment)

  • Tuna fisheries were applied to an integrated ecosystem-based fishery risk assessment method using indexes of target species status, inhabited species in a target ecosystem, habitat quality and socio-economic benefit of affected fisheries. This study suggested more effective and efficient management measures to break away from traditional management methods, such as limitation of catch and fishing effort. The results presented that the objective risk index (ORIS) on sustainability of bigeye and yellowfin tunas by purse seine fishery was estimated high due to the high catch ratio of small fishes. The ORIs of biodiversity (ORIB) and habitat quality (ORIH) of purse seine fishery were also estimated at a high level from using fish-aggregating devices (FAD). However, due to skipjack tuna's high catches, the ORI of socio-economic benefit (ORIE) was estimated at a very low level. Due to the high bycatch rate, ORIB was high, and ORIS and ORIH were evaluated at a low level in longline fishery. Due to strengthern of fishing restrictions and increase of fishing costs, the ORIE was assessed to be very high. The ecosystem risk index (ERI) for two tuna fisheries was assessed low, but the overall FAD management by purse seine fishery is necessary at the ecosystem level.

Risk assessment of heavy metals in tuna from Japanese restaurants in the Republic of Korea

  • Background: Studies on the risk of mercury (Hg) in Korean fishery products focus primarily on total Hg levels as opposed to methylmercury (MeHg) levels. None of the few studies on MeHg in tuna investigated tuna from Japanese restaurants. Few have evaluated lead (Pb), cadmium (Cd) and arsenic (As) in tuna. Thus, this study aimed to conduct a risk assessment by evaluating heavy metal concentrations in tuna from Japanese restaurants. Methods: Thirty-one tuna samples were collected from Japanese restaurants in the Republic of Korea. They were classified according to region and species. The concentration of heavy metals in the samples was analyzed using the Ministry of Food and Drug Safety Food Code method. The rate of exceedance of maximum residue levels (MRLs) and the risk compared to the provisional tolerable weekly intake (PTWI) set by the Joint Food and Agriculture Organization/World Health Organization Expert Committee on Food Additives (%PTWI) were evaluated for risk assessment. Results: The mean of MeHg, Pb, Cd and As concentrations were 0.56 ± 1.47 mg/kg, 33.95 ± 3.74 ㎍/kg, 14.25 ± 2.19 ㎍/kg and 1.46 ± 1.89 mg/kg, respectively. No sample exceeded the MRLs of Pb and Cd, but 9.7% of the samples exceeded the MRL of MeHg. The %PTWIs of MeHg, Pb, Cd and As were 4.2037, 0.0162, 0.0244 and 1.1627, respectively. The %PTWI of MeHg by age group and sex was highest among men aged 19-29 years (10.6494), followed by men aged 30-49 years (7.2458) and women aged 19-29 years (4.8307). Conclusions: We found that 3 out of 31 samples exceeded the MRL of MeHg. The %PTWI of MeHg showed significant differences based on age and sex, and the value was likely to exceed a safe level depending on individuals' eating behaviors. Therefore, improved risk management for MeHg is required.

Backfat Characteristics of Barrows and Gilts Fed on Tuna Oil Supplemented Diets during the Growing-finishing Periods

  • This study was conducted to evaluate the effect of supplementing tuna oil to diets of growing-finishing pigs (barrows and gilts) on backfat characteristics when slaughtered at different weights. Four hundred and eighty crossbred (Large White$\times$Landrace$\times$Duroc) pigs averaging 30 kg were allotted to 12 treatment combinations (40 pigs/treatment combination) in a completely randomized design with a $2{\times}2{\times}3$ factorial arrangement of treatments. The treatments were: dietary tuna oil supplementation (0 and 2%); sex (barrows and gilts); and slaughter weight (90, 100 and 110 kg). As pigs reached their slaughter weight, they were randomly selected (8 pigs/treatment combination; 96 pigs in total) and slaughtered. Backfat colour, hardness and fatty acid profile were assessed. There were significant (p<0.05) differences in colour (L* and a* values) among treatments. Backfat of the control group was harder than on the tuna oil (p<0.001) and that of barrows was harder than of gilts (p<0.05). In addition, the thiobarbituric acid reactive substances (TBARS) values of fat from the tuna oil group stored for 3 days were higher (p<0.001) than the control group. The TBARS values of gilts tended to be higher than those of barrows and increased with increasing slaughter weight in the tuna oil group. The cholesterol and triglyceride levels were not affected by diet and sex but the triglyceride level increased with increasing slaughter weight (p<0.01). The tuna oil group had higher polyunsaturated fatty acid (PUFA) content, ratio of PUFA: saturated fatty acid (SFA) and total n-3 fatty acids but lower monounsaturated fatty acids content and n-6:n-3 fatty acids than the control group (p<0.01). Gilts had higher PUFA and n-6 fatty acids in backfat than barrows (p<0.05). The backfat from both 90 and 100 kg slaughter-weight groups had a lower ratio of n6:n3 fatty acid than the 110 kg slaughter-weight group (p<0.05). However, this was more pronounced in the tuna oil group. The PUFA: SFA was also increased while the n-6:n-3 ratio tended to reach the recommended levels for healthy eating in human beings of <5. However, due to oxidative susceptibility, barrows should not be slaughtered at more than 100 kg for the meat to be acceptable to consumers.

Spatial-Temporal Distribution Characteristics of Bigeye and Yellowfin Tunas in Kiribati Waters

  • Information on the distribution characteristics of tuna resources in Kiribati EEZ waters in three zones (Zone 1: west Gilbert region, Zone 2: central Phoenix region, and Zone 3: east Line region) as well as their relationship with the ocean environment is critical for sustainable managing the migratory tuna resource and fishing practices in this region. Therefore, this study is designed to investigate the spatial and temporal distribution and concentration of bigeye (BET) and yellowfin tuna (YFT) in Kiribati EEZ waters in relation to sea surface temperature (SST) and thermocline depth so as to better understand the tuna resources management basis in Kiribati waters. The geographic and temporal distribution and concentration were first displayed. Paired t-test was utilized to compare the distribution between the two tuna species based on Catch per Unit Effort (CPUE) derived from the Korean longliners during 1996 to 2004, and also among the three zones of Kiribati EEZ waters. Environmental conditions of the three zones were then compared and correlated with the CPUE of YFT and BET. In addition, the effect of ENSO phenomena on the environmental conditions and the distribution of YFT and BET within the three zones were also examined. The BET was relatively higher in the Zone 3 whereas YFT predominate in the Zone 1 and the Zone 2 due to oceanographic differences among the three zones and the ecological habitats of the two tuna species. It was suggested that El Ni?o/Southern Oscillation (ENSO) phenomena altered the oceanographic conditions of the three zones that in turn change the distribution of the two tuna species. During El Ni?o, the warm phase of ENSO, resulted in having more BET in all the three zones and the opposite observed during La Ni?a (cold phase) replacing by having relatively higher catch rate for YFT, particularly in the Zone 2. Although the results of the study are from short periods (1996 to 2004) in considering oceanographic anomality, these environmental variations should be considered into sustainable fisheries management of tuna fisheries in Kiribati EEZ waters.

다이어트 식품 소재로서 자숙 가다랑어(Katsuwonus pelamis) 백색육의 부위별 식품성분 특성 (Comparison of Food Components in Various Parts of White Muscle from Cooked Skipjack Tuna Katsuwonus pelamis as a Source of Diet Foods)

  • This study evaluated the possible use of white muscle from cooked skipjack tuna as a constituent of diet foods. White muscles from the belly and dorsal area of cooked skipjack tuna were identified as anterior, median, and posterior. The skipjack tuna white muscle contained more moisture and ash (except for part I in both the belly and dorsal muscles) than chicken muscle, while it had less crude protein and crude lipid (except for part II in belly muscle). The yield was the highest in part I of both the dorsal and belly parts among the various parts of white muscles. The skipjack tuna white muscle contained 14-18% fewer calories than chicken breast muscle. Part I from both the belly and dorsal muscles had higher total amino acid contents than the other parts, but lower contents than chicken breast muscle. White muscle of skipjack tuna was rich in minerals, such as phosphorus, iron, and zinc. The total free amino acid content of part I in the belly and dorsal muscles was 1,152.1 and 1,215.7 mg/100 g, respectively, and was 1.7-1.8 times higher than in chicken breast muscle. The major amino acids in the white muscles from skipjack tuna were taurine, histidine, anserine, and carnosine. Based on these results, if it is possible to mask the fish odor, all parts of the white muscle from skipjack tuna could be used as constituents of diet foods.

트랜스로그 비용함수를 이용한 참치연승어업 규모의 경제성 분석 (An Analysis on Economies of Scale for Tuna Distant Longline Fishery Using a Translog Cost Function)

  • The purpose of this study is to identify economic situation on scale of tuna distant longline fishery by analyzing its economies of scale using the cost function. To analyze its economics of scale, the deep-sea fishing statistics were used from 2012 to 2016. In detail, the number of panels for estimating the cost function was 68 tuna distant longline vessels from 2012 to 2016, and the total number of observations over the five years were 340. As a final model, the two-way fixed effect model based on the translog cost function was adopted through the F test, the Breusch-Pagan test and the Hausman test. As a result of the analysis, it was found that tuna distant longline fishery between 2012 and 2014 was diseconomies of scale, the fishery between 2015 and 2016 was economies of scale. However, the economic indicators of the scale from 2012 to 2016 were almost close to zero, indicating that the constant returns to scale, the optimal scale, were reached. Therefore, in the situation where the amount of fishery resources in the world continues to decrease, it is necessary to prepare a method to obtain economic benefits through scale maintenance and reduction rather than indiscriminate scale expansion.
