Effects of Autochthonous Yeast Cultures on Some Quality Characteristics of Traditional Turkish Fermented Sausage "Sucuk"

  • The objective of this study was to determine the effects of yeast cultures (Candida zeylanoides and Debaryomyces hansenii) isolated from traditionally dry fermented Turkish sucuks, on some physicochemical and microbiological properties of the product. Eight different batches of the sucuks were produced by the inoculation of yeast and lactic acid bacteria (LAB) cultures (Lactobacillus curvatus, Lactobacillus plantarum and Lactobacillus sakei) in different combinations. The sucuks were ripened for 12 days and analyzed at 1st, 6th, and 12th days of ripening. Percent moisture content, pH, water activity (aw) and residual nitrite values of the sucuk inoculated with the yeast cultures were higher at the end of the ripening. The use of yeast cultures decreased hardness, gumminess, and chewiness values of the sucuk while increased adhesiveness values. Major volatile groups were aldehydes, terpenes, and sulphur compounds in the sucuk samples. The most noticeable results were for sensory properties of the sucuk that were positively improved by the yeast cultures.

Polyphenolic Profile of Fermented Houttuynia cordata Thunb. and Overall Contribution to Antioxidant and Lipolytic Activities

  • Polyphenol profiles, physicochemical properties, antioxidant activities, and inhibitory effect of adipocyte differentiation of Houttuynia cordata fermented with Lactobacillus brevis B84 were evaluated. Six polyphenols were characterized for this plant by using high-performance liquid chromatography-tandem mass spectrometry (HPLC-MS/MS), and the results were compared with total phenolic content by a spectrophotometric method. The total amount of the identified polyphenols was lower than that determined by the spectrophotometric method. However, the fermentation process influenced polyphenol composition such as content of vanillic acid and caffeic acid. The phytochemical profiles were evaluated by high-performance liquid chromatography with UV and electrospray ionization mass spectrometry detection ($HPLC-DAD-ESI-MS^n$). Total sugar and reducing sugar contents decreased after fermentation. Antioxidant activities such as DPPH, ABTS, and superoxide anion radical scavenging and reducing power were evaluated to compare the beneficial effect after fermentation. Fermented H. cordata increased the lipolytic effect in 3T3-L1 adipocytes. Overall, the results indicate that the fermentation of H. cordata with L. brevis B84 produces changes of phenolic compounds, antioxidant activity, and lipolytic effect.

충남지역 대학생의 식사유형 및 전통음식에 대한 선호도 (Meal Types and Preference on Korean Traditional Foods of University Students in Chungnam)

  • This study was carried out to investigate the preference for traditional food of university students through the analysis of their daily meal types. Questionnaires were collected from a total of 197 students from December 2007 to February 2008 in Chungnam Province. The results are as follows; 148 of the respondents (73.0%) prefer Korean traditional meal as their favorite food. The significant differences are found in both gender groups and major groups (p<.05). 178 of the respondents (90.4%) answered that the traditional foods are excellent and good. However, the foods were significantly (p<.05) evaluated that major students consider them to be 'excellent' foods, while non-major students consider them to be 'good' foods. 136 of respondents (69.0%) answered that the traditional foods have beneficial influences on their health. In the survey on intake frequency of traditional meals, 137 of respondents (65.9%) have traditional foods more than twice a day. The ratio of traditional meal intake of male students is a significantly higher level (p<.05) than that of female students. Their preference for traditional rice cake, fermented rice punch, and juice mixed with fruits is a very high level of the average of 4.19, 4.22 and 4.34, respectively. The preference for Kimchi, Bulgoki, boiled beef slices, sundae and jelly was a relatively high level of the average of 4.43, 4.65, 4.14, 4.30, and 4.05, respectively. Concludingly, the research shows the majority of students enjoy korean traditional food and expect Korean food as favorite food to be developed and to be inherited.

강황을 첨가한 발효유의 발효특성과 면역조절 효과 (Fermentation Properties and Inflammatory Cytokines Modulating of Fermented Milk with Curcuma longa L Powder)

  • 강황 (Curcuma longa L.)은 건강기능성 식품의 훌륭한 소재로 전통적인 약용식물이다. 강황의 주요성분인 안토시아닌계인 curcumin은 항균작용, 항암작용, 항산화작용 등 다양한 효능이 있는 것으로 알려져있다. 본 연구는 혼합유산균을 스타터로 사용하여 강황 분말을 첨가한 발효유를 제조하여 발효유의 이화학적 특성 및 항염증 활성을 연구하였다. 발효유의 발효특성은 대조군에 비해 강황 첨가군에서 유산균의 성장이 현저히 빠르게 나타나 pH는 감소되었고 산도는 증가하였다. 또한 우유단백질의 분해도 부분적으로 일어났고 유기산은 lactic acid와 acetic acid가 높게 생성되었다. 기호도는 강황 특유의 쓴맛과 강한 향으로 인해 대조군에 비해 낮았다. 강황 발효유 배양액을 처리한 RAW 264.7 세포주에서 세포독성의 영향은 나타나지 않았다. 염증성 싸이토카인으로 TNF-${\alpha}$와 IL-6는 강황 처리군이 대조군에 비해 현저히 강하게 발현되었다. 또한 NO의 생성은 강황 처리군이 대조군에 비해 현저히 높았다. 이러한 연구결과는 강황 첨가가 유산균의 성장을 촉진시켜 발효유 제조에 도움을 주고, 염증활성을 조절하므로 강황을 이용한 발효유, 음료 제품 및 다양한 기능성 식품 소재로 활용할 수 있는 가능성을 시사하고 있다.

Formation of Chitin Oligasaccharides during Long fermentation of Toha-jeot(Salt-Fermented Toha Shrimp)

  • Toha-jeot, salt-fermented Toha shirmp(caridina denticulata denticulata DeHAAN) is a traditional fermented food in Korea. Samples of Toha-jeot used in the present study were a low-salt group of 15% sodium chloride(L), a high-salt group of 23% sodium chloride(H), a 50% conventional soybean sauce group(S), a low-salt group contraining 2% wheat bran (W2%-L) , a high -salt group containing 2% wheat bran(W2%-H), a low-salt group containing 4% wheat bran(W4%-L)and a high-salt group containing 4% wheat bran (W4%-H). These seven groups were refrigerated at 4 $\pm$1$^{\circ}C$ and then taken out for analysis at theree month intervals. We investigated the functional components of Toha-jeot during fermentation . Long fermentation of Toha-jeot lowered the viscosity of chitin and tended to reduce the distribution of molecular weight. THe formation of chitin oligosaccharides on the other hand, increased significantly. After nine months of fermenttion, chitin oligosaccharides(M.W. 823~1789) constituting 24.75% of Toha chitin were produced in the sample of W2%-H. During the same period, chitin oligosaccharides(M.W.1436-1879) constituting 66.30% of Toha chitin were produced in the samples of S. However, chitin oligosaccharides were not produced in Jeotsaeu-jeot made of sea-water shrimp when fermented for six months.

가정에서 담그는 고추장의 제조방법에 관한 조사 연구 (Survey on preparation method of traditional home made kochujang (fermented hot pepper-soybean paste))

  • The preparation method for traditional kochujang (fermented hot pepper-soybean paste) at home were surveyed by 1,436 housewives through the country by premade questionnaires. The kochujang meju (Korean style soybean Koji for kochujang) were made by solely soybean (45.3% of respondents) or soybean with rice (26.3%) from September to November (52.2%) or December to February (32.7%). The shape of meju was either doughnut (28.4%) or brick (25.6%) type. Kochujang making seasons were either from March to May (56.6%) or December to February (25.0%) and it was prepared in proportion of mostly $6{\sim}10%$ meju powder (32%) with over 20% of red pepper powder (57.2%) prepared by seed removed dry red pepper. Subsidiary ingredients for kochujang making were boiled waxy rice (73.5%), malt (33.3%), corn syrup (18.9%) or corn syrup with malt (21.9%). After mixing all ingredients, kochujang in clay pot were occasionally exposed to the sun for fermentation for $3{\sim}4$ months (35.0%) or $1{\sim}2$ months (34.7%).

Physicochemical and Microbial Properties of Korean Traditional Rice Wine, Makgeolli, Supplemented with Black Garlic Extracts during Fermentation

  • The purpose of this study was to elucidate the physicochemical and microbiological properties of Korean traditional rice wine, Makgeolli, supplemented with black garlic extract during fermentation. Black garlic extract was diluted with distilled water to produce 0.5% and 1.0% black garlic solutions. Those solutions were then used to make rice solutions which included 2 kg rice, 40 g Nuruk (a fermentation starter), and 14 g yeast. After being mixed, the rice solutions were fermented for 7 days in a water bath at $28^{\circ}C$. The alcohol contents of the control, 0.5% and 1.0% black garlic Makgeolli were 16.9, 16.0, and 16.2%, respectively. Total acidity, total soluble solids, and color increased throughout the fermentation process. There was an increase of microorganisms throughout the fermentation period in all the samples. Glucose was the highest free sugar, and succinic acid was the highest organic acid detected in all the samples. Thirty nine volatile compounds were detected in black garlic Makgeolli.

전통발효식품에서 Cholesterol Oxidase를 생산하는 미생물의 분리 및 효소생산에 관한 연구 (Studies on the Isolation of the Cholesterol Degrading Enzyme Producing Microorganism from Traditional Fermented Foods and the Culture Condition for the Production of the Enzyme)

  • About 75 strains which utilize cholesterol as sole carbon and energy source were isolated from 10 samples of Kimchi and 18 samples of fermented fish food (2 Ojingo-jeots, salt-fermented squid ; 5 Changran-jeots, salt-fermented pollack tripe ; 5 Myungran-jeots, salt-fermented Alaska pollack roe ; 3 Gajami-sikhae-jeots, fermented flat fish ; 2 Gul-jeots, salt-fermented oyster ; a Juneo-jeots, salt-fermented shad). Among them tested, the 3T6-5Mj strain isolated from Changran-jeot showed the highest activity on cholesterol degradation. The optimal composition of medium for the producing cholesterol degradation enzyme by 3T6-5Mj strain was 1.0 g/L NH4NO3, 1.0 g/L K2HPO4, 0.1 g/L MgSO4.7H2O, 1.0 g/L FeSO4.7H2O, 1 g/L NaCl, 5 g/L Trypton, 1 g/L Cholesterol, and 5 g/L Maltose at 30$^{\circ}C$, pH 7.5, and the enzyme production reached a maximum level at 140 hours of cultivation.

팽화수수 분말을 첨가한 발효주의 품질 특성 (Quality Characteristics of Korean Traditional Wines with Puffed Sorghum)

  • 본 연구는 생리활성이 풍부하여 기능성은 있으나 대중화되지 않은 팽화수수를 발효주 제조 시 첨가하여 이화학적, 생리활성 및 관능적인 특성을 조사하였다. 발효주 제조 결과 pH는 발효가 일어나는 동안 약간 낮아지는 경향을 나타내었다. 총산은 pH 감소 양상과 유사하게 발효가 진행될수록 증가하는 것으로 나타났다. 발효주의 환원당 측정 결과 팽화수수 첨가량에 따라 초기 환원당은 높았으나 발효가 진행되면서 감소하며 비슷하였고, 대조구보다 약간 높은 값을 나타내었다. 특히 증자한 수수를 첨가한 발효주는 발효 마지막 날 환원당이 거의 존재하지 않았다. 발효주의 알코올 농도 변화는 대조구 16.8%와 비슷하게 나타나 팽화수수 25%에서 16.5%로 나타났다. 팽화수수 첨가량에 따른 유의적인 차이는 없었다. 발효주의 색도를 분석한 결과 명도의 경우 생수수 첨가 발효주가 가장 높은 L값을 나타냈고, 반면에 대조구에서 가장 낮은 값을 나타냈다. 항산화 활성 분석 결과 수수를 첨가한 발효주가 대조구에 비해 약 4배 이상 우수한 결과를 나타냈고, 팽화수수의 첨가량이 증가할수록 항산화능도 우수하였다. 발효주의 혈당강하능 또한 대조구 27.39%에 비해 팽화수수를 첨가한 발효주가 42.30~55.28%로 높았고, 팽화수수 첨가량이 많을수록 혈당강하능이 높다는 결과를 얻었다. 마지막으로 발효주의 관능평가 결과 팽화수수 25%와 50%를 첨가한 발효주가 전체적인 기호도면에서 가장 우수한 결과를 나타내었다.

상황버섯 추출물과 비트 즙을 첨가한 당근주스 젖산발효 음료의 물리화학적 성질 (Physicochemical Properties of Carrot Juice Containing Phellinus linteus Extract and Beet Extract Fermented by Leuconostoc mesenteroides SM)

  • 본 연구에서는 당근주스에서 분리한 Leuconostoc mesenteroides SM 균주와 비트 즙을 이용하여 비열처리 당근 주스를 이용한 젖산 발효 음료를 제조하였다. 상황버섯 추출액이 함유된 당근주스에 비트 즙을 $1{\sim}5%$(v/v) 수준으로 첨가하여 발효시킬 경우 설탕의 전환율은 대부분 97% 이상이었다. 발효 후의 점조도는 비트즙을 2% 수준으로 첨가하였을 때 0.55 $Pa{\cdot}s^n$로 가장 높았으며, 비트 즙의 첨가량이 3% 이상일 때부터 점조도는 감소하였다. 발효 후 냉장 저장시에 당근 젖산 발효 음료의 점조도는 저장 120시간까지 크게 증가하였다. 당근 젖산 발효 음료의 폴리페놀 함량과 DPPH에 의한 전자공여능은 비트 즙의 첨가량이 증가할수록 높게 나타나는 경향을 나타내었고, 비트 즙을 5% 첨가하였을 때 $114.27{\mu}g/mL$의 폴리페놀 함량과 65.4%의 전자공여능을 나타내었다. 당근 젖산 발효 음료를 냉장 저장 시에 저장 기간이 길어질수록 L값, a값, b값은 소폭 감소하였으나 비트 즙의 첨가로 붉은 자줏빛이 강화되어, 냉장 저장 2주후에도 당근 음료의 고유한 색이 유지되는 것으로 나타났으며, 생균수는 평균 $10^9$ CFU/mL 이상을 나타내었다.
