The purpose of this study was to investigate the quality of dehulled soybean (DHSB), and the rapid preparation possibility of soybean milk with DHSB (SM-DHSB), and then the quality of SM-DHSB. In DHSB, the moisture content decreased, the crude protein, crude fat, minerals, and carbohydrate contents increased, and the isoflavone (daidzein, genistein and glycitein) content was similar to that of soybean (SB). The water absorption rate of DHSB for soybean milk preparation was higher than that of SB. In the results of SM-DHSB and soybean milk (SM) qualities, the crude protein content, total solid content, and the viscosity of SM-DHSB were higher, the yield and the proximate composition (except crude protein) were similar, and the Biji production rate, and total dietary fiber content of SM-DHSB were lower compared to the SM. In terms of the isoflavone contents of SM-DHSB, daidzein and genistein content were similar, and glycitein content was lower compared with the SM. Consequently, these results suggest the possible use of DHSB for rapid SM-DHSB preparation, because the soaking time was decreased by the high water absorption rate of DHSB in the SM preparation, and the quality of SM-DHSB improved compared to those of the SM.

Seed coat color and seed weight are among the key agronomical traits that determine the nutritional quality of soybean seeds. This study aimed to evaluate the contents of total protein, total oil and five prominent fatty acids in seeds of 49 soybean varieties recently cultivated in Korea, and assess the influences of seed coat color and seed weight on each. Total protein and total oil contents were in the ranges of 36.28-44.19% and 13.45-19.20%, respectively. Likewise, individual fatty acid contents were in the ranges of 9.90-12.55, 2.45-4.00, 14.97-38.74, 43.22-60.26, and 5.37-12.33% for palmitic, stearic, oleic, linoleic, and linolenic acids, respectively. Our results found significant variations of protein, oil and fatty acid contents between the soybean varieties. Moreover, both seed coat color and seed weight significantly affected total oil and fatty acid contents. Total protein content, however, was not significantly affected by any factor. Among colored soybeans, pale-yellow soybeans were characterized by a high level of oleic acid (30.70%) and low levels of stearic (2.72%), linoleic (49.30%) and linolenic (6.44%) acids, each being significantly different from the rest of colored soybeans (p < 0.05). On the other hand, small soybeans were characterized by high levels of all individual fatty acids except oleic acid. The level of oleic acid was significantly high in large seeds. Cluster analysis grouped the soybeans into two classes with notable content differences. Principal component analysis also revealed fatty acids as the prime factors for the variability observed among the soybean varieties. As expected, total oil and total protein contents showed a negative association with each other (r = -0.714, p < 0.0001). Besides, oleic acid and linoleic acid showed a tradeoff relationship (r = -0.936, p < 0.0001) which was reflected with respect to both seed coat color and seed weight. In general, the results of this study shade light on the significance of seed coat color and seed weight to distinguish soybeans in terms of protein, oil and fatty acid contents. Moreover, the soybean varieties with distinct characteristics and nutritional contents identified in this study could be important genetic resources for consumption and cultivar development.

Native of soybean aphid (Aphis glycines Matsumura) is an Asia and aphid is one of the dangerous pests in soybean [Glycine max (L.) Merr.]. High density aphid populations can reduce crop production by causing severe damage. The objective of this study was evaluation of resistance to the soybean aphid in soybean cultivars and germplasms. A total of fifty five soybean cultivars or germplasms, including two susceptible and two resistant check varieties, were infested to evaluate their resistance in the field cage and greenhouse test by aphid colonies which derived from wild collected one soybean aphid biotype in Korea. The average number of reproduced soybean aphid was evaluated with 62.7 aphids in the resistant check variety PI 567598B and also estimated with 1,807 aphids for susceptible check variety Williams 82. In soybean varieties and germplasms, the average reproduced soybean aphid populations ranged from the lowest 497 aphids for Junjeori to the highest 3,862 aphids for Mansu. About seventy six percent of soybean cultivars and germplasms were shown high density soybean aphid populations when compared with another susceptible check variety PI 567543C in the field cage test. From the greenhouse test to evaluate aphid index, 87.3% of soybean cultivars or germplasms presented aphid index with 9.0. No soybean cultivars and germplasms were observed with soybean resistant phenotype when regarded a aphid resistant level as less than 10% aphid reproductions compared with susceptible check Williams 82. Although no Korean soybean cultivars were identified with resistant trait to the soybean aphid, we found one great resistant genetic resource PI 567598B in this study. This result will be helpful to further study for providing useful genetic information for soybean researchers.
To analyze their isoflavones contents by HPLC analysis during two years on 60 collected old local traditional soybean varieties from various districts of Korea was conducted. There was a yearly variation in the seed isoflavon concentrations. The total contents on 5 isoflavones were in the range from 16.21mg/g to 25.21 mg/g and from 6.47 mg/g to 15.44 mg/g, in 1997 and 1998, respectively. Collected soybean from Gunsnsi-1(25.21 mg/g) in 1997 and from Gangjingun-3 (16.50 mg/g) in 1998 showed the highest amount of isoflavones as compared with other collected soybean varieties. The highest amount among 5 isoflavones was genistin as 48.45% and 49.73%, in 1997 and 1998, respectively, indicating the genotypic variation in seed isoflavon contents of local soybean cultivar. Our data suggest that it may be feasible for improving soybean variety with higher antioxiadtive activity and substances.
This study attempted to examine the effects on sensory characteristics, texture and color of steamed soybean rice cake in various levels of soybeans. Sensory evaluation was done by panels of 7 judges. Objective measurements were made by utilizing the Instron and Hunter Colormeter. The results were as follows; 1. The content of moisture, total ash, protein, fat and carbohydrate in rice were shown to be about 13.47%, 0.48%, 6.40%, 0.54% and 79.11%. Those of soybean were 10.95%, 4.54%, 30.67%, 20.36% and 33.48%. 2. The results of sensory evaluation revealed that rice cake containg 20% of soybean produced the best quality in most sensory characteristics. 3. By Instron measurement of various levels of soybean in steamed soybean rice cake, hardness and cohesiveness were not different. By color value of that, b value was tend to increase as the addition level of soybean.
In order to improve the shelf-life of Tofu, the elimination of contaminated bacteria by ozone treatment was examined. Tofu prepared from ozone treated-soybean was investigated for microbial, physicochemical and sensory changes during storage at 20$^{\circ}C$ and 30$^{\circ}C$. As a result of treatment in ozonic water by 2~4ppm/sec for 3 hours, 90~98% of the total bacteria in material soybean for Tofu was eliminated. At 20$^{\circ}C$, control Tofu prepared from ozone treated-soybean was found to be spoiled after 72 hous. Titratable acidity and sensory changes of Tofu was increased as spoilage of Tofu was progressed, but pH was decreased at the first day of storage, and after that it was increased. At 30$^{\circ}C$, there was no remarkable difference between Tofu of control and Tofu prepared from ozone treated-soybean.
The changes of carnitine levels including nonesterified-carnitine(NEC), acid-soluble acylcarnitine(ASAC) and total carnitine (TC) were investigated in developing soybean sprouts. The concentrations of carnitines were determined in ungerminated and germinated soybean seeds, and in dissected axis segments and cotyledone of the germinated sprouts. Soybean seeds contain 136 nmol of TC per gram dry weight. the contents of NEC, ASAC, and TC were increased during the germination of soybean seeds. The concentrations of NEC and ASAC were highest in cotyledone and inmeristematic tissues, respectively. These data indicate that developmental differences of carnitine levels do exist in plants, and that in delveoping soybean sprouts the levels of NEC and ASAC are highest in the cotyledone and in the youngest meristem, respectively.
고 isoflavone 함유 콩 유전자원 선발 및 품종육성의 기초자료로 활용하기 위해 국내 콩 주요품종 43계통 및 보존 유전자원 648계통의 isoflavone 함량을 분석한 결과를 요약하면 다음과 같다. 1. 한국산 콩 주요 43품종의 평균 isoflavone 함량은 daidzein이 $484.4{\pm}223.9{\mu}g/g$, genisteinol $448.0{\pm}156.2{\mu}g/g$, glyciteinol $84.9{\pm}48.7{\mu}g/g$, total isoflavoneol $1,017.3{\pm}390.0{\mu}g/g$을 나타내었다. 2. 공시된 주요 품종의 isoflavone 함량은 석양풋콩이 $2,002{\mu}g/g$으로 가장 높은 함량을 나타내었고, 황금콩이 $277{\mu}g/g$으로 가장 낮은 함량을 나타내었다. 또한 콩 주요 43품종을 용도별로 분류하여 isoflavone 함량을 비교한 결과 풋콩 및 올콩이 $1,438{\pm}493.7{\mu}g/g$을 나타내어 조사된 용도별 콩 분류 중 가장 높은 양상을 나타내었다. 3. 국내 보존 콩 유전자원 648계통을 대상으로 isoflavone 함량을 조사한 결과 IT 180001계통이 $3,479{\mu}g/g$의 함량을 나타내어 가장 높은 양상을 나타내었고, IT 910878 계통은 $82.61{\mu}g/g$의 total isoflavone을 함유하여 가장 낮은 계통으로 조사되어 보존 유전자원간에 큰 함량변이를 나타내었다.
There were three trials involved in this experiment. All piglets in Trial 1 were randomly distributed into the following 4 treatments. Treatment 1. Corn-soybean diet with 5% SDPP. The tryptophan level was 0.237%. Treatment 2. Corn-soybean diet with 10% meat and bone meal. The tryptophan level was 0.177%. Treatment 3. Treatment 1+0.0662% synthetic tryptophan. The total tryptophan level was 0.303. Treatment 4. Treatment 2+0.0662% synthetic tryptophan. The total tryptophan level was 0.236. Piglets in Trial 2 were distributed randomly into the following 4 treatments. Treatment 1: corn-soybean diet+10% meat and bone meal. The total tryptophan level was 0.176%. Treatment 2: corn-soybean diet+10% meat and bone meal+5% SDPP. The total tryptophan level was 0.180%. Treatment 3: Treatment 1 diet+0.004% synthetic tryptophan. The total tryptophan level was 0.180%. Treatment 4: Treatment 1 diet+0.631% synthetic tryptophan. The total tryptophan level was 0.237%. There were 4 treatments in Trial 3. Treatment 1: cornsoybean diet+10% meat and bone meal. The total tryptophan level was 0.176%. Treatment 2: Treatment 1 diet+0.061% synthetic tryptophan. The total tryptophan level was 0.237%. Treatment 3: Treatment 2 diet+0.061% synthetic tryptophan. The total tryptophan level was 0.298%. Treatment 4: corn-soybean diet+10% meat and bone meal+5% SDPP. The total tryptophan level was 0.180%. The results of Trial 1 showed that the piglets ate significantly more (p<0.05) when feed included SDPP in the diet during the first 2 weeks. The feed intake also increased when synthetic tryptophan was added in the 5% meat and bone meal diet; however, the difference did not reach a significant level (p>0.05) during the first 2 weeks. Three weeks onwards the feed intake of 5% meat and bone meal treatment was significantly lower (p<0.05) than for the other three treatments. The results of Trial 2 showed that the feed intake could be significantly improved only when the total tryptophan level reached 0.237%. Piglets in the 5% SDPP treatment had higher feed intake than piglets in 10% meat and bone meal treatment with 0.180% of tryptophan, but did not reach a significant level (p<0.05). Body weight gain also had the same trend as feed intake. The pigs in Treatment 1, the lowest total level of tryptophan treatment (0.176%), had lowest feed intake and weight gain, but the difference did not reach a significant level (p>0.05). The pigs in Treatment 1 of Trial 3 had the lowest feed intake and weight gain (p>0.05). Treatment 2 (0.237%) had the highest average feed intake from Week 1 to Week 5; the second best result was recorded in Treatment 4. As for the weight gain of the piglets in Treatment 4 (5% SDPP), they had a higher average weight during the first 3 weeks. The feed efficiency was better for Treatment 4 (5% SDPP) during the first 2 weeks. The results of these trials showed that both SDPP and tryptophan had a trend to improve the feed intake and weight gain.
This study was conducted to investigate the effects of dietary coconut oil as a medium-chain fatty acid (MCFA) source on performance, carcass composition and serum lipids in male broilers. A total of 540, one-day-old, male Arbor Acres broilers were randomly allotted to 1 of 5 treatments with each treatment being applied to 6 replicates of 18 chicks. The basal diet (i.e., R0) was based on corn and soybean meal and was supplemented with 1.5% soybean oil during the starter phase (d 0 to 21) and 3.0% soybean oil during the grower phase (d 22 to 42). Four experimental diets were formulated by replacing 25%, 50%, 75%, or 100% of the soybean oil with coconut oil (i.e., R25, R50, R75, and R100). Soybean oil and coconut oil were used as sources of long-chain fatty acid and MCFA, respectively. The feeding trial showed that dietary coconut oil had no effect on weight gain, feed intake or feed conversion. On d 42, serum levels of total cholesterol, low-density lipoprotein cholesterol, and low-density lipoprotein/high-density lipoprotein cholesterol were linearly decreased as the coconut oil level increased (p<0.01). Lipoprotein lipase, hepatic lipase, and total lipase activities were linearly increased as the coconut oil level increased (p<0.01). Abdominal fat weight/eviscerated weight (p = 0.05), intermuscular fat width (p<0.01) and subcutaneous fat thickness (p<0.01) showed a significant quadratic relationship, with the lowest value at R75. These results indicated that replacement of 75% of the soybean oil in diets with coconut oil is the optimum level to reduce fat deposition and favorably affect lipid profiles without impairing performance in broilers.
