This study was conducted to assess thiamin nutritional status in Korean female college students on normal diet Weighed food records and 24-hour urine samples were collected from subjects for three days. Mean daily intake of thiamin was calculated from food records. Pooled urine samples were analyzed for thiamin and creatinine. Mean daily intake of thiamin was 0.72$\pm$0.22mg, 72% of Korean RDA for the group. Thiamin intake per 1000kca1 was 0.4997$\pm$0.09mg, which is close to the RDA. Mean daily urinary excretion of thiamin were 130.11$\pm$ 71.06$\mu\textrm{g}$/24hr and 180.59$\pm$129.79$\mu\textrm{g}$/g creatinine. Mean daily thiamin intake(mg/day), but not thiamin intake per 1000kca1 was showed by positive correlated with urinary excretion of thiamin(p<0.01). Thiamin nutritional status of the subjects based on 24-hour urinary excretion of thiamin was deficient in one subject(19%), low in nineteen subjects(36.5%), and acceptable in thirty two subjects(61.5%). Only six subjects were in low thiamin status based on thiamin excretion per gram creatinine. Therefore, total urinary excretion of thiamin seems to be more sensitive to marginal thiamin deficiency compared to urinary excretion per gram creatinine. From the results of the study, the prevalence of marginal thiamin deficiency seems to be high among young Korean adult women.
표고버섯의 균사성장과 자실체 형성에 있어서 티아민의 효과를 펩톤 글루코스 기본 액체배지를 이용하여 조사하였다. 티아민은 표고버섯의 자실체 형성을 위해서는 필수 인자이며 최소 요구량은 10 ${\mu}g$/L 정도이다. 영양 생장기에는 티아민 농도 1.5 ${\mu}g$~1.5 mg/L의 범위 내에서는 영향을 거의 받지 않았다. 티아민을 첨가하지 않은 펩톤 글루코스 한천배지에 3회 계대 배양을 실시해도 티아민에 의한 균사성장의 차이는 나타나지 않았다. 이상의 결과, 티아민은 표고버섯의 균사성장에는 극히 소량이 요구되지만 거의 대부분의 티아민은 자실체 형성에 사용된다는 것을 알았다.
The purpose of this study was to assess risk factors associated with food insecurity in the Korean elderly aged over 65 years using data from the Korea National Health & Nutrition Examination Survey 2013 (KNHANES VI). A total of 1,200 subjects were analyzed among the participants of the KNHANES 2013 by using SPSS statistics complex samples (ver. 21.0). Food insecurity was measured by using the modified US Household Food Security/Hunger Survey Module. Thirteen percent of subjects lived in food insecure households. There were differences in the prevalence of food insecurity according to sex, educational level, income level, and household structure. Mean age of the food insecurity group was significantly higher than that of the food security group. The results of logistic regression analysis showed that food insecurity was significantly associated with alcohol intake (OR: 1.82), prevalence of melancholy (OR: 2.07) and suicidal thoughts (OR: 2.67), and intake deficiency of energy (OR: 1.60), calcium (OR: 1.97), iron (OR: 1.97), potassium (OR: 1.96), riboflavin (OR: 1.76), and niacin (OR: 1.64), while not with smoking, physical activity, chronic diseases including obesity, anemia, diabetes, and osteoarthritis, and deficiency of protein, vitamin A, thiamin and vitamin C. These findings suggest that food insecurity is strongly related to mental health and certain nutrient intakes. Prospective research is needed to establish the effects of food insecurity on chronic diseases.
For the purpose of developing 'Web-Based Nutritional Education Program', this study analyzed nutritional problems of junior/senior high school students and set appropriate instructional goals for nutritional education program. Survey questionnaires were distributed from October 21,2002 to October 26, 2002 to a total of 564 students at three junior high schools and five senior high schools located in Seoul. The total number of questionnaires collected and used in our study was 479, which is 84.9% of the total questionnaires distributed. According to the survey results, three student groups (male and female students at junior high schools and female students at senior high schools) had lower than an ideal body weight. In case of their Basal Metabolic Indices (BMI), the female students and junior high school students showed a tendency to be underweight, while the other three student groups were within the normal range. The result of the survey showed that all four groups of students showed a deficiency in nutrient intake of calories, calcium and thiamin when compared with Korean RDA. Particularly, in the case of the female students at senior high schools, the deficiency of iron intake was a problem. The survey about food attitudes and food habits of the students showed that the senior high school students had more problems when compared with their junior high school counterparts (p < .001). Therefore, the instructional goals of nutritional education program were set as follows: 1) To improve the level of understanding and the perception of junior and senior high school students about the importance of a dietary lifestyle. 2) To change food attitudes and nutritional knowledge related to individual dietary 1ifestyle, so as to maintain good health through the enhancement of the students' physical activities. We found out that it is critically important to factor in the existing problems of food attitudes and food habits, as well as nutrient intake among junior and senor high school students when setting objectives for nutritional education programs. Riboflavin status of 17 insulin-dependent diabetic mellitus(IDDM) patients in growing period was evaluated as a function of energy intake and expenditure, biochemical nutritional status and diabetic control indicators. Compared with recommended dietary allowances for Koreans(RDA, 1989), only 35.3% of subjects was at good levels of all nutrients intakes and 52.9% of subjects was below normal level of height and weight. Nutrients consumed below RDA levels were energy(=88.5% of subjects), niacin(64.7%), iron(52.9%) and protein(23.5%) respectively. The riboflavin status was within normal range by urinary riboflavin excretion but 17.6% of subjects was evaluated as showed riboflavin deficiency by erythrocyte glutathione reductase activity coefficient(EGRAC). Correlation between riboflavin intake, urinary riboflavin excretion, EGRA level and diabetic duration were not statistically significant. Correlation analyses indicated that EGRA level was inversely correlated with thiamin, niacin and cabohydrate intake. No significant correlations were found between the EGRA and glycosylated hemoglobin A1(HbA1) (r=-0.464, p=0.129). From this study, it is suggested that IDDM subjects need to maintain balanced diet containing nutrients above RDA for individual activity during growing period. It needs more study whether the current recommended riboflavin allowance is adequate for diabetic patients.
The purpose of this survey was to investigate the nutrient and food intake and haematology of the latter half of pregnant women in Nam Hae Do. The nutrient intake study was performed by Twenty-four hour dietary recall method. As Haematology, RBC, Hb. and Hct were measured. 1. The results of nutritional survey were, 1) The mean nutrient intakes that were below the RDA were Protein, Calorie, Calcium and Iron. 2) The mean nutrient intakes that were above the RDA were Vitamin A, Thiamin, Riboflavin, Ascorbic acid. 3) Most of calorie and other nutrients were obtained from vegetable food sources. 4) Animal protein intake was 33% of total protein intake and most of this value was obtained from fish and shell fishes. 2. The extent of malnutrition was explained in terms of the amount of calorie, protein, calcium and iron. The results were, The predicted percentage of deficiency, in case of Calorie, 53.3% of total subjects. in case of Protein, 52% of total subjects. in case of Calcium, 78.7% of total subjects. in case of Iron, 54.7% of total subjects. 3. The results of Haematology were, 1) The mean level of RBC, Hb and Hct were 3.76$\times$106cm/㎣, 10.47gm%, and 32.56% 2) There were significant correlation between calorie intake and Hct level, protein intake and RBC level, Iron intake and MCHC level.
The prevalence of alcoholism among elderly population is reported to be high in rural areas in Korea. Chronic abuse of alcohol can lead to the development of vitamin B deficiency through inadequate intake, altered absorption and metabolism, and increased excretion. The present study was conducted to assess vitamin B1 and B2 status in seventeen alcohol dependent subjects who do not exhibit any clinical neurological symptoms. Vitamin B1 and B2 nutritional states were determined enzymatically by measurement of transketolase and glutathione reductase activities in erythrocytes, respectively. And dietary intakes of nutrients were determined by a 24-hr recall method. The mean percent activation of erythrocyte transketolase was significantly higher in alcoholics than in alcoholics than in control (p<0.05). The proportion of subjects with a low and borderline status of vitamin B1, was significantly higher in alcoholics than in control (p<0.05). The mean percent activation of erythrocyte glutathione reductase was not different between alcoholics and control. And the proportion of subjects with low and borderline status of Vitamin B2, was higher in alcoholics than in control (p<0.1). Vitamin B1 and B2 status were significantly decreased in alcoholics who were smoking cigarettes compared to non-smoking and non-alcoholic subjects(p<0.05). Whether vitamin supplementation improves the vitamin status of alcohol dependent subjects remains to be researched.
The purpose of this study was to provide the proper nutritional management, and help to improve the health of girl students in a rural area. The nutritional survey, and blood sampling was conducted for five days, from April 26 to 30, 1983. The subjects of this survey were 110 students of girl's high school in Cheongyang area. The results were summerized as follows; 1) The daily food intake was 842.3g and that of animal foods was 34.4g. The average intake of calorie, protein, Ca, Fe, thiamin, riboflavin and niacin except Vit. A and Vit. C was below the RDA. Total calorie intake was l,802kcal. The ratio of carbohydrate, protein and fat was 81:11:8. 2) The extent of malnutrition was explained in terms of the amount of calorie, protein, Ca, Fe, and Vit. C. The predicted percentage of deficiency was 47.3% in calorie, 46.4% in protein, 61.8% in Ca, 48.2% in Fe, and 15.5% in Vit C of total subjects. 3) The mean values of Hgb, Hct and MCHC were 13.15g/dl, 39.57% and 33.2%, thus, the anemic prevalences were 10.9%, 2% and 78.2% respectively. The mean values of SI.TIBCand TS were $109.86{\mu}g$/61, $317.11{\mu}g/dl$ and 34.59%. 4) The correlation between the economic levels and nutrients intake was significant. Correlation between weight and nutrients intake was also significant but nutrients intake was not significantly correlated to blood contents.
This study was conducted with 20 female gymnasts and 23 age-matched controls to examine the relationship of diet, menstrual function and bone mineral density (BMD). The results obtained are summarized as follows : Energy intake of gymnasts was 968.9$\pm$421.4kcal, and energy expenditure was 2091.4$\pm$361kcal showing negative energy balance(-1,122.5$\pm$534.6kcal). The average intakes of calcium, iron, vitamin A, thiamin, riboflavin and niacin did not meet the Recommended Dietary Allowances for their age groups. Mean age at menarche in gymnasts is 15.8$\pm$1.2 years compared with 11.8$\pm$2.8 years in age-matched controls. The profile of estradiol, progesterone, and luteinizing hormone was lower than age-matched controls but not significant. Athletic amenorrheic gymnasts(n=12) have the menstrual irregularity(n=10) and amenorrhea(n=2). A number of variables as such nutritional deficiency in diet, negative energy blasnce and hypogonadotropic hormonal status were included. The bone mineral density (BMD) of female gymnasts were significantly higher than controls for the lumbar neck(p<0.001), trochanter(p<0.01), and Ward's triangle(p<0.001), but there were no significant differences for the lumbar spine and forearm. The lumbar spine BMD had a positive correlation with age and lean body weight. The femoral neck BMD was significantly associated with age, group and lean body mass. The trochanter BMD had significant relationship with group, body mass index, energy expenditure and follicular stimulating hormone. Ward's triangle BMD were related to body mass index and follicular stimulating hormone. The significant association was deterced between forearm BMD and age and lean body weight. The major finding of this investigation is that the BMD of gymnasts were higher than age-matched controls despite the fact that gymnasts as a group had inadequate dietary calcium and a higher propensity to have an interruption of their menstrual cycle. These data indicate that grymnsts involved in sports producing significant impact loading on the skeleton had greater femoral neck, trochanter and Ward's triangle bone density than age-matched controls.
