Major components and antioxidative properties of whole fruit powders and juices prepared from premature mandarin, Citrus unshu, were investigated. Dietary fiber, flavonoid, and organic acid contents greatly increased in samples with lower degree of fruit maturity (August) than higher ones (October), and in whole fruit powders than extracted juices, whereas free sugar contents, especially sucrose content, increased in fruits with higher degree of maturity than lower ones. Antioxidative properties were not affected by degree of fruit maturity, whereas total polyphenol content and electron-donating abilities were higher in extracted juices than whole fruit powders. Nitrite-scavenging abilities of all samples were similar except at pH 6.0.
Dried and roasted Gugija (Lycii fructus) were extracted with water, 50% ethanol and 100% ethanol, after which the physico-chemical properties of the extracts were evaluated. The extraction yield was higher when using water for the extraction solvent than when the other solvents were used, while the water extract of roasted Gugija had the highest yield. Furthermore the pH of the extracts increased as the ethanol concentration increased, and the pH of dried Gugija was higher than that of roasted Gugija when extracted using the same extraction solvent. The sugar concentrations of the extracts from dried and roasted Gugija were $15.0{\sim}20.1\;%Brix$ and $18.0{\sim}21.2\;%Brix$, respectively. The total polyphenol contents of the extracts from the dried and roasted Gugija were $6.9{\sim}19.0\;mg/g$ and $12.4{\sim}15.8\;mg/g$, respectively. Dried Gugija extract with water had a higher the total polyphenol contents than the other extract. The total polyphenol contents of roasted Gugija extracts were higher than those of dried Gugija, when using 50% or 100% ethanol for extraction solvent. The electron donating ability and total antioxidant activity of dried Gugija were $67.6{\sim}87.7%$ and $58.6{\sim}85.0%$, respectively, whereas those of roasted Gugija were $84.7{\sim}89.8%$ and $80.6{\sim}83.7%$, respectively. Dried and roasted Gugija extracts were higher electron donating ability and total antioxidant activity, when using water, and 50% or 100% ethanol, respectively. The predominant amino acid in all extracts was threonine. The essential amino acids constituted approximately $44.9{\sim}63.6%$ and $45.4{\sim}59.0%$ of the total amino acids of extracts from the dried and roasted Gugija, respectively. Finally, the total polyphenol contents and antioxidant activities showed that optimal extraction solvent would be water, and 50% or 100% ethanol for dried and roasted Gugija, respectively.

In this study, we estimated the PMP(Probable Maximum Precipitation) and its transition in case of the typhoon Rusa which happened the biggest damage of all typhoons in the Korea. Specially, we analysed the moisture maximizing rate under the consideration of meteorological condition based on the orographic property when it hits in Gangneung region. The PMP is calculated by the rate of the maximum persisting 12 hours 1000 hPa dew points and representative persisting 12 hours 1000 hPa dew point. The former is influenced by the moisture inflow regions. These regions are determined by the surface wind direction, 850 hPa moisture flux and streamline, which are the critically different aspects compared to that of previous study. The latter is calculated using statistics program (FARD2002) provided by NIDP(National Institute for Disaster Prevention). In this program, the dew point is calculated by reappearance period 50-year frequency analysis from 5% of the level of significant when probability distribution type is applied extreme type I (Gumbel distribution) and parameter estimation method is used the Moment method. So this study indicated for small basin$(3.76km^2)$ the difference the PMP through new method and through existing result of established storm transposition and DAD(Depth-Area-Duration). Consequently, the moisture maximizing rate is calculated in the moisture inflow regions determined by meteorological fields is higher $0.20{\sim}0.40$ range than that of previous study. And the precipitation is increased $16{\sim}31%$ when this rate is applied for calculation.

This study was conducted to investigate the effects of various cropping system applied with cattle slurry on productivity of sorghum $\times$ sudangrass hybrid (SSH) and environmental pollution in paddy land. cropping systems used in this study were consisted of two designs, such as double-cropping sorghum $\times$ sudangrass hybrid followed by whole crop barley applied with cattle slurry (DSSCS) and mono-cropping sorghum $\times$ sudangrass hybrid followed by hairy vetch used as green manure (MSSGM). The field experiments were conducted on the clay loam at Backsanmyun, Kimje, Chunlabukdo province in Korea for three years (May 2006 to Apr. 2009). This study was arranged in completely randomized design with three replicates. The yield of dry matter (DM) of SSH in DSSCS increased significantly as compared with that of MSSGM (P<0.05). The contents of crude protein (CP), acid detergent fiber (ADF), neutral detergent fiber (NDF) and total digestible nutrients (TDN) of SSH were not influenced by cattle slurry and green manure. The pH, and contents of OM, T-N and $P_2O_5$ in soil samples collected from DSSCS after the end of experiment were higher than those of MSSGM. The pH, and contents of OM in DSSCS treatment were remarkably higher than those at the beginning of the experiment (p<0.05). However, The pH, and contents of OM in MSSGM treatment were hardly influenced, as compared with those at the beginning of the experiment. The contents of T-N in soil samples collected both from DSSCS snd MSSGM treatments were remarkably higher than those at the beginning of the experiment (p<0.05). In addition, the concentrations of CEC in soil samples collected at the end of the experiment were remarkably higher than those at the beginning of the experiment (p<0.05). The concentrations of $NO_3$-N, $NH_3$-N and $PO_4$-P in leaching water were hardly influenced by the cropping system and application of cattle slurry.

Xylitol has been used as sugar substitute to prevent dental caries. It is not fermented by most dental plaque bacteria and interferes with the growth of mutans streptococci. Therefore the production of acidic metabolites and the growth of mutans streptococci are inhibited. S. mutans strains which are inhibited to grow under the presence of xylitol are referred as xylitol-sensitive ($X^S$) strains. However, experimental and clinical studies have shown that there were mutated groups of S. mutans strains that are not affected by xylitol. They are referred as xylitol-resistant($X^R$) strains. The aim of the present study was to investigate that emergence of $X^R$ strain would effect on the anticariogenecity of xylitol by comparing the growth rate, the extracellular pH, hydroxyapatite adhesion and the agglutination of the $X^R/X^S$ strains. Overall we came out with following results : 1. No difference in the growth rate and the extracellular pH was found between the $X^S$ strain and the $X^R$ strain. 2. No difference in adhesion to hydroxyapatite surface was found between the $X^R$ strain and the $X^S$ strain (p>0.05) and adhesion of the $X^S$ strain was greater than that of $X^R$ strain in the sucrose-dependent adhesion to hydroxyapatite (p<0.05). 3. The $X^R$ strain was agglutinated in the lower concentration of saliva than that of $X^S$ strains.
This study examined the plant growth and development characteristics of leafy vegetables on the hydroponic substrates of waste wood chips, radiate pine chips, and mat type of waste wood chips. The bulk density of waste wood chips and radiata pine chips were $0.2g/cm^3$ and $0.16g/cm^3$, respectively. The moisture retention properties of both the radiata pine chips and waste wood chips were found to be similar but not better than those of the control rock wool and coco peat hydroponic substrates. The moisture retention property of the mat type was found to be the lowest. The chemical analysis of waste wood hydroponic substrates (w/v) was as follows.; The pH was 6.59, electric conductivity was 6.76 dS/m, total nitrogen content was 0.5%, C/N ratio was 113%, phosphorus was 10.1 ppm, potassium was 77 ppm, calcium was 531 ppm, magnesium was 49 ppm, and sodium was 96 ppm. The results from the radiata pine chemical analysis showed that it had a pH of 5.29, electric conductivity of 4.49 dS/m, total nitrogen content of 0.32%, C/N ratio of 180%, phosphorus of 6.4 ppm, potassium of 83 ppm, calcium of 97 ppm, magnesium of 29 ppm, and sodium of 59 ppm. Except for the plants grown in mat type, the developmental characteristics of the plants grown in rock wool and coco peat hydroponic substrates were similar. Based on the results of the experiment, waste wood resources may possibly be used as an organic solid medium in place of the existing rock wool and coco peat medium.

Chemical characteristics and their interrelationships of 156 soils included by 74 sandy loam and 82 loam soils collected from plastic film house in Chungbuk area were investigated from 1998 to 2001. Seventeen chemical properties including pH, organic matter (OM), electrical conductivity (EC), inorganic nitrogen, available phosphorus, exchangeable cations, CEC, etc., were analyzed by correlation, standardized partial regression coefficient, and principal factor analysis. Standardized partial regression coefficients of chemical properties were estimated to determine the degree of contribution of EC and OM contents in soils. Principal factor analysis was applied to classify the studied chemical properties into different groups having similar chemical properties. The pH of experimental soils ranged from 4.24 to 7.14 and 4.95 to 7.35 for loam and sandy loam soils, respectively. The EC of soils varied from 0.93 to $15.65dS\;m^{-1}$ for loam and $0.91{\sim}22.30dS\;m^{-1}$ for sandy loam soils, respectively with significant differences among them. The EC measured by 1:5 $H_2O$ dilution method and saturation method were significantly related with 8.163 and 8.599 as the slopes of regression equation for loam and sandy loam soils, respectively. These slopes more than 8.0 in this regression equation was higher than the slope of 5.0 that is estimated from dilution coefficient suggesting that EC measured by 1:5 dilution method might be erratic. The standardized partial regression coefficient of different chemical properties for the estimation of EC was in the order of $NO_3{^-}$ > $Cl^-$ > OM > exchangeable Mg for loam soils and $NO_3{^-}$ > exchangeable Mg > $Cl^-$ for sandy loam soils. Contribution order of the chemical properties based on standardized partial regression coefficient differed 1:5 dilution method and saturation method, indicating that different chemical compounds might be present in the extract solutions of these two methods. Consequently the measurement of EC by saturation method was thought be still better for estimation of chemical property because accuracy of EC measurement by 1:5 dilution method can't be improved by any specific coefficient for adjustment of EC. Regardless of differences in soil textures and extraction methods, correlation coefficients between EC and the other chemical properties were routinely in the order of $NO_3{^-}$ > $Cl^-$ > degree of base saturation > exchangeable Mg > exchangeable Ca > $SO{_4}^{2-}$. The principal factor analysis revealed four factor groups of the chemical properties studied. The groups for sandy loam were as follows; ; 1. salt components, 2. soil reaction components, 3. fixed and adsorption components, 4. CEC components. The groupings of loam soils were similar to sandy loam except that exchangeable Na substituted the CEC of sandy loam.
In order to study spatial variability of soil chemical properties across the land-partitioned boundary on Hwadong silt clay loam soil (Fine clayey, mixed, mesic family of Aquic Hapludalfs) in the experimental fie ld of the wheat and Barley Research Institute in Suwon, all measured data were analyzed by means of kriging, fractile diagram, smooth frequency distribution, and autocorrelation. Sampling for soil chemical property analysis was made at 225 intersections of 15x 15 grid with 10m interval from three soil depths (0-10cm, 25-35cm, 50-60cm) in the seven patitioned fields. 1. The coefficient of variance (CV) of various chemical properties varied from 5.4 to 72.7%. Soil pH was classified into the low variation group with CV smaller than 10%, while the other chemical properties belonged to the medium variation group with C.V. between 10 and 100% 2. The approximate number of soil samples for the determination of various chemical properties with error smaller than 10% were two for pH, ten for CEC, 15 for exchangeable Ca, 32 for total nitrogen content, 39 for exchangeable Mg, 40 for exchangeable K, 61 for exchangeable Na, 82 for organic matter content, 212 for available phosphate,. 3. Smooth frequency distribution and fractile diagram showed that available phosphate was in log-normal distribution while others were in normal distribution. 4. Serial correlation analysis revaled that the soil chemical properties had spatial dependence between two nearest neighbouring grid points. Autocorrelation analysis of chemcial properties measured between the serial grid points in the direction of south to north following land-partitioned boundary showed that the zone of influence showing stationarity ranged from 20 to 50m. In the direction of east to west accross land-partitioned boundary, the autocorrelogram of many chemical properies showed peaks with the periodic interval of 30m, which were similar to the partitioned land width. This reveals that the land-partitioned boundary causes soil variability.
To develop a new functional kimchi with antioxidative properties, salted baechu was soaked in black rice water extract for 6 h at room temperature. The antioxidative property of the water extract was $78.75{\pm}1.18%$ that of the control (0.1% [w/v] alpha-tocopherol). The black rice gel was added to the baechu kimchi preparation. The color of baechu kimchi treated with black rice water extract changed to dark violet and/or black. Control kimchi and black rice water-treated kimchi were stored at $4^{\circ}C$ for 30 days. No significant differences were detected between the control and the black rice water-treated group in the early stages of fermentation. As fermentation time increased, pH decreased and titratable acidity increased rapidly in control kimchi. However, such marked changes were not evident in test kimchi. The hardness value of black rice water-treated kimchi was higher than that of control kimchi after the midpoint of the fermentation period. The storage life of baechu kimchi treated with black rice water extract was prolonged by up to 5 days compared with control samples, owing to a decline in lactic acid bacteria and yeast levels during the final fermentation period in black rice water-treated kimchi. The total phenolic levels and the antioxidative capacity of black rice water-treated kimchi (83%) were approximately 1.5-fold higher than in control kimchi (57%). In sensory evaluation, black rice water-treated kimchi scored higher than did control kimchi using a blind test protocol.
This study was conducted to investigate changes in the physicochemical, antioxidant, and sensory properties of burdock during 9 repeated rounds of steaming ($90^{\circ}C$, 3 h) and drying ($60^{\circ}C$, 20 h) procedures. The moisture content decreased from 81.95% to 7.64% as the process was repeated. Fresh burdock showed the highest total sugar content, with 518.35 mg/g of soluble sugar, 86% being inulin. The reducing sugar content was the greatest (377.00 mg/g) in burdock that had been processed 3 times. The brown color continuously intensified, reaching its peak at 7 rounds of processing, and then weakened. Crude saponin content was the highest (6.17%) after the 5th processing. Polyphenol content and antioxidant activity (DPPH, ABTS, FRAP) were the highest at the 3rd and 5th procedures, respectively. Repeated processing weakened the grass and root odors and the bitter, astringent, and metallic tastes, whereas it strengthened the sweet and savory odors, caramel flavor, and richness.
