Queueing Analysis by Menu Management Systems in Cafeteria of the Business Foodservices (카페테리아 식단을 제공하는 사업체 급식소의 식단운영 형태에 따른 대기행렬 분석)

  • The purposes of this study were to : (a) anlayze wating time, service rate, arrival rate, and coustomer expectations/satisfaction in cafeteria business foodservices and (b) identify the differences in those factors between foodservices by menu managmenet systems. The samples were two business foodservices operated by contract management in Seoul. The queue, laptime , service rate, and arrival rate were measured at each foodservice by stopwatch observation. The menu type, delivery system, number of meals served , servide time, and turnover rate of each foodservic was investigated. Questionnaires were developed to survey customer expectations and satisfaction. Satistical data analysis was completed using the SAS package programs for descriptive analysis and t-test. The mean waiting time of island type dafeteria system with separte set -menu was shorter than that of the other. In both foodservices, arrival rates were not significantly different from one another , but sevice rates were significnatly high in dafeteria menu systems. The peak time of the queue was found out at combination set menu line. The separate set menu line had a higher servide rate than the combination set menu line. The mean waiting time of the island type cafeteria line was shorter than that of the straifth type . At the straight type dafeterial line, both arrival rate and service rate were higher than those of island-type. The results of this study suggested that a separate set-menu would be more desirable than a combination set-menu in case of providing set menu with cafeteria menu.

A study on the oral health status at disabilities children in Ulju-gun Ulsan (울산광역시 울주군 사회복지시설 장애아동의 구강건강상태에 대한 실태조사)

  • The purpose of this study was to obtain basic data for development of oral health educational program on the control of handicapped children at social welfare facilities. For this research, it was investigated by a survey on the actual condition of dental health of handicapped children, and simultaneously by analyzing the relationships between the realities of child's dental condition and parents and guardian's acknowledgments and managements with regard to the dental health of children. This survey was conducted 135 children and their guardians being 4 social welfare facilities in Ulsan metropolitan city. 1. The average of DT, MT, FT and DMFT index were 1.82, 0.01, 0.98 and 2.84 respectively. 2. Rolling Toothbrushing method was the highest response(58.5%) and 3 times per a day(77.0%). A proxy of toothbrushing was parents(39.2%) and teacher(60.8%). 3. Recognition routes of toothbrushing method were family(13.3%), school(43.7%) and dental chinic(42.2%). 4. The numer of times electromotion tooth brushing was the highest response in more than 4 times per a day. Toothbrushing after eating between meals was higher negative response(50.4%). The number of times visiting dental clinic was the highest response in more than 5 times during a year(51.9%).

A Survey of the Needs of Nutrition Education Based on Analysis of Eating Habits and Nutrition Knowledge among Middle School Students in Kyung-Gi Province (경기도 일부지역 중학생의 식습관 및 영양지식 분석을 통한 영양교육 요구도 조사)

  • This study was conducted to examine the needs of nutrition education based on analysis of the eating habits and nutrition knowledge among middle school students. The survey was conducted on 536 students (boys=216, girls=320) using a questionnaire. The average number of meals consumed was three (67.5%) and 58.0% of students reported having breakfast. Concerning the nutritional knowledge, students showed the highest score (girls, 0.90${\pm}$0.03 and boys 0.82${\pm}$0.04) for items describing the proper diet plan for obesity. Additionally, nutritional knowledge was found to have a significant effect on dietary habits. Regarding the necessity for nutrition education, high response rates for "For normal growth of students (44.8%)" and "Help to select proper food and choose safe food (24.0%)" were observed. Taken together, these findings indicate that consistent and systematic management is required under the institutional support by the school to improve students' perception regarding nutrition and to develop effective nutrition education.

A Study on the Food Habit and Dietary Intake of Preschool Children (학령전 아동의 식습관과 식이섭취평가에 관한 연구)

  • This study was conducted to investigate the dietary habits and assess the dietary intake of preschool children. Food habit, preference and nutritional supplement status were investigated using a questionnaire answered by the mothers of 453 subjects aged 3 to 6 years old. Also, a dietary intake survey using a 24-hour recall method was performed by mothers of the children. It was found that 81.2% of subjects had milk, dairy products, cookies, fruit and bread between meals once or twice per day. As well, 60.3% of subjects had an unbalanced diet and 20.7% had an overeating habit. Thus, unbalanced diet was a serious problem for many of the subjects. Due to weight controls, digestion problems and allergies, 11.7% of subjects had special dietary consideration. And 26.4% of subjects were using nutritional supplements. From the 24-recall survey, it was found that all nutrient intakes were higher than the Korean RDA except calcium and vitamin A. Nutrient intakes for protein, calcium, phosphorus and vitamin B2 were significantly different by sex, and also increased with age but not significantly. Children received 35% of daily energy, 44% of daily fat and 52% of daily calcium from snacks, so snacks clearly play an important role in dietary intake. The average number of foods consumed per day by subjects was 17.6 and that dishes was 11.0. Most children consumed 4 or 5 food groups per day. In conclusion, the dietary intake of children aged 3 to 6 were deemed adequate judging from nutrient intake and dietary diversity. More attention should be paid to the nutritional value of snacks in this age group.

Food Habits and Its Relation to the Obesity of Preschool Children Living in Urban Area (도시지역 학령 전 아동의 식습관과 체위 및 비만과의 상관관계 연구)

  • This study was designed to evaluate food habits, anthropometry and obesity of 252 children(136 boys, 116 girls) aged $2{\sim}6$ years old. The anthropometric indices were measured and food habits were surveyed. Average food habit score was 11.7/20.0 in boys and 11.8/20.0 in girls. It was found that 60.3% of the subjects belonged to fair score group(7-13) in food habits, while subjects in poor (0-6) and in excellent (14-20) were 30.6% and 9.1% respectively. There was no significant difference in food habits score between boys and girls. The food habits score tended to be higher as the mother's education level, total family income, number of siblings were increased. The mean height, weight and chest circumference of the subjects were much higher than the Korean standards. Evaluating the obesity by weight for height, 77.8% subjects was normal, 4.0% was underweight and 18.3% was obese. Underweight children did not seem to enjoy their meals and ate too slowly compared to normal or obese children. Therefore they needed to promote food habits by good nutritional education.

Dietary Behavior by Residence Types of Female College Students in Chungbuk Area (거주형태에 따른 충북지역 여대생의 식행동 비교)

  • This study was performed to compare dietary behaviors based on residence types of female college students. Self reports on dietary behavior and one-day dietary records were obtained from 227 female college students using anonymous questionnaires. The mean age of the subjects was $20.4{\pm}1.43$, and the height and weight were $162.5{\pm}4.8cm$ and $52.3{\pm}7.9kg$, respectively, The dietary behavior of female college students was inadequate, showing indifference to dietary balance, irregularity of meals, skipping breakfast, and high experience of drinking. One-day dietary records were obtained from 24k recall methods also showed a high number registering skipped meal status ($55.3\%$) and less diverse food intake (DVS, 12.5; DDS, 3.93). The students in self boarding residence were especially more likely not to eat properly and their dietary behaviors were found to be significantly poor. In the case of home residence, food intake frequency scores for milk and dairy products, fruits, and fishes were significantly higher, however the students in self boarding residences showed high food intake frequency scores in salted food, retort food, canned food, and especially instant ramyun. Therefore, more attention needs to be given to them to recognize the problems in their own dietary behaviors and more practical nutritional supports, like developing a menu for breakfast in college cafeterias, would be helpful to improve their dietary choices.

Effect of Oropharyngeal Sensory Stimulation Using Capsaicin in Acute Stroke Patients with Dysphagia (연하장애를 가진 급성기 뇌졸중환자의 캡사이신을 이용한 구인두 감각 자극의 효과)

  • Purpose : This study aimed to investigate the effects of oropharyngeal sensory stimulation using low-temperature capsaicin on dysphagia, dietary level, aspiration pneumonia, and nutritional status in acute stroke patients with dysphagia admitted to a stroke intensive care unit. Methods : This study used a randomized controlled trial design and 43 participants were randomly assigned to the experimental group (n=21) or control group (n=22). An oropharyngeal sensory stimulation intervention program was constructed based on previous studies. The intervention was provided before meals twice a day for seven days and started with the first meal after hospitalization. In the control group, a solution was made using only bottled water without adding capsaicin solution, and the intervention was provided at the same time, method, and number of times as the experimental group. Results : As a result of the study, dysphagia and dietary level improved in the experimental group that received oropharyngeal sensory stimulation using capsaicin. There were no effects on the nutritional status or aspiration pneumonia. Conclusion : This study provides basic data for the development of an intervention program for patients with dysphagia by presenting a theoretical basis that oropharyngeal sensory stimulation intervention using capsaicin improves dysphagia and dietary levels.

Survey on the Lifestyle Factors, Food Habits and Dietary Nutrient Intake of College Students - Before and after nutrition education - (대학생의 생활습관요인, 식습관 및 영양소섭취 조사 - 영양교육 전후를 중심으로 -)

  • This study examined the lifestyle factors, dietary attitudes, food habits, and dietary nutrition intake of college students before and after nutrition education. A total of 44 college students were recruited and a questionnaire survey was conducted. Dietary nutrient consumption was obtained from the one day 24-hr recall. Scores on 'Concerns about health (p<0.05)', 'Regular exercise (p<0.01)', and number of steps (p<0.001) were significantly higher after-training. The dietary attitude (31.3 vs. 33.7, p<0.01) and food habits (53.5 vs. 59.7, p<0.01) were significantly higher after-training. The scores on 'Eating a lot of food that I want to eat is more important than nutrition (p<0.01)', 'I am interested in information on nutrition and health (p<0.01)', 'Have three meals a day (p<0.01)', 'Have breakfast regularly (p<0.01)', 'Drink milk every day (p<0.001)', 'Have fruits every day (p<0.05)', and 'Apply nutrition knowledge to daily life (p<0.001)' were significantly higher after-training. Among the nutrients intakes, the protein (p<0.05), vitamin C (p<0.01), and calcium (p<0.001) were significantly higher after-training. Nutrition education improved the lifestyle factors, dietary attitudes, food habits, and dietary nutrition intakes.

Health Problems and Support from the Health & Welfare Service in the Elderly at Home (재가노인의 건강문제와 보건ㆍ복지 서비스 지원 실태에 관한 연구)

  • Purpose: This study was conducted to identify health problems and support received from the health and welfare service using MDS-HC(Minimun Data Set for Home Care) in the aged living at home. Method: Eighty-one elderly persons were selected from those listed in community-welfare service centers in Seoul and Kyunggi Province between December 2002 and January 2003. Result: Eleven health problems per elderly person on average were identified, and the frequent care needs were in order: preventive health measure, health promotion, visual function, depression & anxiety, communication disorders, social function, pain, environmental assessment, oral health, cognition and falls. The number of health problems by the level of ADL was ‘ADL 1(Independence)’ 9.87, ‘ADL 2(Partial independence)’ 12.78, ‘ADL 3(Dependence)’ 13.73. Utilization of formal health & welfare services among the elderly was ‘meals on wheels’ 40.7%, ‘home helper’ 38.2%, ‘visiting of social welfare worker’ 21.0%, ‘physical therapy’ 19.6%, ‘day care center’ 12.3%, ‘volunteer's service’ 9.9%, ‘home visiting care’ 3.7%, ‘occupational therapy’ 3.7%, and ‘speech therapy’ 2.5%. Conclusion: The results suggest that using the MDS-HC 2.0 is applicable to help decide criteria for both health and welfare service supplied to the elderly.

Differences in the Dietary and Health-Related Habits and Quality of Diet in University Students Living in Daejeon (대전지역 남녀 대학생의 식생활습관과 식사의 질 변화)

  • This study was investigated the differences in the dietary habits and quality of diet among 148 university students in Daejeon between 1993 (71 subjects) and 2000 (77 subjects). Among male students, there were increases in height and decreases in weight, but the number in the normal weight group assessed by the BMI, increased. Significant increases in meal regularity and the rate of considering a balanced diet at meal time and significant decreases in the rate of eating unbalanced meals were noted over time among the male students. The number of male students drinking alcohol and those drinking alcohol frequently decreased significantly. When considering differences in the nutrient intake of males according to the Korean RBA, the percentages of energy, iron, and Vitamin B$_2$ decreased, while those of Vitamin C, calcium, and phosphorus increased over time. The NAR (Nutrient Adequacy Ratio) of most nutrients, especially in iron and Vitamin C were higher, than those of 1993, but the NAR of calcium, iron, Vitamin B$_2$, niacin and MAR (Mean Adequacy Ratio) were lower than 0.75 in the males. The INQ (Index of nutritional quality) of Vitamin C was higher than that of 1993, and the mQ of calcium and Vitamin $B_2$ were lower than 1 among the males. Among the females, there was no change in height and weight between 1993 and 2000, but the normal weight group, as assessed by the BMI, increased as among the males. However, unlike among the males, significant decreases in meal regularity and significant increases in the rate of alcohol drinking were noted over time. The intake of energy and nutrients showed trends similar to those among the males. The NARs of most nutrients were lower than those of 1993 among in the females. The INQs of protein, calcium, Vitamin $B_1$ and Vitamin C increased significantly, but the INQs of calcium, iron, and Vitamin $B_2$ were lower than 1 among the females. From these results, we found that male students showed relatively desirable changes over time in their dietary and health-related habits and the quality of their diets, while female students showed undesirable changes in their dietary and alcohol drinking habits and the quality of their diets.
