Breakfast consumption is important for nutritional balance in all population groups. The objective of this study is to seek healthy Korean with continuous traditional breakfast consumption of rice. One thousand participants who go to work or school every morning were selected by stratified method and interviewed by regional home extension workers in 24 cities, Kyeonggi province, Korea. The questions included breakfast eating habits, perceived health status,and food preferences for breakfast. The students (70.5%) were composed with elementary (17.2%), middle school(15.7%), high school(16.5%), and university(21.l%)students. The rest 29.5% were workers. The recognized importance of eating breakfast was negatively correlated with the perceived health status. It means that lowering health status made them recognize the importance of breakfast. Workers had more boiled rice with side dishes for breakfast(58.6%) than students (40.2%). The reasons of selected items for breakfast were habit (28.5%), and health (14.6%). The propensity of convenience and preference was more frequent in male workers than male students. For breakfast, ready-to-eat food (rice-roll or rice ball, retort rice, and fast-food) preferred more in middle & high school students, but boiled rice with side dishes was preferred more in workers. Boiled rice with divers cereals was selected for main dish in workers, however boiled rice only in students if obliged. We suppose the problem in next decade would be skipped breakfast in regular attendance position. For breakfast with ready-to-eat rice or something to eat in short time, students and workers should be educated to those who are too busy to eat breakfast for the enhancement of human resources.
In order to investigate the effects of frequent eating-out and breakfast skipping of working men on body mass index and nutrients intake status, working male adults aged 20 or over were selected (n = 1883) from the data of 2001 Korea national health and nutrition survey. The subjects were divided into 4 groups according to the eating-out frequency(high: once or more daily, low: less than once daily) and breakfast eating or not. Four groups were high eating-out with breakfast eating (n = 609), high eating-out with breakfast skipping (n = 192), low eating-out with breakfast eating (n = 877), and low eating-out with breakfast skipping (n = 205). High eating-out group showed higher body mass index (BMI) than low eating-out group, but the difference of BMI was disappeared when adjusted with age, residence region and family income. However high eating-out group in case of breakfast eating, compared with the low eating-out, showed higher intakes or densities of energy, fat, fat-energy% and higher ratio of energy-fat overintake, and also showed higher mean nutritional adequacy ratio and lower ratio of nutrients intake deficiency. Calcium, iron, vitamin A and C intakes were not affected by eating-out frequency, but were lowered by breakfast skipping. Breakfast skipping also decreased intake frequency of unprocessed cereals and increased those of ramyon and carbonated and alcoholic beverages. From the results frequent eating-out with breakfast eating caused increased intakes of energy and fat, but did not cause BMI increase. Breakfast skipping, but not eating-out, had negative influences on mineral and vitamin intakes. Accordingly good eating-out as well as breakfast eating should be exceedingly emphasized at nutrition education for the working males.

The purpose of this study was to determine factors affecting intention to participate in school breakfast programs of middle and high school students in Seoul using the Theory of Planned Behavior. Out of 2,280 questionnaires distributed to the middle and high school students, 2,060 were returned (90.4% response rate) and 1,799 were analyzed (78.9% analysis rate). To determine factors affecting intention to participate in school breakfast programs, logistic regression analyses were conducted for middle and high school students, respectively. For logistic regression, data of 1,217 out of 1,799 students (637 middle and 580 high school students) were used after excluding 582 students which had an answer 'Not sure' to the question about intention to participate in school breakfast programs. In case of middle school students, male than female students (OR = 1.504), the students who skipped all breakfast (OR = 1.851), who ate breakfast $1{\sim}2$ times (OR = 3.474) or $3{\sim}4$ times (OR = 1.950) than those who ate breakfast everyday during weekdays of the previous week were more likely to participate in school breakfast programs. In case of high school students, male than female (OR = 1.967), the students who skipped all breakfast (OR = 4.187), the students who ate breakfast $1{\sim}2$ times (OR = 3.024) or $3{\sim}4$ times (OR = 2.095) than those who ate breakfast everyday during weekdays of the previous week were more likely to participate in school breakfast programs. In addition, both possibility of middle and high school students' participation in school breakfast programs increased as the satisfaction with school lunch service (OR = 1.704, 1.653) increased. Middle school students who perceived their household income level 'low or middle low' (OR = 1.999) than those who perceived their household income level 'middle' and the students who had more positive 'attitude' (OR = 1.311) toward eating breakfast were more likely to participate in school breakfast programs. However, high school students who had higher 'perceived difficulty in access to breakfast' (OR = 1.370) were more likely to participate in school breakfast programs. The results of this study could be useful data to plan and develop school breakfast programs in Korea.
This study investigated eating behaviors of high school students (209 males and 230 females) in Daegu region by gender. As a result of analyzing breakfast intake frequency, 'Not rarely eat' showed the highest (25.1%), followed by '5 times a week' (24.4%), '2 times a week' (17.3%), '3 times a week' (15.0%), '1 time a week' (11.6%), and '4 times a week' (6.6%). Regarding reasons for skipping breakfast, 'lack of time' showed the highest percentages. For their breakfast, 53.5% of students ate boiled rice with side dishes. Regarding reasons for skipping breakfast, 'buy and eat snack' showed the highest percentages. Regarding favorite breakfast menu, 'rice roll, rice ball, rice burger' showed the highest percentage (55.4%), followed by 'bread & cereal' (28.7%) and 'fruits & vegetable' (7.7%). Regarding purchase of breakfast alternatives, 'Yes' was highest. Considering actors for choosing a breakfast alternative, there is a need for 'convenience of food consumption', 'spending less time', 'easy cooking', 'favorite menu' and 'taste' of the breakfast alternative. When asked how much they like breakfast alternative menus, they responded that they liked 'rice roll, rice ball, rice burger' (3.91), 'bread & cereal' (3.67), 'fruit & vegetable' (3.66), 'noodle' (3.39), 'porridge' (3.18) and 'rice cake' (3.07). This result shows that breakfast menus should be developed according to high school students preferences.
Objectives: Although breakfast is important to nutrition balance, prevention of overeating, and weight control, people in their 20s (males: 55.1%, females: 49.9%) were reported to have the highest rate of skipping breakfast in 2016 Korea Health Statistics. This study aims to examine dietary habits and nutrient intake depending on breakfast frequency among young women in Seoul. Methods: The subjects were 655 young women in Seoul from August to October 2016, and the survey was performed by using a questionnaire that included general characteristics, dietary habits, and eating behavior. Body composition was determined by bioelectric impedance analysis. Nutritional status was examined by the 24-hour recall method. Results: The participants were classified by breakfast intake frequency; '${\geq}5times/week$ (n=160)', '1-4 times/week (n=327)', and 'breakfast skipping (n=168)'. The 'breakfast skipping' group had lower frequency and regularity of meals. In addition, the 'breakfast skipping' group had a higher frequency of eating-out and late-night meals. There was no difference in total calories between the 'breakfast skipping' group and other groups, but the 'breakfast skipping' group had significantly low carbohydrate and fiber intakes. The participants showed lower intakes of calories, fiber, vitamin A, vitamin C, niacin, folic acid, calcium, potassium, and zinc in comparison with recommended intakes. Especially, the 'breakfast skipping' group had significantly lower fiber, vitamin A, vitamin C, calcium, potassium levels compared to the '${\geq}5times/week$' group. For Mean Adequacy Ratio (MAR), the 'breakfast skipping' group recorded a ratio of 0.60, which was lower than those of other groups. Index of Nutritional Quality (INQ) including fiber, vitamin C, calcium and phosphorus were significantly lower in the breakfast skipper group, compared to the breakfast eater group. Conclusions: The 'breakfast skipping' group showed low regularity of meals and a high frequency of eating-out and late-night meals. The breakfast regular eater group showed high intake of micronutrients and quality of meals was high in general. Skipping breakfast could lower nutrient intake and quality of meals, which requires attention.

The purpose of this study was to examine a questionnaire survey on nutrition knowledge, dietary behaviors and the evaluation of nutrient intakes in regard to frequency of eating breakfast for a total 383 high school female students in Chuncheon area. The subjects were categorized into 3 groups according to frequency of breakfast : eating breakfast group (6-7 times/week, 49.1%), sometimes eating breakfast group (3-5 times/week, 22.2%), skipping breakfast group (${\leq}2$ times/week, 28.7%). The eating breakfast group and sometimes eating breakfast group have better grades on nutrition knowledge related to breakfast than the skipping breakfast group. The skipping breakfast group have a smattering of nutrition knowledge like, the importance of having breakfast, maintaining calories, and the brain's energy resource. There was a strong correlation between the frequency of breakfast and dietary behavior grades. The students who skip breakfast have irregular eating habits and their eating speed was improper. Also, their frequency of taking in cereals, proteins, fruits, vegetables, and dairy products was poor. The results of the survey on nutrition intake show that while, students who eat breakfast are consuming only folate, calcium and iron at a less than recommend intake, the students who skip breakfast are consuming vitamin $B_2$, niacin, vitamin C, vitamin $B_1$ as well as folate, calcium, and also iron at a less than recommended intake. Based on these results, it is necessary to develop an awareness program that emphasizes the importance of breakfast and accurate nutrition knowledge for students.
The purpose of this study was to investigate the intakes and perceptions of convenient breakfast related to age and family type. The survey included 545 men and women living in Seoul from June to July. Questionnaire items covered their age, gender, family types, breakfast intakes and preference for convenient breakfast menu. As a result, there were significant differences in the number of breakfast intakes per week according to family types; large families recorded the highest frequency in "I have breakfast everyday" and the couple-only families and nuclear families scored relatively high numbers. In terms of the type of breakfast, the first choice was "rice and side dishes" across all the age groups (69.3%). There were differences in the preference of convenient breakfast in "bread", "cereal", "rice cake", "sunsik", and "rice gruel" by different age. The teens exhibited the highest preference of bread (5.63), and cereal (5.53) for breakfast; those who were in their fifties for rice cake (5.42). Both forties and fifties showed the higher preference of sunsik (4.58, 4.76) and rice gruel (5.89, 5.77) than other age groups. As for the preference for convenient breakfast according to family types, single person families displayed the highest preference of bread (5.42) and cereal (5.75). Couple families showed higher preference of rice gruel (5.82) than other family groups. The preference level for "rice cake" was similar among all the family types. As a result, it is suggested that the development of various breakfast menus considering age groups and family types is needed so that modern people can enjoy breakfast in terms of quality and quantity in their busy daily life.
Objectives: This study was conducted to investigate the determining factors that have influence on elementary students who go without breakfast and identified their physical, mental and social health that may resulted by skipping breakfast. Methods: For data collection, total 855 elementary students at the 5th and 6th grade in an urban and a rural area were asked to join the survey using a self-administered questionnaire from March 25 to April 9, 2005. The data were analyzed through a series of statistical methods including frequency, percentage, chi-square$(X^2)$ test, t-test and multiple logistic regression analysis. Results: It was found that 24.0 % of respondents would skip breakfast, and influential socioeconomic factors on their skipped breakfast were economic level and mother's occupation. A group that has meals more with family everyday and a group that has breakfast served by mother as usual showed significantly low percentage of going without breakfast at statistical level(p<0.05). In case that other family members used to go without breakfast, there was a tendency to significantly high rate of skipped breakfast(p<0.01). And a group who got up early in the morning and a group who scored high points in the assessment of dietary habit showed significantly low percentage of skipped breakfast(p<0.01). In the result of multiple logistic regression analysis, the significant variables in urban area were economic level, person setting up breakfast, getting-up time and family members who would skip a meal. In rural area, meal-skipping family member, person setting up breakfast and dietary habit were significant variables(p<0.05). In physical influences according to skipping breakfast, students would skip breakfast had more stomach or dizziness(p<0.05). Depression score were higher and school life score were lower in group skipping breakfast, but not statistically significant. Conclusions: In conclusion, in order to reduce the rate of elementary students who often go without breakfast, it is favorable that they should be instructed in the importance of breakfast and the harm of skipped meal, so that they can cultivate positive living habits and dietary attitudes as well. And it is necessary that this health education cover not only students but also all of their family members(especially mother). Furthermore, it is necessary to develop systematic programs for them to get over environment factors.
The present study investigated the nutritional intake and health condition of 389 female college students living in Iksan, Jeonbuk, dependent on their frequency of breakfast. The subjects were evenly distributed in terms of their age, 61.7% were living at home with their parents, and most responded that they were from a middle income level. Of the subjects, 43.2% always had breakfast (more than 5 times a week), 26.5% sometimes (3 to 4 times a week); 30.3% seldom had breakfast (less than twice a week). The most frequent reason why they skipped breakfast was they were late risers (53%); 38.7% started to skip breakfast during their high school days. The nutritional intake based on whether or not they had breakfast showed that the intake of all nutrients including energy was higher in the students who always or sometimes had breakfast than in those who seldom did (p<0.05-0.001). The presence of clinical symptoms was dependent upon their intake of breakfast. It showed that the students who seldom ate breakfast, had more symptoms of convulsions, nervousness, neck or shoulder pain and indigestion, than those who always, or sometimes ate it (p<0.05-0.01). In all three groups, the largest number of students exercised once or twice a week. Their major reason for exercising was to lose weight. The degree of obesity based on the Body Mass Index (BMI) was in the normal range for 69.7% of the subjects. Female college students ate breakfast irregularly seemed to have a lower intake of nutrients and poorer health. In this regard, we should recognize the importance of eating breakfast, and should make a habit of doing so.
This study examined the dietary behaviors and dietary quality of high school students according to the number of times they skipped breakfast. A total of 474 high school students (225 boys and 249 girls) residing in Incheon participated in this survey. The subjects were divided into the three groups according to the frequency of eating breakfast; Regualr (eating breakfast everyday, n=226), Irregualar (eating breakfast 1~6 times/week, n=143, and Skipping (skipping breakfast everyday, n=105). The dietary quality was assessed using a nutrient quotient for adolescents (NQ-A). A higher monthly allowance and a higher rate of working mothers were significantly associated with a higher frequency of skipping breakfast. A higher intake frequency of processed beverages, and street food was significantly associated with a higher frequency of skipping breakfast. Students who had a higher rate of breakfast skipping had significantly lower intake frequency of fruits, white milk, bean and bean products, and fish. The high frequency of skipping breakfast among high school students was associated with lower dietary quality, as illustrated by the low total NQ-A score and sub group score including balance, environment, and practice. This information can inform efforts to provide nutrition education program to promote breakfast consumption and guidelines to students who skipped breakfast frequently.
