Manufacturing Characteristics and Physicochemical Component Analysis of Bokbunja (Rubus coreanus Miquel) Jam (복분자잼의 제조특성 및 이화학적 성분분석)

  • The manufacturing characteristics and physicochemical component analysis of Bokbunja jam made with different additions of materials (Bokbunja, Bokbunja extract, sugar, and pectin) were investigated. There were no changes in the pH, total acidity, and sugar content of all Bokbunja jams that were prepared with different amounts of materials. L-value of color in the jam from the Bokbunja extract was the highest. a-value increased, but b-value decreased with the addition of pectin in jam. Spreadmeter value decreased while hardness increased in the jam added by pectin. The highest overall acceptability values in the sensory test for color, sweetness, adhesiveness, and overall favorite were 4.07, 5.33, 4.33, and 6.00, respectively, with the addition of 0.5% pectin.

Studies on the Development of Stevia (Stevia rebaudiana Bertoni M.) as a New Sweetness (신감미(新甘味) 자원식물(資源植物) Stevia의 개발(開發)에 관(關)한 연구(硏究))

  • The consumption of sugar in our diet increased so great that much U. S. dollars are spended to import sugar source from foreign contries. To replace a part of it we adopted mother plant and seeds of the well-known Stevia (Stevia rebaudiana Bertoni M.) originated from south America, from the Agricultural Experimental Station of Hokkaido, Japan, in 1974. In order to determine the growth condition of Stevia in our climate and soil condition, the results of survey and determination were as follows: 1. Germination rate of Stevia was averaged 33.6% at 35 th day after seedling and the maximum germination period was between 5 and 20 days after seedling. 2. The seedling rate of Stevia was about 8%. 3. Establishment of roots of Stevia propagated by cutting method was above 90% but only S-1 strain showed lower rate., 75%. 4. S-2 strain showed the best growth rate that was about 160cm by plant height and it was decreased by the following order : S-4, S-3, S-1, S-6 and S-5 strains. 5. S-4 strain resulted in 45 branches that was the highest number among strains tested and S-2 strain was the next. 6. The content of sweetening compound of Stevia, stevioside, was 5.3% in S-1, S-2, S-5 and S-4 strains but S-3 and $S^*$-6 strains were relatively low content, 4.9%. From the above results we obtained Stevia could be propagated by cutting method and the growth conditions including plant height, number of branches and content of stevioside were relatively better in S-2 and S-4 strains that were differentiated by the shape of leaf.

Preparation and Characteristics of Steak Sauces Containing Sweet and Soft Persimmons (단감과 연시를 함유한 스테이크 소스의 제조 및 품질 특성)

  • Steak sauces containing Korean persimmon were prepared and characteristics were evaluated. SOP (steak sauce containing soft persimmon), SOPP (steak sauce containing soft persimmon powder), and SWP (steak sauce containing sweet persimmon extract) with 5, 10, and 15% persimmon weight per sauce weight were prepared by a common formula. Antioxidant activity was determined by DPPH and ABTS radical scavenging activity, and sweetness of the sauces increased with increasing persimmon content. DPPH radical scavenging activities for SWP with persimmon content of 5 and 15% were $75.28{\pm}0.03%$ and $81.04{\pm}0.01%$, respectively. ABTS radical scavenging activities of SWP with persimmon content of 5 and 15% were $55.64{\pm}0.06$ and $59.18{\pm}0.07%$, respectively. With addition of persimmon, yellowness (b) and redness (a) increased. In overall acceptance of sensory evaluation, 5% SWP showed a relatively high score.

Sensory Characteristics of Coffee with the Addition of The Polygonatum sibiricum (둥굴레를 첨가한 커피의 관능적 특성 분석)

  • The purpose of this study was to synthesize tasty and healthy solomon's seal coffee by combining solomon's seal and a coffee-making process. Therefore, this study was carried out to establish the most suitable conditions for coffee-making by surface response surface methodology. Using the center synthesis method, we synthesized solomon's seal coffee by considering three factors (solomon's seal, coffee, and temperature) and three levels. The sixteen experimental items for solomon's seal coffee based on surface-reaction analysis were scent (crust break-scent when pouring water in solomon's seal coffee, flavorscent when tasting solomon's seal coffee), taste (clean-cup-pure taste without loose scent, sweetness, and acidity), mouth-feel, aftertaste, overall quality, and other taste degrees. Scores were from 1 to 7, with 7 indicating the highest preference. The optimum mixing rates which meet sensory items were coffee 19.51g, solomon's seal 2.07g, and temperature $93.39^{\circ}C$. Based on the above results, solomon's seal seems to be well suited for coffee. It was also found that solomon's seal has great potential to be well suited with other foods.

Quality Characteristics and Antioxidant Activity of Pork Cutlet Sauce Added with King Oyster Mushroom (Pleurotus eryngii) Powder during Storage (큰느타리버섯 분말을 첨가한 돈가스소스의 항산화 활성과 저장 기간에 따른 품질 특성)

  • This study was performed to determine the proximate analysis of Pleurouts eryngii and quality characterisitcs of pork cutlet sauce with added king oyster mushroom (Pleurotus eryngii). Pork cutlet sauce was prepared with different levels of king oyster mushroom powder (0, 1, 3, 5, and 7%) and stored for 21days at $25^{\circ}C$. Antioxidant activity was significantly increased by addition of king oyster mushroom powder (p<0.001). L, a and b value ignificantly increased with the increased of king oyster mushroom powder concentration. As king oyster mushroom powder concentration increased, pH value was increased and titratable acidity (%) value was decreased. pH value and titratable acidity (%) value were stable during storage period. Viscosity value and $Brix^{\circ}$ were significantly increased by addition of king oyster mushroom powder (p<0.001). The overall acceptability, sweetness and taste of the pork cutlet sauces with added 5% king oyster mushroom powder attained high scores.

Quality Characteristics of Yangha (Zingiber mioga Rosc) Pickle with Soy Sauce during Storage (간장을 첨가한 양하 피클의 저장 중 품질 특성)

  • The quality characteristics of Yangha pickles soaked in different concentrations of soy sauce (0~40%) for 90 days were investigated. As a result, the pH and sweetness levels of pickles significantly increased with an increasing concentration of soy sauce in soaking solution (p<0.05). Saltiness was maintained at levels of approximately J1 0.10~0.30%, J2 0.47~0.90%, J3 0.90~1.60%, J4 1.43~2.30%, and J5 1.77~3.07% during the storage periods. These results show that the saltiness of Yangha pickles was substantially lower than that of commercial pickles. Total cell number decreased until 45 days, after which it gradually increased. We observed no visible changes in reducing sugars during storage. The hardness increased with an increasing amount of soy sauce. J2 pickle (add 10% soy sauce) showed the highest scores for taste, flavor, texture, and overall acceptability.

Quality Characteristics of Sikhe Prepared with Cnidium officinale Makino Water Extracts (천궁 열수 추출물을 첨가한 식혜의 품질 특성)

  • This study was conducted to assess the characteristics of Sikhe prepared with Cnidium officinale Makino water extracts. pH decreased as the amount of Cnidium officinale Makino water extract increased.-, as did moisture. The sweetness of the Sikhe increased as the amount of the extract increased. Moreover, the L decreased while a and b values increased as Cnidium officinale Makino water extracts increased. The hardness and springiness of the Sikhe also increased with increasing amounts of extract. The DPPH radical scavenging activities of Sikhe increased as the amount of Cnidium officinale Makino increased. Finally, Sikhe containing 40 and 60% Cnidium officinale Makino water extracts showed significantly high appearance, flavor, taste, after swallow and overall-acceptability values (p<0.05).

  • This study was conducted to identify the sensory characteristics of the Korean traditional confectionery, dasik, prepared under different conditions and to compare their consumer acceptance in Korea. To accomplish this, descriptive analysis of eight samples prepared using two types of rice cake powder, dasik (Rflour, Rflour_Omija), brown rice powder red ginseng dasik (Brice_Ginseng_P), pinepollen dasik (PineP), black sesame dasik (BSesame), bean dasik (Rbean), and two types of mungbean starch dasik (Starch_Omija, Starch_Greentea), was conducted by ten trained panelists. In addition, 81 consumers evaluated the overall acceptance (OL), acceptance of appearance (APPL), odor (ODL), flavor (FLL), and texture (TXTL) of the samples using a 9-point hedonic scale, as well as the perceived intensities of sesame flavor, sweetness, and hardness using a 9-point just-about-right (JAR) scale. Partial least square- regression (PLSR) indicated that the BSesame and Rbean samples, which had significantly (p<0.05) high roasted sesame, burnt, greasy, glossy, and cooked chestnut flavor scores, had the highest acceptability and consumer desire scores. Additionally, the PineP and Rflour_Omija samples, which had relatively high particle size, transparency, roughness, spoiled tofu, fermentation and raw rice flavor scores, were the least preferred samples. Therefore, roasted sesame, burnt, greasy, glossy, and cooked chestnut flavor attributes were considered drivers of "liking" whereas particle size, transparent, roughness, spoiled tofu, fermentation, and raw rice flavor attributes acted as drivers of "disliking" among consumers.

Changes in antioxidant activities and flavor patterns of Coffea arabica beans during roasting (아라비카 커피의 배전 중 항산화 및 향기패턴의 변화)

  • Brazil (Monte Alegro) and Ethiopia (Sidamo) coffee beans were roasted at three different roasting levels(light, medium, and dark), and were analyzed for color, total phenolic compound, caffeine, and chlorogenic acid contents. The total phenolic and caffeine contents remained unchanged during roasting. The chlorogenic acid levels of the Brazil and Ethiopia samples decreased with roasting. The antioxidant activities were measured using DPPH and ABTS. The radical scavenging activities of the light-roasted and dark-roasted coffee beans were similar. The flavor patterns of roasted coffee beans were analyzed using an electronic nose system based on gas chromatography. The data revealed that the flavor patterns of the roasted coffee beans could be separated via discriminant function analysis (DFA) method. The taste of the roasted coffee beans was analyzed using an electronic tongue system. The sourness and sweetness were decreased with roasting.

Quality Characteristics of Pork-rib Sauce in Family Restaurants (패밀리 레스토랑에서 판매되는 폭립 소스의 품질 특성)

  • This study investigates quality improvement of pork-rib that is sold as a popular menu item in a family restaurant. It attempts to search the relation between pork-rib sauce and pork-rib through the sensory evaluation, physicochemistry properties and physical properties of pork-rib sauce. As a result, sensory preference of pork-rib and its sauce in TGIF restaurants was highest. The color of the pork-rib sauce was darker, and high salinity and low sweetness were preferred. As for viscosity, concentrations which are not thick were preferred. Also, sauce offered with pork-rib was closely related to pork-rib, so pork-rib menu in a family restaurant would be much preferred if the kinds of sauce become diversified.
