Physicochemical and Sensory Characteristics of Dongchimi Added with Soybean-Curd Whey (두부순물 첨가 동치미의 이화학적.관능적 특성)

  • Effect of soybean-curd whey on the dongchimi fermentation was investigated by measuring physicochemical and sensory characteristics during fermentation at 1$0^{\circ}C$. Dongchimi was prepared with various levels (0, 2, 5, and 10%) of soybean-curd whey. During fermentation, whereas salt concentrations of dongchimi liquid (1.1 ~ 2.0%) were similar among treatments, greater decrease in pH, but greater increase of total acidity, reducing sugar content, number of lactic acid bacteria and turbidity were observed in dongchimi with soybean-curd whey than those of control from the 2nd to the 9th day of fermentation. But at the 16th day of fermentation, acidity, turbidity and number of lactic acid bacteria of dongchimi with soybean-curd whey were similar to those of control. Reducing sugar content of soybean-curd whey addition groups maintained higher than that of control. The Hunter color L value decreased gradually and that of dongchimi with soybean-curd whey was lower than that of control. b value of control increased, but soybean-curd whey addition groups decreased during fermentation. Hardness and fracturability, determined by texture analyser, were higher in soybean-curd whey addition groups than control. Sensory evaluation showed that the scores of turbidity, sweet taste, savory taste, hardness and over-all preference were significantly higher in soybean-curd whey addition groups than control (p<0.05) ; the highest with 5% soybean-curd whey addition followed by 2% addition. dongchimi with 5% soybean-curd whey addition was the most preferable one with the score of 6.5.

Rooting of Needle Fascicles of Pinus radiata in Test Tubes (Pinus radiata 엽속삽목(葉束揷木)의 시험관내(試驗管內) 발근(發根))

  • A series of rooting experiments of P. radiata needle fascicles were carried out in test tubes using peat-pumice medium to see a possibility of rooting fascicles in test tubes and, if possible, to find out whether that method can improve the rooting. Typical rooting of clones from ortets aged 3, 7, 11. 18, and over 40, respectively, was 57%, 47%, 18%, 4%, and 2%. The effect of ortet ages upon rooting of fascicle cuttings was significantly exerted in these experiments. In the older ortets these results are not as good as those often obtained in a glasshouse. Hormones tested (indolebutyric acid and abscisic acid) had no significant effect on rooting and neither did a series of fungicides tested. Needle fascicles placed in an 18 hour day at $20^{\circ}/10^{\circ}C$ (day/night temperature) rooted signficantly better than those in a 10 hour day at the same temperature regime. The latter in turn rooted better than those set under a 10 hour day at $15^{\circ}/5^{\circ}C$. Clonal differences in rooting ability were also distinct in every trial of the present experiments with needle fascicles.

Proteolytic Conditions for the Hydrolysate of Flounder Skin Gelatin (효소에 의한 가자미피 젤라틴 가수분해물의 제조 조건)

  • In order to develop a new flavourant using the fish skin gelatin, the proteolytic renditions for the gelatin hydrolysate of the alkali (B-type) and Alcalase (E-type) pretreated flounder (Limanda aspera) skin gelatin were investigated, and some physical properties, molecular weight and amino acid compositions of the hydrolysates were, also, compared with each other. The proteolytic conditions of the gelatins (B-type and E-type) by trypsin were as follows : reaction temperature, 55$^{\circ}C$ : pH, 9.0 : enzyme concentration, 0.1% : re-action time, 4hrs for B-type and 1 hr for E-type. The degrees of hydrolysis of the B-type and E-type gelatin un-der the renditions stated above were 63% and 82%, respectively. The rnajor molecular weights of the hydrolysates were 15,000 dalton for B-type and 12,400 dalton for E-type. Among the amino acids in the hydrolysates, glycine, alanine, proline, hydroxyproline and serine having a sweet taste were responsible for 57% of the total amino acid. But valine, leucine, phenylalanine, tyrosine, methionine, arginine and histidine having a bitter taste were only 18%.

Attractiveness of Stink Bugs to Color, Height and Location of Aggregation Pheromone Trap (집합페로몬 트랩의 색깔, 설치높이 및 장소에 따른 노린재류의 유인효과)

  • Attractiveness of stink bugs to various colors, heights and locations of fish-net traps incorporated with aggregation pheromones was determined. Bean bug, Riptortus pedestris Fabricius, was most attracted to yellow color trap, followed by white, black, green, blue and brown. R. pedestris and one-banded stink bug, Piezodorus hybneri Gmelin, were most attracted to fish-net traps placed 80 cm above the ground regardless of sexes of two species of stink bugs. Between the sexes, however, R. pedestris females were more attracted to 40 and 80 cm above the ground than the males at those heights although the attraction was not significantly different at 120 and 160 cm heights. P. hybneri females tended to be attracted to 40 and 80 cm height traps but the attraction was the opposite at 120 and 160 cm heights. The highest attraction of R. pedestris was observed in a perilla field with no significant difference in the soybean field and border area in which no crop were cultivated between the perilla and soybean fields. R. pedestris was also more attracted to the sweet persimmon orchard than the soybean and medicinal crops fields, which was a significant difference between the two fields.

Utilization of Sticky Traps to Increase the Efficiency of Pheromone Traps Against Riptortus clavatus (Hemiptera: Alydidae) (톱다리개미허리노린재 방제용 페로몬트랩의 효율증대를 위한 끈끈이트랩 활용)

  • The purpose of this study was to investigate the attraction distance range of pheromone traps used in the control of stink bugs, which are a problem in persimmon orchards, and the effects of sticky traps in increasing the efficiency of pheromone traps. Labeled individuals were released and then recaptured on pheromone and sticky traps. Riptortus clavatus was attracted to pheromone traps up to 60 m away. The capture rates of R. clavatus on sticky traps were 35%, 27%, 34%, 2.9%, and 0.6% after 0, 1, 2, 3, and 4 weeks To improve clarity, II have added this information from the details shown in the figures. Please check whether you agree.of exposure of the traps to the environment, respectively. Besides, when both pheromone and sticky traps were used at the same time following the release-recapture method, the capture rate of R. clavatus was 12 times higher than that by using pheromone traps only.

Research on Factors for the Development and Preference of Grape Foods in Seoul and Gyeonggi Province (서울.경기지역 소비자의 포도음식 선호도 및 개발을 위한 요인조사)

  • This research obtained fundamental data for the development of grape foods by investigating the preference for grape foods, popularization and commercialization plan of grape foods and obtained knowledge required in order to develop grape foods. The study used 354 consumers in Seoul and GyeongGi Province. The distribution of sex on research subjects was as follows. Male was 52.0% (184 persons) and female was 48.0% (170 persons). Age distribution varied by twenties and less than twenties being 30.8%, thirties being 26.3%, forties being 24.6% and the fifties and over being 18.4%. According to the results, preference for grape foods of subjects was that rice wrapped in grape leaves ($2.14{\pm}0.7$) and sweet steamed rice($2.12{\pm}0.8$) were the highest among staple food; grape vinegar($2.38{\pm}0.7$) and grape taffy($2.25{\pm}0.7$) were the highest among spices; grape jelly ($2.53{\pm}0.6$) and grape pudding($2.45{\pm}0.7$) were the highest among snacks; grape juice ($2.70{\pm}0.5$) and grape yogurt($2.59{\pm}0.6$) were the highest among beverages. Subjects responded to the fruit group among food groups harmonized with grape foods(p<0.01). 50.7% of subjects responded to "have to be delicious" and 25.1% of subjects responded to "nutritional balance" as the most important aspects of the development of grape foods. In the popularization and commercialization plan of grape foods, Subjects chose with respected importance, personal preference($4.15{\pm}0.8$), price($4.05{\pm}0.8$) and promotional strategy($4.00{\pm}0.9$). In conclusion, the food development and revitalization plan should use grapes to find out food materials suitable for grape mixture and nutritional balance. We will expect an increase population and commercialization of grape foods if we develop grape foods and promote strategically in consideration of the preference of consumers and the price of produce.

Preservatory Effect of Sweet Persimmons, Mandarin Oranges and Apples Stored in the Ear-Infrared Radiated Chamber (원적외선 방사체 시설내에 저장한 단감, 감귤 및 사과의 선도유지효과)

  • Such fruits as nut persimmons, mandarin oranges and apples stored in the far-infrared radiated chamber at 5$^{\circ}C$ under 90% of relative humidity had been maintained in the fresh state for longer times than the control stored only in the cold chamber. Fruits stored in the far-infrared radiated chamber showed lower values in weight loss rate, microbial colony count and decay ratio and higher ascorbic acid content than the control stored only in the told room through the storage period. We confirmed that fruits stored in the far-infrared radiated chamber under low temperature and high humidity showed least changes in quality properties through the storage period and the far-infrared radiated facilities could be a good storage system.

Sensory properties of oriental melon (Cucumis melo var. makuwa) byquantitative descriptive analysis and consumer test (묘사분석 및 소비자 조사에 의한 참외의 관능특성)

  • This study was carried out to determine the descriptive sensory profile of oriental melon. The sensory profile of oriental melons (cultivated in Seonju, Kyungsangbuk-do) were used quantitative descriptive analyses and twelve trained panel developed the total forty sensory attributes related appearance, aroma, texture etc. Six appearances attributes and two aromas attributes were derived from whole oriental melon with skin. Five aromas, six tastes and six textures were derived from the mesocarp of oriental melon. And also, oriental melons were analyzed for pH, titratable acidity, solid soluble contents and weight. The weight, titratable acidity and soluble solid content of oriental melons showed significant differences according to samples. And also, in the sensory attributes of these samples by trained panel and consumer test, there were significant differences between organic cultivated samples and conventional cultivated samples. Based on principal component analysis of sensory attributes data by trained panel and consumer, oriental melons were primary separated along the first principal component, which accounted for 27.73% (trained panel test) and 19.82% (consumer test) of total variance (trained panel test; 58.36%, consumer test; 46.18%) between the samples farm, cultivation method, total acidity, sweet aroma, bitterness, etc. Generally, whole oriental melon with skin showed significant differences in the sensory attributes according to cultivation method and farms. But, the mesocarp and endocarp part showed not certainly differences in the sensory attributes between organic cultivated samples except conventional cultivated samples.

Occurrence of the B- and Q-biotypes of Bemisia tabaci in Korea (담배가루이 B와 Q 계통의 국내 발생 상황)

  • The occurrence of tobacco whiteflies, Bemisia tabaci, in greenhouses was monitored in Korea in 2005. Bemisia tabaci occurred in the rose, sweet pepper, tomato, and cucumber greenhouses of Chungbuk, Chungnam, Gyongnam, and Jeonnam Provinces, but not in Jeonbuk and Gyongbuk Provinces. The biotypes and genetic differentiation of the whiteflies collected in each regions were analyzed by mitochondrial 16S DNA sequences. The 16S DNA sequences of Jincheon (Chungbuk Province) samples were similar to DNA data reported from Japan and Israel which were known as the B biotype. However, the DNA sequences of the Buyeo (Chungnam), Geoje (Gyongnam) and Boseong (Jeonnam) collections, which were 100% homologous showed over 99% similarity to the DNA of Q biotype from Spain and Egyrt. Here we report the first founding of the Q biotype in Korea. It is assumed that, unlike the B biotype reported from Jincheon since 1998, the Q biotype might have been introduced recently from the certain foreign region/country to the greenhouses in those provinces.

Effect of Temperature at Different Performance Stages of Aphelinus varipes (Hym. Aphelinidae) Parasitizing the Green Peach Aphid, Myzus persicae (복숭아혹진딧물에 기생하는 목화면충좀벌의 발육단계별 온도영향)

  • Developmental period, mummification, pupal mortality, and sex ratio of Korean strain of Aphelinus varipes F$\ddot{o}$rster parasitizing the green peach aphid, Myzus persicae were studied at 20, 25, 30, and $35^{\circ}C$ in controlled climate cabinets. The plastic container with a leaf disc of sweet pepper (Capsicum annuum L.) was used as experimental units. Green peach aphids at different developmental stages were reared in four different temperatures and presented to A. varipes for 12 hours. A female adult of A. varipes was allowed to parasitize for 12 hours in each plastic petri dish. The periods from egg to adult of A. varipes were 18.3 days, 14.7 days, 10.4 days, and 9.3 days at $20^{\circ}C$, $25^{\circ}C$, $30^{\circ}C$, and $35^{\circ}C$, respectively. The pupal mortalities of A. varipes were 0%, 1.5%, 2.8%, and 10.2% at $20^{\circ}C$, $25^{\circ}C$, $30^{\circ}C$, and $35^{\circ}C$, respectively. The mummifications of A. varipes were significantly different in all developmental stages of the aphid. The mummification of A. varipes parasitizing green peach aphid was the highest at 1st and 2nd in $20^{\circ}C$ and $25^{\circ}C$, but the highest at 3rd (84.4-85.0%) in $30^{\circ}C$ and $35^{\circ}C$. The host feedings of A. varipes were $20^{\circ}C$ (12.5%), $25^{\circ}C$ (17.3%), $30^{\circ}C$ (16%), and $35^{\circ}C$ (10.9%), respectively. The sex ratios of A. varipes female were $20^{\circ}C$ (49%), $25^{\circ}C$ (46%), $30^{\circ}C$ (69%), and $35^{\circ}C$ (60%), respectively.
