This paper analyzes phenolic compounds, carbon isotopes, and sugar components of whiskys based on the maturation period. For this, the paper considers a total of 40 whiskys(mainly imports) distributed in Korea. It is important to analyze the presence phenolic compounds(e.g., furfural, syringaldehyde, vanillin, syringic acid, and vanillic acid) because these are found only in whiskys ripened in oak. The results indicate that the total content of phenolic compounds increased with the increase in the storage period regardless of the type of whisky. In terms of vanillin/syringaldehyde(V/S), Scotch whiskys had 0.4~0.5; American whiskies, 0.30~0.34; and Canadian whiskies, 0.31~0.33. In terms of Scotch whiskys, Macallan had 0.25~0.34, making it unique among Scotch whiskys. In terms of the ratio of carbon isotopes, there were clear differences between malt Scotch whiskys, blended Scotch grain whiskys, American whiskys, and Canadian whiskys: -23.4~ -24.3, -16.8~-21.0, -11.0~-11.5 and -9.5~13.9, respectively. In addition, malt Scotch whiskys contained 40~230 $mg/{\ell}$ of fructose; blended Scotch whiskys, 20~120 $mg/{\ell}$; American whiskys, 50~70 $mg/{\ell}$; and Canadian whiskys, 20~100 $mg/{\ell}$, demonstrating that the fructose content of single-malt whiskys was twice the average fructose content. On the other hand, malt Scotch whiskys contained 30~170 $mg/{\ell}$ of glucose; blended Scotch whiskys, 20~120 $mg/{\ell}$; American whiskys, 20~30 $mg/{\ell}$; and Canadian whiskys, 10~110 $mg/{\ell}$, demonstrating that the glucose content of single-malt whiskys exceeded the average glucose content. This study's results can be used as a database of classification for whiskys based on the fermentation of raw ingredients and the period of maturation for distinguishing between different types of whiskys. In addition, the results can facilitate the verification of genuine whiskys by allowing for the identification of different types of whiskys based on the period of maturation.
본 실험에서는 수박 (Citrullus vulgaris L.)과 멜론 (Cucumis melo val. reticulatus Naud.)에 있어서 서로 다른 부위에 함유되어 있는 주요 유리당 (glucose, fructose, sucrose, maltose)을 분리, 정량하기 위해서 HPLC (High Performance Liquid Chromatography)를 이용하였다. 수박과 멜론에 있어서 주로 존재하는 유리당들은 fructose, glucose, sucrose 등이며, 이 유리당들의 함량은 부위별로 다양한 변이를 보였다. 부위별 유리당의 총함량은 stem end 부위에서의 함량보다 stylar end와 side 부위에서의 함량이 더 높았다. 이러한 결과는 수박과 멜론에서 같은 양상이었다. 수박의 경우 전체 유리당 함량은 과피 부위에서 중심 부위로 갈수록 약간씩 증가하는 경향을 보였고, 멜론의 경우 종자를 포함하는 중심 부위를 제외한 가식 부위에서는 과피 부위에서 중심 부위로 진행될수록 증가하였다. 환원당과 비환원당의 비율[(fructose+glucose)/sucrose]은 수박의 경우 과피 부위에서 중간 부위로 갈수록 약간식 감소하였으나 중심 부위에서는 오히려 높았다. 멜론의 경우 가식 부위중 과피 부위에서 중간 부위로 갈수록 감소하였으며 중심 부위와 중간 부위 간에는 유의적 차이가 없었다. 수박에서는 과피 부위에서 중심 부위로 갈수록 환원당과 비환원당 모두가 증가하였지만, 반면에 멜론에서는 환원당의 감소를 보였다.
본 시험은 연초의 생육작황에 따라서 적심시기와 정도를 두어 처리하였을 때 잎담배의 품질형질에 미치는 영향을 구명코자 수행하였던 바 다음과 같은 결과를 얻었다. 1. 책상조직 및 발달은 적심시기에 따라 발뢰기>개화시>개화만기> 만기 순으로 적심정도에 따라서는 치엽 4매> 치엽 2매> 화뢰 적심 순으로 발달되었다. 2. A급작황에서는 개화만기 B급작황에서는 개화시 치엽 2매를 적심할 때 끽미에 관련있는 전당/니코틴의 비는 9.0, 9.7로 가강 양호하였으며, 방향성 물질인 석유에텐추출물을 9.9%, 8.4%로 가장 높게 나타났다. 3. 품질에 크게 영향하는 요인은 생태조직과 건조엽중 내용성분으로 생태조직의 구성형질들이 품질에 직접 영향하는 효과를 보면 책상조직 43.2%, 해면조직 26.5%, 조직비 17.7%, 엽후 6.7%, 세포간극율 3.1 %, 엽형지수 2.8% 순이며, 내용성분 형질은 니코틴 40.6%, 전당/니코틴 35.7%, 전당 10.0%, 전질소/니코틴 7.0% 전질소 4.6%, 석유 에텔추출물 2.1% 순으로 품질에 영향을 미쳤다. 4. 양질엽 생산을 위해서는 수량이 10a당 250∼280kg 생산되는 A급작황에서는 개화만기에 치엽 2매 적심을, 200kg 내외 생산되는 B급작황에서는 개화시 치엽 2매를 붙여 적심하는 것이 가장 바람직 할 것으로 생각된다.
The ratio of saccharification and formation of furans during the acid hydrolysis of agar with oxalic acid and sulfuric acid were examined base on the contents of the agar and acids. The ratio of saccharification in oxalic acid appeared to be 51~59% somewhat higher than 49~61% of sulfuric acid. Formation of the furans during the acid hydrolysis increased proportional to the contents of agar and acid. The relative formation ratio was high 10~47% for furfural (FUR) and 15~29% for hydroxy-methyl furfural (HMF) in 0.5~1.25% sulfuric acid rather than those of oxalic acid. When comparing the removal efficiency of the furans using an alkali treatment, steam stripping and hydrophobic resins, FUR was eliminated 60% by the alkali treatment, 62~90% by steam stripping and 71~75% by Amberlite XAD4 and 7HP, while HMF was removed to low levels of 10.5%, 4~17% and 13~25%, respectively. The loss of reducing sugar was also observed in process of the removal of furans, and the loss rate was the level of 2~4% in alkali treatment, 11~16% in steam stripping and 7~9% in Amberlite resins.
Mulberry Leaf (Morus-alba) is effective on reducing blood sugar increase and cholesterol in the blood. The objective of this study is to elucidate the sensory and physicochemical attributes of Mulberry Leaf Boogag with different amounts of glutinous rice paste and ginger juice. Mulberry Leaf Boogag, steamed for 90 seconds, was made by puffing the glutinous rice paste and ginger juice. The ratio of glutinous rice paste is made of a double, quintuple, and octuple proportion of water to the weight of the glutinous rice paste. The ratio of ginger juice is at a rate of one, three and five percent. According to the sensory evaluation, hardness and crispiness increased as the glutinous rice paste did, and ginger flavor, bitterness and sourness increased as the ginger juice did. Optimal conditions(p<0.05) were set when the value of hardness was more than five, and the value of bitterness and bitingness, lower than five. The optimal condition of Mulberry Leaf Boogag was established when the ratio of water to glutinous rice paste was 5.5, and in addition, 3.75 percent of ginger juice must be in proportion.
The evaporation of water from an aqueous solution is widely used in the food, desalination, pulp, and chemical industries. Usually, a large amount of energy is consumed in the evaporation process to boil off water due to atmospheric pressure. As a way of improving the energy efficiency of the evaporation process, the combination of multiple effect evaporation and thermal vapor recompression has been proposed and has become a successful technique. In this study, 4 multiple-effect falling film type evaporators for sugar solution are designed and the energy efficiency of the system is analyzed in response to the selection of the steam ejector position. Energy efficiency is increased and vapor is more compressed in the steam ejector as the Thermal Vapor Recompression (TVR) is arranged in the rear part of the evaporator system. A simplified 0-dimensional evaporator model is developed using non-linear equations derived from mass balances, energy balances, and heat transfer equations. Steam economy is calculated to compare the evaporation performance of the 4 proposed evaporators. The entrainment ratio, compression ratio, and expansion ratio are computed to check the ejector performance.
Onion vinegar, which has an undesirable flavor and taste formed through alcohol and acetic acid fermentation, possesses additives that can improve sensory quality. Thus, the objective of this study was to present an optimized blending ratio using response surface methods for an onion vinegar beverage by adding Omija extracts. This study was performed to formulate an Omija-onion vinegar beverage (OOVB) and investigate its antioxidant properties and antimicrobiological effects. The experimental design was conducted using an optimal mixture model of response surface methodology which generated eighteen experimental trials with overall acceptance as the responses. According to the statistical analyses, OOVB demonstrated a ratio containing onion vinegar, water, brown sugar, apple extracts and Omija extracts of 10, 72.3, 4.4, 12.2 and 1.1 (weight ratio), respectively. The OOVB revealed desirable nutrition values (phenolics compounds 19.3 mg/100 g, total flavonoids 3.1 mg/100 g, quercetin 1.9 mg/100). The OOVB displayed antibacterial effects in Gram negative Enterobacter aerogenes, Escherichia coli, Salmonella typhimurium and Gram positive Staphylococcus aureus. The findings revealed that OOVB was 18% in DPPH radical inhibitionand 11% in superoxide dismutase-like activity thus, OOVB has nutritional value and good quality as well as potential biological activities for functional beverages.
This study was conducted to standardize ingredient ratios of wooung kimchi. The ingredient ratios of model wooung kimchiwere determined by the survey in Pusan and Kyungnam province and using the literatures including cooking books. Several kinds of wooung kimchi were prepared by adjusting the ingredient ratios fo the model wooung kimchi within standard deviation. The wooung kimchi with different ingredient ratios were fermented for 6 days at 15$^{\circ}C$. The chemical, microbial and sensory properties of the wooung kimchi were investigated. There was little change in pH but the counts of lactic acid bacteria were decreased, as the ratio of pickled anchovy juice became high. The wooung kimchi adding 9.4% pickled anchovy juice obtained high score in appearance and overall acceptability. The counts of lactic acid bacteria were increased in wooung kimchi adding 5% red pepper powder, and there was obtained better result in appearance, texture and overall acceptability than the other groups. The activity, reducing sugar and counts of lactic acid bacteria were increased, as the ratio of glutinous rice paste became high. The wooung kimchi including 6% glutinous rice paste showed the highest score in overall acceptability. The fermentation process of wooung kimchi accelerated, as the ratio of garlic became high. The wooung kimchi adding 3% garlic showed good appearance and acceptability. In addition to these, the addition of 1.3% ginger ehhanced the appearance, texture and overall acceptability fermented anchovy juice, 5.0% red pepper powder, 6.0% glutinous rice paste, 3.0% crushed garlic and 1.3% crushed ginger.

The objectives of this study were to develop models to predict quality parameters of Korean bee-honeys by visible and NIR spectroscopic technique. Two kinds of bee-honey fronl acacia and polyflower sources were tested in this study. The honeys were harvested in the spring of 2000 and stored in the storage facility at 20$^{\circ}C$ during experiments. Total of 394 samples of honey were analyzed. Reflectance spectra, moisture contents, ash, invert sugar, sucrose, F/G (fructose/glucose) ratio, HMF (hydroxymethyl furfural), and C12/C13 ratio of honeys were measured. The average values for the tested honeys were 19.9% of moisture contents, 0.12% of ash, 68.4% of invert sugar, 5.7% of sucrose, 1.27 of F/G(fructose/glucose) ratio, 14.4 mg/kg of HMF, and -19.1 of C12/C13 ratio. A spectrophotometer, equipped with a single-beam scanning monochromator (NIR Systems, Model 6500, USA) and a horizontal setup module, was used to collect reflectance data from honey. The reflectance spectra were measured in wavelength ranges of 400∼2,498 nm. with 2 nm of interval. Thirty-two repetitive scans were averaged, transformed to log(1/Reflectance), and then were stored in a microcomputer file, forming one spectrum per measurement. A sample cell and reflectance plate were made to hold honey samples constantly. Spectra of honey samples were divided into a calibration set and a validation set. The calibration set was used during model development, and the validation set was used to predict quality parameters from unknown spectra. The PLS(Partial Least Square) models were developed to predict the quality parameters of honeys. The first and the second derivatives of raw spectra were also used to develop the models with proper smoothing gap. The MSC (multiplicative scatter correction) and the SNV & Dtr.(standard normal variate and detranding) preprocessing were applied to all spectra to minimize sample-to-sample light scatter differences. The PLS models showed good relationships between predicted and measured quality parameters of honeys in the wavelength range of 1100∼2200 nm. However, the PLS analysis was not good enough to predict HMF of honeys.
