low grade leaves of flue-cured (N.C. 2326) and air-cured (Br 21) have been heated at $140^{\circ}C$ for 10 and 20 minutes, respectively. As heating duration increased, each contents of nicotine, total nitrogen, total sugar and free amino acid decreased in both leaves. The result obtained from this experiment are as following 1. Nicotine content decreased in both leaves. Heating for 10 and 20 minutes showed respectively nicotine decrease of 13.2% and 21.6% for Br 21 and 8.2% and 13.2% for N.C.2326. Decrease of total nitrogen and total sugar was inversely proportional to the heating duration. N.C. 2326 in the decrease out numbered Br.21 by the ratio 2: 1 for 10min.-heating, and 5:4 for 20 min.-heating. 3. Total free amino acid was decrease by 17.1% and 13.85 for N.C. 2326 and Br 21, respectively when heated for 10 min., and 25.6% and 26.5% respectively when heated for 20 min. When sucrose was added to Br 21, th decrease ratio of total free amino acid of Br.21 was increased. It is suggested that the addition of sucrose could promote the browning reaction in Br 21 leaves.
The purpose of this study was to investigate differences in body fat distribution between normal and obese subjects and the relationship between risk factors(fasting blood sugar, blood pressure. fasting serum lipids) and obesity. Measurements of height. weight, skinfold thickness. body circumference. percent body fat. blood pressure, fasting blood sugar and serum lipids were made and a dietary survey was performed on 120(Males 61. Females 59) adult subjects. 1) Among the female subjects, the obese group appeared to have significantly higher centrality of body fat than the normal group. Obese groups of both sexes appeared with higher blood pressure than normal groups. No differences in daily average nutrient intake, fasting blood sugar and fasting serum lipids concentrations were observed between obese and normal groups. 2) In males. the serum triglyceride concentration was observed to have a significantly positive correlation to body weight, body mass index and body circumference, additionally concentrations of total cholesterol and LDL-cholesterol were observed to have significantly positive correlations to the skinfold thickness. but the ratio of HDL-cholesterol/total cholesterol was observed to be significantly negatively correlated to the skinfold thickness. 3) In females. the obese group consumed about 47% of total energy intake at lunch. whereas the normal group consumed about 29% . The food habit score of males appeared to be negatively related to body weight, percent ideal body weight. But the food habit score of females appeared to be negatively related to percent body fat(r=-0.32, p<0.05) .
A method for the process of making fig conserves to prevent the denaturation of ficin (EC3.422.3) that is a proteolytic enzyme in fig (Fixus carica L. ) has been developed. The suutable composition ratio of materials such as, fig, sugar, citric acid and potassium sorbate, to make fig conserves was 1,000, 600 , 1.0 and 0.67g , respectively. to maintain the ficin activity, it was necessary that these materials were heated on 55$^{\circ}C$ and concentrated in the reduced pressure. At a result of sensory evaluation , meat treated with fig was the softest among samples. Then the treated beef with 55$^{\circ}C$ converse, 7$0^{\circ}C$ conserves, sugar and control have been shown the decreased rate respectively. There was significantly different in the effect of tenderness between each group(0.1%) . The nitrogen content of connective tissue was relatively low in the groups of the treated beef with fig and 55$^{\circ}C$ converses, 7$0^{\circ}C$ converses sugar and control , which was similar to the order of the ficin activity. This research revealed that the constituent protein of meat muscle was decomposed by ficin and its solubility was relatively higher than before.
This study was carried out in order to standardize the processing method of spiced soy sauce, to get the sensory scores for organoleptic properties in different cooking of each food items, and to analyze the microbiological and chemical properties during storage periods. In determining the optimum conditions for standardizing of spiced soy sauce, the best sensory score was found in the ratio of soy sauce to sugar of 1:0.7. In the result of microbial experiment on standardized spiced soy sauce, the stability of storage at 40$^{\circ}C$ up to 6 weeks was proved. The standardized spiced soy sauce which was composed of about 45.5% water, 6% crude protein, 11.7% reducing sugar and 32.1% invert sugar has not shown any significant difference during storage for 6 weeks at 40$^{\circ}C$ compared with the state immediately after processing. In the test of saltiness, specific gravity, viscosity and Hunter's color value, there was no notable change during storage at 40$^{\circ}C$. In the experiment of free amino acid and total amino acid, main amino acids were glutamic acid and aspartic acid, which were not significantly changed during storage compared with processing state. In the analysis of mineral contents, sodium accounts for 95% of the total minerals, followed by phosphorus, magnesium, etc., in order, and there was no change during storage.
The objective of this study was to determine the optimum mixing ratio of Opuntia humifusa powder and sugar in the preparation of muffin. The optimal sensory composite recipe was determined by following the central composites for muffin with different levels of Opuntia humifusa powder (A) and sugar (B). The analysis was performed using the response surface methodology, and the sensory evaluation was performed with the data. Ten experimental recipes, including two with reference points in the composition, were selected. The compositional and functional properties were measured, and the physical and sensory values were applied to the mathematical models. Perturbation plots showed the effects of each ingredient on the final product. Measurements showed significant values in lightness (p<0.05), sweetness (p<0.05), hardness (p<0.05), gumminess (p<0.05) and cohesiveness (p<0.01). The sensory measurements showed significant values in color (p<0.05), flavor (p<0.05), appearance (p<0.05), softness (p<0.05) and overall quality (p<0.05). Based on the numerical and graphical methods, the optimal formulation was determined to be 6.10 g of Opuntia humifusa powder and 82.61 g of sugar.
Methyl fructoside oleic acid polyester(MFPE), fructose-based sugar polyester, was synthesized by solvent-free, soap-free transesterification of methyl oleate with methyl fructoside(MF) as a sugar starting material in the presence of conventional potassium carbonate basic catalyst. Methyl fructoside was found to be an effective sugar starting material, because of its low softning point, high heat stability, high miscibility, and high reactivity than other sugars. Yield 98% of purified MFPE based on initial weight of MF was obtained at 1:5 of the molar ratio of methyl fructoside to methyl oleate, 2%(w/w) of potassium carbonate catalyst content, 20${\sim}$200mmHg of reduced pressure and $180^{\circ}C$ of reaction temperature. MFPE structure was confirmed by infrared and proton nuclear magnetic resonance spectroscopy. Physical properties of methyl of fructoside oleic acid polyester such as viscosity, HLB, solubility, color, refractive index, specific gravity, and density were similar to physical properties of sucrose polyesters(SPE) and vegetable oils. Then, it was elucidated that MFPE was sufficient to replace the SPE and conventional oils.
The purpose of this study was to investigate the antioxidant effects of Mori cortex radicis powder and to determine the optimal composite recipe by testing different amount of Mori cortex radicis powder and sugar in cookies prepared with Mori cortex radicis powder. In regard to its antioxident effects, Mori cortex radicis powder had a total phenolic content and DPPH free radical scavenging activity of 149.56 mg GAE/g and $137.77{\mu}g/mL$, respectively. The response surface methodology was used to obtain ten experimental points (including two replicates for Mori cortex radicis powder and sugar) and Mori cortex radicis cookie formulation was optimized using rheology. The results of the sensory evaluation produced significant values for color (p<0.05), texture (p<0.05), sweetness (p<0.01) and overall quality (p<0.05), and the results of instrumental analysis showed significant values in sweetness (p<0.001), redness (p<0.01) and spread ratio (p<0.5). As a result, the optimum formulations obtained by numerical and graphical methods were found to be 16.84 g of Mori cortex radicis powder and 64.42 g of sugar.
The feasibility of enhancing biological nutrient removal from an industrial wastewater was tested with food waste leachate and sugar liquid waste as external carbon sources. Long term influences of adding external carbon sources were investigated to see how the biological nutrient removal process worked in terms of the removal efficiency. The addition of the external carbons led to a significant improvement in the removal efficiency of nutrients: from 49% to approximately 76% for nitrogen and from 64% to around 80% for phosphorus. Approximately, 20% of the removal nitrogen was synthesized into biomass, while the remaining 80% was denitrified. Though the addition of external carbon sources improved nutrient removal, it also increased the waste sludge production substantially. The optimal observed BOD/TN ratio, based on nitrogen removal and sludge production, was around 4.0 in this study.

In this study, four cultivars of strawberry commonly grown in South Korea, 'Daewang', 'Seolhyang', 'Maehyang', and 'Ssanta', were evaluated for several qualities, including the presence of phytochemicals, sugar content, organic acids, and fruit hardness. The plants were cultivated on a high-bench bed system in a plastic greenhouse and drip irrigated. Fruit samples were collected three times in February 2013 to analyze the fruit characteristics. We found that the fruit hardness of the 'Daewang', 'Maehyang', and 'Ssanta' cultivars was greater than that of 'Seolhyang', however 'Seolhyang' showed the highest moisture content of all the cultivars, indicating that fruit hardness was negatively associated with moisture content. Furthermore, 'Seolhyang' was found to have the highest levels of phenolic compounds and anthocyanins compared to the other cultivars. 'Maehyang' had the highest amount of total sugars. 'Seolhyang' and 'Maehyang' accumulated higher amounts of total organic acids. As a result, 'Daewang' and 'Maehyang' were expected to be preferred by consumers because they had the highest ratio of sugar to total acid in their fruit.
In this study, a biodegradation model of based on molecular cellulose was established. It is a mathematical, kinetic model, assuming that two major enzymes randomly break glycosidic bonds of cellulose molecules, and calculates the number of molecules by applying the corresponding probability and degradation reaction coefficients. Model calculations considered enzyme dose, cellulose chain length, and reaction rate constant ratio. Degradation increased almost by two folds with increase of temperature (5℃→25℃). The change of degradation was not significant over the higher temperatures. As temperature increased, the degradation rate of the molecules increased along with higher production of shorter chain molecules. As the reaction rates of the two enzymes were comparative the degree of degradation for any combinations of enzyme application was not affected much. Enzyme dose was also tested through experiment. While enzyme dose ranged from 1 mg/L to 10 mg/L, the gap between real data and model calculations was trivial. However, at higher dose of those enzymes (>15 mg/L), the experimental result showed the lower concentrations of reductive sugar than the corresponding model calculation did. We determined that the optimal enzyme dose for maximum generation of reductive sugar was 10 mg/L.
