나박김치의 제조 표준화 및 발효온도별 젖산균의 생육과 CO2 생성 (Standardization of Manufacturing Method and Lactic Acid Bacteria Growth and CO2 Levels of Nabak Kimchi at Different Fermentation Temperatures)

  • 각종조리서 및 문헌의 자료를 이용하여 나박김치의 재료 배합비 및 제조 방법을 표준화하였다. 표준화한 방법으로 제조한 나박김치의 저장온도별$(5,\;10,\;20^{\circ}C)$ 발효특성과 $CO_2$ 생성특성에 대하여 검토하였다. 나박김치의 재료 배합비는 물 100 mL$(54.9\%)$에 대해 절인 배추 $45.0{\pm}26.7\;g(24.7\%)$, 무 $26.9{\pm}10.3\;g(14.8\%)$, 파 $1.9{\pm}0.6g(1.0\%)$, 홍고추 $1.0{\pm}0.2g(0.5\%)$, 마늘 $1.2{\pm}0.5g(0.7\%)$, 생강 $0.9{\pm}0.4g(0.5\%)$, 고춧가루 $0.7{\pm}0.4g(0.4\%)$로 나타났다. 나박김치의 표준 제조방법으로는 무와 배추는 깨끗이 씻어서 준비하고 각각 $2.5\times2.5\times0.5cm$의 크기로 썰어서 20분간 소금을 뿌려서 절인다. 파와 홍고추는 2.5 cm 길이로 채 썰어서 준비한다. 마늘과 생강은 다져서 준비하고, 고춧가루는 물에서 우려내어 멸균한 2겹의 gauze로 짜서 나박김치 국물을 만든다. 절인 무와 배추는 수돗물로 씻어 물기를 뺀 후 준비된 재료 및 양념과 함께 버무린 다음 국물을 부어서 나박김치를 제조한다 나박김치의 산도는 $5^{\circ}C$에서는 8일째에 $0.21\%,\;10^{\circ}C$에서는 3일째에 $0.20\%,\;20^{\circ}C$에서는 1일째 에 $0.31\%$로 되었다. pH와 산도의 관계에서는 김치의 적숙기에 해당하는 pH $4.2\~4.5$ 사이에서 나박김치의 산도는 $0.20\~0.25\%$ 사이에 있었다. 다른 종류의 김치에서와 같이 나박김치는 높은 Leuconostoc sp. 함량을 나타내었으며, 특히 낮은 발효온도$(5^{\circ}C)$에서는 발효 말기에 Leuconostoc sp.균의 생성이 많아졌다. 그러나 $5^{\circ}C$에서 나박김치의 Lactobacillus sp.균은 다른 발효온도에 비해 낮은 함량을 나타내었다. $CO_2$함량은 발효의 진행과 함께 초기부터 증가하였다가 급속히 감소하였다. 나박김치의 pH와 $CO_2$ 함량의 관계에서, $5^{\circ}C,\;10^{\circ}C$$20^{\circ}C$의 발효온도에서 각각 pH $4.0\~4.4$, 3.8, 3.4에서 가장 높은 $CO_2$ 함량을 나타내었다. $5^{\circ}C$에서 발효시킨 나박김치가 적숙기 pH에서 가장 높은 $CO_2$함량을 나타내어 $5^{\circ}C$의 저온에서 나박김치를 발효할 경우 맛 증진과 가식기간을 연장시킬 수 있다.

동축류 메탄(CH4), 에탄(C2H6), 프로판(C3H8) 혼합 확산화염내의 수소(H2) 첨가가 화염 형상 및 연소 생성물에 미치는 영향 (Effect of Hydrogen(H2) Addition on Flame Shape and Combustion Products in Mixed Coflow Diffusion Flames of Methane(CH4), Ethane(C2H6) and Propane(C3H8))

  • 본 연구에서는 국내외 저탄소 녹색성장을 위한 대안으로서 수소에너지와 그 이용 기술에 대한 관심이 높아지는 추세에 발맞춰 무탄소 연료인 수소를 LNG 의 주성분인 메탄, 메탄-프로판, 메탄-프로판-에탄 동축류 확산화염 내에 첨가하여 화염형상 및 연소생성물에 미치는 영향을 확인하였다. 상온상압 조건의 확산화염에 수소를 단계적으로 첨가하여 실제 생성되는 연소생성물의 변화 추이를 가스 분석기를 이용하여 실험적으로 관찰하였고 확산화염의 형상은 디지털카메라를 이용하여 단계적으로 관찰 하였다. 실험결과에서 확산화염에 수소를 첨가함에 따라 질소산화물의 생성량이 선형에 가깝게 증가하는 경향을 보였다. 이것은 수소의 상대적으로 높은 단열화염온도와 빠른 연소속도가 Thermal NOx의 생성을 촉진했기 때문이다. 반면 이산화탄소의 생성량은 감소하는 경향이 나타났는데 수소를 첨가함에 따라 메탄, 메탄-프로판, 메탄-에탄-프로판의 혼합 확산화염에 포함되어있는 전체 탄소비율이 줄어들어 이산화탄소의 생성량이 감소한 것이다. 이는 선박에서 LNG-수소의 혼합 연료사용으로 인해 온실가스인 이산화탄소를 저감할 수 있는 하나의 방안으로 고려될 수 있다는 것을 의미한다.

육류조림'의 조리모형 분석을 통한 조리법 변화 연구 - 근대이후 조리서를 중심으로 - (Evaluation of the Meat and Poultry 'Jorim' Model in Korean Modern Cookbooks)

  • The purpose of this study was to investigate the Jorim of meat and poultry in Korean modern cookbooks. Jorim is a traditional Korean method of braising meat and poultry with soy sauce or gochujang. This study evaluated jorim in 10 books published in Korea from the end of 1800 to 1987 and to develop cooking models of beef jorim, pork jorim, and chicken jorim. The main ingredients in the jorim were beef, pork, chicken and pheasant. Other ingredients in the jorim included pine nuts, beef, eggs, radishes, bean sprouts, onions, bamboo shoots and pepper. In Sieuijeanseo, which was published at the end of the nineteenth century, the method called for braising meat directly in soy sauce. However, other modern cookbooks suggested boiling the meat prior to braising. Despite jorim being a popular sub-dish in Korea, there has been a decrease in the varieties available.

부재료 첨가 배추김치의 항돌연변이 및 항암성 증진효과 (Increased Antimutagenic and Anticancer Activities of Chinese Cabbage Kimchi by Changing Kinds and Levels of Sub-Ingredient)

  • To enhance the antimutagenic and anticancer activities of chinese cabbage kimchi, 13 kinds of kimchi, which were different kinds and levels of sub-ingredient added kimchi, were prepared and fermented at 15℃ for 1 day and then at 5℃ up to pH 4.3. The antimutagenic effects of the methanol extracts of the kimchi were studied by using Ames mutagenicity test in Salmonella typhimurium TA100 and SOS chromotest in E. coli PQ37. Among the kimchi samples, high ratio of red pepper powder(7%) and garlic(2.8% or 5.2%) added kimchi, 1% chinese pepper powder added kimchi and organic cultivated chinese cabbage kimchi significantly reduced(p<0.05) the mutagenicity induced by aflatoxin B1(AFB1) in Ames test and SOS response against N-methyl-N'-nitro-N-nitrosoguanidine(MNNG) in SOS chromotest, and also the kimchi inhibited more effectively(p<0.05) the survival and growth of AGS human gastric adenocarcinoma cells than the standarized kimchi on the SRB assay, MTT assay and growth inhibition test. These results suggest that the antimutagenic and anticancer activites of kimchi can be increased by the sub-ingredients such as organic cultivated chinese cabbage, red pepper powder, garlic and chinese pepper powder.

한국 고대 붉은 간토기의 적색 안료 및 교착제에 대한 과학적 분석 (Study on Scientific Analysis about Red Pigment And Binder - The Korean Ancient Red Pottery -)

  • 본 연구에서는 한국 고대 붉은 간토기 중 국립김해박물관 소장품인 적색마연완 붉은 간토기(신석기시대), 단도마연 붉은 간토기(청동기시대), 적색마연가지문 붉은 간토기(청동기시대)에 사용된 적색 안료와 교착제를 확인하여 고대 붉은 간토기에 사용된 적색 안료와 교착제의 종류에 대한 자료를 구축하고자 하였다. 과학적 분석 결과, 붉은 간토기 3점 모두 소지층과 적색의 표면층으로 구분되었으며, 적색의 표면층에서는 적색 안료 입자와 광물의 결정이 보였다. SEM-EDS, Raman 분석을 통해 적색 안료는 산화철(Fe2O3)을 주 발색원으로 하는 토양성 안료 중 석간주로 추정하였으며, FTIR-ATR을 통해 Urushiol polymer의 특징에 의한 성분 피크가 검출되었다. GC/MS 분석 결과, 적색층에서 옻칠의 방향구조에 기인하는 성분인 Benzenemethanol-2-propenyl, 4-heptyl phenol, 1-Tetradecanol, Heptafluorobutyroxytridecane 성분이 검출되었다. 따라서 국립김해박물관 소장품인 붉은 간토기 3점의 적색 안료는 석간주(Fe2O3)를, 교착제로는 옻칠을 사용하여 제작된 토기인 것으로 판단되었다.

Standardized ileal digestibility of amino acids in cereal grains and co-products in growing pigs

  • Objective: The objective was to determine standardized ileal digestibility (SID) of crude protein (CP) and amino acids (AA) in cereal grains and various co-products fed to growing pigs. Methods: Ten feed ingredients tested were barley (9.3% CP), lupin kernels (31.1% CP), and wheat (11.3% CP) as cereal grains, and 2 sources of corn gluten feed produced in China (21.6% CP) and Korea (24.6% CP), corn gluten meal (65.3% CP), lupin hulls (11.6% CP), rice bran (14.5% CP), soybean meal (44.8% CP), and wheat bran (15.4% CP) as co-products. Ten experimental diets were formulated to contain each ingredient as a sole source of N and an N-free diet was used to correct basal endogenous losses of CP and AA. All diets also contained 0.5% Cr2O3 as an indigestible index. A replicated 11×6 incomplete Latin square design with 11 dietary treatments, 6 periods, and 22 animals was employed. Twenty-two barrows with an initial body weight of 64.6±4.9 kg were equipped with a T-cannula in the distal ileum. An experimental period consisted of a 4-d adaptation period and a 2-d collection period. Results: The SID of CP in the barley, lupin kernels, wheat, 2 sources of corn gluten feed, corn gluten meal, lupin hulls, rice bran, soybean meal, and wheat bran were 84.7%, 90.5%, 90.4%, 77.4%, 74.6%, 89.5%, 90.4%, 74.4%, 86.9%, and 63.4% (standard error of the mean [SEM] = 5.3, p = 0.006), respectively. The respective SID values of Lys were 75.5%, 88.4%, 83.9%, 74.7%, 62.4%, 80.3%, 83.9%, 78.5%, 88.0%, and 71.2% (SEM = 3.3, p<0.001), and the SID values of Met were 83.6%, 88.7%, 89.4%, 85.7%, 78.3%, 88.9%, 89.4%, 85.3%, 91.1%, and 77.0% (SEM = 2.4, p<0.001), respectively. Conclusion: The ileal digestibility of protein and amino acids varies among the feed ingredients fed to pigs.

수직형 스마트 팜의 적정 생육환경 조성을 위한 건축 시스템 개발 - 수직형 스마트 팜에 최적화된 내부 공기 균일성 향상에 대한 연구 - (Development of Building System for Achieving an Optimal Growth Environment in a Vertical Smart Farm)

  • 지구온난화 및 기후변화에 대한 전문 연구기관인 IPCC에 따르면 인간은 기후 시스템에 영향을 끼치고 있다. 이러한 기후 시스템의 변화는 기존 생육환경을 변화시켜 농업 분야의 식재료 공급에 문제를 야기할 수 있다. 이 문제를 해결하기 위해 수직형 팜은 안정적인 식재료의 공급을 위한 좋은 대안이 될 수 있다. 수직형 스마트 팜은 농작물의 생육환경 유지 및 관리에 깊은 관심을 쏟고 있음에도 불구하고 건축 공간에 온도, 습도, 조도, 산소, CO2 농도 등을 균일하게 구현하는 데에는 어려움이 있다. 공기의 균일성 확보를 위해 CFD 분석을 진행한 결과 주목할 만한 결과는 수직형 스마트 팜 내의 공기 균일성을 위해서는 적합한 CO2 농도를 장기간 지속적으로 분사하는 것이 유리하다는 것이다. 이 결과를 통해 수직형 스마트 팜에 최적화 된 생육환경 시스템을 효율적으로 계획할 수 있다. 본 연구를 기초로 수직형 스마트 팜의 최적화된 생육환경을 조성하여 효율적인 작물이 생산이 이루어진다면 농업 분야의 발전에 이바지 할 수 있을 것이다.

잘피 추출물의 UVB로 손상을 유도한 각질형성세포에 대한 항염 효능 (Anti-inflammation effect of extract from Zostera marina using UVB-induced damage on keratinocytes)

  • Objectives : In order to confirm whether extracts of different parts of Zostera marina (ZM), a marine flowering plant, can be used as cosmetic ingredients, this study evaluated their cytotoxicity and cytoprotective effects against ultraviolet B (UVB). Inflammatory responses induced by UV stimuli are also associated with the aging of the skin.Methods : We investigated the effects of ZM extracts on cells through the water soluble tetrazolium salt-1(WST-1) assay for cell viability. In order to investigate the anti-inflammatory effects, we evaluated the suppression of Cyclooxygenase-2 (COX-2) expression by ZM extracts in HaCaT cells with UVB-induced damages, and also evaluated the production of Prostaglandin E2 (PGE2) in RAW 264.7 cells with LPS-induced damages.Results : High cell viabilities above 90% were observed in all types of ZM extracts, except for whole ZM extract at 0.5 mg/ml; in keratinocytes with UVB-induced damages, the cell viabilities were above 80% when treated with all types of ZM extracts. We confirmed their anti-inflammatory effects by investigating the suppression of inflammatory mediators. In keratinocytes with UVB-induced damages, COX-2 expression decreased in the experimental group treated with ZM extract. Similarly, in RAW 264.7 cells where inflammation was induced with LPS, the biosynthesis of PGE2 was inhibited.Conclusion : These results suggest that ethanol extracts from Zostera marina may have value as the potential anti-inflammatory medicinal plant. Also based on the abovementioned results, ZM extract protects skin cells from UV-induced damages, and thus can be used in topically applied products for skin protection.

Carica papaya leaf water extract promotes innate immune response via MAPK signaling pathways

  • The emergence and rapid spread of the potentially fatal coronavirus disease 2019, caused due to infection by severe acute respiratory syndrome coronavirus-2, has led to worldwide interest in developing functional bioactive ingredients that act as immunomodulatory agents. In this study, we aimed to characterize Carica papaya extract and explore its potential as an immunomodulator by performing in vitro cell screening. Papaya leaf water extract (PLW) was found to significantly increase the levels of nitric oxide (NO) and prostaglandin E2 (PGE2) by upregulating inducible nitric oxide synthase and cyclo-oxygenase-2 activity, respectively. Additionally, PLW increased the production of tumor necrosis factor-α and interleukin 1β in RAW 264.7 cells. Furthermore, PLW activated the expression of c-Jun N-terminal kinase (JNK) and extracellular signal-regulated kinase (ERK) but not that of p38 mitogen-activated protein kinase. These results indicate that PLW increased the production of NO, PGE2, and pro-inflammatory cytokines by activating the JNK and ERK pathways in macrophages, thus demonstrating immunomodulatory properties. Finally, high-performance liquid chromatography fingerprint analysis indicated the presence of rutin, narirutin, and ρ-coumaric acid in PLW (6.30, 119.76, and 47.25 ppm, respectively). Treating cells with these compounds at non-toxic concentrations had no effect on NO production. Taken together, these results suggest that PLW may have potential as an immunity-enhancing supplement.

Comparative Bioactivity of Emamectin Benzoate Formulations against the Pine Wood Nematode, Bursaphelenchus xylophilus

  • The pine wood nematode (PWN), Bursaphelenchus xylophilus is a well-known devastating pathogen of economic importance in the Republic of Korea and other countries. In the Republic of Korea, trunk injection of nematicides is the preferred method of control. In this study, the efficacy of 16 locally produced formulations of emamectin benzoate against the PWN are compared through determining their sublethal toxicities and reproduction inhibition potentials. Nematodes were treated with varying concentrations of the tested chemicals in multi-well culture plates, and rates of paralysis and mortality were determined after 24 h. Reproduction inhibition potential was tested by inoculating pre-treated nematodes onto Botrytis cinerea, and in pine twig cuttings. Despite the uniformity in the concentration of the active ingredient, efficacy was contrastingly different among formulations. The formulations evidently conformed to three distinct groups based on similarities in sublethal activity (group 1: LC95 of 0.00768-0.01443 mg/ ml; group 2: LC95 of 0.03202-0.07236 mg/ml, and group 3: LC95 of as high as 0.30643-0.40811 mg/ml). Nematode paralysis generally occurred at the application dose of 0.0134-0.1075 ㎍/ml, and there were significant differences in nematode paralysis rates among the products. Nematode reproduction was only evident at lower doses both on B. cinerea and pine twigs, albeit the variations among formulations. Group 1 formulations significantly reduced nematode reproduction even at a lower dose of 0.001075 ㎍/ml. The variations in efficacy might be attributed to differences in inert ingredients. Therefore, there is need to analyze the potential antagonistic effects of the large number of additives used in formulations.
