Changes in Postharvest Respiration, Growth, and Vitamin C Content of Soybean Sprouts under Different Storage Temperature Conditions

  • To understand the postharvest characteristics of soybean sprouts, 5-day-old sprouts were harvested, packed in PE film, and stored at 4, 12, and $20^{\circ}C$ for up to 4 days. In addition, the sprout respiration rate was measured after storage at 4, 8, 12, 16, 20, and $24^{\circ}C$ for up to 20h. During the first day of storage at $20^{\circ}C$, the sprouts maintained temperature-dependent longitudinal growth, especially of hypocotyl length; hypocotyl and root grew 0.8cm and 0.2cm, respectively. The hypocotyl thickness decreased by 11, 13, and $18\%$ after 4 days of storage at 4, 12, and $20^{\circ}C$, respectively. No temperature-dependent differences in fresh weight, dry weight, or water content were found, despite decreases of $3\%$ over the 4 days of storage. A significant postharvest decrease of $50\%$ in vitamin C content was observed in the sprouts stored at $20^{\circ}C$ for 3days. Based on the $CO_2$ production rate, the soybean sprouts exhibited an increase in respiration in proportion to the storage temperature; sprouts stored at 8, 12, 16, 20 and $24^{\circ}C$ showed approximately 2, 5, 6, 11, and 17 times, respectively, than the respiration rate of sprouts stored at $4^{\circ}C$. These results indicate the importance of low temperature storage during market circulation for minimizing the postharvest morphological and nutritional degradation of soybean sprouts.

Antioxidative Activity of Yacon and Changes in the Quality Characteristics of Yacon Pickles during Storage (야콘의 항산화성 및 야콘 초절임제품의 저장 중 품질특성)

  • The purpose of this study was to measure the antioxidant activity of yacon root and to manufacture yacon pickles for commercialization as a functional food. The total phenol content in yacon roots were the highest, 29.96 mg GAE/ 100 g, in the ethyl acetate fraction and the DPPH radical scavenging activity and ABTS radical scavenging activity was 37.07%, and 91.60%, respectively, in the ethyl acetate fraction. The optimum recipe for the pickling solution was determined to be vinegar, water and high fructose corn syrup, at 34%, 22% and 44%, respectively. The quality characteristics of yacon pickles using this solution were monitored during storage at $25^{\circ}C$ for 43 days. The pH value decreased to 2.98 (42 days) during storage and $^{\circ}Brix$ gradually increased during storage. The L-value decreased significantly during storage but there were no significant changes detected in the a and b values. No significant changes were detected in the hardness of the yacon pickles. According to the sensory evaluation, no significant changes in taste, texture and overall acceptance of yacon pickle were observed during storage. These results indicated that yacon was an excellent functional food in terms of its antioxidant activity and that pickling might be a promising methods to maintain the taste and quality of yacon during storage.

Improvement of the Planting Method to Increase the Carbon Reduction Capacity of Urban Street Trees

  • Background and objective: Urban street trees play an important role in carbon reduction in cities where greenspace is scarce. There are ongoing studies on carbon reduction by street trees. However, information on the carbon reduction capacity of street trees based on field surveys is still limited. This study aimed to quantify carbon uptake and storage by urban street trees and suggest a method to improve planting of trees in order to increase their carbon reduction capacity. Methods: The cities selected were Sejong, Chungju, and Jeonju among cities without research on carbon reduction, considering the regional distribution in Korea. In the cities, 155 sample sites were selected using systematic sampling to conduct a field survey on street environments and planting structures. The surveyed data included tree species, diameter at breast height (DBH), diameter at root collar (DRC), height, crown width, and vertical structures. The carbon uptake and storage per tree were calculated using the quantification models developed for the urban trees of each species. Results: The average carbon uptake and storage of street trees were approximately 7.2 ± 0.6 kg/tree/yr and 87.1 ± 10.2 kg/tree, respectively. The key factors determining carbon uptake and storage were tree size, vertical structure, the composition of tree species, and growth conditions. The annual total carbon uptake and storage were approximately 1,135.8 tons and 22,737.8 tons, respectively. The total carbon uptake was about the same amount as carbon emitted by 2,272 vehicles a year. Conclusion: This study has significance in providing the basic unit to quantify carbon uptake and storage of street trees based on field surveys. To improve the carbon reduction capacity of street trees, it is necessary to consider planning strategies such as securing and extending available grounds and spaces for high-density street trees with a multi-layered structure.

EFFECT OF TOPICAL ALENDRONATE APPLICATION ON INFLAMMATION OF REPLANTED RAT MOLAR (탈구치의 alendronate 도포가 재식 후 염증반응에 미치는 효과)

  • This study histologically assessed the effect of topical alendronate application on periodontal healing in replanted teeth in fifty four SD Rats. Upper first molars in rat were extracted and replanted after dried during 15 minutes or 60 minutes in the air. In Group I, all teeth were replanted after 15 minutes of dry storage without any other treatment. In Group II and III, the pulps were removed and all teeth were replanted after soaking 10 min in Hank's balanced salt solution with/without alendronate, followed by 60 minutes of dry storage. the rats were sacrificed after 7, 15 and 30 days. The histological parameters studied were healed PDL, surface inflammatory and replacement resorption, and inflammatory severity. The following conclusions could be drawn from the present investigation. 1. Group I showed lower inflammatory root resorption and inflammation severity rate, compared to Group II and Group III. In Group I there showed effective for reattachment and regeneration of PDL. 2. In Group II, inflammatory root resorption were more severe and faster than other groups. There were extensive root resorption in the rats sacrificed after 30 days. 3 In Group III, there were localized inflammatory resorption in several areas, but extensive resorption did not occur Group III showed increase in root resorption rate, compared to Group I. However this difference was not statistically significant. 4. There were no difference between sacrificed days in replacement root resorption in all groups.

Change of Sprouting-related Enzymes Activities and Food Quality Characteristics of Sweetpotato Root (Ipomea batatas Lam.) by Electron Beam Irradiation (전자빔 조사에 의한 고구마의 발아관련 효소의 활성과 식품특성 변화)

  • We investigated that electron beam irradiation is the effective method to control the sprouting of sweetpotato roots without changing of food quality characteristics. In 12 and $25^{\circ}C$ storage after electron beam irradiation, all control samples were sprouted from 6 and 4 weeks after storage, respectively. The sprouting rate of control increased with time and the rate reached to 11.2-12.4 and 70.5-74.2% at 8 weeks after 12 and $25^{\circ}C$ storage. Also, the sprouting of middle and below positioning sweetpotato roots at 12 and $25^{\circ}C$ storage after irradiation reached to 8.6-11.3 and 42.7-48.7% after a storage period of 8 weeks, respectively. However, the sprouting of all sweetpotato roots stored at $4^{\circ}C$ and upper (0-7 cm) positioning samples of box stored at 12 and $25^{\circ}C$ with electron beam was completely inhibited due to increase peroxidase and indole acetic acid (IAA) oxidase activity. Also, all samples with electron beam such as hardness, pH, sugar content, weight loss, and vitamin C and dacarotene content did not differ from that of the control. Therefore, if electron beam will be irradiated to sweetpotato roots above 0.1 kGy before packing, it will effectively inhibit their sprouting stored at $25^{\circ}C$ without the change of food quality characteristics.

Carbon Storage and Uptake by Evergreen Trees for Urban Landscape - For Pinus densiflora and Pinus koraiensis - (도시 상록 조경수의 탄소저장 및 흡수 - 소나무와 잣나무를 대상으로 -)

  • This study generated regression models through a direct harvesting method to estimate carbon storage and uptake by Pinus densiflora and Pinus koraiensis, the major evergreen tree species in urban landscape, and established essential information to quantify carbon reduction by urban trees. Open-grown landscape tree individuals for each species were sampled reflecting various diameter sizes at a given interval. The study measured biomass for each part including the roots of sample trees to compute the total carbon storage per tree. Annual carbon uptake per tree was quantified by analyzing radial growth rates of stem samples at breast height. The study then derived a regression model easily applicable in estimating carbon storage and uptake per tree for the two species by using diameter at breast height (DBH) as an independent variable. All the regression models showed high fitness with $r^2$ values of higher than 0.98. While carbon storage and uptake by young trees tended to be greater for P. densiflora than for P. koraiensis in the same diameter sizes, those by mature trees with DBH sizes of larger than 20 cm showed results to the contrary due to a difference in growth rates. A tree of P. densiflora and P. koraiensis with DBH of 25 cm stored 115.6 kg and 130.0 kg of carbon, respectively, and annually sequestered 9.4 kg and 14.6 kg. The study has broken new grounds to overcome limitations of the past studies which quantified carbon reduction of the study species by substituting, due to a difficulty in direct cutting and root digging of landscape trees, coefficients from forest trees such as biomass expansion factors, ratios of below ground/above ground biomass, and diameter growth rates.

First Report of Postharvest Gray Mold Rot on Carrot Caused by Botrytis cinerea in Korea

  • In February 2014, gray mold rotting symptoms were observed in carrots in cold storage at Gangneung, Gangwon province, Korea. The typical symptom of gray mold rot showed abundant blackish gray mycelia and conidia was observed on the infected root. The pathogen was isolated from infected root and cultured on PDA for further fungal morphological observation and confirming its pathogenicity according to Koch's postulates. Results of morphological data, pathogenicity test and rDNA internal transcribed spacer (ITS 1 and 4) sequence showed that the postharvest gray mold rot of carrot was caused by Botyrtis cinerea. This is the first report of postharvest gray mold rot on carrot in Korea.

  • We study algorithms that can efficiently find cube roots by modifying Cipolla-Lehmer algorithm. In this paper, we present two type algorithms for finding cube roots in finite field, which improves Cipolla-Lehmer algorithm. If the number of multiplications of two type algorithms has a little bit of a difference, then it is more efficient algorithm which have less storage variables.

Effects of Storage Gas Concentrations on the Qualities of Garlic(Allium sativum L.) Bulb during CA Storage (통마늘의 CA저장 중 저장기체 농도에 따른 품질변화)

  • This experiment was conducted to measure the physiological qualities and the chemical compositions of garlic bulb (Allium sativum L) stored in air and controlled atmosphere at 0$\^{C}$ for 4months. There were no significant differences in physiological qualities such as soluble solid, dry weight and firmness by O$_2$ and CO$_2$ concentrations during 4 months of storage. The surface color of garlic cloves changed toward more dark direction in Hunter color surface with storage. CA storage inhibited the sprout growth by 50% and had no significant difference in root growth. Garlic stored in CA showed lower level of pungency, especially CA of low oxygen concentration (1%) showed the lowest level of pyruvate. Garlic stored in high CO$_2$ concentration(20%) showed the lowest level of fructan concentrations and the highest free sugar concentrations.

Quality Characteristics of Ssamjang Added with Cheonggukjang and Various Kinds of Jocheong during Storage (청국장과 조청을 이용하여 제조한 쌈장의 저장 중 품질특성)

  • Purpose: This study was conducted to develop easy-made ssamjang products with differentiated materials and methods to meet the needs for a healthy and easy- lifestyle trend with lowered manufacturing expenses. Methods: Ssamjang was made with cheonggukjang and different kinds of jocheong as glutinous (GRSS), sweet potato (SPTSS), sweet pumpkin (SPKSS), bellflower root (BRSS) and ginger (GSS) and stored at $4^{\circ}C$ for 16 weeks. Quality characteristics and consumer acceptability were measured. Results: Titratable acidity was higher in SPTSS and rapidly increased (p<0.05) after 9 weeks in all groups during storage. Amino-type nitrogen contents of SPTSS and SPKSS were the highest and rapidly increased (p<0.05) after 5 weeks. Total free sugar content was higher in GRSS and did not change during storage. Glutamic acid and total free amino acid contents were higher in SPTSS, SPKSS and continuously increased up to 9 weeks. Yeast counts rapidly increased (p<0.05) after 9 weeks reaching 4.0 Log CFU/g in all groups except for SPTSS. Consumer acceptability did not change during storage in all groups and GSS was least preferable. Conclusion: The optimal quality maintenance period of ssamjang with cheonggukjang and jocheong was determined to 7-9 weeks of storage at $4^{\circ}C$ and ginger jocheong was the least preferable materials. We conclude that it is possible to develop easy-made ssamjang products with cheonggukjang and non-fermented materials also skipping aging period.
