쌀가루의 종류와 농도를 달리한 찐 흑임자 첨가 흑임자죽의 품질특성 (The Quality Characteristics of Black Sesame Gruels Made with Different Concentrations of Steamed Black Sesame and Various Kinds of Rice Powder)

  • 흑임자를 찌는 방법으로 처리 조건을 달리하고 각각의 쌀가루(찹쌀가루, 찹쌀현미가루, 찰흑미가루)에 찐 흑임자의 첨가 비율을 달리하여 흑임자죽을 제조한 후 측정한 실험 결과는 다음과 같다. sesamin 함량은 591.919 mg/100g seed, sesamolin의 함량은 550.081 mg/100g seed, lignan 총 함량은 1142.000 mg/100g seed이었다. SOD 유사활성은 15분 쪄서 처리한 흑임자 시료는 천연항산화제인 tocopherol보다는 활성이 다소 낮았지만 천연항산화제인 sesamol보다는 활성이 높게 나타났으며 생 흑임자 시료의 활성보다 다소 높았다. 지방산 분석 결과 15분 쪄서 처리한 흑임자 시료는 생 흑임자에 비하여 myristic acid, palmitic acid, stearic acid, arachidonic acid의 함량이 높았다. 고형분의 함량은 찹쌀 흑임자죽은 찐흑임자 70%, 찰흑미 흑임자죽은 50%이상 찐 흑임자를 첨가했을 때 높았다. 찹쌀 현미 흑임자죽 고형분 함량에는 유의적인 차이가 없었다. L값은 찹쌀 흑임자죽, 찹쌀현미 흑임자죽, 찰흑미 흑임자죽 모두 찐 흑임자의 첨가량이 증가할수록 유의적으로 감소하였다. a값의 경우 찹쌀 흑임자죽, 찹쌀현미 흑임자죽은 대조군에서 가장 낮았고, 찰흑미 흑임자죽은 70%에서 가장 낮았다. b값은 찹쌀 흑임자죽과 찰흑미 흑임자죽은 대조군에서 낮았고, 찹쌀현미 흑임자죽은 40%이상 찐 흑임자를 첨가하였을 때 낮았다. Texture는 찹쌀 흑임자죽, 찹쌀현미 흑임자죽, 찰흑미 흑임자죽 모두 hardness, cohesiveness, springiness, gumminess, adhesiveness가 찐 흑임자를 60% 이상 첨가하였을 때 전반적으로 높은 경향을 보였다. 흑임자죽의 관능검사 결과 전반적인 기호도는 찹쌀 흑임자죽은 60%, 찹쌀현미 흑임자죽은 $60{\sim}70%$, 찰흑미 흑임자죽은 찐 흑임자를 60% 첨가한 시료에서 기호도가 좋게 평가되었다. 이상의 연구 결과 찐 흑임자를 죽에 이용하기 위한 최적 조건은 찐 흑임자의 첨가 비율을 찹쌀 흑임자죽에서는 60%, 찹쌀현미 흑임자죽에서는 $60{\sim}70%$, 찰흑미 흑임자죽에서는 60% 첨가하는 것이 전반적으로 가장 적절할 것으로 사료된다.

흑임자의 조리 조건에 따른 항산화 효과의 비교 (A Comparison of Antioxidant Activities in Black Sesame Seeds according to Preparation and Cooking Conditions)

  • In this study, we found that the moisture content of black sesame seeds increased in proportion to steaming time, and it decreased in reverse proportion to the roasting temperature and time. The crude fat and crude ash contents were shown to be in the order of steamed black sesame>raw black sesame and roasted black sesame>raw black sesame, Crude protein decreased in reverse proportion to the steaming time, and more crude protein was found in the raw black sesame samples than in the roasted black sesame samples. The contents of sesamin, sesamolin, and total lignans were shown to be in the order of roasted black sesame>raw black sesame>steamed black sesame. In the steamed black sesame samples, sesamin showed its highest level with 20 minutes of treatment, and sesamolin showed its highest level with 15 minutes of treatment. In the roasted black sesame samples, sesamin, sesamolin, and total lignans showed their highest levels with 15 minutes of treatment at $100^{\circ}C$. The phenolic compound content increased in proportion to steaming time in the steamed samples, and reached a peak after 15 minutes of treatment at $100^{\circ}C$, and then decreased after 20 minutes. SOD-like activity reached a peak after 15 minutes of treatment, and in the roasted sample it reached a peak after 15 minutes of treatment, and then decreased after 20 minutes. SOD-like activity was comparatively lower than tocopherol and higher than sesamol. The intensity of electron donating ability, following 30 minute treatments, was shown to be highest in the steamed black sesame samples after 25 minutes of treatment, and next highest in the roasted black sesame samples after 15 minutes at $100^{\circ}C$. The electron donating ability was comparatively lower than tocopherol and sesamol. With regard to lecithin's antioxidant effects, the steamed samples showed a higher oxidation restriction rate in proportion to time, and the roasted samples showed the highest rate after 15 minutes of treatment, and then decreased after 20 minutes of treatment. for hydroxyl radical scavenging, similar scavenging activity to tocopherol, and comparatively higher scavenging activity than sesamol, was shown in all samples: all samples showed scavenging abilities of 90% or higher. In summary, this study applied three different treatment methods to black sesame to determine the optimum treatment conditions, and also examined the antioxidant effects and functional characteristics. The results showed that roasting can be used for other purposes than producing oil, and also suggested that methods other than roasting can be used in a variety of ways in cooking. Also, the different treatment methods can be applied in cooking in a variety of ways, to enhance functionality and preference.

In the Koryo dynasty, sesame was cultivated as the major crop and there were specialists for making sesame oil. The sesame oil was enough for the both upper and lower classes. In the Chosun dynasty, it was introduced widely the method of sesame and deul-sesame (Perilla japonica) cultivation, the way of keeping sesame oil, and how to make sesame oil. Also, there were several ways of making sesame oil; press oil from raw sesame, or from roasting, boiling, and steaming sesame and etc. Even though sesame-oil and sesames were consumed in large quantities to cook Chan (찬 side dishes) and Byung-gwa (병과 Korean traditional dessert), most of common people could not use freely because it was expensive. You-mil-gwa (유밀과) took always a major dishes in the ceremony or party of the royal classes to the ordinary classes in the Chosun dynasty. Sesames and Sesame-oil made a major role in adding flavor to Chan-mul and Coookies in the Korean traditional cuisine. Especially, sesame-oil was consumed a lot to cook You-mil-gwa, You-kwa (유과), You-jeon-byung (유전병 fried rice cake) and Yak-bab (약밥). Roasted sesame and black sesame were used to cook Da-sik (다식), Gang-jung, and rice cake. Sesame oil and sesame was the major part of vegetable dishes such as Na-mul and it was used to add flavor to steamed, roasted and, pan-fried dishes and to roast, fry, and stew food. Heuk-im-ja-jook(black sesame porridge) and Im-ja-su-soup(임자수탕).

"임원십육지"의 곡물 조리가공(밥.죽)에 관한 문헌 비교 연구(I) (A Comparative Study on the Literature of the Cooking Product of Grain(Rice, Gruel) in Imwonshibyukji(I))

  • Imwonshibyukji was a copying manuscript written around 1825, the 27th year of king Soonjo of the Josun Dynasty. It was a massive home encyclopedia of total 52 books and 100 volumes. The unpublished 'Jeongjoji' of its 17-20th volumes analyzed the cooking methods on the steamed rice and gruel and studied the degree of their usefulness and medical values in the light of the cooking process science. The cooking method on the steamed rice was composed of 14 items, and the general introduction outlined 6 kinds of the rice. These were all quoted from Chinese literatures. The 11 items present the methods on the general production of the rice, 2 on the cooking process, and 1 on the preservation. The main material of the rice was rice, and others were naked barley, prosomillet, foxtail millet, glutinous millet, etc. , and the secondary materials were glutinous rice, small red bean, black soybean, potato, bamboo seed, jujube, taro, gaertner, chestnut powder, persimmon power, julib(Zizania caduciflora), mangcho(Erigeron canadensis), namchok(Nandina domestica), licorice root, nitrous, peach, palmicha(schizandra, jinseng, cheonmoondong(Asparagus), and honey are mixed), etc. The literatures quoted in the rice were all 33, in which 23 were Chinese (69.7%) and 10 were Korean (30.3%). In the case of gruel, the cooking methods on the general gruel were described in 41 items, and on the gruel for a medical treatment were in 48 items, in which there was not a cooking method on the gruel but only its medical values were presented. The materials used for the general gruel were approximately 60 kinds: rice, glutinous rice, munbean, job's tears, rye, soybean, black sesame seed, antler of cervidae, chicken, crucian carp, and various medical materials, etc. The gruel was mainly used for protection and medical treatment, and partly for food for hungry people. The literatures quoted in the gruel were total 57, in which 26 were Korean(45.6%), and 31 were Chinese (54.4%). It can be their characteristics that Almost all of the Chinese literatures on the methods of the steamed rice and gruel do not exist.

쌀 가공식품 제조용 소재로서의 도정 부산물 활용 방안 (II) - 쌀 배아의 떡 고물 및 소로서의 가공적성 검정 - (Application of Rice Polishing By-products to Processed Rice Food (II) - Processing Aptitude of Rice Embryo -)

  • 본 연구는 쌀 부산물을 분리 활용하여 다양한 형태의 건강식품 신소재로서 이용하기 위한 연구로 흑미 미강 색소 추출물과 쌀 배아를 혼용한 떡 고물(소)을 제조하였으며, 떡 소의 점탄성을 부여하기 위한 소재로서 배아 젤리를 제조하여 가공 적성을 검정하였다. 콩가루와 배아가루를 50%씩 혼합하여 시루떡 고물을 제조하였을 경우, 배아 고물만으로 만들었을 때의 단점인 부스러짐이 완화되었으며 색상도 100% 콩가루 고물과 차이가 없었다. 배아 젤리는 젤라틴 젤리와 외관상으로는 색상, 윤기 및 조직감에 있어서 차이를 보이지 않았으며, 한천 젤리의 경우 배아가루의 첨가에 따라 색상이 검어졌으나 20%까지는 첨가량에 따른 외관상 차이는 없었다. 배아가루를 50% 첨가하여 고물을 만들었을 경우 색, 향미, 맛, 거친 정도 및 전반적인 기호도에 있어서 100% 콩고물과 차이를 보이지 않았으므로 배아가루를 50% 첨가할 때 소비자의 기호와 건강상 측면 모두 만족시킬 수 있는 건강기능성 떡의 제조가 가능할 것이다. 또한, 배아가루로 만든 송편 소의 관능검사 결과 모든 기호도 항목에서 참깨 소와 유의한 차이가 없었으므로 기존의 재료 대신 생리활성물질이 풍부한 배아가루의 사용이 가능할 것으로 보인다. 젤라틴 젤리에 배아가루를 5%로 첨가하였을 때 gel 조직 특성상 가장 바람직한 것으로 나타났다. 또한, 기호도 검사 결과에서도 맛에서 가장 높은 점수를 얻었고 그 외 항목에서는 일반 젤라틴 젤리와 차이가 없었으므로 점탄성을 요하는 떡 소의 경우에도 배아가루의 사용이 가능하며, 5% 정도의 비율로 첨가하는 것이 가장 적합할 것으로 생각한다.
