Analysis of Quality Properties and Fermentative Microbial Profiles of Takju and Yakju Brewed With or Without Steaming Process (증자 혹은 무증자 탁주 및 약주의 품질특성 및 발효관련 미생물 분석)

  • Steamed rice is usually used as an essential ingredient when Takju or Yakju is brewed in Korea. Alternatively, non-steamed rice can be used to keep thermolabile nutrients and fresh tastes richer in Takju or Yakju. In this study, therefore, the physicochemical properties (ethanol and sugar contents, pH, total acidities, and turbidities) and the fermentative microbial profiles (aerobic mesophillic bacteria (AMB), fungi, lactic acid bacteria (LAB), acetic acid bacteria (AAB), and Escherichia coli and coliforms) have been compared among 4 Takju and 1 Yakju samples brewed using steamed or non-steamed rice. Yakju brewed using non-steamed rice has approximately 2-3 times higher ethanol and sugar contents than other 4 Takjus brewed using steamed or non-steamed rice. The pH and total acidity values of all the 5 samples ranged 3.77-4.30 and 0.12-0.35, respectively. As for turbidities, Yakju brewed using nons-teamed rice was transparent, but other 4 Takjus were not. The AMB and fungal counts for Yakju brewed using nons-teamed rice were approximately $10^4$-fold less than those for 4 Takjus. The LAB counts for Takju and Yakju brewed using non-steamed rice were $10^3$-fold less than those for Takjus brewed using steamed rice. The AAB counts ranged $2-6\;log_{10}\;CFU/mL$ for all the 5 samples. E.coli and coliforms were not detected. Overall, there was no significant difference in microbial counts among 4 Takjus brewed using steamed or non-steamed rice, but Takju has higher microbial counts than Yakju. All the 5 samples were conclusively considered to be hygienically brewed and processed containing plenty of beneficial microorganisms.

Hypoglycemic Effects of Extract Mixture of Red Ginseng and Steamed RehManiae Radix on Streptozotocin-induced Diabetic Rats (홍삼 및 숙지황의 혼합추출물의 고혈당강하작용)

  • The effects of extract mixture of red ginseng and steamed Rehmaniae radix prepared for antidiabetic activity was examined in streptozotocin-Induced diabetic rats. The increased blood glucosec level in the streptozotocin-induced diabetic rats was significantly decreased by the treatment with the mixture (800, 1600 mg/kg, p.o.). However, neither red ginseng extract nor steamed Rehmaniae radix extract alone showed significant hypoglycemic effects. The mixture prevented a weight loss in streptozotocin-induced diabetic rats. These results suggest that the mixture has the relieving action against streptozotocin-induced hyperglycemia.

  • This study was designed to investigate effective preprocess methods for the antioxidant activity of Lycopus lucidus Trucz tubers extract. Lycopus lucidus Trucz tubers (LlTT) were treated with D (Dried), SD (Steamed and Dried), ASD (Alcohol-Steamed and Dried), DR (Dried and Roasted), SDR (Steamed, Dried and Roasted), and ASDR (Alcohol-Steamed, Dried and Roasted). Solid content was high in Lycopus lucidus Trucs tubers, which were roasted after drying (especially SDR, ASDR). Total sugar and reducing sugar contents were high in roasted ones. Total polyphenol and flavonoid contents were high upon alcohol-steaming in both the dried and roasted groups. Antioxidant activities of LlTT extracts showed effective nitrate scavenging ability, ABTs radical scavenging ability, Xanthine oxidase inhibitory activity, and DPPH radical scavenging ability. As a result, roasting or steaming process (especially using alcohol) can be helpful to obtain the highly antioxidative extract of Lycopus lucidus Trucs tubers.

Survey study on the quantity cookery of steamed rice. (많은 양의 밥짓기에 대한 실태조사)

  • To Know the factors required to make best quality of steamed rice with large amount of rice, several organizations that serve meals were surveyed. Factor that mostly influence the amount of water to the amount of rice is a kind or rice. In the case of good quality rice, when the amount of rice is more than 10cups, the ratio of water to rice is 0.9 and that of poor quality rice is 0.7 Average ratio is 0.8 Therefore, ordinarily with the ratio of 0.8, good quality of steamed rice can be made. Washed rice should be used to measured the of rice. To make a good quality of steamed rice with large amount of rice, center part of the boiling rice should be stirred generously several times to equalize the temperature.

Development of a Natural Surfactant from Extracts of Saponaria officinalis L. (비누풀 잎 추출물로부터 천연 계면활성제 개발)

  • In this study, saponin content of extract from modified preconditioning process was investigated in Saponaria officinalis L. for cosmetic natural surfactant. Saponin content in steamed leaves from S. officinalis L. was about three times more than that in dried leaves (tea saponin and quillaja saponin). And saponin extracts from steamed leaves was excellently shown in both forming force and forming stability. In emulsion activity, saponin extracts from steamed leaves had a similar level to quillaja saponin and tea saponin. Saponin extracts from steamed leaves in S. officinalis L. showed nontoxic effect below in $1,000{\mu}g/mL$ of concentration and dose-dependent inhibition of NO production. From the experiment, the extracts of S. officinalis L. showed good cosmetic agent.

  • Rhizoma Rehmanniae Preparata is a Chinese herbal tonic. The hemopoietic effects of Rhizoma Rehmanniae Preparata(4-time steamed Jihwang, 4-time steamed double dose Jihwang, 8-time steamed Jihwang, 8-time steamed double dose Jihwang) were examined using in vitro rat(SD) model. Cyclophosphamide(150 mg/kg) was injected into experimental groups and control group to induce bone marrow suppression. Oral administration of Rhizoma Rehmanniae Preparata suppressed hormone levels of $T_4\;and\;T_3$. Reticulocyte count was increased by the bone marrow suppression.

  • The aim of the present study was to investigate the effect of Dong-In dong Steamed rib on recognition degree of a citizen for popularization and publicity of a local food. A total of 201 adults, 99 women and 102 men aged over the 20 years, participated in this study. The subjects were all from Dae gu city. This analyses of data were conducted by SPSS for WINDOWS, Version 10.0. First, Dong-In dong steamed rib in Dea gu was thought of as a local food. Second, the steamed rib was recognized as a local food with an international reputation. Third, there were no significant differences in preference, local area, recognition, standard and relation between the rib and other local foods. Therefore, the present findings present the needs of public information, development, preservation and success for internationalization of a local food with the national financial and political support.

  • Woodceramics are new porous carbon materials obtained by carbonization of wood or woody materials impregnated with thermosetting resin in a vacuum furnace. This study examined the electrical properties of woodceramics made from thinned logs of Cryptomeria japonica as a use for electric articles. The summarized results were as follows: 1. The volume resistivity of woodceramics decreased with increasing density of woodceramics made from 3 type board. And the volume resistivity of woodceramics made from non- steamed board was somewhat higher than steamed board. 2. The consumption of electric power of woodceramics decreased with increasing density of woodceramics and resin contents made from 3 type board. And the consumption of electric power of woodceramics made from non-steamed board was somewhat higher than steamed board. 3. When the woodceramics were coated by silicon, the consumption of electric power increased about 7%.

Effects of Subsidiary Materials on Texture of Steamed Alaska Pollack Jelly Products (부원료(副原料)의 첨가량(添加量)이 어묵의 Texture에 미치는 영향(影響))

  • The effect of additional amounts of subsidiary materials on texture of fish meat paste were examined using Instron Universal Testing Machine to obtain fundamental data for steamed Alaska pollack meat paste showing good quality. The hardness revealed the good correlation with jelly strength among the six kinds of parameters of Instron texturometer. Products with higher hardness showed a better quality, but those with hardness higher than 16kg showed decreasing quality with increasing hardness. Predicting the quality of steamed Alaska pollack meat paste with various additional amounts of subsidiary materials as a function of hardness, H, the equation could be deduced as follows: H=11.56+0.54Xcs, H=12.22-0.23Xsp and H=11.65-7.13Xpp. The reasonable equations for predicting the quality of steamed Alaska pollack meat paste with various additional amounts of mixed subsidiary materials could be summarized as follows: H=11.57+0.53Xcs+0.44Xsp, H=11.97-1.83Xpp-0.17Xcs, and H=11.58+0.08Xpp-0.23Xsp.

Effect of thermal treatment on the components of ginseng roots (인삼의 열처리에 의한 성분상에 관한 연구)

  • Chemical changes in components of ginseng roots by heat treatment were observed. We have let the roots of fresh ginseng, of steamed ginseng and the water soluble parts obtained from preparing steamed one be subject to our research. Acids, bases, neutral substances and genins from each one of the above came up to 12 fractions. Having the fractions through column chromatography and TLC test thereafter, we determined the Rf values of each spots presented. Among so many similar values of them, 15 spots of heterogenous component in the fresh ginseng and 6 spots in the steamed one, and 10 spots in that of water soluble parts wre detected. Considering this data obtained, we can assume that partialor all of some components of fresh ginseng might be passed into water parts while preparing steamed ginseng from fresh ones and also some components of the later (fresh ginseng) might have been converted into other substances while being heated.
