저온스팀 열처리 방식에 따른 감자의 전처리 특성 (Pretreatment Characteristics of Potatoes by Soft Steam Treatment)

  • 본 연구는 최근 매우 우수한 가열 매체로 인정받고 있는 저온스팀(soft steam) 열처리 공정의 natural convection (NC) 방식과 forced convection-boiler (FC-b) 및 forced convection-fan (FC-f) 방식을 이용하여 처리온도(60, 70, $80^{\circ}C$) 및 시간(0-60분)에 따른 감자의 전처리 특성을 비교 평가하고자 하였다. 스팀처리 방식에 따른 가열실 내부의 온도변화와 감자 내 외부의 온도변화, 감자의 cook value, ascorbic aicd 및 수분의 함량과 중량감소율의 변화를 관찰한 결과, 모든 처리조건에서 FC-b 및 FC-f의 강제대류 방식에 비해 자연대류의 NC 방식이 이들 전처리 특성에 대해 우수한 결과를 나타냄을 확인할 수 있었다. 따라서, 본 연구의 결과들은 감자의 가공 및 전처리를 위해 현재 사용되고 있는 기존의 열처리 공정에 대한 대안으로써 NC 방식 스팀처리의 높은 효율성 및 산업적 적용에 대한 가능성을 제시하고 있다.

증숙 및 습식분쇄 조건에 따른 인삼의 품질 특성 (Quality Characteristics of Panax ginseng C. A. Meyer with Steaming Heat and Wet Grinding Conditions)

  • 본 연구에서는 인삼의 유용성분 강화 및 인삼 전근 활용을 위한 증숙 및 습식분쇄 조건을 조사하였다. 그 결과 무처리(A), $95^{\circ}C$/3 hr(B) 및 $121^{\circ}C$/15 min(C)의 증숙조건에 의해 각각의 당도는 7.7, 10.7 및 $11.2^{\circ}Brix$, 갈색도 0.37, 1.97 및 1.50로 증숙구간에서 당도 및 갈색도가 높게 나타났다. 조사포닌 함량은 7.19(A), 6.99(B) 및 8.83 mg/g(C)으로 C 조건에서 가장 높게 나타났다. 관능검사를 실시한 결과 C 조건에서 쓴맛 감소, 단맛 강도 및 전반적 기호도가 가장 높게 나타나 증숙처리 조건에서 관능적인 특성을 향상시킬 수 있었다. 가수량에 따른 습식분쇄 조건을 조사한 결과 가수량 300%에서 입자가 가장 작게 나타났다. 인삼의 습식분쇄조건은 분쇄 30분 및 3회에서 분쇄효율이 높았으며 평균입자크기는 $67.66\;{\mu}m$로 미세화되었다. 분쇄시간 및 횟수에 따른 유효성분 함량은 큰 차이가 없었다. 이상의 결과 증숙처리($121^{\circ}C$/15 min) 및 습식분쇄는 인삼의 전근 활용 및 유효성분 강화에 효과적인 것으로 확인되었다.

Effects of Expander Conditioning of Corn- and Sorghum-Based Diets on Pellet Quality and Performance in Finishing Pigs and Lactating Sows

  • Two experiments were conducted to determine the effects of conditioning (conventional vs expander) corn- and sorghum-based diets on production traits for lactating sows and finishing pigs. In Exp. 1, one hundred sixty-eight sows (parity 1-4, PIC line C15) were fed the corn or sorghum grain diets as a meal, standard (steam) conditioned pellets, or expanded pellets to give a $2{\times}3$ factorial arrangement of treatments. Pellet durability index (PDD was similar for the sorghum- vs corn-based diets, but increased when diets were expanded pellets for both corn- and sorghum-based diets. The corn-based meal diet supported 3.3% greater litter weight gain than the sorghum-based meal diet (44.0 kg vs 42.8 kg). However, the advantage for the corn-based diet disappeared with expander processing (ie., sows fed the sorghum-based diet responded more to diets processed with the alternative processing technology). Sow weight change during lactation was similar (p>0.15) among treatments, although average daily feed intake tended to be greater (p<0.09) for the sows fed sorghum. For Exp. 2, a total of 71 barrows (average initial weight of 58.0 kg) were used in a growth assay to determine the effects of feeding com- and sorghum-based diets, as meal or pellets, after processing with a conventional steam conditioner or an expander (high-shear) conditioner. PDI was not different for the sorghum- vs corn-based diets, but increased from 84 to 95% with expander conditioning compared to conventional steam conditioning. Rate and efficiency of gain, and carcass leanness were similar for pigs fed sorghum and corn (p>0.15). Efficiency of gain was greater (p<0.04) for pigs fed the pelleted (356 g/kg) diets compared to those given the meal (348 g/kg) diets. However, efficiencies of gain were similar (p>0.11) for pigs fed the conventional- and expander-conditioned diets. Pelleting increased (p<0.01) the incidence and severity of stomach lesions regardless of grain type. In conclusion, corn-based meal diet resulted in a greater litter weight gain than the sorghum-based meal diet. However, that advantage disappeared when the diets were expanded and pelleted. Finishing pigs fed pelleted diets were more efficient than those fed meal diets.

Effects of Conditioners (Standard, Long-Term and Expander) on Pellet Quality and Growth Performance in Nursery and Finishing Pigs

  • A series of experiments were conducted to determine the effects of standard (ST), long-term (LT), and expander (EX) conditioners on nutritional value of phase-three nursery and finishing swine diets. In Exp. 1, 180 pigs (average initial BW of 11.7 kg) were fed com-soybean meal based diets (1.3% lysine) during a 28 d growth assay. Gain/feed was improved (p<0.004) with pelleting and pellet durability index (PDI) increased with degree of conditioning (LT>ST). However, there was no advantage for LT vs ST conditioning in rate or efficiency of gain (p>0.5). In Exp. 2, 180 pigs (average initial BW of 10.4 kg) were fed con-soybean meal based diets (0.9% lysine) during a 28 d growth assay, Pelleted diets tended to support greater ADG (p<0.08) and gain/feed (p<0.002) with no marked advantage from EX vs ST conditioning. In Exp 3, a total of 70 barrows (average initial BW of 54 kg) was used in a growth assay to determine the effects of feeding a com-soybean meal based diet processed with a standard (ST) steam conditioner, a long-term (LT) steam conditioner, and an expander (EX) conditioner. The conditioned diets were fed as mash (M) or pellets (P) to give a $2{\times}3$ factorial plus a meal control. PDI increased with degree of conditioning (EX>LT>ST). There was a trend (p<0.07) for greater ADG in pigs fed diets that had been thermally conditioned. Also, there was a general advantage in gain/feed with pelleting (p<0.04), but this advantage was pronounced only with standard conditioning. Indeed, the greatest gain/feed was observed for pigs fed the expander treatments (p<0.03) and the expander mash was used as efficiently as the expander pellets. There was no difference in backfat thickness among pigs fed the treatments (p>0.3). but the more extreme the processing technique. the greater the incidence and severity of stomach lesions (p<0.04). These results suggest maximum rate and efficiency of growth with pelleting after standard steam conditioning or simply feeding an expanded mash.

  • Laser cladding processing allows rapid transfer of heat to the material being processed with minimum conduction into base metal, resulting in low total heat input. The effects of Nd:YAG laser cladding with wire feeding on the mechanical properties of Inconel alloy were investigated. inconel alloy is used as the material of nuclear steam generator tubing because of its mechanical properties and corrosion resistance properties. The device for Nd:YAG laser cladding with wire feeding was designed. It consists of the wire feeding system, the wire cladding system and the shielding gas system which prevents the clad layer from being oxidized. Experimental as results indicated that the wire feeding direction and position were important for laser cladding with wire feeding. The wire feeding speed should be adapted according to cladding speed for good shaping of clad layer. The effect of heat on the HAZ size can be limited and the growth of grain size of HAZ size was not serious. The hardness of clad layer and heat affected zone increased with increasing of cladding speed.

점봉산 소하천의 낙엽분쇄에 대한 대형무척추동물 기여도의 계정간 차이 (Seasonal Difference in Macroinvertebrate Contribution to the Leaf Litter Breakdown in a Headwater Stream at Mt. Jumbong)

  • Macroinvertebrate contribution to the leaf litter breakdown of Carpinus cordata was estimated at headwater streams at Mt. Jumbong (38°03'N, 128°25'E) during spring and winter spring by using two types of litter bag. Coarse-mesh bags with 10 g of leaf letter were placed in a 1st-order stream in April (the spring experiment) and December 1995 (the winter-spring experiment). Fine-mesh bags with 5 g of leaf letter were placed in a nearby 3ed-order steam. The breakdown of Carpinus in coarse-mesh bags was rapid, and, in terms of season, leaf litter processed rapidly during spring. daily mass loss rates of leaf litter (-k±1 SE) were highest for coarse-mesh bags in the spring experiment (-0.0429±0.0048), followed by coarse-mesh bags in the winter-spring (-0.0146±0.0014), fine-mesh bags in the spring (-0.0078±0.0004), fine-mesh bags in the winter-spring experiment (-0.0054±0.0005). Macroinvertebrate contribution to the litter breakdown was estimated by the difference of % leaf letter remaining between coarse -mesh bage and fine-mesh bags. Although shredders were more abundant during the winter-spring, their contribution was greater during the spring (50%) than the winter-spring (22∼33%). This result appeared to be due to the change in the chemical composition of leaf letter during processing, and to the seasonal growth patterns of major shredder taxa.

Development and Validation of HPLC-PDA Method and Pattern Recognition Analyses Using Eight Marker Compounds for the Quality Control Between the Seeds of Cuscuta chinensis Lam. and Cuscuta japonica Choisy

  • Cuscuta chinensis Lam. and Cuscuta japonica Choisy are parasitic plants. C. chinensis seeds were traditionally used for treatment of kidney and liver deficiencies. C. japonica seeds were used as tonic medicine to improve liver function and strengthen kidneys, treatment of high blood pressure, chronic diarrhea, and sore eyes. Cuscutae Semen are seeds of only C. chinensis in Korean Herbal Pharmacopoeia (K.H.P.). The developed HPLC-PDA method easily, accurately, and sensitively quantified using eight marker compounds [hyperoside (1), astragalin, (2), quercetin (3), kaempferol (4), chlorogenic acid (5), 3,4-di-O-caffeoylquinic acid (6), 1,5-di-O-caffeoylquinic acid (7), and 4,5-di-O-caffeoylquinic acid (8)]. In addition, the method may be used to distinguish seeds between C. chinensis Lam. and C. japonica Choisy. Furthermore, the result from the current study was applied to clarify samples between steam processed and unprocessed samples of C. chinensis by pattern analysis.

레토르트 파우치 고추장의 적정 고온 살균조건에 관한 연구 (Studies on the Optimal Sterilization Conditions of Red Pepper Paste Packed in Retort Pouch.)

  • Heating characteristics of red pepper paste packed in report pouches of various thicknesses and their storage stability were investigated to determine the adequate processing conditions that good bacteriological safty and minimal quality changes could be obtained, when sterilized by using a steam-air system retort. A heat penetration into pouch-packed red pepper paste was carried out through by a conductive heat transfer, indicating a simple logarithmic heating curve, and the smaller thickness revealed the higher heat penetration rate, suggesting the possibility of high temperature-short time sterilization of red pepper paste. The processing conditions with Fo-value of 4.5 or higher were sufficient for keeping up bacterial safty, but based on C-value, better quality retention was obtained at pouch thickness of 15mm under the processing temperature of $120^{\circ}C$. Subsequent storage study revealed that the red pepper paste packed in 15mm and processed at $120^{\circ}C$ with Fo=4.5 could be held without any spoilage and overall acceptance change, when stored for 6 months at room temperature under the relative humidity of 70%. After 3 months storage in $38^{\circ}C$ under saturation humidity, overall acceptance of red pepper paste were judged not to be maintainable on the acceptable level, but it may be suggested that above the results could be kept up a desirable quality without any remarkable deterioration.

감자의 품질특성에 대한 저온스팀 열처리 방식의 효과 (Effects of Soft Steam Treatments on Quality Characteristics of Potatoes)

  • This paper examines the effects of various methods of soft steaming(i.e., forced convection-boiler, forced convection-fan, and natural convection) on the quality of potatoes. In particular, the paper investigates the effects of cooking conditions (the steaming method, the treatment time, and the temperature) on the color(L, a, b), moisture content, texture profile, and ascorbic acid of potatoes. The results indicate that not only the cooking method, the treatment time, and the temperature but also the heat transfer mechanism had considerable influence on potato quality. In addition, natural convection steaming was superior to other treatment methods in terms of nutrient retention and texture maintenance. The results of this study should be useful for establishing commercial standards for processing potatoes and improving the quality of thermally processed foods.

소국주양조에 관한 문헌적 고찰 (A Bibliographical Study on the Manufacturing Procedure of Sogog-Ju)

  • As the result of the research on the manufacturing procedure of Sogog-ju in the classical literature(35 kinds), it was found that Sogog-ju is usually brewed on the first Boar day of January and Sogog-ju base is added to it in about 7days and then the fermentation of Sogog-ju comes to end in about 21 days. The material grains out of 48 items, used in the first step of brewing Sogog-ju, are nonglutnous rice 47 items(98%), flour 20items(42%), somnuruk 9 items(19%) out of nuruk (fermenter) 48 items (100%) and nuruk water 5 items(17%), and flour 3 items(6%) are used, but fermenter nuruk is not used. When the grains are used in the first step of brewing, they are usually in the form of gruel and rice cake, and in the second step of brewing, they are usually made into steam water soaked rice. Nuruk, Which is largely used in the first step, is usually put after the processed grains get cold, but in the second step of brewing, it may be put into the still warm grains. There are hardly any cases when nuruk is used in conspicously small quantity.
