변성 옥수수 전분을 이용한 당면제조 (I) -국내외 시판당면의 이화학적 특성- (Production of Starch Vermicelli (Dangmyun) by Using Modified Corn Starches (I) -Physicochemical Properties of Domestic and Foreign Starch vermicelli (Dangmyun)-)

  • 국내산 당면 4종류(고구마 당면(자유낙하식; Dropping method) 3종류, 옥수수 당면(압출식; Extusion method) 1종류)와 중국산 1종류, 일본산 6종류를 가지고 당면의 이화학적 특성을 조사하였다. 포장단위는 국내산의 경우 일반 가정용으로 고구마 당면이 500g과 1kg 두 종류의 포장이 주류를 이루었고 일본의 경우 국내산에 비하여 소 포장으로 100, 150, 250 g이 주류를 이루었다. 당면의 두께에 있어서는 중국산 녹두당면이 0.82 mm로 가장 가늘었으나 대부분의 당면은 $1.0{\sim}1.3\;mm$ 정도를 나타내었다. 시중 당면의 DSC endotherm을 분석한 결과 peak 온도가 전분의 호화온도보다 낮은 $42{\sim}48^{\circ}C$에서 시작하였으며 당면의 X-ray 회절도에서도 peak가 선명하지 않은 것으로 보아 호화가 일어난 후 노화로 재결정이 생겼음을 알 수 있었다. 당면의 조리 특성을 보면 국산 고구마 당면은 hardness와 compression slope가 각각 $9,500{\sim}11,000\;g/cm^2$, $18,000{\sim}26,000\;g/cm^3$으로 옥수수 당면보다 2배 이상 높았다. 당면 조리시의 고형분 손실(cooking loss)은 옥수수 전분으로 만든 당면이 19.8%로 고구마 당면($4.2{\sim}6.6%$)보다 높았으며 외국산의 경우 녹두당면이 7.7%로 낮았으나 대부분 국내산 당면보다 높게 나타났다. 조리과정 중 당면의 두께변화 즉 팽윤도(swelling ratio)는 고구마 당면이 $58{\sim}69%$, 옥수수 당면이 50%로 옥수수 당면이 고구마 당면 보다 낮게 나타났으나 옥수수 당면의 경우 cooking 중 고형분 loss가 커 탄력이 떨어지고 뚝뚝 끊어지는 현상이 심하여 고구마 당면에 비하여 품질이 떨어짐을 알 수 있었다.

  • 당면에 적합한 옥수수 변성전분을 개발하기 위하여 실험실규모로 원료전분별 당면을 제조하여 이화학적 특성을 살펴보았고 몇 가지 옥수수 변성전분을 제조하여 당면을 만들어 당면의 특성을 조사하였다. 우선 원료전분의 호화특성을 amylograph로 살펴본 결과 감자전분의 점도가 가장 높았으며 녹두전분이 가장 낮았다. 옥수수 전분을 oxidation, hydroxypropylation, hydroxypropylation+cross-linking시킨 결과 호화온도가 떨어지고 점도가 상승하였다. 실험실에서 제조한 당면의 DSC endotherm과 X-ray diffraction을 측정한 결과 대부분 당면의 Ti가 $60^{\circ}C$ 이상으로 시판당면의 peak 온도보다 높았고 X-ray 회절도의 peak가 분명하게 나타나 시판 당면과는 달리 실험실 당면 제조 조건하에서 당면이 완전히 호화되지 않았음을 보여주었다. 변성시킨 옥수수전분을 이용하여 만든 당면의 경우 hydroxypropylation에 의하여 peak 온도가 $3^{\circ}C$정도 낮아졌으며 oxidation에 의하여는 Ti가$2.5^{\circ}C$ 정도 높아졌다. 당면의 물리적 특성을 보면 원료전분별로는 고구마전분, 녹두전분의 hardness와 compression slope가 각각 $11,726{\sim}12,555\;g/cm^2$, $29,914{\sim}30,604\;g/cm^3$으로 가장 높았으며 찰옥수수전분으로 만든 당면이 가장 낮았다. 옥수수 전분을 변성시켜 만든 당면의 경우 산화전분으로 만든 당면의 hardness와 compression slope가 타 전분에 비하여 높게 나타났으며 고형분의 손실 면이나 조리과정 중의 팽윤 정도 등을 종합적으로 고려해 볼 때 옥수수 전분을 pH 9.0, $40^{\circ}C$에서 NaOCl 0.5% 농도로 30분간 약하게 산화반응을 시킨 옥수수 전분이 당면제조에 매우 적합한 특성을 갖고 있음을 확인하였다.

뽕잎분말을 첨가한 당면의 생리활성 평가 (A Study on the Physicochemical Activities of Dangmyon (starch vermicelli) Added with Mulberry Leaves Powder)

  • This study was performed to investigate the physicochemical activities such as mineral contents, antioxidantant activities, ${\partial}$-glucosidase activity, and angiotensin I-converting enzyme(ACE) inhibitory effect of Dangmyon (starch vermicelli) prepared with mulberry leaves powder. Mulberry leaves powder was added in ratio (w/w) of 0% (CON), 0.5% (MD1), 1.0% (MD2), 1.5% (MD3), and 2.0% (MD4), and then mineral contents, total polyphenol contents, antioxidant, antidiabetic, and antihypertensive activities of the Dangmyon were measured. The mineral contents were significantly increased by the addition of mulberry leaves powder (p<0.001). The total polyphenol contents and antioxidant activities of Dangmyon were significantly increased by the addition of mulberry leaves powder (p<0.05). In terms of antidiabetic and antihypertensive activities showed MD1~MD4 samples higher contents of ACE and ${\alpha}$-glucosidase compared to control (p<0.05). Our findings suggest that addition of mulberry leaves powder to Dangmyon may improve the effects of anti-oxidation, anti-DM, and anti-hypertension and provide health benefits of consumers.

By-product of Tropical Vermicelli Waste as a Novel Alternative Feedstuff in Broiler Diets

  • Two experiments were conducted to determine physical and chemical properties of vermicelli waste (VW) and effect of VW inclusion levels on growth performance of broilers. In experiment 1, VW samples were randomly collected from vermicelli industry in Thailand to analyze nutritional composition. Vermicelli waste contained 9.96% moisture, 12.06% CP, 32.30% crude fiber (CF), and 0.57% ether extract (EE), as DM basis. The ratio of insoluble:soluble non-starch polysaccharide (NSP) was 43.4:8.9. A total of 120 chicks (6 pens per treatment and 10 chicks per pen) were fed a corn-soybean meal-based diet or 20% VW substituted diet to determine the apparent metabolizable energy corrected for nitrogen retention ($AME_n$) of VW. The $AME_n$ of VW was $1,844.7{\pm}130.71$ kcal/kg. In experiment 2, a total of 1,200 chicks were randomly allotted to 1 of 4 dietary treatments for 42-d growth assay. There were 300 chicks with 6 pens per treatment and 50 chicks per pen. The dietary treatments contained 0%, 5%, 10%, or 15% VW, respectively. All diets were formulated to be isocaloric and isonitrogenous. From 0 to 18 d of age chicks fed VW diets had higher (p<0.001) feed conversion ratio (FCR) compared with those fed the control diet. No difference was observed during grower and finisher phase (19 to 42 d). Chicks fed VW diets had lower relative weight of abdominal fat (p<0.001) but higher relative weight of gizzard (p<0.05) than those of chicks fed the control diet. Increasing VW inclusion levels increased ileal digesta viscosity (p<0.05) and intestinal villus height of chicks (p<0.001). For apparent total tract digestibility assay, there were 4 metabolic cages of 6 chicks that were fed experimental treatment diets (the same as in the growth assay) in a 10-d total excreta collection. Increasing VW inclusion levels linearly decreased (p<0.05) apparent total tract digestibility of DM and CF.

뽕잎분말을 첨가한 당면의 품질특성에 관한 연구 (A Study on Quality Characteristics of Dangmyon(starch vermicelli) added with Mulberry Leaves Powder)

  • The purpose of this study was to investigate the quality characteristics of Dangmyon(starch vermicelli) prepared with mulberry leaves powder. Mulberry leaves powder was added in ratios (w/w) of 0% (CON), 0.5% (MD1), 1.0% (MD2), 1.5% (MD3). and 2.0%(MD4), and then proximate compositions, physicochemical properties, RVA, SEM, texture and sensory evaluations of the Dangmyon were measured. MD1~MD4 samples showed higher contents of moisture, crude lipid, crude protein and crude ash as well as pH compared to control (p<0.001). In terms of color, lightness (L), yellowness (b), and redness (a) decreased as the mulberry leaves powder increased. The results of RVA properties analysis on all samples showed that control had the highest. With regard to the texture of Dangmyon samples, the scores of hardness, adhesiceness, gumminess, chewiness, resilience of CON was significantly higher than the samples MD1~MD4 (p<0.001), but the scores of springiness, cohesiveness was not significantly among samples. The result of observation on the cross section of Dangmyon added with mulberry leaves powder showed that number, size of cavity more increase compared to the control. In sensory evaluation, the scores of appearance, flavor, taste and overall preference for MD3 were significantly higher than the samples (CON, MD1, MD2, and MD4). From the findings, this study suggests that 1.5% addition of mulberry leaves powder was effective for preparation of Dangmyon in the aspects of the consumer acceptability.

주요 당류 및 해조류의 대사 에너지 함량 평가에 관한 연구 (A study on estimation of metabolizable energy content in starch-foods and seaweeds)

  • The validity of the energy data of the starch-foods and seaweeds in Korean food composition tables has been suspected due to possible differences in their chemical compositions from those of western food ingredients. Energy conversion parameters being used currently in nutrition has been derived in countries where food items re quite different from ours. This study was undertaken to determine the metabolizable energy of starch-foods and seaweeds by the method selected in preexperiment20). Cooked starch foods and seaweeds were freeze-dried and fed to Sprague Dawley rat with 200∼300g body weight to measure apparent metabolizable energy (AME) values and nitrogen-corrected AME (AMEn) values for four days after three days of preliminary period for adaptation to the diets. The AME and AMEn values of the wheat noodle were 4554.6, 4584.7, the Starch Vermicelli, 3763.4, 3855.7, the Ra myon, 4916.9, 4876.0, the Buckwheat noodle, 4469.7, 4442.0kcal/kg dry matter, the Potato, 4514.6, 4520.0 and those of the Bread, 3256.9, 3582.6, 3260.5, kcal/kg dry matter, respectively. Those of Sea tangle were 1437.3, 1631.3 and of Laver, 3126.6, 3171.3kcal/kg dry matter, resectively. When the AME values of the starch-foods and seaweeds measureed in present study were compared with energy values calculated by various conversion parameters such as Atwater's Rubner's, Sochun's and FAO's, there appeared dramatic differences indicating that for many of the food items, the latter energy values by conversion factors are hardly acceptable. These data also suggest that the existing energy conversion factors are not applicable to seaweeds and a further study is needed to obtain specific factors for the conversion to biological energy from the chemical composition of seaweeds.

밀가루 식품의 알루미늄 함량 (Aluminum Contents in Wheat Flour Foods)

  • 베이킹파우더, 등급별 밀가루 및 몇 가지 밀가루 가공식품에 대한 알루미늄 함량을 조사하고자 $HNO_3:HClO_4(v/v,\;2:1)$ 혼산으로 분해하여 원자흡수분광광도법으로 분석하였다. 원료와 가공식품들의 알루미늄 함량은 베이킹파우더는 $1910{\sim}1948mg/100g$, 중력분은 8.5mg/100g, 강력분 박력분은 각각 10.8 mg/100g, 11.0 mg/100g이며 국수는 $29.7{\sim}58.5mg/100g$, 라면은 $63.0{\sim}80.0mg/100g$, 당면은 $33.1{\sim}46.3mg/100g$, 냉면이 $37.8{\sim}49.9mg/100g$, 비스켓과 스낵은 $15.3{\sim}19.2mg/100g$, $22.5{\sim}56.4mg/100g$ 범위였다. 밀가루 식품중의 알루미늄 함량은 동일 식품이더라도 제조회사에 따라서 함량차이를 인정할 수 있었다(p<0.01).

Indirect Measurement of the Amounts of Casein Phosphopeptides Added to Dangmyon (Starch Vermicelli or Glass Noodle) as a Calcium-Absorption Enhancer

  • Industrial-scale Ca-fortified Dangmyon was manufactured with added casein phosphopeptides (CPP) to increase Ca adsorption in the intestine. Very low P content in eggshell Ca (egg Ca) and Dangmyon could make it possible to indirectly measure CPP content in Dangmyon. Partitions of the whole P present in Dangmyon were made into sweet potato, egg Ca, and CPP. The CPP content was obtained by multiplying CPP per P by the amount of P partitioned into CPP. It was found that 88.46% of CPP was obtained. However, when milk Ca, which was much higher in P, was added to fortify Dangmyon with CPP, it was found that the CPP content was either under- or over-estimated. Care must be taken when a much higher content of P as a Ca source is selected using this method. It was discovered that the added Ca and CPP were retained after cooking at boiling temperature; therefore, Dangmyon could be an excellent Ca and CPP carrier for humans.

Determination of Sodium Alginate in Processed Food Products Distributed in Korea

  • 식품첨가물로 사용되는 알긴산나트륨은 알긴산염류로서 안정제, 증점제, 유화제 등의 기능을 한다. 알긴산나트륨의 정량법은 전처리가 복잡하고 분석시간이 많이 소요되어 상대적으로 간편하고 보편적인 분석법 연구가 요구되고 있다. 분석장비로는 HPLC-UVD 및 Unison US-Phenyl 컬럼을 사용하였으며, 전처리 조건으로 진탕기를 이용하여 실온에서 150 rpm으로 180분간 추출하였다. 알긴산나트륨의 표준용액을 5개 농도 범위에서 검량선을 작성한 결과 직선성(R2)은 평균 0.9999로 측정되었으며 검출한계(LOD) 및 정량한계(LOQ)는 각각 3.96 mg/kg, 12.0 mg/kg이었다. 또한, 천사채를 이용해 얻은 일내 및 일간 평균 회수율과 정밀도는 각각 98.47-103.74%, 1.69-3.08 RSD%이고, 빙과류에 대한 일내 및 일간 평균 회수율과 정밀도는 각각 99.95-105.76%, 0.59-3.63 RSD%이다. 상대불확도%는 CODEX의 기준에 적합한 1.5-7.9%의 결과를 나타냈다. 본 연구에서 확립한 방법의 적용성 검토를 위해 총 103개 품목에 대한 알긴산나트륨의 함량을 정량한 결과 당면, 유탕면, 당류가공품 유형 순으로 높은 검출율을 보였다.
